OnionsOnions have a reputation for being a challenging

crop, but these culinary essentials are actually a

cinch when you choose the right types and use the

right timing for our region. For a year-round kitchen

staple, choose storage types, like pungent yellow bul-

bing onions and lesser-known—but extremely easy to

grow in our region—perennial multiplier onions. Crisp

green onions give your cooking a professional touch,

and they’re very easy to grow. For a growing guide

for perennial multiplier onions (i.e., potato onions

and shallots) see the October chapter; if you plan to

grow perennial onions, be sure to order bulbs well in

advance of fall planting.

GROWING Bulbing onions have only a short window of

time to grow before spring heat or lengthening days trig-

ger the bulbs to stop growing and start drying down. To

ensure they have enough time to grow before this hap-

pens, Southeast gardeners sow onion seeds in the fall

through very early spring, and choose the right varieties

for our latitude. Short Day (SD) types bulb with 10–12 hours

of daylight; grow these south of 35ºN. Northern garden-

ers grow Long Day (LD) types, which bulb with 14–16 hours

of daylight; these are best grown north of 38ºN. If you’re

in between these latitudes, like many of us in the Upper

South, choose LD varieties that mature on the early side

(look at the day length), or choose SD varieties. You’ll have

the best results if you sow in fall and keep the seedlings

growing over winter in the greenhouse, cold frame, or

under row cover.

In the Upper South, sow bulbing onion seeds in a cold

frame or greenhouse. In the Lower South, gardeners can

direct sow bulbing onion seeds in the garden. Sow the

seeds ½ inch apart if you plan to transplant later, or 2

inches apart if you direct sow. Thin to about 3 inches apart.

Cover with fine soil or compost, ¼–½ inch deep. Be sure

to transplant when the seedlings are still a little narrower

than a pencil, and by early spring (February). Onions don’t

tolerate weeds, so prioritize weeding this crop. Provide

ample moisture. Organic mulch helps keep down the weeds

and keeps in water and nutrients. Practice crop rotation of

at least three years to control pests and diseases.

Traditional green onions (often sold as bunching onions)

only do really well in our region in the fall through spring

(under cover where winters are cold). Sow them just like

bulbing onions, but at about ½ inch apart and thin or trans-

plant to at least 1 inch apart. (Turn to perennial bunching

chives for green onion style in the hottest months.) Sow

just once in the fall, or for lots sow once in the fall and

again in the early spring. A single sowing can be harvested

over an extended period.

HARVESTING For bulbing onions, pull up the whole crop

in one harvest for the easiest curing and storage. When

half of the tops have fallen over, pull up the bulbs and cure

them by hanging or spreading under cover with good ven-

tilation, for two to three weeks. They’re done curing when

the necks have thoroughly dried. Clip off the tops to within

1 inch of the bulb and store in mesh bags in a well-ventilated

place. For green onions, whenever the tops are big enough,

you can start harvesting. Pull them up whole.

VARIETIES Short Day (SD) varieties: Texas Early Grano

(100 days) is often called the mother of all sweet onions,

and Granex hybrid (80 days) is one of the famous sweet

Vidalia types. Long Day (LD) varieties: Yellow of Parma

(110 days) was the best storage onion in our 2011 trials, and

Red Wethersfield (100 days) was grown by Jefferson at

Monticello.

For green onions, Deep Purple (60 days) brings extra

color, just on the bottoms. Evergreen Hardy White (65

days) reliably overwinters even in The North.

SEED SAVING Isolate varieties by a minimum of 150 feet.

For pure seed, cage plants or isolate by ¼–½ mile.

ParsnipsSweet, nutty parsnips are hardy, easy-to-grow root

vegetables, closely related to carrots. Parsnips are

slow growing, so be patient! They’re worth the wait.

Heavy frosts sweeten the roots, and they’ll happily

wait in the ground until you’re ready to harvest. For

gardeners looking to eat locally year round, parsnips

are an old staple worth rediscovering.

GROWING Sow parsnip seeds ½ inch deep, one to two

seeds per inch, in rows 18 inches apart, as soon as the

soil can be worked in the spring, and by July at the latest.

Very far-south and coastal areas may have better results

sowing in September for spring harvest. Soak the seeds

for 24 hours before sowing to help germination. When your

plants emerge, thin to 4-inch spacing. Your soil should be

well drained and not too rich. The top 10 inches or deeper

should be loose and clod free. Don’t let the soil dry out

while the seeds are germinating, which can take up to three

weeks. Sow radishes every 3–4 inches to prevent soil crust-

ing and mark the rows. Liberal mulch will help give even

moisture to the plants.

HARVESTING Use a garden fork to loosen the soil around

the roots before pulling them. For the best-tasting pars-

nips, harvest after a few frosts. You can leave the plants in

the ground all winter, but cover them with a thick layer of

organic mulch and harvest before new top growth starts

in the spring. Parsnips grown in frost-free areas may not

develop the same “frost-touched” sweetness. Cut off the

leaves ¼ inch above the top of the root and store as you

would carrots.

VARIETIES Heirloom varieties Hollow Crown and Turga

both have stout roots good for clay soils. Both are ready in

about 100 days, perfect for either spring or fall sowings.

SEED SAVING Isolate varieties of this biennial by ¼ mile

for home use. Overwinter and allow to flower. Harvest

seeds when they are brown and allow them to dry in a

single layer for two weeks.

Noel Kingsbury is a well-known designer, commentator, and writer on plants, gardens, landscape, and the environment. His doc-torate in horticultural ecology from the Uni-versity of Sheffield focused on the selection and management of ornamental perennials and he is still engaged in active research in this field. Noel is interested in combining natives and non-natives in ecological plant-ing schemes and a passionate advocate for sustainable plant combinations that require minimal intervention from the gardener. He trials plants and gardens at his home on the border between England and Wales and travels widely.

Jo Whitworth is an award-winning photog-rapher based in the UK. Her inspirational images feature in a wide range of books and magazines. While taking photographs for this book, she discovered the original seed-beds where Victorian breeders conducted their trials, found colonies of wild daffo-dils alive and well in British meadows, and photographed contemporary breeders at work across the British Isles from Cornwall to Scotland.
