Martinho Moniz, Head Chef of Hotel Lisboa’s Guincho a Galera, wants to

set the record straight about Portuguese cuisine.

“There’s a lot more to Portuguese food than baked rice and

bacalhau,” he says. “Portuguese food can sometimes come across as

too simple, too rustic. We wanted to show another side of it, the fine-

dining element.”

People’s perceptions are changing, thanks to Chef Martinho and his

new menus for lunch and dinner. At Guincho a Galera, Macau diners

can now experience authentic Portuguese cuisine in a fine-dining

environment, with a focus on refined flavors and presentation.

“Traditional Portuguese food is very rich, with strong flavors,” says

Martinho. “So we have carefully selected the dishes we think best meet

the tastes of the Asian palate and then further refined them to a fine-

dining standard.”

Both the lunch and dinner menus feature signature dishes such

as Caldo Verde Soup with Chorizos and Roasted Black Pork with Clams,

giving guests the opportunity to taste a wide variety of authentic

Portuguese dishes. These selections are complemented with wine

from Guincho’s unrivaled wine list, which boasts over 8,600 labels.

“We’ve tried to offer the best compilation of Portuguese food. I

think this is a step in the right direction so that people can understand

what real Portuguese fine dining is all about.”

The menu at FINDS – featuring Chef Jaakko

Sorsa’s unique style of Nordic cuisine – is

one of the most interesting menus in Hong

Kong. And it keeps getting better. During the

summer months, Chef Jaakko and his team

will be introducing a new healthy lunch menu

each week – a good excuse to visit more than

once.

One standout dish among many on the

new menu is the blue mussels poached

with fennel and aquavit – a traditional

Scandinavian spirit usually flavored with

caraway, dill and other spices and herbs.

“These dishes provide a great introduction

to Nordic tastes,” says Chef Jaakko.

I decide if I want sour, bitter, sweet or salty, and then I look around to see what’s in season. For summer, I want fresh and light ingredients. pan-seared Hokkaido sea scallops with roasted eggplant puree, fennel arancini and a shellfish emulsion. We get awesome, sushi-grade scallops from Japan. For a bit of texture in the puree, we added the fennel arancini; it matches the eggplant and the scallops. Then the shellfish emulsion—lobster, clams and mussels. INGrEDIENTS

150 grams squid ink angel hair pasta, fresh

360 grams sicilian red prawns, cleaned and

deveined

80 grams baby squid, cleaned and halved

20 grams shallots, minced

80 grams cherry tomatoes, peeled

150 milliliters white wine

500 milliliters fish stock

20 grams italian parsley, chopped

100 milliliters extra virgin olive oil

100 grams little-neck clams

30 grams picante salami, cut in thin strips

20 grams italian garlic, thinly sliced

METHoD

Bring lightly salted water to a boil in a medium-size sauce pot for the

pasta. The squid ink pasta provides

a visual contrast with the other

ingredients in the dish—a dramatic

swirl of black against the bright red

prawns and tomatoes. The squid

ink has a briny flavor, but it is subtle

enough that you can substitute any

pasta at home without affecting the

overall dish too much.

Salt and pepper the prawns and baby squid.

Heat a medium-size sauté pan. Using 50 milliliters of olive oil, pan-

sear the prawns and baby squid and

then remove them from the pan. At Il

Teatro, all the prawns are de-shelled

and deveined, but a couple are cooked

with their heads intact. The heads

add more flavor to the sauce and look

elegant in the dish. The heads on the

remaining prawns are removed for

the sake of dining convenience. But at

home, you could further strengthen the

sauce by leaving all the heads on and

peeling the shells off the bodies.

In the same pan, add the spicy salami, shallots and garlic, and sauté over a

low heat.

Next add the clams and white wine and cook over a medium heat until the

alcohol has evaporated.

Once the clams have opened, remove the clam meat from the shells and

discard the shells. In the meantime,

start to cook the pasta. The pasta

cooking time will vary according to

preference.

Add the fish stock, the remaining olive oil, the clam meat, prawns and

baby squid to the pan and cook over a

medium heat.

Remove the pasta from the water and add to the sauté pan, cook together

briefly and serve.

BLack angeL hair Pasta With siciLian PraWns, BaBY sqUid, cLams and Picante saLamiby Anthony Alaimo, Chef de Cuisine, Il Teatro at Wynn Macau

This is Il Teatro’s best-selling pasta dish. But it’s not really about the pasta. The key

flavor here—the flavor that really makes this dish special—comes from the sweet and

tender Sicilian prawns. You can substitute other types of prawns and still get good flavor

with this dish, but if you can find the Sicilian prawns at a specialty shop or with a big

fishmonger, you’ll definitely notice the difference. The accompanying sauce is a simple

one. The combination of clam and pork offers a good balance of flavors that helps bring

out the great flavor of the prawns.

意大利面,著實讓這道料理凸顯絕佳

美味的主要關鍵,就是來自於西西里

島明蝦獨特的甘甜滋味。你當然可以

使用其它蝦種代替,烹調出來一樣好

吃,不過若你能從專賣店或是大型魚

販中取得西西里島明蝦的話,你一定

會發現煮出來成品其韻味和一般食材

是無法比擬的。佐面的醬汁很簡單。

蛤蜊和豬肉的香氣相互結合,在味覺

上提供了良好的平衡,更因而帶出明

蝦濃厚的好滋味。

食材

150 克 新鮮墨魚汁天使意大利面

360 克西西里島明蝦,洗淨並除去腸泥

80 克小烏賊,洗淨對切

20 克紅蔥頭,細切

80 克聖女小蕃茄,剝皮

150 毫升白酒

500 毫升鮮魚高湯

20 克意式巴西里,碎切

100 毫升特級初榨橄欖油

100 克蛤蜊

30 克香辣薩拉米香腸,切成細條狀

20 克意大利大蒜,切薄片

做法

取一中型鍋,加入些許海鹽於水中,

煮滾後用來烹煮意大利面。墨魚汁天

使意大利面呈現富有張力的黑色,對

照鮮紅色的明蝦及蕃茄,在視覺上形

成強烈對比。墨魚汁帶有微微的海洋

風味,但若無法取得新鮮墨魚汁意大

利面,可利用其它面款代替,並不致

影響這道料理的整體風味。

在明蝦及小烏賊上撒入些許鹽及胡

椒。

取一中型炒鍋加熱。倒入 50 毫升的

橄欖油後加入明蝦及小烏賊香煎,隨

即再放入盤中備用。在帝雅廷餐廳,

所有的明蝦會事先做剝殼及除腸泥

的動作,只留下兩只還連有頭部的蝦

子做烹調。明蝦頭可以增加醬汁的香

氣,同時擺在盤中看起來也十分優雅。

剩餘的蝦頭則是為了用餐方便而被移

除。不過如果這道麵食是在家中料理,

建議可以將全部的蝦頭留下,只需剝

除身體的殼,將可增添醬汁濃濃的海

洋風味。

於同一炒鍋中放入薩拉米香腸、紅蔥

頭、大蒜,以小火拌炒。

加入蛤蜊及白酒,以中火烹煮至所有

的酒精蒸發。

等到蛤蜊打開後將蛤蜊肉及殼的部份

分開,丟棄外殼。同時進行意大利面

的烹調。烹煮意大利面的時間依個人

喜好而定。

最後加入鮮魚高湯、剩餘的橄欖油、

蛤蜊肉、明蝦及小烏賊,以中火料理。

將意大利面瀝乾後放入先前的炒鍋

中,和所有食材快速拌炒後撒上巴西

里即可。

Traditional Italian dishes benefit from centuries of trial and error. But not every

rendition of a traditional dish is equal. Subtle differences in interpretation can make a big difference.

“Guillaume brings a very important quality – his experience in Asia,” says Alfio. “He has had years of experience here. He understands what people like. He knows just the right approach for adapting tradi-tional dishes to appeal to Asian palates.”

“We both go out to explore,” says Gu illaume, “and then we come back to discuss things and share new ideas. Once I went to a local Chinese restaurant and tried the suckling pig. It was amazing – everyone was eating it.”

the Terrazza menu, Guillaume and Alfio went to work. A long period of experimen-tation culminated in a delicious payoff: a 26-hours-slow-cooked, moist suckling pig with perfectly crispy skin, stuffed with rose-mary, sage, garlic, lemon, and Italian fennel salami.

“Alfio and I worked together a lot on this dish,” says Guillaume. “It’s the Italian porchetta, cooked with a Chinese twist.”

Another one of Terrazza’s signature dishes is a traditional seafood stew from the Tuscan village of Livorno. Returning from the sea, the Livornese fishermen make a big stew from their daily catch – fish, squid, octopus, clams, mussels – whatever is in the nets.

“The seafood is cooked with tomatoes and red chilies,” says Alfio. “But we make it less spicy than the Italian version, and a bit lighter.”

“Here we’ve added lobster,” says Guillaume. “It is very popular. People love the soup and the seafood together.”

Terrazza’s salt-encrusted sea bream is another traditional dish that has benefitted

from Guillaume’s creative expertise, and from careful collaboration between Chefs Guillaume and Alfio.

“We gave this dish a French touch,” says Guillaume. “We cook it for only twelve min-utes in a very hot brick oven. The encrusted salt becomes very strong – this helps pre-serve the freshness and natural flavors.”

“In Italy, they serve it very simply, with steamed vegetables,” says Alfio. “We serve ours with olives, tomatoes, and lemon for a bit of acidity.”

“We have a philosophy at Galaxy Macau,” says Guillaume. “World class, Asian heart. We want to deliver a world-class dining experience to every customer.”

“We always want to deliver our food with passion and sincerity,” adds Alfio, “while bringing happiness to our guests.”

Mirror is locAted, obscurely, on the sixth floor of a Wan Chai commercial build-ing. The kitchen is tiny – no larger than a decent home kitchen. The chefs maneu-vering around that tiny kitchen look young enough to be students in cooking school – they graduated not long ago. Should this restaurant really be on your list of great places to eat in Hong Kong? Yes, it should – right up towards the top.

Reserving a seat at Mirror has become increasingly difficult, but the delicious, memorably expressive French dishes served by Chef Jeremy Biasiol and his young team make it worth the effort. Open for less than two years, Mirror has already earned a Michelin star.

“I think we got the star because there is no pressure in our kitchen,” says Chef Biasiol. “We work hard but we’re always smiling, always having fun.”

Mirror’s open kitchen looks out over the dining room, allowing Jeremy and his team to interact with customers, and to see how they’re enjoying the food.

“I want people to have the feeling that they are coming to my home and I am cook-ing a nice meal for them. I want them to feel relaxed.”

Jeremy brought his staff from the cook-ing school in Wan Chai where he taught for two years before opening Mirror. “I’d devel-oped a friendship with my students. It was common sense for me to take them with me. I didn’t want to be the teacher that just disappeared after two years. I wanted to continue their training.”

It was a brave move and one that left Jer-emy’s mentor, the great Alain Ducasse, at a loss for words. “When I told Mr. Ducasse that my guys were straight out of culinary school, there was silence on the other end of the phone,” he laughs. “Other chefs told me I was crazy to take people with no expe-rience, but in the end I regret absolutely nothing. It’s been a great adventure!”

Jeremy’s team may be young, but what the team members lack in experience, they more than make up for with passion, talent and disciplined attention to basics.

One Mirror dish that draws rave reviews is Jeremy’s lobster jelly with shrimp sauce. Potently concentrated into the jelly, the flavors of the shellfish are accented by a supporting cast of caviar, apple blossoms and chives. “Take a bit of everything in each mouthful,” advises Jeremy. It’s a dish in per-fect balance: every ingredient expresses itself and plays a vital part in the commu-nal deliciousness.

Mirror的廚房呈開放式,面向用餐區,Jeremy與廚師團隊可以直接和顧客互動,並能看到顧客享受食物的樣子。

「我希望顧客覺得來這裡用餐像是到

我家作客,我做好菜請他們吃。我希望他

們感到放鬆自在。」

Mirror的員工都是 Jeremy之前在灣

仔烹飪學校教過兩年的學生。「我和學生

變成了好朋友,帶領他們一起冒險是再自

然不過的事了。我不想當那種教完兩年就

消失的老師,我要持續培訓他們。」

這種舉動相當大膽,連 Jeremy的恩師之一 – 赫赫有名的 Alain Ducasse都啞口無言。「我告訴 Ducasse先生我的員工都是剛從烹飪學校畢業的學生時,電話另一端是

一片靜默。」他笑著說。「其他廚師說我一

雖然 Jeremy的團隊是年輕了點,取代經驗的卻是滿腔的熱情、源源不絕的才

能和對細節的執著,這些年輕人正可比擬

為是最上等的新鮮食材。

Jeremy端出的第一道菜是淋了蝦醬的灣仔龍蝦凍,展現出貝類極濃郁鮮味,魚

子醬、蘋果花和韭菜的陪襯角色更是相輔

相成。

Jeremy指導我:「每種食材都舀一點

再放進口中,所有味道都要一起品嘗。」

這果然是好建議。這道料理的口感達

到完美平衡,每種食材都恰如其分地展現

自己,共同營造出令人驚艷的味覺饗宴。

Jeremy講到自己的團隊不禁露出贊賞之情:「這些小伙子不斷成長,做出來的

料理複雜度越來越高。一開始我一點耐心

都沒有,非常霸道,但我後來發現那並非

教導他們的正確方式。我自己必須改變,

試著更有耐性一點。畢竟光有主廚卻沒有

團隊根本一點用都沒有。」

Jeremy端出的第二道菜是經慢火煨煮的緬因龍蝦,以蘆筍和羊肚菌泡沫裝飾。

Another winning dish is the slow-cooked Maine lobster with asparagus and a morel mushroom emulsion. The asparagus, from a local Hong Kong farm, tastes just-picked fresh, and, along with the earthy complex-ity of the morel emulsion, helps draw out the marvelously rich flavor of the lobster.

“One of the most important things Mr. Ducasse taught me is to look around and see what you have right in front of you. I’m very focused on using local ingredients as much as possible. If you have good basic

Mirror甜點是由年僅 21歲的甜點師傅 Kenny Chan製作。一般在米其林餐廳工作的甜點師傅都比他大上十來歲,經驗

老到。不過毫無疑問,Kenny在這裡是有原因的。

是外觀就搶眼得令人難忘,口味更不在話

下,血橙的酸味與濃滑巧克力絕對是天作

之合。這道極簡甜點流露出一股自信,印

象之深難以抹滅。

「任何人來到我的團隊都絕非偶然。

我選擇那些我深信不移的學生。他們在校

不見得最傑出,卻是最有熱情的。像我的

甜點師傅曾經是成績最差的學生之一,但

你看看他脫胎換骨的樣子!我以他們每一

個人為榮!」

How would you describe your cooking philosophy?

My philosophy is simple. I want to cook for people

the same way I cook for my friends and family. I like

strong flavors and I want my dishes to be easy to

indentify. I don’t want people to get confused when

they eat.

What were the early days like at Mirror?

It was very tough in the beginning. We were fully

booked for three months straight, so there was no

time to adapt or reflect or for me to keep teaching.

Originally we opened for lunch and dinner, but it was

just too much, so now we are closed for lunch and on

Sundays. We are much more relaxed now, we enjoy

ourselves and we have fun. We focus on one thing

and we try to do it the best we can.

How were you inspired to become a chef?

I’d wanted to become a chef since I was four. I have

no idea why but it never left my mind. I come from

Lyon, a city in France famous for its food, and I

have been lucky to have parents who have always

supported me in my passion. When I was young,

my walls were covered with chefs’ pictures and the

menus from three-star Michelin restaurants. Even

now I am a big collector of Michelin guides and

chefs’ signatures on menus. When I heard that we

had got the Michelin Star at Mirror, I cried!

Is cooking an art or a science?

Neither one. Cooking is a way for a chef to express

himself. All our sentiments go into our cooking. We

cook with heart and passion. I know it sounds like

a cliché, but this is the truth. Even the most famous

chefs, like Mr. Ducasse or Joël Robuchon, or many

others, are really most themselves when they are

cooking for the people they care about. I get scared

when chefs start to talk about cooking as a science.

This work has nothing to do with science. Even chefs

like Ferran Adrià or Heston Blumenthal, who do the

so-called molecular cooking, will tell you the same

thing: without strong basic skills and strong feelings,

you can not cook well.

Is there one special wine you could not live

without?

That’s a very difficult question. I would say the one I

share with the people I love.

沒時間調整、反省或訓練旗下團隊。原本我們

午餐及晚餐時間都有營業,但真的做不來,所

以改成午餐時間及每周日休息。現在輕鬆多了,

也比較能夠自得其樂,享受工作。一旦專心要

做一件事,我們就會竭盡所能做到最好。

您是如何受 發而成為廚師的?

我從四歲起就立志當廚師。我不知道為甚麼,

但這個念頭一直都在。我出生於里昂,一座以

食物聞名的法國城市,而且很幸運地,我父母

向來支持我追求自己的熱情。從小我房間牆壁

就貼滿廚師的照片和米其林三星餐廳的菜單,

直到現在我還在收集米其林指南和廚師的招牌

菜菜單!聽到mirror摘下米其林星星,我忍不

住激動落淚!

您認為烹飪是一種藝術還是一種科學?

都不是。烹飪是廚師表現自己的途徑。我們將

所有情感投注在烹飪中,用的是心和熱情。我

知道聽起來是陳腔濫調,但這是千真萬確的。

就算是 Ducasse先生、Joel Robuchon等最有

名的廚師,為在乎的人下廚時,一定是將自己

全然投入。只要聽到有廚師視烹飪為科學,我

就感到害怕。烹飪跟科學無關。就算是那些從

事分子料理的廚師,像 Ferran Adrià或 Heston

no mistake: Kenny is here for a reason. One of his lovely plates features dried slices of Spanish blood orange along with a scoop of dark chocolate ice cream. The citrus acid-ity and the creamy chocolate are a match made in heaven, and the dish impresses with its restraint and confident simplicity.

“Nobody on my team is here by acci-dent,” says Jeremy. “I chose the ones that I was sure about. They weren’t necessarily the best students but they were the most passionate. My pastry chef was one of my worst students but look at him now! I’m very proud of each one of them.”

滿的撒了把鹽。寇斯特使用的是用來烹調

魚料理的傳統圓形淺底鍋-光是一鍋的份

量便足以餵飽 30個人。他悠悠說道:「最多我還做過 250人

份,鍋子大到需要四個大男人才抬得動。

30人份的料理是稀松平常的事。」寇斯特特製的海鮮飯色香味俱全,那

30位幸運兒必定感到非常慶幸有這種好機會一嘗美味。

寇斯特主廚在接掌澳門首屈一指的芭

朗瑪 (La Paloma) 西班牙餐廳前,在歐洲各大餐廳工作了 14年之久,也曾是西班牙古城赫羅納米其林餐廳「Cal Rei」內的當家好手。現在坐鎮芭朗瑪餐廳,以家鄉

加特隆尼亞的烹調文化為本,將經典的地

方風味料理髮揚光大,成為店內一絕。

餐廳坐落於宏偉的聖地牙哥炮台 (Sao Tiago da Barra) 碉堡城牆之內,於 1629年建築而成。寇斯特主廚正在餐廳外充滿地

中海氣息的中庭露台烹調佳餚。搭配綠色

遮陽傘的餐桌座落在四周,其中還能欣賞

到大普拉亞灣的風景。不過先將這些美好

景色放在一旁 –現在所有賓客的注意力完全集中在那鍋海鮮飯上。

是不是西班牙有多少位廚師就有多少

味海鮮飯 ?「沒有兩味海鮮飯是相同的」寇斯特主廚說道。

For paella this good, normally you have to go to spain

chef hector costA spoons a taste of paella to his lips, nods to himself, and con-fidently shakes on a dose of salt. Hector’s paellera – the traditional round, shallow pan used to cook the dish – holds enough paella to feed thirty people.

“The biggest I’ve done was for two hun-dred and fifty people. It took four men to carry the pan!” says Hector. “Paella for thirty people is manageable – it’s normal.”

From the way things look and smell, Hector is about to make thirty people extraordinarily happy.

Before firing up the paellera at La Paloma, Macau’s premier Spanish restau-rant, Hector spent fourteen years working in restaurants across Europe. He is a veteran of the Michelin-starred Cal Rei Restaurant in Girona, Spain. Now at the helm of La Paloma, Hector champions the dishes of his homeland and serves up clas-sic Catalonian cuisine.

La Paloma is nestled within the old stone walls of the magnificent fortress of Sao Tiago da Barra, built in 1629. Chef Hector is cooking outside, on the restaurant’s lovely terrace. Tables with green umbrellas are scattered about. There is a view of Grand Praia Bay. But forget the

other attractions – everybody’s attention is focused on the paella.

Is it true that there are as many paellas as there are cooks in Spain?

“No two paellas are the same,” agrees Hector.

The dish is traditionally made with rice, saffron, olive oil and various combinations of vegetables, seafood and meat. Starting with a sofrito – a sautéed flavor base – made with onion, tomato and pimento, Chef Hector builds his paella gradually, one layer at a time, allowing the flavors to slowly meld together. Following the tried-and-true method, he pours the rice into the paellera in the shape of a cross, before slowly spreading it out in all directions.

“You have to know your rice,” says Hector. “To avoid problems, this is very important.” Long-grained rice does not work well for paella. What you want is a medium grain variety, a rice that can absorb lots of liquid and flavor without becom-ing too soft.

Paella rice gets its characteristic crim-son hue from saffron. Although the fragile threads are the most expensive spice in the world – it takes about 225,000 hand-picked stigmas to make a single pound of

saffron – most people agree that without saffron, paella wouldn’t be paella. The spice’s color and strong, bittersweet flavor seep into every grain of rice.

“The saffron helps all the flavors com-bine,” says Hector. “It gives the paella the final touch that it needs.”

Once the rice is in, stirring the paella is discouraged. The rice that settles on the bottom of the paellera will form a toasty brown crust, called the soccarat. This car-amelized crust is a sure sign of a paella chef ’s expertise. It’s the bit that everyone

fights over. As good as the stuff on top is – the saffron-infused rice, the vegetables, the seafood – kids in Spain know to push it all aside to go straight for the true prize, the soccarat.

“I like it that paella has a little bit of everything,” says Hector. “But if there’s more soccarat, even better.”

Chef Hector Costa’s bubbling seafood paella is a beautiful thing to behold. Shrimp, clams, squid, mussels, Spanish chorizo, peppers, beans and rice are all mixed together in a stew of delicious harmony and abundance, every ingredient cooked to its perfect texture, all richly infused with saffron, with what turns out to be an absolutely perfect soccarat waiting underneath.

“When we were kids,” says Hector, “we’d always say: ‘Don’t worry about me. Serve the others first!’ We were hoping that after everybody else was served, only the soccarat would be left.”

海鮮飯傳統作法是將米、蕃紅花、橄

欖油及多種蔬菜、海鮮及肉類共同烹煮而

成。先由 sofrito開始,一種經由拌炒所產生的美味基礎,使用洋蔥、蕃茄及青椒,

寇斯特主廚循序地製作他的海鮮飯,先完

成一個步驟後再接著烹調下一個食材,讓

每個材料的美味得以融合。經過多次嘗試

確認後,主廚先將白米倒入海鮮飯鍋中,

成為一個大十字的形狀,最後再慢慢地往

四面撥散。

「你必須要瞭解你的米粒」寇斯特主

廚說道。「這點相當重要,瞭解米粒的話

可以免去許多的麻煩。」長形的米粒並不

適用於海鮮飯。最棒的選擇是中型的米粒,

不但能吸收多量的湯汁及食材所散髮出的

美味,同時也不會因烹調時間長導致軟爛

的口感。

海鮮飯特有的赤紅色澤來自於蕃紅

花。蕃紅花花絲非常脆弱,一磅就需經過

225,000道手工挑選,貴為全世界價格最高的香料。雖然得來不易,大多人仍認同

沒有使用蕃紅花的海鮮飯稱不上是正統的

海鮮飯。蕃紅花迷人的色漬及其苦甜口感

完全滲入每一粒米中,為海鮮飯帶出更深

層的滋味。

「蕃紅花能夠幫助所有的滋味相互結

合」主廚說道。「這香料為海鮮飯划上完

美的句點。」

白米入鍋後就不建議再攪動:置底的

白米會形成一層焦黃酥脆的鍋巴,稱為

「soccarat」。結成鍋巴後海鮮飯也差不多大功告成了-美味的鍋巴正是眾人勢在必

得的搶食目標。西班牙人從小吃海鮮飯時,

習慣先把上層白飯及海鮮放一旁,直接先

從鍋巴下手,美味程度可見一斑。

「我喜歡海鮮飯里充斥著各種不同的

食材」寇斯特主廚說道。「不過如果裡面

有更多的鍋巴就更棒了。」

寇斯特主廚的海鮮飯終於上桌,滋滋

作響,光看就是一種享受。蝦子、蛤蜊、

墨魚、淡菜、西班牙臘腸、彩椒及豆類等

配料一同燉煮,各種食材燉煮的恰到好處,

口感獨特,再加上蕃紅花畫龍點睛,讓味

道又更上一層樓。也別忘了,最下層還有

脆度無懈可擊、誘人的鍋巴,真是一場美

食饗宴。

主廚敘述著「我們小時候常說:『不

用顧慮我,先幫其它人服務吧!』因為我

們心裡期待著,當大家都拿到海鮮飯後,

只有好吃的鍋巴會剩下來讓我享用。」

You will sometimes hear people denigrating rosé wines – rosados in

Spanish – as characterless compromise wines, neither white nor

red. But true aficionados know that there is nothing indifferent

about the pink wines produced by the Torres family in Catalonia.

The family has been making wine since the 17th century. The

Spanish rosés tend to be darker than their cousins from France,

and this one has a gorgeous deep roseate hue that verges

on purple. That’s just right, given that Sangre de Toro means

“bull’s blood.” Don’t be fooled by the reasonable price.

This is a crisp, refreshing, surprisingly dry wine that pleases

with its elegant, summery lightness and bright strawberry

bouquet. Chilled to around ten degrees Celsius, it makes a

perfect partner for tapas or paella.
