Hi everyone,

Welcome to the March Issue, with March comes the anticipation of crisp and sunny spring days and the onset of British Summer Time. Sunday 25th March is the date to remember, when the clocks will “spring” forward an hour. That is if “the powers that be” haven’t decided to change it after all these years! So don’t be caught out.

Another important date this month is of course the 18th March - Mother’s Day, and I’m sure my 16 year old son will be showering me with fl owers and bars of mint Aero, while he does the housework for me (I can but dream!). This is a very busy day for all our food and drink venues so be sure to book your table early, we don’t want to disappoint Mum do we?

I do receive contributions from readers, but I often fear I’m beginning to scrape the bottom of the barrel. So please send me your jokes, if they are clean and funny and there’s no risk off ending anyone (there’s a challenge!) why keep them to yourself! If we only raise a slight titter or even a “Doh”, it’s a welcome break from the doom and gloom we are so often bombarded with. Apparently laughing is good for your health!

bothered by rules or books and just rush out there and have a good old hack, which always gives interesting results; others are more hesitant and timidly trim the edges off everything - tidy, but strangely unattractive, unless you like amorphous blobby hummocks.

It helps if you know what you want from the plant and what it’s likely to do after you’ve pruned it (apart from die, that is). Growth will usually start again from near the point where you’ve made your cut. If it’s a fl owering shrub, try not to cut off the developing fl ower buds. Shrubs that fl ower in the spring do so on old wood made the previous year (Forsythia, fl owering currant) and are pruned after they’ve fl owered. Deciduous shrubs that fl ower later on (Buddleia, Fuchsia) are pruned in early spring – their fl owers grow on new wood made the same year as they fl ower. If it doesn’t fl ower, don’t worry (unless the reason it doesn’t fl ower is because it’s been pruned at the wrong time). Before getting stuck in make sure your secateurs/loppers have sharp, clean blades. Then:

Cut out any dead or diseased wood fi rst.

Look at the plant’s overall shape and think about its natural habit – a graceful, arching specimen won’t look good reduced to a stubby lump.

The harder you prune, the more vigorously the shrub will respond (in most cases, but of course there are exceptions that will drop dead at the sight of you approaching).

Are you ready for a little spring pruning? More to the point, are your plants? It’s the time of the year when itchy fi ngers start reaching for the secateurs (if they haven’t already – your roses should have been done back in the winter, by the way). The problem with pruning is that there are a few rules to follow. The rules are straightforward, but working out which rule applies to which plant is where it can easily fall apart. There are hundreds of books available on the subject of pruning, but that often makes it worse – real plants never look like the diagrams and all those little cut mark lines they draw on so helpfully, just seem to confuse things further. Growing your own peppers is not much more involved than growing tomatoes, so why not give it a try? Pepper plants can be unbelievably pretty too, with fruits in a range of shapes and colour, generally on compact plants and preceded by small and very pretty white fl owers. This is a plant with great ornamental as well as edible potential.

Both chilli and sweet - or bell - peppers can be grown in a greenhouse border, in a sunny spot in the garden in warmer parts of the country, or on a sunny, sheltered spot on the patio. The heavier, earlier crop will come if you grow the plants in a greenhouse or conservatory, but it is well worth growing them outside too.

Sweet peppers, especially the red ones, are very high in vitamin A and both red and green peppers are also very high in vitamin C. Chilli peppers also have a good supply of vitamins C and A and in addition, contain both beta-carotene and something called capsaicin which is believed to have a useful eff ect on blood cholesterol levels.

The seeds are readily obtainable from many catalogues or garden centres but make sure you take into account the level of heat that each type delivers. Most seed packets and catalogues do make it very clear.

Sow the seeds between now and early April. I use a multi-purpose or a seed compost, but for good germination you will need to provide a bit of extra warmth, ideally from a heated propagator positioned in a spot where it receives plenty of natural light. If you don’t have the time or facilities to raise your own from seed, you can always buy a few plants in a garden centre or send off for them. with a high-potash liquid feed (most readily available as a ‘tomato food’). This helps to keep the plants growing strongly and the potash will encourage plenty of fl owers and so fruits to form.

If you are going for plants in pots, choose a planter that has good drainage and is 30cm (12in) or more in diameter, adding broken pots for extra drainage. Once there is no danger of late frosts you can put them outside in a sheltered, sunny spot.

If you’re after the hottest possible heat from your chilli peppers, then you’ll fi nd this comes from fruits that are totally ripe and from peppers that are grown in warmer conditions.

If you are growing sweet peppers in patio pots then you are likely to fi nd that there are still some unripened fruits on the plants when temperatures start to fall at the end of summer and well into autumn. To increase the chances of these ripening and increasing to full size, move the pots to a warmer spot or, if possible, to a porch, conservatory or greenhouse where they’ll get extra warmth and also plenty of natural light.

If you want chillies that look particularly good on the patio there are plenty to choose from. ‘Black Pearl’ is a hot chilli pepper with a distinct blackish tinge to the mature leaves and fruits that are black early on and mature darkest red. Over the last few years writing in this lovely magazine I have revealed a number of confessions,so continuing the revelations and “Confessions of a Furniture Restorer” I have one more for you.

I have never watched the fi lm “Star Wars”!

I admit I have caught snippets of it, which is enough to send me to sleep or run like a man possessed. It’s not just “Star Wars” of course, I really hate space travelling, galactic, ridiculous science fi ctional space craft, with rubbish stories and even more rubbish costumed beasts.

There, I said it! It’s now out...I feel a bit better now. I think confession actually works, maybe, in that, ”load off your mind” kind of a way.

Anyway I started thinking about this dark secret of mine, fi rstly because, whilst scurrying around today in my workshop, it dawned on me how much distance I must actually travel daily. Some days are worse than others, but I do cover some ground believe it or not, so I thought wouldn’t it be cool to have one of those hover boards that Michael J Fox uses in “Back To The Future”, or maybe I just need some rocket boots.

What’s annoying is, is (sorry I got excited and tapped to many is’s) is that there are all these boffi n scientists around the world, all watching Star Trek and stuff with crazy space ships and gadgets, but when they go to work they invent things like a mouse with a spare ear on its back, or interactive television games.You can even get a dart board game where you throw imaginary darts at your telly. Why not just put up a dart board and throw some lumps of pointy brass at it?

I saw the other day a childs’ drawing and painting kit that you plug into the telly,

ridiculous! I mean, what is wrong with a piece of paper and some crayons I ask?

So come on inventors and dreamers of a futuristic world. Polish ya spanners and knock me up some rocket boots so I can shoom around my workshop quicker, and give my weary legs a wii rest!

1. Creating a focal pointWhile traditional rooms often work around a fi replace or TV, larger, multi-purpose rooms can lack visual focus. By introducing colour, pattern and/or texture on one wall – perhaps above a sofa or behind a dining table – you’ll add character, interest and even drama. The easiest solution is to use a strong paint colour or to hang a large painting, photograph or print, while boldly patterned wallpaper also works well.

2. Using colourPale colours are generally considered best to emphasise the airiness of large open spaces. But should you go for one shade all over, or choose diff erent colours for diff erent areas? Using the same colour throughout gives an unbroken look and emphasises space, but if one end of the room is to function separately from the other – a living and dining space, a living and work space – you can zone these areas by varying their colour. A tonal scheme, with colour going from light to darker from one end to the other, can be particularly eff ective.

3. Planning your lightingUse lighting to delineate diff erent areas within your open-plan space, and illuminate diff erent parts to suit your needs, whether it’s a living area or working space, a kitchen or

a dining area. Layer in diff erent types of light in diff erent areas, using a mixture of concealed lighting (in ceilings or under shelves, for example) and eye-catching, over-sized fi xtures that suit the extra-large space.

4. Choosing a fl oor Choosing fl ooring for a multi-purpose space such as an open-plan cooking/dining/living area can be tricky, as the kitchen area needs to be able to cope with splashes and spills, while you’ll want the sitting area to feel cosy and comfortable. You have two choices: either run the same fl ooring throughout for a sleek, fl owing look, or choose a variety of types of fl ooring which will diff erentiate between areas. If you go for the former option, consider stone or wood, both of which can be softened with rugs where necessary, or consider high quality vinyl, which is spill-proof and forgiving underfoot.

5. Separating spacesNot all open-plan spaces need to be entirely open all of the time, so for truly fl exible living it’s advisable to include some sort of fl exible division. In a period property, panelled doors that can be folded back against the walls when not in use are perfect; in a more modern house a moveable screen, or perhaps ceiling-mounted panels (on a track) that can be pulled to one side when desired, would be enormously useful.

6. Linking spacesOpen-plan kitchen/living areas are ideal for entertaining, but how do you successfully blend the spaces seamlessly? One solution is to continue the style of your kitchen units for storage used in nearby areas, choosing a design that looks as good for a TV stand, say, as for a cutlery drawer. Versatility is key and you should consider not just colour but also texture, and even handles – long, slender handles

7. Solutions for storageKnocking two rooms together gives you a gorgeous open area – but, because you’ve lost wall space for cupboards and shelves, much less room to hide your clutter. One solution is to use tall, open shelving that doubles as a room divider as well as somewhere to display your stuff , while if you have a fl at-screen TV, mount it on a media wall with storage for DVDs concealed behind it. In fact, make the most of every tiny corner, building storage into sloping ceilings, around windows or in any alcove you can fi nd.

8. Buying and arranging furnitureConventional furniture won’t necessarily have the right proportions to work well in open-plan living areas, so you may have to look for larger-than-average pieces, and bear in mind that they have to look good from all angles, not just the front. Avoid the temptation to place all the furniture around the edges of the room (it will look like a nursing home); instead, create cosy sitting areas within the main space – with two sofas facing each other, with tables and lamps behind, perhaps, or else use modular furniture which creates sociable corners.

You’d be forgiven for thinking that opening an email from a family member, friend or colleague was perfectly safe. After all, you trust them all and they wouldn’t send you anything that would compromise your PC. Wrong!

The fact is ‘spoofi ng’ an email address is one of the most common spamming and phishing methods used today. Spoofi ng, put simply, is the process of entering a diff erent email address for the sender of an email other than the real address. So, for example, I could send an email from my real email address ([email protected]) that, when it arrives in your mailbox, says it comes from [email protected] It’s used for two main reasons; the fi rst is to conceal the real sender and therefore mask their identity, and the second is trust. People are more likely to open an email and any attachments or links if it comes from someone they know.

Sadly there is nothing that can be done to prevent your (or anyone’s) email address being used in this way. It’s bad enough receiving emails of this sort but it’s perhaps worse when it’s your email address that’s being used by the spammers! When family and friends start asking why you sent them such and such a fi le or link when in fact you did nothing of the sort. If you fi nd this happening to you all you can do is notify everyone to be vigilant as your email address is being spoofed and to be careful if they receive any emails from ’you’. If they aren’t aware of this method of scamming it’s easy for them to fall foul of a ‘dodgy’ link in an apparently genuine email from a friend.

Another common use of spoofi ng is for ‘phishing’ (so called because they attempt to ‘hook’ you in) emails. These are the emails that appear to be from your bank or other institution that typically warns you of irregular activity on your account and asks you to click on a link and enter your account details to reactivate your account. These types of emails are becoming more and more sophisticated and convincing. Just remember that no legitimate organisation would ever request this procedure, so NEVER follow any links of this sort, no matter how genuine they appear. If in doubt phone your bank.

So remember to be careful with your emails. Nothing is necessarily as it appears, and don’t click on anything in an email unless you are 100% certain of its origin. Sometimes it seems even your friends are out to get you!

The World’s Wonder at Warehorne doesn’t just ‘specialise’ in locally-sourced, home-cooked seasonal food – it simply doesn’t sell anything else!

Hosts John and Kathy Roberts have agreed to share some of their tempting recipes in The Village Directory, giving our ‘seasonal delights’ page a real local fl avour. Here’s one that will really whet the appetite, alternatively you could come and try it at the restaurant.Jam Sponge Pudding

Ingredients

100g Jam (approx)

100g Flour

100g Butter

100g Caster sugar

2 eggs (beaten)

Jar of Jam

30ml Milk

Pinch of salt

Salt and freshly ground pepper

Seasonal Delights

Method

1. Put the butter & sugar into bowl and cream together.

2. Add the eggs little at a time, with the fl our & salt

3. Fold in remaining fl our & milk

4. Grease a 900ml bowl, putting jam in the bottom.

5. Gently cover jam with the mixture

6. Cover bowl with greaseproof paper and steam for

approximately 11/2 hours or until risen.

7. Turn out onto a warm plate and serve.

Chef’s Tip :- You don’t need to be told that custard is ideal with this, but you may prefer cream! (Check timings if you use a pressure cooker.)

In another of our regular series on legal matters, this month Laura Hails, Legal Executive at Pengelly & Rylands Solicitors, talks about a new free legal advice service in Tenterden.

Following the success of our free family law clinic, we are pleased to announce that we will be running a free drop in service at the Sure Start Centre, based at the Little Explorers Children Centre, Recreation Ground Road, Tenterden. This is specifi cally for families with children aged under 5 years of age.

We will be available at the centre every Wednesday from February, to discuss topics including divorce, cohabitation disputes, fi nancial settlement after divorce and children issues. If any families have a legal issue or concern about their family, we will be available to talk things through, so that we can advise you of the best way forward in your situation, so that you can make an informed choice as to how you wish to proceed.

It is a sad fact that we meet a number of families, often with young children, who are separating or in troubled relationships. There are a number of facilities available in the local area to provide families with additional support, and we are proud to work in partnership with Sure Start to assist families with under 5’s.

We understand that costs are a factor in family matters, and people are concerned about instructing solicitors. We are aware that there is a need in the local area, particularly with families with under 5’s, to meet with a lawyer to discuss their concerns and to receive some initial free advice.

At Pengelly & Rylands we encourage couples to communicate with each other and to try to keep matters as amicable as possible, by discussing what they want. We now have the

HealthWalks are free, volunteer led, walks aimed at those who are currently not active enough to benefi t their health. Walks are generally between 40-90 minutes and leave from accessible venues such as libraries, villages halls and community centres.

There is no need to book, walkers simply turn up at the meeting point and are guided around the route by the volunteer walk leader. Most HealthWalks fi nish with refreshments and a chat.

Walking in a group is a great way to start walking and to stay motivated. You’ll make friends and discover new places to walk in your local area whilst improving your health and wellbeing at the same time.

The East Kent HealthWalk scheme covers the local authority areas of Ashford, Canterbury, Dover, Shepway, Swale & Thanet with more than 70 walks available. Walks available in the Ashford area are detailed on the right.

We are always on the lookout for new volunteer walk leaders. Training is free, and once trained you can join our team of over 200 leaders. Advice and support is always available from the HealthWalks staff and various social meetings and events are arranged for you throughout the year.

The Green Thing!Checking out at Tesco, the young cashier suggested to the older woman that she should bring her own grocery bags because plastic bags weren’t good for the environment.

The woman apologised and explained, “We didn’t have this green thing back in my earlier days.”

The clerk responded, “That’s our problem today. Your generation did not care enough to save our environment for future generations.” She was right -- our generation didn’t have the green thing in its day.

Back then, we returned milk bottles, pop bottles and beer bottles to the shop. The shop sent them back to the plant to be washed and sterilized and refi lled, so it could use the same bottles over and over. So they really were re cycled. But we didn’t have the green thing back in our day.

We walked up stairs, because we didn’t have an escalator in every store and offi ce building. We walked to the grocers and didn’t climb into a 200-horsepower machine every time we had to go two blocks. But she was right. We didn’t have the green thing in our day.

Back then, we washed the baby’s nappies because we didn’t have the throw-away kind. We dried clothes on a line, not in an energy gobbling machine burning up 2000 watts -- wind and solar power really did dry our clothes back in our early days. Kids got hand-me-down clothes from their brothers or sisters, not always brand-new clothing. But that young lady is right. We didn’t have the green thing back in our day.

Back then, we had one TV, or radio, in the house -- not a TV in every room. And the TV had a small screen the size of a handkerchief (remember them?), not a screen the size of Yorkshire. In the kitchen, we blended and stirred by hand because we didn’t have electric machines to do everything for us. When we packaged a fragile item to send in the post, we used wadded up old newspapers to cushion it, not Styrofoam or plastic bubble wrap. Back then, we didn’t fi re up an engine and burn petrol just to cut the lawn. We used a push mower that ran on human power. We exercised by working so we didn’t need to go to a health club to run on treadmills

that operate on electricity. But she’s right. We didn’t have the green thing back then.

When we were thirsty we drank from a tap instead of drinking from a plastic bottle of water shipped from the other side of the world. We refi lled writing pens with ink instead of buying a new pen, and we replaced the razor blades in a razor instead of throwing away the whole razor just because the blade got dull. But we didn’t have the green thing back then.

Back then, people took the bus and kids rode their bikes to school or walked instead of turning their mums into a 24-hour taxi service. We had one electrical socket in a room, not an entire bank of sockets to power a dozen appliances. And we didn’t need a computerized gadget to receive a signal beamed from satellites 2,000 miles out in space in order to fi nd the nearest fi sh and chip shop.

But isn’t it sad the current generation laments how wasteful we old folks were just because we didn’t have the green thing back then?

Warning: Don’t make old people mad, we may not like being old in the fi rst place, so it doesn’t take much to wind us up!
