SMoked duCk noodle Soup This tasty, light and warming meal on a cold winter’s day.

Buy just 1 duck breast serve 4 hungry people!

• 170g smoked Duck breast -sliced thinly • 4 spring onions - sliced diagonally • 2 large heads bok choi - or greens of choice (spinach, cabbage) • 200g noodles • 2tbsp soy sauce• 1tbsp of rice wine or dry sherry • 1star anise• 2litres chicken stock• 2 red chillies -de-seeded and sliced thinly • 125g shitake mushrooms - sliced • 2.5cm piece of ginger -peeled and sliced thinly • 3 garlic cloves -crushed • 1tbsp groundnut oil

Heat the oil in a deep saucepan and add the garlic, gingerand chilli. Heat this on a gentle heat for a minute. thenadd the mushrooms and stir fry for 2 minutes beforeadding the wine and soy. next pour over the stock, addthe star anise and bring to the boil. let it simmer like thisfor a few minutes. then add the green of your choice andleave to cook for 2 minutes. Finally, add the noodles,spring onions and duck slices. serve and enjoy!

SMoked HAddoCk& CoCkle CHoWder

The perfect winter warmer - one pot cookingat its most delicious! - Serves 4 - 6

• 500g naturally smoked haddock - skinned & chopped• 100g smoked streaky bacon - de-rinded & chopped• 1 small onion - chopped• 1 clove garlic - chopped• 30g butter• 300g potatoes - cubed• zest of lemon• 1 tin sweetcorn• 2 x 120g tins cockles• 500ml milk• 1 bay leaf• salt & pepper• 2 tbl fresh parley - chopped

Gently fry the bacon, onion & garlic together in a heavybottomed saucepan until softened. add the cockles andsweetcorn (juice & all), potatoes, bay and lemon zest. pourin the milk, cream and simmer for about an hour until thepotoates are tender and the soup is rich and creamy.lightly crush the potatoes to thicken the consistency. addthe smoked haddock and simmer for a further 5 minutesuntil the fish is opaque. stir in the parsley and serveimmediately with chunks of crusty bread.
