Into the wildThe quest for the perfect tree

L ike almost everything in our lives, it started out with the best of intentions. Our time-tested ritual of going to the garden center on a whim some evening after work,

selecting the perfect fresh Christmas tree, tying it to the top of our car and then driving exactly 4.5 miles per hour all the way home on some snowy December night had worked for years.

It was time to shake it up a bit.After borrowing a friend’s giant SUV and a bunch of nylon straps with finger-severing,

spring-loaded ratchets and donning cold-weather wear, we headed off to a tree farm to cut our very own from the freshest of fresh trees available.

If you think sorting through trees at the garden center is daunting, it’s nothing compared to standing in a 160-acre forest with a hatchet and a map indicating where to find each type of tree.

In 3 feet of snow.With a 15-mile-per-hour wind.And exactly 37 minutes of daylight

remaining.The map was supposed to help. Did you know there are nearly a dozen

varieties of trees to choose from in this part of the country? In the fir variety, there’s balsam, Canaan, Douglas, Fraser and noble. In the spruce group, there is Colorado, Norway and white. And in the humble pine family, there is white and Scotch.

Are you kidding me?I wanted a full one with the short, soft

needles that don’t make your fingers bleed when you decorate it, whose branches stand tall and proud well into January and then only drop its needles when placed on top of the 12-foot snowbank in the driveway, like Admiral Perry placing a flag on the North Pole.

Well, that kind of tree wasn’t indicated anywhere on the map.

So we slogged through the snow until we found the absolute perfect tree and managed to harvest it with the only severed limbs being those of the tree.

Turned out to be a Fraser fir. Who knew?

Tree farms don’t have those plastic fishnet stockings that garden stores put on their trees to make them a manageable size, so we did our best to attach a bunch of the nylon straps from one side of the giant SUV over the tree to the other side. We then ratcheted them tight without

losing any fingers. We hoped and prayed the tree would not fly off on the interstate and cause traffic drama on our way home.

Speaking of manageable size, when you buy a sofa at the furniture emporium, it somehow manages to grow to the size of a locomotive between the warehouse and your living room.

Same thing happens when you select a tree in a 160-acre forest.

Only worse.We barely got the tree through the front

door. And then promptly scraped a ravine the

size of the Grand Canyon in the ceiling as we tried to stand it up.

After decades of home improvement projects, we have virtually every hand saw imaginable, so we quickly cut a full 18 inches from the bottom of the tree.

With all interior decor, there’s something really, really important about scale and proportion, intensity and restraint, expected and unexpected.

When you snap the top off a Christmas tree as you scrape it against the ceiling and then cut a foot and a half from the bottom so it won’t touch the ceiling anymore, you end up with tree that looks like a giant green bowling ball.

That would definitely fall into the category of unexpected.

The hour was growing late, and we decided Sunday morning would be a much better time to decorate the tree and agreed to call it a night.

About 2 a.m., there was a ruckus downstairs.

It was only the second of December, and having misbehaved in epic proportions the past year, we knew it was not Santa Claus down there.

It seems trees that make their home in the forest tend to become homes to animals that live in the forest.

And those animals go into a deep sleep when the weather gets cold and then awaken when spring arrives.

Or when someone moves their home to a 68-degree living room.

expressions suggested they were pretty sure they’d entered some parallel universe.

We were tired but had the presence of mind to grab a laundry basket and sweep the chipmunks from the drapery rod into the basket and then out the back door, shooing them toward the evergreens in our backyard. I have no idea what kind of evergreens they are.

The best of intentions. Although things took some crazy twists

and turns, we had a great story to tell and pictures of an elaborately decorated room-size bowling ball that would probably appear on the next year’s Christmas card.

Here’s hoping the only chipmunks showing up in your home are Alvin, Simon and Theodore on a CD singing, “Christmas, don’t be late.”

My husband and I married young. We had a mortgage, he had student loans, and I was still in school and unable to work full time. In other words, we were on a limited budget. And for a person like me, with whimsical visions of what could be in every space she sits, decorating and making my new place feel like home was a challenging proposition.

Even today, out of school, I don’t know that we will ever be the type of people who have the luxury of renovating or redecorating without regard for the bottom line. But really, where is the fun in that anyway?

The experience of trying to create an inviting home on a less than ample budget prepared me to help others do the same thing. Here are a few ideas on how to add timeless character, no matter your budget. Revive and repurpose

The satisfaction of restoring an old piece of furniture is twofold. It awakens and refreshes the furniture and offers a creative outlet. Adding a neutral paint and a pop of intrigue with antique fixtures is a good combination. Change up a sentimental piece or yard sale find and repurpose with a purpose.

Mix it up Matching furniture is a thing of the past.

Don’t be afraid to mix old with new, chic with the rustic, and bold with subtle. Find a good balance by using a modern glass lamp on a rustic side table. Throw a bold geometric patterned pillow on a vintage chair. Our home has a mix of furniture from different eras, some left with a wood finish and some painted with different colors. We have décor items collected from our world travels. In our kitchen, you’ll find vintage glassware mixed with modern dishes. Nothing goes together, but it all somehow manages to work. Add texture

One way to bring the outside in is to add texture with natural elements like wicker baskets, preserved greenery or freshly cut flowers. Add warmth to your living area with a cable knit or a wool blanket. If you have wood floors, add texture with an inviting rug. Add some interesting wood frames to your gallery wall, and find a wooden bowl or some pottery to use as a centerpiece on your table.

Using different textures around your home adds visual interest and character. I purchased a pair of vintage wicker baskets at a yard sale for a dollar, and they are among my favorite things in my home. One of them is perfect for holding a collection of blankets and throw pillows Clean out and organize

This is especially important at the change of seasons. By constantly assessing and reassessing what’s working and what isn’t, you’ll have the room and the reason to add new pieces and keep the creative process flowing.

Naomi Neilson Howard, founder and CEO of Native Trails, grew up in San Jose, California, a city now known as the capital of Silicon Valley. Howard’s passion and zest for life, however, has much earthier roots than that of her high-tech birthplace.

At an early age, Howard became enthralled by the raw talents of artisans she met while traveling with her family in central Mexico, the birthplace of her stepfather.

Goldilocks granite - Earth’s signature rock

A beautifully patterned granite becomes a focal point and conversation piece in this home bar - a perfect choice for this entertainment space.

Timing is everything. For planet Earth, that was certainly true. Several billion years ago, the Milky Way galaxy was nothing but a swirling cloud of gas and dust. This material was disturbed, likely by a nearby exploding star, which caused the cloud of dust to collapse as gravity pulled everything together, forming a solar nebula that eventually formed our sun. Over time, the remaining molten gas and fire cooled, forming the planets as we know them, including Earth. Venus was too hot, Mars was too cold, but Earth was “just right.” The Goldilocks principle states that something must fall between certain margins, as opposed to reaching extremes. An igneous rock, granite is a major part of the continental crust, making it a signature rock of Earth. Whether buried under sedimentary rock or exposed due to weathering of softer rock that once lay above it, its color, veining and texture tell an important story.

Donald P. Schwert, North Dakota State University professor emeritus of geology in the department of geosciences, understands what it takes to produce such a masterpiece. “Each rock has its own amazing story, and we see an amazing history of earth processes associated with each slab,” says Schwert. By definition, granite is made up of 25  percent quartz, 65  percent feldspar, and mica, resulting in a peppered coloring of pink, gray and white. Many other variations in natural stone occur, such as brilliant blues, merlot maroons and verdant greens. Some may be fossil laden while others evoke movement with fingering veins of color.

Humans have long used granite for infrastructure, tools and art. The distinctive stone eventually made its way into our homes for beauty and durability.

Q: Tim, we are comparison shopping for a builder for our new home. How do we find a good quality builder with the best price?

A: This question boils down to how

you define “value.” We could define “value” as simply

“the lowest price among new homes or remodel projects.” But doing so discounts the value of providing a high level of construction quality, as well as service before, during and after your project.

Cost is important to all of us, but real value is defined by how satisfied customers are with the building process and the finished product.

A new home is likely to be the largest single financial investment anyone will ever make. Why, then, are so many people temped to trust that investment to the lowest price and a limited definition of a home’s value?

Speculative Homes With Spectacular Results

New Urban enclave, “Traditions at Lovers Lane,” was home to two Vision Builder’s properties during the 2015 Parade of Homes. The Magnolia District of single-family homes features the privacy of fenced backyards as well as distinctive Craftsman styling.

At 664 Boston Park Drive, the Hardie Board® in “heathered moss” sets the tone for interiors that feature farmhouse style finishes.

Interior Designer Tara Coomer of Coomer & Co., selected finishes and staged the homes with help from BG Home Furnishings. The homes feature casual living with an open floor plan that combines the kitchen and living areas.

Hardie Board® siding in “majajo beige” and lantern-style exterior lighting from Kicheler’s Seaside Collection gives 670 Boston Park Drive a beach-like sensibility.

Every key to every door in the Magnolia District is part of the package deal. New Urban living means homeowners enjoy shared amenities including a community pool, fitness center, a clubhouse, parks and play areas.

Builder Johnston Boyd was the center of calm during the 2015 Parade of Homes. He stood in the kitchen of one of two spec homes and fielded questions from the scores of people who passed through.

Boyd had the answers. “Believe it or not, I got that at Home Depot,” he says of the brackets that support a barn door access to a home office. The furnishings were courtesy of BG Home Furnishings. The square footage, the school system, the amenities and the specifics of the blueprint were facts that Boyd had at his fingertips because he’s been preparing for them for almost a decade.

When Traditions at Lovers Lane was a swath of undeveloped land, Boyd was part of a two-man team that wanted to introduce New Urban architecture to the Warren County client. Now, 10 years later, the neighborhood that Boyd and founding partner Steven Freeman envisioned has become a reality. There is mature landscaping maintained as part of the neighborhood pact. The sidewalks, front porches and zero lot lines mimic the intimacy of urban neighborhoods before suburban sprawl redefined them.

The homes that Boyd showcased in the Parade are located in the Magnolia District of Traditions, where New Urban development meets family-style living. These homes offer the privacy of fenced yards, and they’re within a short walk of the community swimming pool and shared clubhouse that make Traditions more than just a subdivision.

Their idea was to design an entire neighborhood with room for all. Boyd feels that

Coomer used warm shades of gray from Sherwin Williams on the walls and ceilings. A unique “minka 6” chandelier creates a candelabra effect.

The home at 664, features a two-story design with stairs leading from just off the great room. There is a downstairs office, a second-floor master suite and 2251 square feet of comfortable, casual family living.

Thanks to an open floor plan the fireplace in the great room—with its custom trim and granite surround—can be enjoyed from anywhere in the entire kitchen and dining area.

New Urbanism clearly has the potential to reduce isolation and bring life back into balance. So despite the inevitable last-minute rush to apply the final touches, Boyd’s calm demeanor on opening night is sort of a fitting tribute.

His is the calm after the storm. Boyd admits that his heavy workload is

a good problem to have. He has been busy building homes because he has also been busy selling them. “The housing market is very, very healthy,” Boyd observes.

Homes in the Magnolia District share a Craftsman styling on the exterior with variations on the architectural details that allow each one a distinct curb appeal.

Boyd’s Parade entries both feature oversized living areas adjoining open-concept kitchens, covered porches, upstairs-downstairs circulation and fenced backyards with private patios. Despite its high-density infrastructure, the homes are carefully sited, and the concept works. As Boyd points out, “It’s line of sight that determines privacy, not proximity.”

At 670 Boston Park Drive, the “Macon Plan” was designed with a side entry garage and a forward facing staircase. The open circulation includes a large living area, a comfortable dining area and kitchen combination.

Sliding barn doors in rustic hardware enhance the farmhouse motif. Hand-scraped hardwood floors and shades of gray paint complete the look.

Interior Designer Tara Coomer of Coomer & Company worked with Boyd throughout the project, from the fixtures on the front porch to the selection of furnishings for the Parade reveal.

Coomer sought a balance for each. She wanted that intersection of trendy and timeless so that whoever fell in love with the blueprint and the neighborhood would also love the finishes.

Both homes rely on a strategy of point, counterpoint—trendy and timeless.

A side-entry garage gives 670 Boston Park Drive a longer, leaner styling that Coomer accentuates by using what she calls a “beachy” palette. In this case, the beach that inspired her was the worn, weathered environ of a New England coastline. From the outside to the inside, she used a water-color palette of soft grays, distressed woods and subtle shades of blue.

In the kitchen, that intersection of trendy and timeless took the form of custom cabinet colors that mismatch top and bottom— which is trendy—and a subway tile backsplash—which is timeless.

Coomer chose a beachy motif for the interiors. She sourced the furnishings for both homes from Bowling Green Home Furnishings.

Next door, at 664 Boston Park Drive, the finishes take on the quality of a rustic farmhouse.

Even before walking in the front door, visitors will notice the lantern-style lighting and the thin strips of knotty pine beadboard on the ceiling of the porch. Inside, the home features hand-scraped, rough-hewn hardwood floors, a sliding barn door that adds intrigue and privacy to the home office, and a palette that evokes a late summer cornfield. Soft orange and warm browns are paired with contemporary versions of Americana elements, like the kitchen pendant lighting that resembles old fans and the oversized equine oil painting leaning on the mantel above the fireplace.

Both builder and designer added plenty of custom finishes and features to these spec homes. They personalized each one without being entirely sure of who will eventually call it home. One thing is certain: “spec” can be the shorter version of “speculative,” but “spec” can also mean “spectacular.”

Builders by Association: The Role of a Professional Organization

Anita Napier is looking at the 2015 Parade of Homes in the rearview mirror, but that doesn’t stop her enthusiasm for all things construction. The CEO of the Builders Association of South Central Kentucky feels that the best thing about her job is the opportunity to help put people in their own homes.

The builders who participate in the parade benefit from the foot traffic, so even if visitors don’t need a new home, they may need an update to their existing home. Either way, the Builders Association is a great place to start.

According to the Builders Association, people in the market for a new home should ask the following questions:

• Is the builder licensed and insured?

• Do they carry workers’ compensation insurance?

• How long has the company been in business?

• Do they have a permanent address?

• How many homes has the builder built?

• Who is the contact for customer service after the sale?

• Should requests be made in writing?

• What responsibility does the builder assume for the work of subcontractors?

• Who will be responsible for correcting problems with major appliances?

• Does the builder use Energy Star appliances and methods?

Napier says there are two questions people definitely need to ask: Is the builder a member of a local homebuilders association? If not, why?

Napier explains that membership in a professional organization not only provides a potential client with peace of mind in selecting a contractor, but it also shows a commitment on the part of the contractor to engaging their resources.

“Recently, Warren County went through a comprehensive plan to rewrite and determine what can be built, where it can be built, and how it can be built,” says Napier. As she points out, having a seat at the table when boundaries are drawn is an important consideration.

“It seems like there is a new legislative issue every day,” says Napier. She cites recent water rulings by the EPA as an example. The basic argument is that we all live downstream. It is therefore important to track the water as it progresses from one property to the next. But as Napier points out, small ponds and retaining pools on private property don’t pose the same threat to the water supply as something more considerable, such as nitrogen runoff from farming.

Napier agrees with the premise that the EPA should monitor potential pollutants, but she believes that the protections sometimes go too far. She believes that serving as a voice for the building trades also means the Builders Association serves the greater good.

“We offer a voice to try to make a decision of what’s best for the community,” she says, “because if we are not building, people aren’t buying homes.” And as Napier points out, homebuilding and homeownership are driving forces of the American dream.

As the building market rebounds from its freefall, builders and contractors may find themselves busier than they have been in awhile. And while it’s a good problem for contractors to have, it can create a backlog for homeowners who want to do a building project or a remodel.

Bob Appling is the director of the Bowling Green/Warren County Contractors Licensing Board, and he references the 1998 spring storm that brought tornadoes and hail and did more than $510 million worth of damage to Warren and the surrounding counties. People were scrambling to find roofers and contractors who were qualified to make the repairs, he says.

Appling says he was pleased that in Warren County, there was not a spike in complaints during the weather-related building surge. He believes that his organization makes a difference and says the licensing board is a good first stop when searching for qualified help.

job-related injury. Subcontractors also need an occupational license in their particular field, whether it is roofing, electrical, plumbing or tile.

“If they’re not licensed, they don’t need to be messing with them,” Appling says of the relationship between a contractor and a potential client. “Most of our complaints come from people who went ahead, either because the price was cheap, or they ‘knew this guy,’ or whatever. They took on their own project, and that’s where most of our complaints come from,” he explains.

In addition to seeking out a licensed contractor, homeowners should also ask to see some of their finished projects. This gives the client the opportunity to inspect the work rather than just accept the contractor’s assurance. “We always recommend that they go to other job sites and see what kind of job they did,” says Appling.

His organization cannot make specific recommendations, but they can provide a list of licensed builders and subs. “I can give you a list, and I can tell you if we have had complaints about them or not,” he explains.

He says one absolute red flag comes from what he calls “fly by night” subs. “Do not use these transient, door-to-door contractors who come through with blacktopping or driveway sealing or whatever,” says Appling.

One strategy that can be used to avoid problems is to put agreements in writing. If it’s in the contract, both parties have already discussed and agreed on the process and price. The most common complaints, he says, are cost overruns, either because of missed deadlines or change orders.

“It’s not always a contractor’s fault (when problems arise),” says Appling. “A lot of times people ask for things that weren’t even in the contract.”

“We try to caution people on this. Make sure you have a good contract,” he stresses. “Designate what you want done. Designate the grade of material.” Because as Appling point out, “A good contract makes a good end-of-job understanding.” 1141 STATE ST • BOWLING GREEN, KY • 270.781.3530

By the time homeowner Barbara Gregory noticed water stains on her ceiling, the damage was done. The roof above was leaking, and the attic insulation was saturated. Her insurance company appraised the situation and made a recommendation. Roofers were called out to make the repairs, and Gregory went to visit her sister for a couple of days to avoid the dust and confusion of a home construction project.

And then it started to rain. But the rain didn’t come down gently; it poured. Unfortunately, the “handymen” who were doing the work didn’t protect the roof, and the small stain on her ceiling became a big headache. Many of her belongings were soaked with rain, and Gregory came home to an enormous problem.

The insurance company could have applied a phrase from the fine print of the contract requiring the insured to “protect damaged property from further loss,” and that would have meant Gregory would be paying out of pocket to replace everything that was damaged. This sometimes occurs when an unlocked home is burglarized during the repair process.

In this case, the insurance company agreed to make the repairs, but the time frame was weeks, not days. So Gregory, along with her daughter and their two dogs, were forced to stay in a hotel while the repairs took place.

Anyone who has battled a claims adjuster for home repairs should be aware of a homeowner’s rights, and a good place to start is to know that a cash option for a handyman to make repairs is never a good idea. Homeowners have a right to choose the contractor to do the repairs, and a licensed contractor vetted by the city or county of residence can make the difference between a successful restoration and an ongoing problem.

People should also know that the adjuster works for the insurance company, not for the homeowner. Insurance claims are generally made under duress, so homeowners are vulnerable to their tactic of “saying ‘no’ before they say ‘yes.’” This strategy keeps homeowners off guard when they feel they must agree to the settlement. But in addition to selecting their own contractor to make the repairs, homeowners have the right to hire an independent appraiser. If the dollar amounts are too far apart, homeowners also have the option of paying a portion of the fees for a third party to inspect the damage and mediate the process of reaching a settlement.

Don’t allow legalese and contractual language to be a deterrent. A home is the most important investment most people make. When dealing with a claims adjuster, know your rights and stand your ground.

Recycling the Written Word

When Half Price Books opened its first store, Richard Nixon was in the White House, high school kids had eight-track tapes, and e-readers were not yet a thing. It was 1972, when a pair of bibliophiles launched their venture from a converted Dallas laundromat with 2,000 books from their personal collections.

Today, Half Price Books and Magazines has grown from that humble proposition to become the largest family-owned used bookstore chain with 100 locations across the nation, including one of four outlet stores right here in Warren County.

Store Manager Wes Norman credits the success of the brand with a clear vision. Their mission is to share a passion for literacy, and their corporate culture also reflects the idea that companies can help reduce the environmental impact and keep a green footprint.

“We were green before it was cool,” he says. Across the company, shelves are stocked from a cycle that begins when

customers come in to sell their gently used titles. In fact, everything from Harlequin to hardbacks, music, movies and magazines can capture a buyer’s attention and put some coin back into the seller’s pocket.

“We have a little bit of everything that is printed or recorded,” says Norman. “Magazines, LPs—we even get VHS still. You’d be surprised,” he says when asked how many people remember when VHS was on point. Today, digital media is the easiest access, but Norman argues that there is a huge value in owning original texts.

New releases are only available at larger Half Price Books stores. But it isn’t long before Game of Thrones becomes Clash of Kings, and the repurposing begins. The retail stores buy directly from the public, and the outlet stores buy from the retail stores.

Norman says the outlet is something of an experiment to see if the company can find good homes for a stock of books that might otherwise become pulp—or worse, landfill. “We keep them in the life cycle,” explains Norman. ”We give every book multiple chances to sell,” he says, even if it means doubling down on the sale price and putting books on clearance.

Throughout the store, which is located along an access road to Greenwood Mall, hundreds of shelves are lined with everything from DIY chicken farming to Gone Girl fiction. There are movies and magazines and music. There are hundreds of gently used children’s books.

As a graduate student at WKU, Norman helped open the store two years ago and continues to enjoy the intellectual perspective of a life among books. His staff also shares a passion for literature and literacy. “This bookstore is not the same as most retail environments,” he says. “Here, you get to hang out with people who have a passion for reading and learning.”

They have donated books to school

libraries throughout the region. They participate in a backpack program where books are included alongside canned food and fruit strips for kids who face hunger on school breaks. Norman points out that feeding the mind is just as important as feeding the body and says his outlet alone has donated thousands of books. Beneficiaries include Community Action, local libraries, Head Start and soon the Boys and Girls Club.

Eventually the books that can’t find a home are shipped to the pulp mill to be recycled into paper for the next best seller. My family and I recently built a home in Oklahoma City. Designing my dream kitchen was by far the most thought-provoking and exciting part of the process. My kitchen design really began with one of my must-have items: a large hanging pot rack centered above an oversized island. I love to cook, and functionality was a crucial element. Pot racks not only serve a useful purpose but act as an accent piece, adding color, depth and interest in an otherwise empty overhead space.

measuring cups and frequently used kitchen utensils such as large ladles and heavy-duty spatulas, all while keeping the kitchen uncluttered and organized.

When choosing your pot rack, consider the hardware finish and color palette in your kitchen. While many may want to match finishes, you can also choose a contrasting color to draw more attention to the piece. That is what I did. The hardware in my kitchen is a dark rubbed bronze set against antique white cabinetry,

so I chose a bright copper rack to hang above my island. It has been treated with a sealant that protects its sheen, preventing it from oxidizing and changing the patina of the metal. Though in many instances the changing color of natural copper is part of the appeal, I wanted the rack to maintain its original color and luster.

Aesthetics aside, pot racks need to be functional, and it is important to make sure they are installed properly. While building our house, we quickly learned

that the ceiling studs would not support the weight of the pot rack I had chosen. It holds up to 20 pots, many of which are heavy cast iron. Additional support and reinforcements had to be secured to the existing overhead beams.

Pot racks are easy to shop for and can be found at most major kitchen suppliers and online. No matter the kitchen size, pot racks are a fabulous way to organize and embellish the heart of your home.

SERVINGS: Makes roughly 25 1-ounce meatballs. This recipe is easily doubled or tripled for filling the freezer or for a big party.

INGREDIENTS: 1 tablespoon canola or vegetable oil1 pound ground turkey (we used 90 percent

lean)2 tablespoons finely diced onion1 egg, beaten1–3 tablespoons Deb’s Jalapeno Pesto,

depending upon how spicy you like your meatballs

6–8 tablespoons bread crumbs1 teaspoon salt2–3 turns of the pepper mill

DIRECTIONS: Preheat the oven to 400.Use the oil to grease a sheet pan or cookie sheet.

Mix all other ingredients in a bowl.If you would like, test your meatball mix: Fry a little bit to see if you want to adjust any of the seasonings.

Shape into small meatballs and roll to round out the edges. Place on the oiled sheet pan with about 1 inch of space between each ball.At this point, you can freeze the meatballs for up to a month or refrigerate for up to two days until you need them. It never hurts to have meatballs on hand!

Roast for 10–13 minutes, or until cooked through.

Once these are cooked, they can be served immediately with the sauce or dip of your choice—even the jalapeno pesto, mixed with a bit of mayo or on its own.

Her guidelines for a holiday party spread? Keep it simple. You don’t need a lot—really no more than three items for a good assortment of hors d’oeuvres. Deb Jenkins’ sPicy shriMP PesTo WonTons

SERVINGS: Makes roughly 25 pieces

¼ cup canola or vegetable oil25 thin wonton wrappers, 4-inch-square size2 tablespoons Deb’s Jalapeno Pesto2 pounds U13–15 shrimp or 1 pound

U26–30 shrimp (the U numbers tell you how many shrimps you will get per pound, so 13–15s are twice as large as 26–30s. We used 26–30s for dainty wontons)

8 ounces sweet chili sauce (find in the Asian aisle of the grocery store or at an Asian market)

DIRECTIONS:

Preheat the oven to 400.

Use 1 tablespoon of the oil to grease a sheet pan or cookie sheet.

Spread out wonton wrappers on your work space.

Using a pastry brush, thinly spread Deb’s Jalapeno Pesto on the wrappers.

Add a shrimp to the center of each wrapper.Fold and seal the wrappers around the shrimps. Use your finger dipped in water or a beaten egg as glue.

Place on the greased sheet pan and bake for 4–6 minutes.

Use a fish spatula or turner to turn all of the wontons over and brown the second side.

Remove from the oven and dunk in sweet chili sauce, or serve with the sauce on the side.

Turkey lasagna béchamel sauce:INGREDIENTS: ¼ Cup unsalted butter1 Clove garlic, minced¼ Cup all-purpose flour3 Cups whole milk¼ Teaspoon freshly ground nutmeg½ Cup grated Parmesan cheese¼ Teaspoon freshly ground black pepper

DIRECTIONS:Melt butter in a medium sized saucepan, over medium heat. Add garlic and sauté for 1 minute or until fragrant. Add flour and cook 2 minutes, stirring constantly.

Whisk in milk and bring to a boil, stirring constantly. Stir in nutmeg, Parmesan and pepper. Cover with plastic wrap and set aside.

INGREDIENTS: 6 Lasagna noodles 1 Medium onion, chopped medium dice 1½ Pounds ground turkey1 teaspoon dried oregano 16 Ounces Ricotta cheese 1 Large egg, beaten 1-10 Ounce package frozen spinach, well drained2 Cups shredded Mozzarella cheese, divided

DIRECTIONS: Cook lasagna noodles according to package directions. In a large skillet, over medium heat, cook ground turkey and onion until turkey is brown, no longer pink inside and onion is soft.

Stir in oregano. In a medium bowl, mix together Ricotta, egg and spinach.

Place 1 cup Béchamel sauce in bottom of 13 x 9-inch lasagna pan and spread to cover the bottom. Layer with lasagna noodles, 1/2 the Ricotta cheese mixture, then 1/2 ground turkey mixture.

Top with 1 cup Mozzarella cheese. Repeat layers (noodles, remaining Ricotta and ground turkey) and top with remaining Béchamel sauce. Sprinkle with remaining 1 cup Mozzarella.

Bake in a preheated 350 degree F oven for 40-45 minutes or until bubbling and top is golden brown. Let stand for at least 10 minutes before serving.

Dinner really isn’t about the food we eat

REFLECTIONS

Quite the

PalateThere’s a constant conflict at our house, and it involves the kitchen. The conflict is actually multi-layered. I am a vegetarian; my husband and son adore meat. I like simple food where the flavors are very bright and clear; my husband thinks if one spice is good, 10 must surely be better and Worchester sauce absolutely goes with everything! I like cold soups, pasta dishes and salads in the summer; my husband likes whatever is on his plate to be steaming up the whole kitchen with its temperature. I could go on, but I’ll spare you the gory details.

Needless to say, our kitchen can be a place of disagreement from time to time. Were it up to me, I would never purchase meat, potatoes or lemon pepper, and until he moved in, I had never thought about or bought Tobasco or Worchester sauce. Now, I often give him large bottles of them both for holidays. Pre-marriage, my husband was quite content to mix hamburger, mushrooms, tomatoes, garlic and whatever spices he had access to and pile that on to a piece of white bread. I would be happy eating homemade granola 2-3 times per week. It’s been a bit of a challenge finding a compromise.

Four years into our marriage, however, we mostly have found a place to settle in together. My husband and son pretty

gamely eat quinoa, vegetarian dishes and even Quorn, a fungi substitute for meat, regularly. I agree to grill meat and boil or roast potatoes on at least a weekly basis. Then, the three of us sit down to a meal that is often 2/3 one kind of protein and 1/3 another.

Here’s the thing, though, it’s not about what we eat; it’s about what we talk about and how we communicate that really matters. Taking the time to enjoy each other’s company, learning about our days and getting to the bottom of any concerns can be done over steak, pork chops, TVP, cereal or many dishes of beautiful vegetables.

It would probably be easier if I craved the occasional piece of steak, but I don’t…ever. I would love it if my husband suddenly pined for gazpacho and a simple green salad, but he’s not going to…ever. That’s ok. My son and my husband have broadened their culinary palates because of the food I am interested in, and I have overlooked how unappealing I find meat in general to feel satisfaction in them enjoying it as the three of us routinely take a little time at the end of every day to reconnect. I thank the cows, the pigs, the chickens, the fruits and vegetables, the grains and even the spices that allow us this time together.
