A key member of the TRYP team, Kingsley Egbuchunam has certainly led an intriguing life, one which has lead him to where he is today as the hotel’s Associate Director of Sales and Marketing.

Though currently a New York local, Kingsley was actually born in Africa and has enjoyed traveling throughout his life, including his time living in England while attending boarding school in London. Upon graduation he was accepted to the University of Massachusetts Lowell, where studied Business Management and played out his passion for basketball on the court.

With family and friends scattered around the world, it’s no wonder travel has become one of Kingsley’s passions.

for Crust: 1cupall-purposeflour¼ tsp baking powder¼ tsp salt4Tbspbutter,cutintosmallpieces1largeegg2Tbspmilk

for filling: 2smallrussetpotatoes4½cupschickenbroth5mediumcarrots2tspchoppedthyme2Tbspoliveoil1largeonion,finelydiced3Tbspall-purposeflour1/3cupmilk3stalksofcelery3cupsshreddedcookedchicken½cupGreekyogurt1cuppeas½cupmincedparsleyKosher salt and pepper

Prepare The Crust:Inafoodprocessor,pulsetheflour,bakingpowder and salt until combined. Add butter, pulsing until the mixture is course meal. Separate the egg; refrigerate the egg white. Beat the yolk and milk in a bowl and then add to the food processor, pulsing until the dough comes together. Turn out onto a lightlyflouredsurfaceandgatherintoaball.Flatten into a disk, wrap in plastic wrap and chillatleast1hour.

meanwhile, make The filling:Preheattheovento425degrees.Prickthe potatoes with a fork and bake directly ontheovenrackuntiltender,about45minutes. Cool slightly, then peel and break into small pieces.

Chicken Pot PieBring the chicken broth, carrots and thyme to a simmer in a small saucepanovermediumheatandcook2minutes;coverandkeepwarm. Meanwhile, heat the olive oil in a large pot over medium heat.Addtheonionandcookuntilsoft,about8minutes.Sprinkleintheflourandstiruntillightlytoasted,about3minutes.Addthemilk,celery, potato pieces and the warm broth mixture and simmer until thickened,about15minutes.Removefromtheheatandstirinthechicken, yogurt, peas and parsley. Season with salt and pepper.

Transferthefillingtoa2-quartcasseroledishRolloutthedoughonalightlyflouredsurfaceuntilabout½inchthickandslightlylargerthan the dish. Beat the reserved egg white in a bowl; brush over the dough and season with salt and pepper. Press the dough against the sides of the dish. Place on a baking sheet and bake until the crustisgoldenbrown,20to25minutes.

method:Into a shaker add the Vodka, Gin, strawberry puree and fig balsamic vinegar. Shake well until mixed, then top it off with a splash of fizz and garnish with a fresh strawberry.
