APRIL begins as we come into my favourite time of year. The days are starting

to draw out and with the equinox and Easter behind us already, there are plenty of ways to make

the most of that ever increasing daylight. Perhaps this year I will manage to keep up with the garden, it is bursting with life already and threatening to get the better of me again!

As the wintery carbohydrates that have comforted us through the cold weather start to look less appealing, Vicki Clubley has some great tips for Spring Cleaning Your Diet on page 18. While Tony Rowe suggests some fresh ideas for using seasonal wild garlic on page 6. Both of which will give some welcome inspiration as we look to make some changes for spring.

Spring Clean Your Diet

Spring is finally here, and as far as I’m concerned if there’s any time to make drastic changes to your diet, it’s now. As a start, here are five habits to adopt if you want to feel more energized, focused, lighter and brighter.EAT WHAT’S IN SEASONEating according to what’s in season will give you a multitude of benefits. Seasonal foods taste better, are often produced locally (so they’re cheaper), and contain higher levels of essential nutrients – especially the ones we need at the time of year when they’re available.

Spring is a great time for getting in plenty of fresh fruits and vegetables to boost our vitamin and mineral intake. Some great examples of foods to opt for during spring include asparagus, broccoli, cabbage, kale, and sweet potato. All of these are high in vitamin A, vitamin C, folates and fibre. Lemons, oranges and rhubarb are also great choices for this time of year. AIM FOR AT LEAST FIVE PORTIONS A DAYWith all these brightly coloured fruits and vegetables available, why not aim to eat at least five different colours every day. This will give your diet the widest range of health-promoting anti-oxidants and phytonutrients, and support your health and happiness. For Vitamin C, red foods such as tomatoes, radishes, red peppers, strawberries and cherries are perfect – they’re good for bones, teeth, skin and adrenal glands.

Eat orange foods such as oranges, sweet potatoes and carrots, all packed with carotenoids, to act as protection against free-radical damage.Yellow foods such as bananas, lemons, melons and butternut squash contain lutein, and help to support metabolism and increase energy.

Further along the rainbow, green foods such as broccoli, spinach, avocado, kale, green beans and apples are all rich in B vitamins and chlorophyll, supporting heart health and improving our mood.Finally, purple foods such as red cabbage,

beetroot, red onion and berries like blueberries, blackberries and blackberries contain anthrocyanins, which support cognitive function and brain health.

EAT REAL FOOD This one’s simple: eat foods you can picture in their raw state or growing in nature, avoid anything that your grandmother wouldn’t recognize, and steer clear of foods that are advertised on TV. Foods with a long shelf life generally contain some ‘nasties’, so always opt for food in its most natural

form (this also means you can avoid ‘light’ or ‘non fat’ versions). In short, avoid as far as possible processed foods which are most likely to be high in sugar, salt and trans fats… all they will give you is empty calories with no nutritional benefit!!

EAT PROTEIN WITH EVERY MEALAs well as helping to build muscle mass, protein slows the release of energy from food into the bloodstream - so it makes you feel full for longer and helps to maintain energy levels. It’s also essential for liver detoxification, and helps to balance hormones. Good sources of protein are: fish, poultry, lean meat, eggs, pulses, legumes, organic tofu, organic soya milk, quinoa, nuts, nut butters and seeds.

INCREASE ‘GOOD’ FATS‘Good’ fat is the kind which helps us feel satiated, supports the liver, balances hormones, and improves the skin (anti-aging). It helps our lipid metabolism, and so helps to keep us at optimum body weight while improving memory and nerve function. Good sources of fat are: oily fish (salmon, mackerel, sardines, anchovies); nuts and seeds; avocados, coconut oil and coconut milk, olive oil

So – let’s make this season about stocking up on in-season produce and ingredients, so you can start cooking more from scratch and eating more ‘real foods’. Vicki Clubley runs a healthy food delivery service. [email protected]

IN APRIL A WALK in the woods along the riverside you will feel drawn to the heady

scents in the air of wild garlic. It thrives in mixed woodlands and other damp, shady places like country lanes and near streams. In the right place it will be widespread and easy to spot.

Easy to identify, the small white flower indicates when the leaves can be harvested.

Care should be taken not to confuse wild garlic with the poisonous lily of the valley which has a similar shaped leaf. The way to test wild garlic is to rub the leaf between your fingers and the pungent smell is unmistakable. The leaves of lily of the valley come from a single purple stem, while the wild garlic leaves have individual green-coloured stems.

The harvesting season is short – usually from mid-March to mid-April. The flavour of the leaves is stronger once the plant flowers.

Do not dig up the bulbs and never strip a plant of all its leaves or remove all the flowers or plants in a small area. Pick mid-sized to larger leaves and flower heads that have blossomed. Try to pick away from areas where people and dogs have walked. Leaves are best used fresh or can be dried or preserved in oil.

Baskets are ideal for gathering (particularly for the flowers) but if you plan to preserve the leaves choose roomy plastic bags. Pack loosely and do not press down or you may bruise the tender leaves and flowers.

With a history of human use of over 7,000 years, garlic is native to central Asia, and

has long been a staple in the Mediterranean region, as well as a frequent seasoning in Asia, Africa, and Europe. It was known to Ancient Egyptians, and has been used for both culinary and medicinal purposes. By the 12thC there are references to flavouring butter with garlic.

WILD GARLIC BUTTERCream 100g salted butter, add 100g chopped fresh garlic leaves, squeeze of lemon juice and a little grated zest. Roll into a cylinder and wrap with greaseproof paper. Keep in the fridge to harden. This can be served with grilled meat or fish or it can be used to make garlic bread.

WILD GARLIC, ONION AND POTATO SOUPSweat 150g peeled and chopped onions with 30g butter in a heavy bottomed saucepan. When onions are soft add 350g floury potatoes, peeled and diced and 1.25 litres of chicken or vegetable stock and bring to the boil. Simmer for 10-15 minutes then add a handful of fresh torn wild garlic leaves and cook for a further minute or two.Puree briefly to a rough consistency, season and serve hot with some warm crusty bread.

WILD GARLIC AND GOATS CHEESE SCONESCombine 225g plain flour, 2 tsp baking powder, ∞ tsp salt and 15g castor sugar in a bowl.

Rub in 35g butter until mixture resembles breadcrumbs. Mix in 30g goats cheese and 50ml wild garlic pesto. Slowly add 100ml milk and mix into a firm dough. Roll into a cylinder and cut into slices ∞ inch thick. Put on a greased baking tray, brush with milk and bake for 12-15 mins, at 180C.

WILD GARLIC PESTOIn a food processor blitz 120g fresh wild garlic leaves, 25g pinenuts, 200ml olive oil and 40g grated Parmigiano-Reggiano. Season to taste. Pour in a sterilised jar and keep in the fridge.

WILD GARLIC CHAMPWarm 250ml whole milk with a handful of roughly torn fresh garlic leaves. Steam 1kg floury potato in their skins until tender. Dry potatoes with a cloth then peel. Mash the potatoes with a big knob of butter. Add the

milk, garlic and season to taste. Serve piping hot.

Spring Clean Your Diet

Spring is finally here, and as far as I’m concerned if there’s any time to make drastic

changes to your diet, it’s now. As a start, here are five habits to adopt if you want to feel more energized, focused, lighter and brighter.

EAT WHAT’S IN SEASONEating according to what’s in season will give you a multitude of benefits. Seasonal foods taste better, are often produced locally (so they’re cheaper), and contain higher levels of essential nutrients – especially the ones we need at the time of year when they’re available.

Spring is a great time for getting in plenty of fresh fruits and vegetables to boost our vitamin and mineral intake. Some great examples of foods to opt for during spring include asparagus, broccoli, cabbage, kale, and sweet potato. All of these are high in vitamin A, vitamin C, folates and fibre. Lemons, oranges and rhubarb are also great choices for this time of year.

AIM FOR AT LEAST FIVE PORTIONS A DAYWith all these brightly coloured fruits and vegetables available, why not aim to eat at least five different colours every day. This will give your diet the widest range of health-promoting anti-oxidants and phytonutrients, and support your health and happiness. For Vitamin C, red foods such as tomatoes, radishes, red peppers, strawberries and cherries are perfect – they’re good for bones, teeth, skin and adrenal glands.

Eat orange foods such as oranges, sweet potatoes and carrots, all packed with carotenoids, to act as protection against free-radical damage.

Yellow foods such as bananas, lemons, melons and butternut squash contain lutein, and help to support metabolism and increase energy.

Further along the rainbow, green foods such as broccoli, spinach, avocado, kale, green beans and apples are all rich in B vitamins and chlorophyll, supporting heart health and improving our mood.

Finally, purple foods such as red cabbage,

beetroot, red onion and berries like blueberries, blackberries and blackberries contain anthrocyanins, which support cognitive function and brain health.

EAT REAL FOOD This one’s simple: eat foods you can picture in their raw state or growing in nature, avoid anything that your grandmother wouldn’t recognize, and steer clear of foods that are advertised on TV. Foods with a long shelf life generally contain some ‘nasties’, so always opt for food in its most natural form (this also means you can avoid ‘light’ or ‘non fat’ versions). In short, avoid as far as possible processed foods which are most likely to be high in sugar, salt and trans fats… all they will give you is empty calories with no nutritional benefit!!

EAT PROTEIN WITH EVERY MEALAs well as helping to build muscle mass, protein slows the release of energy from food into the bloodstream - so it makes you feel full for longer and helps to maintain energy levels. It’s also essential for liver detoxification, and helps to balance hormones. Good sources of protein are: fish, poultry, lean meat, eggs, pulses, legumes, organic tofu, organic soya milk, quinoa, nuts, nut butters and seeds.

INCREASE ‘GOOD’ FATS‘Good’ fat is the kind which helps us feel satiated, supports the liver, balances hormones, and improves the skin (anti-aging). It helps our lipid metabolism, and so helps to keep us at optimum body weight while improving memory and nerve function. Good sources of fat are: oily fish (salmon, mackerel, sardines, anchovies); nuts and seeds; avocados, coconut oil and coconut milk, olive oil

So – let’s make this season about stocking up on in-season produce and ingredients, so you can start cooking more from scratch and eating more ‘real foods’.

Councillor’s Update

LAST NIGHT, MONDAY 14th March I attended one of the regular Council Scrutiny meetings

and on the Agenda was a rather dry-sounding item entitled Richmond upon Thames Strategic Assessment. Please don’t turn the page over as you will be glad you kept reading!

On the panel was Cllr Tony Arbour’ Cabinet Member for Performance and Community and our GLA member; Nicholas Hall the Community Safety Data Analyst; and the main speaker, the Borough Commander, Colin Kennedy, the Borough’s Chief of Police, whose policies and their implementation keep us safe.

The independently verified news is that Richmond has moved up one place to be the 3rd safest Borough in London. The even better news is that the safest ward in the borough is South Twickenham! These figures are, of course, a mixture of different components and I will be examining how we can take better precautions to safeguard ourselves and our possessions.

Residential burglary has gone down by 9% (- 52 crimes) which makes us the safest borough in London.

Although violent crime has gone up because of the changes in recording practices and improved confidence in victims reporting these crimes, Richmond still remains the safest out of the 32 London boroughs, a record we have held for five years.

We are also the 3rd safest borough for all crimes and 4th best for burglaries and serious acquisitive crime, both of which have gone down by 17% and 8% respectively.

However, there comes a disappointingly big % drop when we examine vehicle and non residential crime figures. It is in these areas that we need to pull our weight much more. But it just needs a little more common sense, more vigilance and discipline. So no more popping out of the

house to get a pint of milk and not locking the back door! Are all your windows and doors secure?

Vehicle crimes ie theft of and theft from vehicles have risen. So please lock your car every time you get out of it, even if you are only going to be a minute. That will bring down our + 53 crimes which has gone up 20% and drops us down to 8th safest.

Much worse is theft from vehicles which although it has dropped by 19% or 149 crimes means other boroughs are doing much better than us as we are now only 10th in London. Please hide valuables in a locked boot and cover them up. Always lock your vehicle.

However, our worse stat is non-residential burglary ie from sheds or outhouses. Again although we have improved by a huge 24% or 165 fewer crimes, so have other boroughs and we have our worst statistic - we are only 19th in London. Please can I implore you to stow your beautiful and expensive bikes etc indoors or in a really substantial shed which has a well fitting locked door which is well lit. Flimsy, poorly locked and unlit sheds at the end of the garden are child’s play to break into for visitors to our borough. With bikes costing over £500 this is a no-brainer!
