The wafers, originally created as a toji hot-spring cure for Viscount Matsudaira, a former feudal lord of Shimabara, have been made in Unzen for approximately 130 years. Cooking methods haven’t changed since they were first created, and the wafers, consisting of flour, eggs, sugar and baking soda mixed with hot-spring water from Mt. Fugen, are cooked in traditional individual molds weighing three kilograms each.
