School kids on holiday, cricket and tennis on the air waves, heat and humidity, news services detailing the devasta on of bushfires and drought – all reminders that summer is in full swing along with all the fun associated with Australia Day.

If you’ve ever found yourself feeling a li le uncomfortable when singing our Na onal Anthem you certainly wouldn’t be alone. Maybe you grew up with another song so you’re not that familiar with the words or, it’s more likely, you find the wording a li le odd - you know the bit I mean – yes, the line about our land being ‘girt’ by sea. It’s hard not to have a bit of fun with it … a member of my extended family says he’s Kurt who’s girt!

Your cringe factor may be so ened when you understand that this is much more than a turn of phrase from our far distant past and that it actually recognises the uniqueness of our island home.

2011 Noble Muscadelle—$15/375ml bo le (formally known as Botry s Tokay)

There is a very interes ng history behind this richly flavoured dessert wine which has been gathering a dedicated band of fans since Bill made Rosewood’s first in 1994 a er experimen ng over a number of years. Its popularity increased with the 1996 vintage and then consolidated its posi on with the highly acclaimed 2000 vintage before the winemaking func on was handed over to Stephen for the 2001 vintage. I remember Bill saying at the me he wasn’t expec ng to see another one in his life me.

This is because a very special set of clima c condi ons are required to produce the fungus Botry s cinerea which is responsible for the changes in the vines’ metabolism and causes the berries to go pink. They are picked when the beaumé readings are high and result in the development of the wonderful aromas and honey/citrus flavours that make this style such a popular choice.

This unique wine style can develop a wonderful array of tropical fruit flavours along with other fruits such as apricot and pear along with raisins and honey so it makes a wonderful accompaniment to dairy based desserts. Or, if you are adventurous, you could try Bill’s sugges on of eggs, bacon and white pudding. Unlike other larger producers who set up their vineyards to create op mal condi ons for the produc on of botry s, this style is only made at Rosewood when it occurs naturally.

O en referred to as “noble rot,” as the botry sed fruit from white wine varie-es such as Muscadelle or Riesling are ideal for making luscious dessert wines.

With prolonged wet condi ons however, more destruc ve influences can cause the fruit to rot and result in severe crop losses.

Nodules on the front and pock marks on the underside of this leaf are the telltale signs of Downy Mildew. Infec ons such as this have in the past been known as a fungus, but have recently been iden fied as an algae. Yet another challenge Mother Nature throws out to vignerons when favourable condi ons prevail.

OPEN THAT BOTTLE NIGHT Another special celebra on is coming our way at the end of February. It’s called ‘Open That Bo le Night’ and it sounds like a lot of fun if you’ve been looking for a special occasion to drink a par cular bo le of wine. A couple of American wine journo’s kicked off the idea in 2000 and are now looking to expand it around the world.

This is your excuse to have a look at something you’ve been holding onto for ages. That bo le that’s been lurking in your wine rack for ages, you’ve probably taken it from house to house when you’ve moved over the years.

Invite the crew over and pay tribute to the wine as you share the story about why it has par cular significance. It could be that bo le you bought on your honeymoon (hopefully one of ours), a Christmas gi from your great aunt or maybe some-thing you enjoyed with someone who is no longer with us.

WORD COMPETITION You are probably familiar with the Washington Post’s famous annual Neologism [Neologism pronounced nee-AH-low-djism] contest where participants are asked to either come up with a new word or give a new meaning to an existing word —such as Lymph (v) to walk with a lisp, Abdicate (v) to give up all hope of ever having a flat stomach and Willy-nilly (adj.) impotent, which are just a few of this year’s very amusing offerings.

Some time ago the writer Stephen Fried came up with the word ‘Fashionista’ to describe the model Gia Carangi while the verb ‘chillax’ has now become part of the popular idiom a er evolving to describe chilling out and relaxing.

Crabernet’ [a wine so strong you walk sideways a er two glasses] was the winning entry last me we ran our own version of this compe on way back in 2007 so you’ll have to be pre y good to top that!

A wine related word would be good if you can, but anything we can get a laugh out of would be very acceptable and there will, of course, be a prize for the winning entry which should be directed to [email protected]

The 24-Hour Wine Expert (Published by Penguin) Pop this handy li le paperback, by the highly respected wine writer Jancis Robinson, into your pocket or handbag and you’ll always be able to make good decisions when looking for wine.

Jancis says it is completely unlike any of her other books as it has been designed for those who don’t want every ny detail of wine but want to enjoy a good drop without making a fool of themselves.

With her comprehensive knowledge and very approachable reading style, you’ll enjoying picking up some very helpful hints. A great gi idea too.

Ingredients ¼ lb thin spaghe 1 med shallot, minced 3 oz Mozzerella cheese, sliced into 8 rounds ¼ c Italian parsley ⅕ lbs ground beef, 15% fat 1 egg (op onal) 1 tsp crushed garlic 1 c breadcrumbs 2 tsp salt ½ c milk 2 tsp garlic powder 1 c Marinara sauce 1 c grated Parmesan cheese

Instructions 1. Cook spaghe according to package instruc ons to al dente texture. Drain. 2. Put the beef into a large mixing bowl. Mix in the crushed garlic, salt, garlic powder, shallot and parsley. 3. If you like your meatballs moist, crack the egg into a small bowl, scramble lightly and add to the seasoned meat. 4. Combine milk and bread crumbs in a small bowl. Add to the ground meat mixture. 5. Let mixture stand at room temperature. 6. Using a pair of chops cks, swirl the spaghe into 8 smallmounds. 7. Freeze the noodle balls for 15 minutes. 8. Preheat oven to 375 degrees. 9. Press a slice of Mozzerella onto the top of each noodle mound. 10. To make the meatballs: form the ground meat into pa es. 11. Place a noodle mound at the center of each pa y and wrap the meat around the noodle and cheese parcel to thoroughly enclose. 12. Cook for approx. 30 minutes, un l golden. 13. To serve, top with warm Marinara and top with Parmesan. As for wine … you can’t go wrong with a medium weight red, maybe the straight Grenache or the Blue Imperial and Grenache blend.
