2 cups all-purpose fl our1/2 tsp baking soda1/2 tsp salt3/4 cup unsalted butter, melted1 cup packed brown sugar1/2 cup white sugar1 tbsp vanilla extract1 egg1 egg yolk2 cups semisweet chocolate chipsPreheat oven to 325F (165C). Grease cookie sheets or line with parchment paper.Sift together the fl our, baking soda and salt, set aside.In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended. Beat in the vanilla, egg, and egg yolk until light and creamy. Mix in the sifted ingredients until just blended. Stir in the chocolate chips by hand using a wooden spoon. Drop cookie dough 1/4 cup at a time onto the prepared cookie sheets. Cookies should be about 3” apart.Bake for 15 to 17 min in the preheated oven, or until the edges are lightly toasted. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.

1 cup all purpose fl our2 tbsp unsweetened cocoa1 tsp baking powder1/2 tsp salt8 oz semisweet chocolate chopped1/2 cup unsalted butter cut into small pieces1/2 cup sugar1/4 cup brown sugar2 eggs1 pkg semisweet choc chunks1 1/2 cups dried cherriesPreheat oven to 350F. Line three baking sheets with parchment paper. Set aside. In a medium bowl, whisk together fl our, cocoa, baking powder, and salt, set aside.Place chopped chocolate and butter in a large heatproof bowl set over a pan of simmering water stir until melted and smooth. Remove from heat, whisk in sugars, then eggs until smoothWhisk in dry ingredients just until combined (do not over mix). Fold in chocolate chunks and dried cherries, press plastic wrap directly onto sur-face of dough, and refrigerate until fi rm, 30-40 minsDrop mounds of dough (equal to 2 level tbsp) about 2” apart onto prepared sheets. Bake just until edges are fi rm but not darkening. 11-13 mins. Cool on baking sheets 1-2 mins, transfer to a wire rack to cool completely.

PreparationBeat fi rst 4 ingredients at medium speed with an electric mixer until smooth. Add eggs and vanilla, and beat until blended.Stir together fl our and next 2 ingredients in a small bowl. Add to butter mixture, beating until blended. Cover and chill 30 minutes.Preheat oven to 350°. Shape about 2 tbsp. dough around each nougat bar, using lightly fl oured hands, and roll into balls. Place 3 inches apart on ungreased or parchment paper-lined baking sheets.Bake at 350° for 13 to 14 minutes or until lightly browned. Cool on baking sheets 5 minutes. Transfer to wire racks.

1 cup butter, softened 1/2 cup firmly packed light brown sugar1 tablespoon instant espresso powder1 tablespoon hot water2 1/4 cups all-purpose flour1/8 teaspoon salt1/2 cup almond toffee bits (see note)

PreparationBeat butter at medium speed with an electric mixer until creamy; gradually add sugar, beating well. Stir together espresso powder and water. Add to butter mixture, stirring well.Combine flour and salt; gradually add to butter mixture, beating at low speed until blended. Stir in toffee bits. Cover and chill dough 30 minutes.Roll dough to 1/2” thickness on a lightly floured surface. Cut with a 2 1/2” round cutter or Christmas cookie cutter. Place 2” apart on ungreased baking sheets.Bake at 275° for 50 minutes. Cool 2 minutes on baking sheets. Remove to wire racks to cool.

Note: If you can’t find almond toffee bits in the supermarket, substitute 1/2 cup finely crushed Skor candy bars or crushed Werther’s Original candies.

INGREDIENTS1 cup canned pumpkin1 cup brown sugar2 eggs1 tsp vanilla1.5 cups whole wheat flour 1 tsp baking soda1 tsp cinnamon0.5 tsp salt3 cups oatmeal1 cup dried cranberries 0.5 cup almonds

DIRECTIONSHeat oven to 350F. Beat together pumpkin and sugar. Add eggs and va-nilla, beat well. Add flour, baking soda, cinnamon, salt. Mix. Stir in oats, dried cranberries and almonds. Drop rounded spoonfuls onto un-greased cookie sheet. Bake 10-12 minutes. Let cool one minute. Serves: 48

Sift fl our, baking powder and salt into a medium bowl and mix well.Whisk eggs in a large bowl until blended. Add sugar, oil, vanilla extract and lemon zest and mix well. Stir the dry ingredients into egg mixture until blended. Chill, covered, for 30 minutes or longer.Preheat the oven to 400F.Drop the cookie dough by rounded tsp 2” apart onto ungreased baking sheets. Mist the bottom of a 3” fl at-bottom glass with water and dip glass in additional sugar. Press the top of each cookie lightly with the glass to fl atten, misting glass with water and dipping in sugar before pressing each cookie.Bake cookies until lightly browned about 8 mins. Cool on baking sheets for 2 mins. Remove to wire racks to cool completely. Store in airtight contain-ers or freeze for future use.

Ingredients:1 cup butter (2 sticks) softened2/3 cup sugar1 egg2 tsp. vanilla

In medium bowl, beat butter and sugar with electric mixer on medium speed until creamy. Beat in egg and vanilla until fluffy. Gradually add flour and salt, beat on low speed until well blended. Shape dough into 1-inch balls. Place 2 inches apart on nonstick cookie sheet(s). With fingertip, press down on each cookie to make an indentation. Spoon about 1/4 teaspoon jam into each indentation. Bake 8 to 10 minutes until edges are lightly browned. Remove to a rack and let cool completely. Makes 48 cookies.

Ingredients:

1/4 cup Irish Cream liquor1 tablespoon butter12 oz. semisweet chocolate2 egg yolks1/4 cup heavy cream

Directions:

Melt chocolate, Irish cream and heavy cream together over very low heat.

Whisk in yolks, one at a time, mixture will thicken. Whisk in butter.

Refrigerate overnight, or until fi rm.

With spoon make small balls. Roll in powdered sugar, cocoa, chopped nuts, sprinkles, etc.

Place in festive little cupcake or candy wrappers, place in little candy box or plastic wrap with some ribbon.

Makes 1 dozen cookies.

Directions:Preheat oven to 350 F. Cream together butter, sugar, jello, eggs, and vanilla. Add dry ingredients, mix well. Roll into little balls, and roll in sugar, place on greased cookie sheet, and fl atten with fork or bottom of glass. Bake 6-8 minutes until golden brown. Makes 2 dozen.

We’re pulling for a safe, healthy, happy holiday

for one and all!

2 1/2 cup fl our

3/4 cup cocoa

1 tsp baking soda

1 cup white sugar

1 cup fi rmly packed brown sugar

1 cup butter softened

2 tsp vanilla

2 eggs

75 rolos

Combine fl our, cocoa and baking soda.

In separate bowl beat sugar and butter and add vanilla and eggs.

Stir in fl our and cocoa mixture.

Chill dough for 1 hour.

Shape about 1 1/2 tsp of dough around a rolo, making sure rolo is

completely covered.

Place on ungreased cookie sheet and chill for 1 hour.

Bake at 7-8 mins at 375F (190C).

Cool on a wire rack.

Note: If you run out of rolos put the dough around 6 or 7 chocolate chips.

Cream together butter and sugar, add fl our and beat for 10 mins. Drop from a small spoon onto cookie sheet. Decorate with cherry pieces if you wish. Bake at 3500 for about 10-12 minutes or until bottoms are lightly browned.

Ingredients:3/4 cup butter, softened1/4 cup sugar2 cups fl our

Directions:Heat oven to 350F. Cream butter and sugar.Work in fl our. If dough is crumbly, mix in 1 to 2 tablespoons more butter.Roll dough 1/2- to 1/3-inch thick on lightly fl oured pastry board. Cut into small shapes.Place 1/2-inch apart on ungreased baking sheet. Bake about 20 minutes or until set.Immediately remove from baking sheet. Makes about 2 dozen cookies.

Topping2 tablespoons granulated sugar1 teaspoon cinnamon

Directions:In a large bowl, cream butter and sugars at high speed.Add egg, vanilla, and beat until smooth. In another bowl, combine fl our, salt, baking soda, and cream of tartar. Pour dry ingredients into the wet ingredients, mix well. Preheat oven to 300° while you let dough rest 30-60 minutes in fridge. In a small bowl combine topping. Take about 2 1/2 table-spoons of dough and roll it into a ball. Roll this dough in the cinnamon/sugar mixture and press onto greased cookie sheet. Bake cookies 10-12 minutes, NO MORE. Cookies may seem undercooked but will develop.
