The wine is produced from the best white grapes, which ripen un- der the Alicante sun, coming from organic farming: an ideal blend of the Airén and Macabeo varieties. After a soft crushing, a mace- ration at a low temperature is carried out to enhance the aromas of each grape variety. The bleeding of the first must called “flor” is produced due to gravity extraction and its subsequent fermenta- tion is extended up to 30 days at a low temperature.
