Is there a small wine stain on the chest? They’ll cover it up with a stylish flower. Is it a tad too long? They’ll shorten the hemline. Having been with the company since 1983, principal Craig Marshall has a wealth of experience. He’s seen the real-estate market at various highs and lows – and loves being closer to the community.

“Being in the shopping centre gives people easier access to find out about real estate and have it front-of-mind,” explains Craig. “People can come in casually instead of having to try to find us on a main road and then try to find parking.”

When he finally decided to make the move, it was easy for Craig to choose a location.

Peruvian salsa criollaMakes 3 cups250g sugar250ml cider vinegar2 red or white onions80g sea salt1 small bulb fennel2 jalapeños or

amarillo chillies 1–2 red or white banana

leaves, roughly chopped1 small handful of flat-leaf

parsley or coriander leaves, roughly chopped

grated zest and juice of 4 limes

Tuna50g sea salt flakespinch of ground cuminpinch of smoked paprikapinch of ground allspice4 x 200g sashimi-grade

tuna steaksolive oil, for drizzling

Garnish Serves 4cheeks of 3 limes1 small handful of

micro herbs, such as coriander, purple basil, mint or oregano

Tuna 1. Heat a barbecue chargrill plate to high. Combine salt and spices in a small bowl.2. Drizzle tuna with oil and sprinkle liberally with the spiced salt mix.3. Sear tuna briefly on the barbecue, for one minute on each side. Transfer to a chopping board and cut into thick slices.4. Serve tuna with salsa criolla and garnish with lime cheeks, a sprinkling of herbs and a drizzle of extra-virgin oil.

Store in an airtight container in the refrigerator for up to one week.

Barbecued tuna salad with Peruvian salsa criolla

Pink grapefruit raspberry ices

2½ cups freshly squeezed pink grapefruit juice

3 tablespoons maple syrup24 raspberries, washed

1. Stir together grapefruit juice and maple syrup with ½ cup water.2. Place half the raspberries into the bottom of six 125ml (½ cup) iceblock moulds or 12 x 60ml (¼ cup) moulds.3. Pour half the grapefruit mixture into the moulds over the berries and freeze for 1–2 hours, or until partially frozen. Repeat with remaining raspberries and grapefruit mixture. Freeze overnight, or until frozen solid. Tip: If you are using iceblock sticks, you will need to freeze the second round of mixture for 1-2 hours until partially frozen, insert the sticks, then return to the freezer overnight.

Peruvian salsa criolla1. Combine sugar and vinegar in a medium saucepan and gently simmer over low heat, stirring occasionally, until sugar dissolves. Set aside to cool.2. Cut cheeks off onions and slice very thinly. Place onion in a bowl, sprinkle with salt and cover with hot water. Stand for 5 minutes then drain.3. Slice fennel and chillies into thin strips the same size as the onion.4. Place onion, fennel, chillies and herbs into a bowl and combine. Add lime zest and juice to the cooled vinegar liquid and pour over onion mixture.

Berry martini fizz

A modern affairA modern menu is a great opportunity to bring an Australian twist to the day, and to reflect our warm climate through the festive season. The approach here could be more informal with a barbeque, or a formal celebration with a three-course meal. Think of serving canapé-style starters, or perhaps present a central mezze board for guests to select from – with the likes of falafels, hummus, pita bread and olives from the extensive deli section at Romeo’s SUPA IGA.

Pair with a summery and sophisticated cocktail. Cotterill recommends a Berry Martini Fizz, a tasty fusion of two great drinks; the martini and Prosecco (below). Seafood is a popular choice for an Australian Christmas. For mains, it could be an oven-baked fish or seafood platter, alongside a range of salads featuring summery ingredients. Think a green salad with mango and lime, or a quinoa salad with pomegranate and feta. The team at Seafood @ St Ives say they receive a high demand for their selection of prawns, lobsters, oysters and crabs during the festive season. THESE EASY LANTERNS ARE PERFECT FOR PARTIES.

Festive paper lanterns

You will need: • Tissue paper, in various

colours, for shapes and tassels

• Paper lanterns, white or assorted colours: 50cm, 30cm and 20cm

• Scissors

• Glue• Paintbrush • Spray paint• Sticky tape• String • Wooden beads

1 Paper shapes: Cut out various shapes from the tissue paper, such as small squares, thin strips and small circles. AUTHOR TIP: “I used paper confetti for the small circles.”2 Assemble large and medium paper lanterns. Glue the tissue shapes over the lanterns and leave to dry. AUTHOR TIP: “I decorated the large lantern with squares and strips, and the medium lantern with multi-coloured dots (confetti).”3 Spray paint: Assemble the small paper lantern. Working from the top of the lantern, apply spray paint around the opening of the lantern and down the side a little.4 Darken colour by applying a second coat of paint. When paint is dry, turn lantern upside down and spray the other end the same colour, or use a contrasting colour.5 For the tassels: Fold a piece of tissue paper in half and cut out a rectangle measuring about 6 x 20cm. Using scissors, cut slits along the 20cm side of the paper, spacing the cuts about 5mm apart.6 Roll paper up to form a tassel. 7 Secure top of the tassel with sticky tape.8 Place a small length of string at the top of the tassel and secure with another piece of tape. Thread the string through the bead, so the tassel sits at the bottom of the bead. Secure in place with glue, if required.9 Repeat steps 5 to 8 to make a second tassel. Tie the beaded tassels to the bottom of the small and medium lanterns. Use a piece of string to tie the small lantern to the bottom of the large lantern.

1 IcelandBeing an isolated island and Europe’s least densely populated country, “Iceland may seem like a curious place for a travel destination,” says Sharyn Reeves, travel and cruise specialist at Inspired Travel Worldwide. But the stunning and largely untouched landscape boasts hot springs, glaciers, lava fields and waterfalls, making it a nature lover’s paradise.

Basically, if you’re looking for out-of-this-world scenery (minus the crowds) Iceland would make the ideal next stamp in your passport.

The warmer months are surprisingly mild, with nonstop daylight around midsummer thanks to the midnight sun (how’s that for something different!), while Iceland’s long winter nights create ideal conditions for the Northern Lights – definitely one for the bucket list.

Cultural, cool Reykjavik is becoming a hot destination for cruise ships between May and October, says Reeves, who suggests sampling super-fresh seafood and local brews before hitting the capital city’s renowned nightlife.

Depending on the season, there’s a dizzying array of other must-dos – from marvelling at the ‘lunar landscapes’ of the Lake Myvatn area to soaking in the Blue Lagoon geothermal spa, and diving or snorkelling in the crystal-clear waters between two continental plates at Silfra in Thingvellir National Park.

2 Cuba Famously isolated thanks to Fidel Castro’s communist dream, Cuba is beginning to open up to tourism, says Adelina Arancibia, manager at St Ives Travel & Cruise Boutique. It may not be bright and shiny, but Cuba is full of soul.

“For those who have travelled ‘everywhere’, this is an interesting new destination they may not have yet discovered,” she says.

Anneke Irik, manager at Flight Centre St Ives, agrees. Besides Cuba’s “amazing beaches,” says Irik, “Havana is soaked in history, and nothing has been restored since about 1960, so [it’s] definitely a different experience.”

“You can’t fly there from America, so you have to go via Central or South America,” Irik advises. “A tour is definitely the easiest way to get around, though local buses are pretty good. Peregrine offers one- and two-week tours, and Scenic and APT offer tours of South America that include a Cuba extension.”

Arancibia suggests checking in to Havana’s famous Hotel Nacional de Cuba, taking a tour in a classic old car, and enjoying the fabulous music (think Buena Vista Social Club). Want more?

“Why not combine it with the beautiful Costa Rica, a Caribbean cruise or a bit of R&R on the beach in Belize?” she suggests.

3 BhutanThis exotic, landlocked kingdom is nestled in the eastern Himalayas between China and India, and is renowned for its ‘Gross National Happiness’ index (as opposed to GDP).

Bhutan is “still unspoiled by tourists, yet beginning to open up, so infrastructure is there,” says Arancibia, and it can be experienced on a budget (e.g. a Peregrine tour) or at the high end (e.g. Amankora Resorts, a series of lodges dotted around Bhutan’s stunning valleys and mountains).

Arancibia suggests timing your visit to coincide with one of Bhutan’s many colourful festivals, perhaps even combining it with a visit to northern India – “another beautiful and less-explored area”.
