A carefully sculpted mound of

ice as soft and fluffy as newly fallen snow is drenched in tropical fruit-flavored syrup, drizzled with creamy sweetened con-densed milk, and served with a spoon in a cone-shaped cup. Sound heavenly? It is. It’s Hawaiian shave ice—the Islands’ quintessential frozen sweet treat.

Every state has its must-try edible: Maine lobster roll, Georgia peach pie, Florida’s conch chowder. In Hawai‘i, it’s shave ice. But make sure you don’t put a “d” at the end of “shave,” or you’ll be immediately identified as a mea kipa (traveler). And do remember…shave ice is not the same as a snow cone. By any means.

Shave ice’s origin is in Japan, where it’s called kakigori, and has been in existence since the 11th century when fro-

zen blocks of ice from lakes were preserved in the winter, then finely shaved and

served with sweet syrup to Japanese aristocracy in the summer. Once ice became widely available in the 19th century, kakigori was introduced to the general public. Nowadays, kakigori is sold virtu-ally everywhere in Japan during

the hot summer months. Although using electric shavers is now the

technique of choice, many Japanese street vendors still hand shave blocks

of ice to produce kakigori.In fact, it was Japanese laborers, imported to Hawai‘i in the

mid-1800s to work on the burgeoning sugarcane plantations, who introduced their traditional dessert to the Islands. During their breaks, these workers carefully shaved ice off a large block with their machetes and drenched it with cane syrup or fruit juice, for a cool respite from the relentless sun. Once these Japanese immigrants began moving away from planta-

The reason there’s no “d” on “shave” also dates back to the plantation era. Out of a need for so many different cultures to communicate with one another, Hawaiian Creole English (a.k.a. Hawaiian Pidgin) emerged as a common language that’s still spoken today in the Islands. One of the characteristics of Hawaiian Creole is the dropping of “superfluous” letters and even syllables. In addition to “shave ice,” while visiting Hawai‘i you’ll also see other examples like “smoke meat.”

There are myriad flavors to choose from when ordering shave ice.

You can select just one, or try a combination (usually up to three). Popular tropical es-sences are coconut, guava, liliko‘i (passion fruit), lychee, and mango. For an extra kick of sweetness, try a scoop

of ice cream or azuki (sweet red bean) paste at the bottom.

And that drizzle of sweetened condensed milk on top? It’s called a

“snow cap,” and it’s quite simply divine.Shave ice was even the inspira-

tion for a popular song from 1981. With its decidedly disco beat, “Shave Ice,” sung by Loyal Garner, was a surprise hit for the O‘ahu-born performer.

MAKAWAO HISTORY MUSEUMThis little museum in the charming Upcountry boutique town of Makawao highlights the Hawaiian paniolo (cowboy). Displaying tools, saddles, vintage photos and treasured stories of island culture, plantation life, churches and ranching. Learn about the importance cattle ranching has had in the Hawaiian Islands, starting way back in 1793. Free Admission. Open Monday thru Saturday 10am to 5pm, Sunday 11am to 5pm.

WO HING MUSEUM IN LAHAINAChinese history in Lahaina predates the whalers and missionaries. In 1912, using private donations, the Wo Hing Society built a two-story temple on Front Street. The building served as a fraternal and social meeting hall. It housed a sacred altar room on the second floor for religious ceremonies. Fascinating artifacts are displayed and explained throughout the museum. Admission is $7 ($5 for seniors) and includes both Wo Hing & Baldwin Home museums; children 12 and under are free. WHALE SANCTUARY

HUMPBACK WHALE SANCTUARYThe informative Hawaiian Islands Humpback Whale National Marine Sanctuary, located on the beach in Kihei, provides both beautiful scenery and spectacular nature watching. KAHANU GARDENWhen you visit Hana, plan ahead for a tour of this garden, which is only one of five gardens in the country to be chartered by the U.S. Congress as a National Tropical Botanical Garden. See the world's largest collection of breadfruit trees and the remarkable ethnobotanical plants that were brought to Maui in ancient voyaging canoes. The acreage also includes a site of extreme importance in Hawaiian history—Pi‘ilanihale Heiau, the largest ancient monument in the state, and the former seat of power for the legendary King Pi‘ilani.
