1 Tbsp. olive oil11/2 lbs. chicken thighs and drums1 lb. chorizo sausages, thinly sliced1 onion, chopped1 red bell pepper, chopped2 garlic cloves, minced1/4 tsp. cayenne pepper1/2 cup canned diced tomatoes1/2 cup dry white wine1 cup celery, roughly chopped1 cup carrots, roughly chopped1 cup peas

In a deep 12-inch skillet, heat oil over medium-high heat until hot. Add chicken and chorizo and cook until browned, about 10 minutes. Transfer chicken and chorizo to a bowl and set aside. Reduce heat to medium. Add onion and red bell pepper to skillet; cook, stirring frequently, until onion is tender, about 5 minutes. Stir in garlic and cayenne pepper; cook 30 seconds. Add tomatoes with the juice and wine; cook, breaking up tomatoes with side of spoon, until liquid has evaporated. Stir in celery, carrots, peas, rice, water, broth, salt, saffron, thyme, and bay leaf. Return chorizo and chicken to skillet. Cook over high heat until boiling. Reduce heat; cover and simmer 20 minutes. Bury mussels and clams into Paella; cover and cook 3 minutes. Bury shrimp into Paella; cover and cook just until mussels have opened and shrimp are opaque

throughout, about 3 minutes longer. Remove from heat and let stand 5 minutes. Discard bay

leaf and any mussels that have not opened. Sprinkle with parsley

and serve. Serves 6.

Heat oil in a large heavy skillet over medium-high heat. Stir in onion and cook until tender, about 5 minutes. Add rice and stir constantly, until golden brown. Lower heat to medium-low and add tomato sauce, salsa, water and bouillon. Cover and cook for 30 minutes. Serves 6.

1 lb. fresh shrimp1/2 cup lime or lemon juice 2 Tbsp. white vinegar1 tsp. salt1/2 tsp. dry mustard

Boil shrimp in salted water for about 3 minutes. Peel, devein and set aside. In a large bowl, combine juice, vinegar, salt, dry mustard, pepper sauce and if desired, pickled capers. Take part of marinade and brush avocados. Toss shrimp and marinade together. Place in the refrigerator to chill, stirring occasionally. Arrange lettuce leaves in a large salad bowl. Fill each avocado half with marinated shrimp and place on lettuce leaves. Serve immediately. Serves 3 – 6.

2 lb. chicken wings1/4 cup lime juice

Wash wings in six cups of water with the lime juice. Rinse wings thoroughly in fresh water then drain properly. Place in a large pan or baking dish. Add jerk seasoning and coat well. Cover with plastic wrap. Let sit for 4 hours or refrigerate overnight for best results. Preheat oven to 350°F. Place wings in a large, lightly oiled baking pan then cover with foil and bake for 1 hour. Carefully remove foil and let bake for 20 minutes more. Remove from oven and let cool for 10 minutes. Serve with blue cheese or ranch dressing and celery sticks.

Greek Lemon ChickenI N G R E D I E N T S

6 boneless chicken breastsSalt and pepper to taste 8 oz. Plain Fat Free Voskos

Greek Yogurt1 tsp. garlic powder1 tsp. cumin

D I R E C T I O N S

Salt and pepper both sides of the chicken and place into a re-sealable bag. In a bowl, whisk together yogurt, salt and pepper, 1/2 tsp. garlic powder, 1/2 tsp. cumin, 1 tsp. parsley and 1/2 the juice of the lemon. Pour yogurt mixture over chicken and seal the bag. Massage the yogurt into the chicken then allow to marinate in the refrigerator for an hour. Meanwhile, in a pie plate, mix remaining garlic powder, parsley and cumin together with the bread crumbs, 1 tsp. lemon zest and some additional salt and pepper to taste. Preheat oven to 350°F. When chicken has marinated, coat each piece with the bread crumb mixture. Pre-heat a skillet with extra virgin olive oil to medium-high and sauté chicken for two minutes on each side. Place skillet with chicken in the oven to finish cooking for 5 to 10 minutes. Remove from oven and squeeze the rest of the lemon on top of the warm chicken. Serves 6.
