Broccoli and Cheddar Baked Potato Ingredients 1 russet potato ½ cup frozen or fresh broccoli 2 tablespoons 2% shredded cheddar cheese Makes 2 servings Prep-time: 4 minutes 1. Wash your potato. Run the potato under water and scrub it with a vegetable brush. You can also use a clean dish rag or your hand. Just be sure all of the dirt is off. 2. Poke the potato a few times with a fork. This helps let steam escape from your potato as it cook. 3. Place the potato on a microwave safe plate (glass, paper, or one that says microwave safe on the bottom). Put the potato in the microwave for 6 minutes or until it is tender. When poked with a fork, the fork should sink in easily. 4. While the potato cooks get your broccoli ready. Pour the broccoli into a microwave safe bowl and pour in a little water, just enough to cover the bottom of the bowl. Place another microwave safe plate overtop of the bowl. Put the broccoli in the microwave for 3 minutes.

Broccoli and Cheddar Baked Potato

Ingredients 1 russet potato ½ cup frozen or fresh broccoli 2 tablespoons 2% shredded cheddar cheese

Makes 2 servings Prep-time: 4 minutes

1. Wash your potato. Run the potato under water and scrub it with a vegetable brush. You can also use a clean dish rag or your hand. Just be sure all of the dirt is off.

2. Poke the potato a few times with a fork. This helps let steam escape from your potato as

it cook.

3. Place the potato on a microwave safe plate (glass, paper, or one that says microwave safe on the bottom). Put the potato in the microwave for 6 minutes or until it is tender. When poked with a fork, the fork should sink in easily.

4. While the potato cooks get your broccoli ready. Pour the broccoli into a microwave safe bowl and pour in a little water, just enough to cover the bottom of the bowl. Place another microwave safe plate overtop of the bowl. Put the broccoli in the microwave for 3 minutes.

5. With a minute left on the broccoli, cut open your potato. It should split easily with a butter knife.

6. Use a fork and scoop out your broccoli onto your potato and sprinkle with cheese.
