MARKET POSITIONING
• Beach Grill Style restaurant and bar focussing on seafood and grill meat items with a touch of the Caribbean
• The outlet will appeal to the local market, hotels and residents on the Palm, from all aged groups where patrons can come dressed very casually (shorts and flip flops)
• Direct competitions from other 6 outlets within CVM complex, hence concept and price to be well adapted
• Concept original idea is a “Shack” on the beach serving fresh juices, beers, cocktails, ice creams, pancakes and fish freshly caught
• As the business evolves and grow, new features were added: main kitchen with grill and rotisserie, deli market counters, bar, TVs, pinball and BBQ
OPERATIONAL CONCEPT
• The outlet will be the main attraction of Club Vista Mare residential Complex and will be set as follows
• Stand up, low and high seating in the bar section (previously Gym area) with an elevated area for groups
• Eating area in restaurant, veranda style (currently gym area), main restaurant and outdoor overlooking the beach
• Food coming from kitchen Theaters (Hot (grill, roast, A la carte, deli, sandwich)
• Additional raw bar/ice cream slab and cocktail bar in the restaurant area
• Sun lounge area on the beach (if permitted)
• Use of the outdoor shed as BBQ counter for outdoor area
• Veranda to be linked to outdoor area with full French windows (14 meters)
• DJ booth to be added
• Use of the existing Gym changing facilities for guests toilets
AMBIENCE/THEME
The fit out needs to be good quality and will look eclectic
• Warm materials which evoke a beach market feel will be proposed
• Concrete flooring, wood panelling, stone finished wall panelling, open ceiling.
The artwork will be simple and good quality.
• Wall will be covered with chalk boards and beach market style decorations (wooden crate, images, surf boards…)
• Indoor Seating arrangements would be varied and range from stools in the bar area, to banquette and regular tables in restaurant and veranda with various shapes and colours
• Outdoor seating arrangements would be made of loose furniture (regular and low seating) with umbrellas, sun loungers may be added. cooling and heating system may b added
• Indoor and outdoor areas to be linked with set of full French windows from the veranda side
ENTERTAINMENT (indoor and outdoor)
• Music provided from high quality localised sound system such as computerised Music system.
• Easy listening music to be played and be managed by outsourced company.
