Some explanations of the origins of this celebration claim that it was a moment of unity and peace between the Pilgrims and native American Indians who aided the European settlers.

In a deep buttered casserole, mix together the crackers, bread crumbs, and melted butter. Place a thin layer of crumb mixture in the bottom of the casserole. Cover it with half of the oysters. Season the cream with nutmeg, salt, pepper and celery salt (if using this). Pour half of this mixture over the oysters. On the next layer, use the remaining oysters, 3/4 of the remaining crumb mixture and cover that with seasoned cream. Top with the remaining crumbs. Bake for 20 to 25 minutes, or until lightly browned.

1. Put potatoes into a saucepan. Add 1/2 a teaspoon of salt. Add water until potatoes are covered. Bring to the boil, reduce heat and simmer, covered, for 15-20 minutes, or until done - a fork can easily be poked through them.

2. Warm cream and melt butter together, either in microwave or in a pan on the stove. Drain the water from the potatoes. Put hot potatoes into a bowl. Add cream and melted butter. Use potato masher to mash potatoes until well mashed. Use a strong spoon to beat further, adding milk to achieve the consistency you desire. (Do not over-beat or your potatoes will get gluey.) Salt and pepper to taste.

Turkey

Ingredients :

••

1 (12 pound / 5-6kg) whole turkey •

6 tablespoons of butter, divided •

4 cups of warm water •

3 tablespoons of chicken bouillon •

2 tablespoons of dried parsley •

2 tablespoons of dried minced onion •

2 tablespoons of seasoning salt

Cooking instructions :

• 1. Preheat oven to 350 degrees F (175 degrees C). Rinse and wash turkey. Discard the giblets or add to pan if they are anyone's favorites!

• 2. Place the turkey in a Dutch oven or roasting pan. Separate the skin over the breast to make little pockets. Put 3 tablespoons of the butter on both sides between the skin and breast meat. This makes for very juicy breast meat.

• 3. In a medium-sized bowl, combine the water with the bouillon. Sprinkle in the

parsley and minced onion. Pour over the top of the turkey. Sprinkle seasoning salt over the turkey.

• 4. Cover with foil and bake in the preheated oven for 3 1/2 to 4 hours, until the internal temperature of the turkey reaches 180 degrees F (80 degrees C). For the last 45 minutes or so, remove the foil so the turkey will brown nicely.
