tion to make your event a success. The following information is provided to assist you in the planning process.

SPECIAL SERVICESYour event coordinator will be pleased to assist in arranging special details for your event, such as; florals,

rentals, decorations, customized menus/visual equipment, lighting, valet parking, etc.

GUEST CAPACITY REQUIREMENTSOur unique space and venue layout allows the ability to host functions of varying capacity, from a small

gatherings to grand scale events. Function bookings and arrangements take place with the personal attention of your event coordinator. This provides you with the best-suited room for your particular event and number of guests attending.

PARKINGParking is available and may be pre-booked through Casa Loma. There are ample parking spaces on the Casa Loma

grounds. Private valet parking is also available and can be arranged through your event coordinator.

MENU SELECTIONThe enclosed menus are an example of what our Executive Chef can create. If you have a specific menu in mind

that does not appear in our package we would be more than happy to create a custom designed menu for your specific needs.

THE LIBRARYThis is the largest event space inside the castle, which accommodates up to 220 people for a banquet style dinner, recep-tions up to 300 people. Decorated in a traditional early 1900’s elegance, with rich wood finishes, this spectacular room boasts hand crafted Austrian crystal chandeliers, rich wood finishes and stunning views of the Terrace and city skyline.

THE CONSERVATORYThe Conservatory features elaborately plastered ceilings, marble flooring, Italian bronze doors and a stained glass ceiling dome. The Conservatory accommodates up to 110 people for a banquet style dinner and up to 150 people for a reception.

Executive ChefCHEF MICHAEL EWINGCorporate Executive Chef, Vice President of OperationsLiberty Entertainment Group

Michael Ewing, a twenty-five year veteran of the culinary art industry, began a classical apprenticeship at Westin Hotels at the tender age of 15. Working throughout the city in many of Toronto’s top restaurantsand catering companies, Michael draws upon his many years of culi-nary expertise and artistry to his latest post as Executive Chef at theLiberty Grand Entertainment Complex and as the Executive Chef for allof the Liberty Entertainment Group properties (Toronto: LibertyGrand Entertainment Complex, Rosewater, Spice Route, Cibo WineBar, Rosewater Room, Miami: Coral Gables Country Club & CiboWine Bar).

Following his apprenticeship, Michael worked in various capacities to perfect his skills and harness his talent with various establishments notably; Winston’s, the Royal York Hotel, the Windsor Arms Hotel, and the Metro Toronto Convention Centre.

In 1988, Michael, at the age of 23, was promoted to Restaurant Chef at the prestigious 3 Small Rooms at the Windsor Arms Hotel under Michael Bonacini. Shortly after that, Michael moved to the Skydome in 1990, assisting as Executive Sous Chef and Chef De Cuisine to the launch of the Founder’s Club cooking for numer-ous heads of state, royalty and prestigious politicians. In 1994, after a stint at Centro’s Wine Bar with Marc Thuet, Michael was ultimately led to a post as Executive Chef at Acqua. Yearning for his roots, he returned to the hotel industry supervising a staff of 120 as Executive Sous Chef at the Royal York Hotel producing four thousand to six thousand meals a day for nine restaurant outlets and thirty-four banquet and meeting rooms.

Throughout his career, Michael has been involved with many facets of culinary excellence. As an educator, he frequently conducted seminars and classes at George Brown College and Humber College. Many protégés have been inspired over the years following his lead in the kitchens of such food and hospitality icons as the Royal York Hotel and Windsor Arms Hotel. Among his peers, Michael attained much notoriety, particularly in 1988 winning the Gold medal at the coveted Culinary Olympics in Frankfurt, Germany.

His culinary philosophy is simple, “ Buy the best product, keep it simple, concentrate on flavour. ” His culi-nary style is 21st century.

Whether cooking for Nelson Mandela, Queen Elizabeth or Tom Cruise, donating his time and energy to developing the chefs of tomorrow, or attaining international acclaim and award-winning excellence Michael Ewing is a devoted, passionate and talented credit to his craft and to the Liberty Entertainment Group.
