A Guide to the Scotch Whisky Regions

Scotland is divided into six whisky producing regions:

the Lowlands, the Highlands, Speyside, Campbeltown,

Islands and Islay. Although, each whisky is unique, the malts

produced in each region have some common

characteristics, which separate them from the whiskies in

other regions. These differences are the result of several

factors, for example: the use of different raw materials,

climate variations and production techniques.

Whisky

Islay Islay is a small island west of the Scottish mainland and is the home of many well known malt whiskies. Although a few milder versions exist, Islay whisky,

in general, is smoky, peaty and salty and has quite a bit of tang and tar thrown into the mix. The island once had 23 distilleries operating at the

same time, but now the number of active distilleries is down to 7.

Highlands The Highlands is the largest of the whisky producing regions of Scotland. The whisky is often powerful, has a rich flavour and is quite smoky although slightly less so than whisky from the Islands. Compared to the Lowlands, Highland whiskies often taste

very different from each other. This is partly due to the size of the region, which allows for greater differences in the micro climate, but variations in raw materials

and production techniques also play an important part. ABV 50ML

Lowland As the name suggests, the Lowlands is a flat region without mountains. It is

also the southern most part of Scotland. Whisky from the Lowlands is smooth and slightly fiery. It is also very light in salt, peat and smoke as opposed to

other whiskies. Any Lowland whisky is a fine aperitif. ABV 50ML

Islands It is not uncommon for this region to be confused with Islay, but the Islands are

in fact a separate production region which consists of the islands; Mull,

Orkney, Jura, Arran, Shetlands and Skye. It is a source of constant debate

whether Orkney belongs to the Islands. Whisky from the Islands may be

described with strong peaty and maritime aromas, as a milder version of

Campbeltown The region of Campbeltown was once a flourishing whisky region and the

city of Campbeltown was considered to be the whisky capital of Scotland. In 1886 there were no less than 21 distilleries in and surrounding the

Speyside The region received its name from the river Spey which cuts through the area.

Many of the distilleries use water straight from the river in their production process. Speyside is geographically part of the Highlands but is considered a

separate region because of its size and the different characteristics of Speyside whisky, which has a rich flavour complexity and relatively

Irish Whisky must be distilled and aged in the Republic of Ireland or in

Northern Ireland. Key regulations defining Irish whisky and its production are established by the Irish Whisky Act of 1890.

Japanese Whisky

Production in Japan began around 1870, but the first commercial production was in 1924 upon the opening of the country’s first distillery. Broadly speaking the style of Japanese whisky is more similar to that of Scottish whisky than Irish or American whisky. This is probably due to the fact that Masataka Taketsuru had studied the art of distilling in Scotland

and brought this knowledge back to Japan in the early 1920's.

Cognac For a distilled brandy to bear the name of Cognac, its production methods must meet certain legal requirements. In particular, it must be made from

specified grapes of which Saint-Emillion is the most widely used at the present time. The brandy must be twice distilled in copper pot stills and

Armagnac

Armagnac is the oldest brandy distilled in France, and in the past was

consumed for its therapeutic benefits. In the 14th century, Prior Vital du Four, a Cardinal, claimed it had cured 40 illnesses. It is distilled from wine

usually made from a blend of Armagnac grapes, and distilled using column stills.

Calvados An apple brandy from the French region of lower Normandy. Apple

Fortified Wines

Port

Produced exclusively in the Douro Valley in the northern Provinces of Portugal. Port is a sweet, red wine, which also comes in dry, semi-dry and

white varieties. The continued English involvement in the port trade can be seen in the names of many port shippers: Cockburn, Croft, Dow, Gould,

Graham, Osbourne, Offley, Sandeman, Taylor and Warre being amongst the best known. The British involvement grew so strong that they formed a

trade association that became a gentleman's club. ABV 70ML

Sherry

The Moors conquered the Andalusian region of Spain in 711AD and introduced distillation, which led to the development of brandy and fortified wine. During the Moorish period, the town was called Sherish, a translation of which became Sherry and Jerez. Sherry wine became very popular in Great Britain, especially after Sir Francis Drake sacked

Gin

The Dutch physician, Franciscus Sylvius, is credited with the invention of gin.

Gin became popular in England after the government allowed unlicensed

gin production and at the same time imposed a heavy duty on all

imported spirits. The column still was invented in 1832, making the distillation

of neutral spirits practical and enabling the creation of the “London Dry”

style. In tropical British colonies gin was used to mask the bitter flavour of

the quinine, which was the only effective anti-malarial compound. Quinine

was dissolved in carbonated water to form Tonic Water; the resulting mix

became the origin of today’s popular gin and tonic combination, although

modern tonic water only contains a trace of quinine as flavouring.

Rum

Rum is a distilled alcoholic beverage made from sugar cane by products such as molasses, or directly from sugar cane juice, by a process of

fermentation and distillation. Tradition suggests rum first originated on the island of Barbados. A 1651 document from Barbados stated: “The chief fuddling they make in the island is Rumbullion, alias Kill-Divil, and this is

made of sugar canes distilled, a hot hellish and terrible liquor.”

Cocktails

The official definition of a "cocktail" according to the Dictionary is "an iced

drink of wine or distilled liquor mixed with flavouring ingredients." That's a

pretty broad definition, but reflects the modern practice of referring to almost

any mixed drink as a cocktail. There are many stories about where the word

“cocktail” came from. However my favourite refers to a rooster's tail

(or cock tail) being used as a Colonial drink garnish.
