Mushrooms
Many Pyrenean gastronomic fairs and festivals centre on beans, chicory and turnips, but there canbe no doubt that the mushroom is the most popular ingredient in the local mountain cuisine. Themost highly-appreciated types include boletus, wild mushrooms, meadow mushrooms, chanterelles, elms and gomphidus. These form the basis of exquisite dishes and the perfect accompaniment, yetthe mushroom tradition goes beyond cuisine: mushroom hunting is a thoroughly enjoyable activitythat, with a little information and advice, one and all can take pleasure in.
