• Welsh cakes, also Welshcakes or pics are traditional in Wales. Similar small cakes are made in other regions of the UK.

• Welsh cakes are made from flour, sultanas, raisins, and/or currants, and may also include such spices as cinnamon and nutmeg. They are roughly circular, a few inches (7-8 cm) in diameter and about half an inch (1–1.5 cm) thick.

• Welsh cakes are served hot or cold dusted with caster sugar. Unlike scones, they are not usually eaten with an accompaniment, though they are sometimes sold ready split and spread with jam, and they are sometimes buttered.

Welsh cakes ingredients• 225g/8oz plain flour• 100g/4oz butter• 75g/3oz caster sugar• 50g/2oz currants• ½tsp baking powder• ¼tsp mixed spice• 1 egg• A pinch salt• A little milk to bind

• Cheese has long been a traditional food of Wales. The best known Welsh cheese is Caerphilly, though many other types exist, including YFenni, Tintern and Pantysgawn.

• Wales now has a plethora of artisan cheesemakers producing extremely high quality cheeses from locally produced milk.

WELSH RAREBIT• Welsh rarebit is a dish made with a

savoury sauce of melted cheese and various other ingredients and served hot with bread, or the hot cheese sauce may be served in a chafing dish like a fondue, accompanied by sliced, toasted bread.

BARA BRITH• Bara brith, sometimes known as

speckled bread, can be either a yeast bread enriched with dried fruit or something more like a fruitcake made with self-raising flour. It is traditionally made with raisins, currants and candied peel.
