Terry has been coming to the Beacon for 14 years. He says Tai Chi was what caught his interest when he first started coming in but eventually Terry would become a dedicated volunteer. Enjoying the many activities and delicious lunches are what Terry says he likes about Beacon the most. Terry enjoys all manner of sports and use to play basketball in his youth. With a vast knowledge of the Beacon center and his helpful nature, Terry ensures that the Beacon runs smoothly and that everyone here is happy. With his camera, Terry has captured some of the greatest moments here at the Beacon throughout the years. We are fortunate to have Terry Wilson as a Beacon member.

Grandma McAndrews' Irish Soda Bread

4 cups all-purpose flour

1/4 cup white sugar

1 teaspoon baking soda

2 teaspoons baking powder

1 teaspoon salt

2 eggs

1-1/4 cups buttermilk

1/4 cup corn oil

1 cup raisins

Preheat oven to 350 degrees F (175 degrees C).

Grease a baking sheet, or line with parchment paper.

In a large bowl, stir together the flour, sugar, baking soda, baking powder, and salt. In

another bowl, whisk together eggs, buttermilk, and corn oil. Make a well in the center of the

flour mixture, and pour in the buttermilk mixture. Add the raisins, and stir a few times, just

until the ingredients come together into a soft dough. Turn the Place the bread on a middle
