Family-owned, single-vineyard French-style wines

De Beaurepaire Wines is a family-owned single-estate producer of boutique French-style wines.

Their 53 hectare (131 acre) vineyard, one of the largest privately owned vineyards in NSW, is

located on the hills above the picturesque and historic town of Rylstone - 40 minutes from

Mudgee, 1.5 hours from Leura/Katoomba – in the Central Ranges of NSW.

Similar terroir to Burgundy and Champagne

Great wine is made in the vineyard and it all starts with 'terroir' - the climate and soil. The

vineyard has stony, sandy-loam soils on limestone bedrock. This combined with a very cool

continental climate creates an exceptional Australian 'terroir' (and the most similar in Australia

to Burgundy and Champagne) for producing naturally-balanced flavours, acids and sugars in

their wines.

Their boutique wines are handcrafted from individually selected parcels of grapes, all sourced

from the vineyard. They seek to create wines with structure, elegance and food friendliness

inspired by their Burgundian heritage (the De Beaurepaire family originates from the little

Burgundian country town of Beaurepaire-en-Bresse).

Their range includes multi-award winning and internationally recognised white, rosé, red,

sparkling and dessert wines.

AMATO VINO

AUSTRALIA

Amato Vino are small batch, artisan winemakers. Hands on in terms of the grunt work, the care

and guidance, but with a hands off approach to the science of winemaking, utilising mostly

traditional processes. An old school approach yet with a modern flare for creativity and

adventure.

The winemaking philosophy is lo-fi, in that we embrace wild ferments, little or no adjustments

in the winery, minimal handling. We use mostly older oak so that there are no distractions to

the fruit expression of the wines/varieties from the regions/vineyards they grow, and utilise

some unconventional fermentation and maturation vessels including clay amphorae.

LETHBRIDGE

GEELONG, VICTORIA

There are few tales as impressive as that of Lethbridge Wines. Ray Nadeson and Maree Collis were both successful medical researchers before succumbing to their desire to create a vineyard and winery in Geelong. They planted vines on their own rootstocks, built a straw-bale winery and house, and farmed the land according to biodynamic beliefs. Gin has the versatility of vodka however gin can bring more flavour into the equation. Gin gains most of its flavour through Juniper berries. Although mostly associated with London and the UK. Gin actually has its beginnings with the much older Dutch spirit Jenever, which became popular in the UK during the reign of William I of Orange. (1689-1702) From this base British distillers established a period called the Gin Craze (1695-1735) when thousands of micro distillers started production. Like most cocktails, the origin of the martini is debated; there are two ‘accepted’ theories.

In 1863 an Italian vermouth company rebranded themselves Martini after their founder

Alessandro Martini and the brand name may be the souse of the cocktail name.

The other popular theory is the drink is derived from the cocktail Martinez which was drunk

commonly drank in San Francisco in the 1860’s.

The Martini is the Gin drinkers drink. It can be served a number of ways, with the taste vastly

varying depending on the drinkers’ choice of gin, style and garnish.

The Kangaroo is the original name for the Vodka Martini, traditionally served dry or dirty the

GIN COCKTAILS 1951 Martini 18 Tanqueray martini served dry with a Cointreau rinsed glass Winner of the 1951 world martini competition held in Chicago. This is a twist on a dry Martini with a delicious sweet orange edge. 1922 Martini 19 Nosferatu Blood Orange Gin served dry with a Campari rinsed glass Created in house this Martini beautifully showcases Nosferatu’s blood orange flavour. Vesper Martini 20 Gin, Vodka and Lillet Blanc. The only Martini that should ever be shaken. The ‘James Bond Martini’ as described in the first book, Casino Royale. La Parisienne 17 Gin, Dry Vermouth, Crème de Cassis. Rich with Cassis, balanced with gin and dry vermouth, created in the 1920’s in the Savoy Hotel in London to promote Crème de Cassis. Original White Lady 19 Gin, Crème de menthe, Cointreau, lemon. The original recipe for a white contains Crème de menthe, with the three main ingredients balanced. Created in 1919 in London’s Ciro Club. White Lady 19 Gin, lemon, Cointreau, sugar, whites. This classic cocktail is the archetypal gin cocktail, created in 1929 in Paris by Harry MacElhone the same man who created the original ten years previous. Pink Lady 18 Gin, Grenadine, Lemon, Whites. A twist on the white lady the Cointreau is omitted, Grenadine is added to give the drink its vibrant colour and sweeter taste. Perfect Lady 18 Gin, Lemon, Peach, Whites. Created in 1936 the Perfect Lady won the British Empire cocktail competition of that year. The use of peach instead of triple sec gives this drink a much fruitier flavour. Clover Club 18 Gin, Raspberries, Sweet Vermouth, Whites. A very easy drinking cocktail, fresh, fluffy and sweet

with raspberries.

Bees Knees 18 Gin, Lemon, Honey. This prohibition cocktail is a forgotten classic, honey is used instead of sugar to sweeten the gin adding more flavour to the drink. Think of this as a much sweeter Negroni. Southside 17 Gin, Mint, Lime. This drink gets its name from Chicago mobsters during prohibition, a beautifully balanced drink. Ask for a top up of Champagne to make this drink a Southside Royale. Tom Collins 18 Gin, Lemon, Sugar, Soda. Served tall. Named after the glass that is associated with the cocktail. A Collins is essentially a lemonade ’charged with a spirit’ usually Gin or Vodka. Aviation 19 Gin, maraschino, Crème de Violette, lemon. First created in 1916 when air travel was in its

infancy. So named due to the pale blue colour reminiscent of the sky.

GIN COCKTAILS Gin Rickey 18 Gin, Soda, Lime, Bitters. Essentially the same drink as a Tom Collins however lime is used to sour the drink not lemon. Corpse Reviver #2 20 Gin, Chartreuse, Lillet Blanc, Absinthe. Invented in Paris in the 1920’s, it is said that four of these in quick succession is enough to awaken a corpse. Singapore Sling 20 Gin, Cherry Herring, Benedictine D.O.M, lime juice, pineapple juice, grenadine. Created in Raffles bar in Singapore sometime between 1899 and 1915, the exact heritage is lost due to the Japanese occupation of Singapore in 1942. Bramble 18 Gin, Lemon, Sugar, Crème de mure. Named after the bush that blackberries grow in and that scatters the English countryside, invented in the 1980’s by Dick Bradsell, this is truly a modern classic. Negroni 18 Gin, Campari, Dark vermouth. The story goes that in 1806 the count Negroni wanted a drink stronger than an Americano, (Campari, vermouth topped up with soda) the bartender obliged by replacing the soda with Gin. White Negroni 19 Gin, Suze, Lillet Blanc. Created in 2001, Lillet and Suze replace Campari and the dark vermouth which makes this drink the perfect bittersweet aperitif. Last Word 19 Gin, Chartreuse, Maraschino, Lime. Aniseed and caraway lovers will adore this cocktail, the chartreuse gives a lovely tangy flavour. Charlie Chaplin 18 Sloe Gin, Apricot brandy, Lemon. Created prior to 1920 during the height of the silent movie age, the Charlie Chaplain is a bitter sweet cocktail. Red Snapper 18 Gin, tomato spice mix, Lemon, Sugar. The red snapper is essentially a Bloody Mary however instead of vodka, Gin is used which showcases its aromatic botanicals. Ramos Gin Fizz 18 Gin, cream, lemon, orange blossom, egg white, soda. Created in 1888 by Henry Charles Ramos in New Orleans. This has become somewhat of a cult classic with purists believing that it requires twelve minutes of shaking. French 75 18 Gin, Lemon juice, sugar topped with champagne. First created in Paris bars during WWI the

name comes from having to many of these equates to being shot by a French 75mm canon.

TEQUILA & MEZCAL Tequila probably won't fix your problems, but it's worth a shot. Tequila is a distilled spirit produced from the blue agave plant, primarily located near the town of Tequila in the Mexican province of Guadalajara however today more than 40 countries worldwide produce Tequila. Plata or Blanco tequila is tequila that has been aged for less than two months, Reposado has been aged for up to one year in oak barrels and Añejo has been aged for a minimum of one year. Mescal is a spirit made from the heart of agave plant and has a distinctive smoky flavour. TEQUILA & MEZCAL COCKTAILS Margarita 18 Reposado Tequila, Cointreau, sugar and lime juice. The origins of the cocktail are contested however one version is that in the 1940’s the German ambassadors wife was called Margaretta. She asked a bartender for a strong tequila drink flavoured with lime. The subsequent drink was then named after her. Tommy’s Margarita 18 Reposado Tequila, sugar and lime juice. Created in the early 1990’s in ‘Tommy’s’, a small family Mexican restaurant in San Francisco. The omission of Cointreau really shows the flavour of the Tequila. Paloma 18 Blanco Tequila, grapefruit juice, lime juice, sugar and topped with soda. Created in the town of Tequila, a beautifully balanced sweet and savoury refreshing drink. Prado 20 Blanco Tequila, Maraschino liquor, lime juice and egg whites. The use of Maraschino brings more of a floral nature to the Tequila. El Diablo 18 Reposado Tequila, Crème de Cassis, lime juice and topped with soda. Created in California in the 1940’s. the name translates to ‘the devil’ thought to be the delicious yet dangerous nature of this drink.

RUM Drinking Rum before 10am makes you a Pirate, not an Alcoholic. Rum was first recorded as early as the 14th century when Marco Polo noted drinking a ‘wine made from sugar’ on his return from China in modern day Iran. The modern concept of Rum originates in the Caribbean and has a dark history of the slave trade. It was one of the sugar plantations in Barbados that the spirit was first produced by using the by-products of sugar, molasses. Rum has since had a relationship with the British Empire and was integral in the only military rebellion in Australia the ‘Rum Rebellion’ of 1810. Rum can be categorised into three main groups, White rum, Aged rum, Gold rum and Dark Navy rum. Gold, aged rum is White rum that has been aged in oak casks for a number of years, so the spirit takes on some of the colour and flavour of the oak.

RUM COCKTAILS Mojito 18 White Cuban Rum, fresh lime, fresh mint sugar. The classic white rum cocktail, the mojito is said to have its roots with a medicinal rum and mint drink that the English captain Francis Drake enjoyed in 1586. Daiquiri 18 Gold, aged Caribbean Rum, fresh lime, sugar, named after the town in Cuba where this drink was first produced in 1898 Mai Tai 19 Gold, aged Rum, orgeat syrup, Cointreau, lime juice and pineapple. Named after the Tahiti expression meaning ‘out of this world’. The Mai Tai was created in 1944 in San Francisco and has become a hugely successful rum cocktail. Dark ‘n’ Stormy 19 Dark Bermuda Rum, Angostura bitters, lime juice topped with ginger beer. The Dark and Stormy is the national drink of Bermuda where the original dark navy rum was produce. Mary Pickford 18 White Rum, grenadine, pineapple and Maraschino liquor. A perfectly balanced prohibition cocktail, the Mary Pickford was created for the silent movie star Charlie Chaplin whilst filming in Cuba in the 1920’s Pina Colada 18 White Rum, lime juice, coconut cream and pineapple juice. The national drink of Puerto Rico, created in the 1950’s using the newly manufactured cream of coconut. Knickerbocker 18 Gold Rum, raspberry, lime and Cointreau. The Knickerbocker first appeared in Jerry Thomas’ 1862 book ‘The Bartenders Guide’ making it one of the original modern cocktails Commodore 18 Gold Rum, lemon, sugar, egg white and grenadine. Published in the 1948 book by Dick Embury ‘The Fine Art of Mixing Drinks’ this is a smooth sweeter Daiquiri Hemmingway Daiquiri 18 White Rum, grapefruit juice, Maraschino liquor and lime juice Jayne Mansfield 18 White Rum, strawberries, Frais de Bois and Champagne. Named after the Hollywood actress the strawberries and rum give a lovely sweetness to the rum Frog Cutter 19 White Rum, Gin, Cognac, orange juice and orgeat syrup. A tiki bar classic attributed to a 1970’s bartending guide by Donn Beach Caipirinha 19 Cachaça, sugar, fresh lime. Although not made with rum, Cachaça is the Brazilian national spirit and it is made by using the sugar cane rather than molasses.

WHISK(E)Y/BOURBON Too much of anything is bad, but too much good whiskey is barely enough. Whisky is a distilled spirit produced from grain, this can be Barley, most common in Scotch whisky production, Corn, Rye and Wheat. Although produced all over the world Scotland has become the epicentre and benchmark for whisky production especially with barley and wheat. Bourbon is American whiskey that is produced using at least 51% corn and then aged in charred barrels to give Bourbon its characteristic burnt sweetness. Most recently Japan has moved into the mainstream Whisky market, Japan has a long history of production, dating back to the 19th century but its only in the last 25 years that the Whiskies have become more well known in the west.

THE OLD FASHIONED This most classic of classic cocktails came from humble beginnings. Originally named the simple ‘Whiskey cocktail’, the classic Bourbon whiskey old fashioned became increasingly popular by the 1840’s. By the 1870’s bartenders started to experiment by adding mew flavours and spirits into the mix such as Chartreuse, Absinthe maraschino and curacao. However over recent decades these have been stripped off this classic cocktail to go back to its roots. An Old Fashioned is simply a double measure of a spirit, traditionally Bourbon, diluted with Angostura bitters and sugar, and stirred down with ice for an extended period of time. Today an Old Fashioned is still one of the world’s most popular cocktails, traditionally made on Bourbon Whiskey or Scotch Whisky however the 2000’s have created some modern classics with old Fashioned’ s made on Rum, Tequila, and even Gin. SAZERAC One of the USA’s oldest cocktails, the Sazerac is essentially a Old fashioned, made on Rye whiskey or cognac, flavoured with Peychaud bitters and a dash of absinthe. Originally made with Cognac in New Orleans from the 1850’s, a Cognac shortage in the 1870’s led the creation of the Sazerac on Bourbon. Both of which are accepted today with both sides arguing theirs is the best. Sazerac 25 Rye Whiskey, Peychaud bitters, sugar and absinthe. Many bars and cities have their own recipe for a Sazerac; this is the original New Orleans recipe using only the essential four ingredients.

Scotch stirred down and softened with sweet Amaretto, simple yet delicious. Manhattan 18 Bourbon, Dry Vermouth and bitters. The first recorded sale of a Manhattan was in 1882, since then the cocktail has developed into three variants, sweet, dry and perfect. Rob Roy 18 Scotch whisky, Sweet Italian Vermouth, Angostura bitters. AKA the Scotch Manhattan. Created in 1894 in NYC, named not after the Scottish outlaw but the Broadway show that was playing at the time. Little Italy 19.5 Rye whiskey, Amaro Averna and Sweet Vermouth. Modern twist on a Manhattan, this bittersweet cocktail makes a perfect aperitivo. Mint Julep 18 Bourbon, mint, sugar and bitters. Closely associated with Kentucky this drink is a refreshing combination of sweet Bourbon and fresh aromatic mint. Sazerac 25 Rye whiskey, Peychaud bitters, sugar and Absinthe. Many bars and cities have their own recipe for a Sazerac, this is the original New Orleans recipe using only the essential four ingredients New York Flip 18 Bourbon, Port, whole egg and sugar. A simple but tasty vodka drink, the sweet cherry and salt is well balanced. Black Russian 18 Vodka, Kahlua. Created in Brussels circa 1949, right at the start of the cold war, often mistakenly cola is added, this creates a Colorado Bulldog. White Russian 18 Vodka, Kahlua, Cream. The most common variant on a Black Russian, the addition of cream smoothens the drink Red Russian 18 Vodka, Cherry Herring. The by far least known Russian, the red Russian is sweetened with a Cherry liquor. Kamikaze 18 Vodka, Lime, Cointreau. OTHER SPIRIT COCKTAILS Kir Royale 18 Crème de cassis topped with Champagne, named after the mayor of Dijon, Burgundy, who promoted the drink whist in office in 1904.

Amaretto Sour 18 Amaretto, lemon juice, sugar and egg whites, sweet and sour with a creamy almond flavour this has become a modern classic.

Aperol Spritz 18 Aperol, Prosecco and topped with soda. This quintessential aperitif cocktail originates in Venice at the end of the 19th century. The traditional wine spritzer was added to with Campari and later replaced with the sweeter Aperol which proved to be more commercially successful.

Japanese Slipper 18 Midori, Cointreau and lemon juice. Created in 1984 in Melbourne.

BRANDY & COGNAC COCKTAILS Brandy Alexander 19 Cognac, crème de cacao, cream and egg white. Created in the 1930’s this drink became much more popular than the Alexander (made with Gin) which predates the Brandy version by twenty years. Pisco Sour 18 Pisco, Lime juice, sugar and egg white. The national drink of both Peru and Chile, both of whom claim the origins of the spirit. Sidecar 19 Cognac, Cointreau, lemon juice. It is claimed that the origin of this drink is in Paris during WWI, named after the motorcycle sidecar that an American captain was driven to and from the bar where it was created. Stinger 20 Cognac, Crème de Menthe. Allegedly created by American millionaire Reginald Vanderbilt in the early 20th century. Bing Crosby would later explain ‘it’s a Stinger, it removes the sting’
