    identificando las variedades y los pagos,

    observando las formas de cultivo, catando ycomprando los vinos en la

    propia casa elaboradora y visitando lasriquezas artsticas de cada comarca.

    Normalmente el enoturismo va acompaado delconocimiento de las especialidades

    gastronmicas de las regiones vincolas. Estaprctica puede ser an ms interesante cuando

    se hace coincidir el viaje con ciertas festividadeslocales de la vendimia o relacionadas con lacultura del vino.

    traveling throughout the different wine areas,

    visiting vineyards and wineries, identifying the

    varieties and pagos (the spanish term that defines

    superior quality wines made from the grapes ofspecific vineyards), observing the different

    methods of cultivation, enjoying wine tastings and

    purchasing the wines at the wineries themselves,

    apart from visiting the cultural and artistic heritage

    of each region. Normally this type of tourism walks

    hand-in-hand with knowledge of the gastronomic

    specialties of the wine regions. This practice can be

    even more interesting if the trip coincides with

    certain local festivities such as the grape harvest

    or festivities related with the culture of wine.

    on pan y vino se hace el camino, dice un desgastado proverbio. Pero

    el uso excesivo de la sentencia no le resta un pice de verdad. Desde siempre,

    el vino ha sido uno de los mejores compaeros de fatigas de los hombres va-

    gabundos. Acaso nuestro admirado Ulises, el mejor viajero, no echaba

    mano a menudo de los odres de vino que llevaba en sus naves? Adems de eso,

    el hroe salv la vida gracias a su reserva de caldos, cuando ide la treta de

    emborrachar al temible cclope Polifemo para cegarle y burlarle. Y nuestro Don

    Quijote? El gran libro que explora los claros y anchos territorios manchegos

    est impregnado de ventas y posadas en donde las tinajas y los pellejos de vi-

    no alegran el nimo a los cansados caminantes. Tambin corre el vino en las

    pginas de Shakespeare y en las de Joyce, igual que en las de muchos otros

    grandes escritores, junto a hombres deseosos de viajar, como el inolvidable

    vitalista Falstaff o el bondadoso Leopold Bloom.Por mi parte, no concibo un viaje sin el gusto de probar los caldos de

    cada lugar adonde me conducen mis pasos. Los he probado en Surfrica, en

    California, en Nueva Zelanda e, incluso, en Canad, en cuya pennsula de Ni-

    gara uno muy curioso que llaman ice wine (vino de hielo). Desde luego, que los

    cato sin tregua en Espaa. Y por supuesto en La Mancha, la ltima vez siguien-

    do, precisamente, las rutas de Don Quijote. Ahora que las barricas han sus-

    tituido a las tinajas en la regin vincola ms grande del mundo, los caldos de

    esta generosa geografa han ganado la sutileza y la delicadeza necesarias pa-

    ra competir con los mejores.

    Alexis Zorba el griego, el inolvidable personaje del escritor Nikos Ka-

    zanzakis, era un infatigable viajero. En un pasaje del libro, mientras recorren

    los campos cretenses, comenta a su compaero: Una vieja cepa echa ramas,

    hay en ellas unos adornos cidos colgados, y pasa el tiempo y el sol los madu-

    ra: se ponen dulces como miel y se les llama entonces uvas; se les pisa, se al-

    macena el zumo extrado en unos toneles; all fermenta solo, se le destapa elda de San Jorge Bebedor y qu prodigio, es vino! Bebes el zumo rojo y tu al-

    ma se acrecienta, se siente capaz de desafiar a Dios para que lidie contigo.

    Por cierto, ya que hablamos de dioses, vale recordar que ningn otro

    alimento o bebida tiene uno propio, mientras que el vino cuenta con el joven

    Dioniso, la deidad ms viajera del Olimpo. No solo recorri Grecia, Tracia, Li-

    dia, Frigia, Creta, Naxos y Delfos, sino que incluso lleg a alcanzar la India.

    Y llevaba siempre un vaso de vino en la mano y adornaba su cabeza con una

    corona tejida con ramas de vid. No sera mala idea hacerle hijo predilecto de

    Castilla-La Mancha.

    However, despite excessive use of the phrase its truth continues

    to be justified. Wine has forever been the best comrade-in-arms

    of the vagabond traveler. Is not our admired Ulysses one of the

    best travelers ever? Did he not often resort to the wineskins his

    vessels carried? Apart from this, the hero even saved his lifethanks to his reserves of wine, when he decided to make the

    fearsome Cyclops Polyphemus as drunk as possible to then blind

    and evade him. And how about our own Don Quixote? The great

    book that explores the pristine and widespread Manchego

    territories overflows with mention of taverns and inns in which the

    earthenware vats and wineskins brought joy to the weary

    travelers. Wine also steeps the pages of Shakespeare and Joyce,

    as is the case with many of the greatest writers, along with men

    desirous of travel, such as the unforgettable vitalist Falstaff or the

    kindhearted Leopold Bloom.On my part I am unable to conceive a trip without the pleasure

    of trying the wines of each and every place where my footsteps

    have led me. I have tried the wines of South Africa, those of

    California, New Zealand and even those of Canada, where they

    make a curious wine in their Niagara Peninsula, which they call Ice

    Wine. And indeed in Spain I relentlessly enjoy and pursue the

    wines. And of course in La Mancha, the last time precisely

    following Don Quixotes routes. Now that the barrels and casks

    have substituted the earthenware vats of olden days in the

    greatest wine-producing region in the world, the wines fromthis bountiful geography have gained the necessary subtlety and

    delicacy to compete with the very best.

    Alexis Zorba, Zorba the Greek, unforgettable character

    created by the writer Nikos Kazanzakis, was an unflagging

    traveler. In one of the books passages, while he travels the

    countryside of Crete, he comments with his companion: An old vine

    stock sprouts branches, with hanging acidy clusters of

    adornments, and time passes and sun ripens the fruit: sweet as

    honey it turns and then they are called grapes; stomped on they

    are and the juice that is obtained is stored in barrels; there on itsown it ferments, and on the day of Saint George the Drinker the

    contents are revealed, and Voila, what a prodigy wine is! You drink

    the red juice and your soul swells, and then miracle of miracles, one

    is even capable of challenging God in combat.

    By the way, given that we are dealing with the Gods, one must

    remember that no other single food or drink has its own God, while

    wine does indeed count with Young Dionysios, the most traveled of

    Mount Olympus Deities. Not only did he travel Greece, Thrace, Lidia,

    Frigia, Crete, Naxos and Delphos, but he also even managed to

    reach India. And always with a glass of wine in his hand and a wovenwreath of vine branches crowning his head. To appoint him

    Favorite Son of Castilla-La Mancha would not be an outrageous idea.

    astilla-La Mancha, tan inmensa como desconocida, alberga

    en su interior muchos pequeos territorios que cada uno de

    ellos, por s mismo, es un tesoro. Descubrir su rico patrimonio cul-

    tural e histrico ya es una poderosa razn para acercarse a estas

    tierras, pero adems cuenta con una singularidad que la convier-

    te en nica en el mundo. El corazn de Espaa se halla salpicado de

    tal cantidad de viedos en su basto y variado territorio, que el ro-

    jo, ms o menos intenso, de sus tierras va unido indefectiblemen-

    te al verde de sus vias. Y como no poda ser de otro modo, la plan-

    ta, de arquitectura clsica manchega o diseo vanguardista, de las

    bodegas que miman los frutos de estas vides, se alza orgullosa en

    esta grandiosa llanura.

    Una gran parte de ellas, al menos las que se han agrupa-

    do en torno a la asociacin Turismo Enolgico de Castilla-La Man-

    cha, no son bodegas al uso. Desde hace unos aos se han compro-

    metido con su territorio para hacerlo ms atractivo a los visitantes

    y han abierto sus puertas de par en par para dar a conocer la no-

    ble y cuidada labor que realizan cada da en estos templos mgicos,

    casi sagrados, con el objeto de convertir la uva que cultivan y re-

    colectan en el preciado lquido que es el vino.

    Esta metamorfosis, que requiere la sabidura que slo

    proporciona la experiencia combinada con la aportacin de los ms

    reputados enlogos y prestigiosos asesores en viticultura, tambinla han aplicado a sus instalaciones. Y lo han hecho, precisamente,

    para que el viajero que recala en estas tierras pueda disfrutar, con

    astilla-La Mancha, as immense as it is unknown, holds

    many small territories in its interior, which on their own are each

    and every one of them, a true treasure. To discover its rich

    cultural and historical heritage is in itself a powerful reason to

    become acquainted with these lands, although it also counts

    with a singularity that makes it unique in the world. The heart of

    Spain is sprinkled with such an amount of vineyards throughout its

    vast and varied territory, that the more or less intense red of its

    soil is inevitably united to the green of its vineyards. And as could

    not be otherwise, the silhouette of its wineries, whether of

    classical Manchego style architecture or of the most vanguard of

    designs, in which the fruits of these vines are pampered, proudly

    arise from this grandiose plateau.

    A good number of them, at least that have grouped

    together in the Enotourism Association of Castilla-La Mancha,

    are anything but typical wineries. For some years now they have

    been committed with their territory to render it more attractive

    to the traveler, having opened their doors wide open to this nobleand painstaking task they carry out day after day in these

    magical, practically sacred, temples, the same with the object of

    turning the grape they cultivate and harvest into the precious

    liquid that wine is.

    This metamorphosis, which exacts the wisdom that only

    experience combined with the contribution of the most reputed of

    enologists and prestigious advisers in viticulture matters can

    provide, has also been applied to their facilities. And the reason is

    precisely so that the traveler reaching these lands can fully enjoythe pleasures, happiness and joy that wine provides, apart from the

    culture that embraces this entire world. However, they have also

    Esta es una de tantas referencias al vino castellano-manchego del

    nclito Miguel de Cervantes en su universal obra Don Quijote de la

    Mancha, sin duda, el mejor divulgador de las riquezas de estas

    singulares y extraordinarias tierras.

    wealth of these singular and extraordinary lands.

    sus sentidos con la oferta ms exquisita y selecta en un entorno

    envolvente, casi idlico.

    Quieren que sus invitados vivan experiencias nicas, inten-

    sas, que se impregnen en su memoria como los aromas de sus vi-

    nos. No quieren mostrar, sino hacer sentir, vivir, conmover a quie-

    nes se deciden a franquear sus puertas. Por eso, las empresas,

    en su mayora familiares, que aparecen en esta Gua, se han pre-

    ocupado de pasar su saber de generacin en generacin y de re-

    cuperar la cultura vitivincola de la regin para mejorarla y desmar-

    carse elaborando vinos creativos, diferentes.

    Una modernizacin que coloca a estas bodegas de Castilla-

    La Mancha en una posicin de liderazgo y las ha permitido dejar

    atrs el histrico modelo de produccin de vinos a granel para in-

    corporarse a la elaboracin de vinos bajo las distintas Denomina-

    ciones de Origen (Valdepeas, Ucls, La Mancha, Almansa, Mn-

    trida, Ribera del Jcar, Mondjar, Manchuela y parte de la

    denominacin de origen Jumilla), los excepcionales Vinos de Pago,

    que son Denominaciones de Origen de un solo productor, o bajo la

    indicacin geogrfica Vinos de la Tierra de Castilla. Al ofrecer la po-

    sibilidad de compartir estos laboriosos e interesantes procesos, las

    bodegas se han propuesto ayudar a sus visitantes a captar el em-

    brujo y los duendes que rodean al mundo del vino, para lo que tam-

    bin han convertido sus espacios de trabajo en lugares placente-

    ros y relajantes.

    iguiendo el curso del Tajo, se levanta ante los ojos del viaje-

    ro el imponente perfil de la Ciudad de las Tres Culturas, de la Ciu-

    dad Imperial y Coronada, de la capital romana, visigoda, musul-

    mana y cristiana, la Ciudad del Greco, la Ciudad de todos. El Tajo la

    abraza y rodea. Toledo, Patrimonio de la Humanidad, se yergue or-gullosa de su historia y su ejemplo. Perderse por las estrechas y

    pedregosas calles de su casco antiguo traslada al visitante siglos

    atrs, cuando la ciudad acogi durante tres siglos a la cultura ra-

    be, juda y cristiana.

    La importancia de Toledo a lo largo de la historia queda

    constatada por haber ejercido la capitalidad del reino visigodo y se-

    very few corners of the world is it possible to admire Muslim

    plasterwork, Gothic vaults, Renaissance palaces or Hebrew

    Bodegas Finca El Retamar

    La Finca El Retamar, de 650 hectreas, est situada al final

    del valle de la Sierra de El Castaar en los Montes de Toledo, den-

    tro del trmino de Orgaz. Esta explotacin agrcola, ganadera y vi-

    tcola es propiedad desde hace 50 aos de los cinco hermanos que

    componen la familia Peces-Barba. Juan Fernando es quien est la

    frente de este viedo, en el que se cultivan 72 hectreas de las va-

    riedades tintas de tempranillo, cabernet sauvignon, garnacha, mer-

    lot, syrah y petit verdot, y las blancas sauvignon blanc, moscatel,

    macabeo, verdejo, riesling y viognier. Es en el ao 2000 cuando se

    deciden a edificar la bodega dentro de la finca con el fin de elabo-

    rar sus propios vinos, en la que disponen de depsitos para vinifi-

    car 500.000 kilos de uva, todos en acero y con un sistema de fer-

    mentacin por fro regulada por un ordenador central. Adems,

    cuenta con dos tinas de roble francs, de 10.000 litros cada una,

    y en la sala de barricas descansan 150 unidades de tonelera tam-

    bin francesa y americana.

    La bodega, en la que destaca el torren al que se accededesde la entrada principal, est integrada en una casa tpica

    manchega con patios encalados y faldones ailes. Adems de la

    elaboracin de sus vinos, los propietarios han ampliado su gama de

    servicios al enoturismo y ofrecen visitas guiadas a su bodega y vi-

    edos, donde se pueden ver los sistemas de vinificacin y crianza

    y hacer un recorrido por todo el proceso de la viticultura. Las ca-

    tas comentadas, que se realizan en la sala alta del torren en un

    acogedor ambiente, estn dirigidas por expertos y permiten dis-frutar de las evoluciones de los distintos vinos en cada momento de

    su proceso de maduracin y crianza.

    Tambin existe la posibilidad de almorzar en el restauran-

    te, con una capacidad para 50 comensales y de realizar eventos al

    aire libre en el jardn. Y para los amantes de los caballos, la bode-

    ga cuenta con exhibicin caballar de excelente yeguada de pura ra-

    za espaola. Adems, han diseado dos circuitos para realizar

    paintball, teambuilding, tiro con arco... actividades dirigidas a

    grupos de empresa.

    Petit Verdot varieties are cultivated for their red wines, along with

    Sauvignon Blanc, Muscatel, Macabeo, Verdejo, Riesling and Viognier

    varieties for the white wines. It was in the year 2000 when they

    decided to build the winery right on the estate itself, the same with

    the aim of elaborating their own wines, for which they have

    500,000 kilogram grape vinification vats available, all made of steel

    and with a cold fermentation system regulated by a centralcomputer. Apart from this the winery also counts with two French

    oak vats, with 10,000-liter capacity each and a barrel cellar

    where 150 French and American cooperage units also rest.

    The winery, in which the Tower stands out, the same

    accessed from the main entrance, is integrated in a typical

    Manchego-style house with whitewashed patios and indigo-colored

    wall protectors. Apart from the production of their own wines, the

    proprietors have extended their range of services with wine

    tourism and guided visits of the cellar and vineyards, where thevinification and ageing systems can be observed, apart from a

    complete tour of the viticulture process. Commented tasting

    sessions, which take place in the upper hall of the Tower in a

    welcoming ambience, are directed by experts, thus allowing us to

    enjoy the evolution of diverse wines at each given moment of their

    maturing and ageing process. Visitors can also enjoy lunch in the

    restaurant, which has capacity for 50 diners and also holds

    outdoor activities in the garden. And for lovers of horses, the

    winery counts with an excellent stable of purebred Spanish

    horses. Two circuits have also been built in which activities such as

    paintball, team-building, archery... take place, the same catering

    to company groups.

    Arcicllar, en Toledo, es la localidad en la que la familia Gon-

    zlez Lpez decidi abrir Bodegas y Viedos Tavera en el ao 2005.

    Una localidad con una ubicacin privilegiada, a escasos 20 minutos

    de Toledo y a 40 minutos de Madrid. Estas instalaciones son la cul-

    minacin de una historia ligada a la viticultura durante cuatro ge-neraciones por parte de la familia propietaria, que se ha dedicado

    durante todo el siglo XX a la elaboracin de vino en bodegas tradi-

    cionales con uvas procedentes de sus propios viedos.

    Su idea, al fundar esta bodega, es la de elaborar, embote-

    llar y comercializar vino de la mxima calidad a partir de las 40 hec-

    treas de viedo propio con las que cuenta la familia en los trmi-

    nos municipales de Camarena y Arcicllar, donde las vides ms

    antiguas datan del ao 1921. Aqu cultivan las variedades detempranillo, syrah y la preciada garnacha de la zona, plantada en

    vaso y a marco real. En los distintos pagos tambin se cultivan ce-

    reales y olivares centenarios de la variedad cornicabra, con cuyo

    fruto producen aceite de oliva virgen extra.

    La bodega cuenta con unas instalaciones pensadas para

    disfrutar y acercar la cultura del vino a todos los visitantes. Es un

    edificio de corte moderno que no pasa desapercibido; se divisa des-

    de la propia carretera y llama la atencin por el contraste que ofre-

    nal de la zona en la que se ubica. Dispone de sala de exposiciones,

    sala de catas y reuniones, desde donde se pueden apreciar unas

    magnificas vistas de los campos castellanos que la rodean. En 2008

    se abri al pblico una tienda, que hace las delicias de todos los vi-

    sitantes, y en la que se pueden adquirir los productos elaborados

    por la bodega.

    La amabilidad y cualificacin del personal de la bodega es un

    lujo para quienes visitan sus instalaciones. Podrn realizar visitas

    guiadas a la zona de recepcin de la uva, la sala de fermentacin

    y sala de crianza, as como catar tres vinos acompaados de ape-

    ritivo y del comentario de los expertos de la bodega. Cursos de ca-

    ta, comidas, actividades al aire libre, como gymkanas enolgicas,

    paseos por el viedo, son otras de las actividades que ofrecen.

    Y para quienes lo deseen, organizan escapadas desde Madrid con

    visita a las instalaciones y alojamiento en una casa rural de la zo-

    na, que cuenta con piscina, barbacoa y aire acondicionado.

    Arcicllar, in Toledo, is the municipality in which the

    Gonzlez Lpez family decided to open Bodegas y Viedos Tavera

    in the year 2005. A municipality with a privileged location, 20

    minutes from Toledo and 40 minutes from Madrid. These facilities

    are the culmination of a story linked to viticulture for four

    generations of the owner family, which during all the twentieth

    century has elaborated wine in traditional wineries with grapes

    from their own vineyards. Their idea, when founding this winery, is

    to elaborate, bottle and commercialise wine of the maximum

    quality from the 40 hectares of vineyard which the family has in the

    municipalities of Camarena and Arcicllar, where the oldest vines

    are from the year 1921. They cultivate the varieties of tempranillo,

    syrah and the precious garnacha of the area, planted in glass and

    at a real setting. Cereals and hundred-year-old olive trees of the

    cornicabra variety are also cultivated. With the fruit of these

    olive trees, extra virgin olive oil is produced.

    The winery has facilities which are thought for making allvisitors enjoy and be closer to the culture of wine. It is a modern

    building which is by no means unnoticed; it can be seen from the

    road and calls our attention because of the contrast with its

    surroundings. Inside, the careful decoration is also remarkable,

    with details which remind us of the traditional taste of the area in

    which the building is located. It has an exhibition room, a wine

    tasting and meeting room, from which we can enjoy magnificent

    views of the Castillian fields surrounding them. In 2008 a shop was

    opened to the public, which delights all the visitors, and where we

    can buy the products elaborated by the winery.

    The friendliness and qualification of the winery staff is a

    luxury for those visiting its facilities. They will be able to make

    guided tours to the area where the grapes are received, to the

    fermentation room and the aging room, and to taste three wines

    with the corresponding snack and the comment from the experts

    of the winery. Wine tasting courses, lunches, open air activities,

    such as enological gymkhanas, walks on the vineyards, are

    other activities offered. And for those who are interested, they

    organise excursions from Madrid with visit to the facilities andaccommodation in a rural house of the area, with swimming pool,

    barbecue and air conditioning.

    tios cuando te adentras en Finca Loranque, un autntico chteau

    a 10 kilmetros de Toledo. Un viedo cuidadsimo a cada lado del

    camino conduce hasta una casa de labor del siglo XVIII, recupera-

    da con tal respeto que ha sido declarada Bien de Inters Cultural.

    El imponente edificio, construido en ladrillo mudjar y tapial tpica-

    mente toledano, se integra a la perfeccin en el terreno que la cir-cunda, que combina campos frtiles para la agricultura con terru-

    os arenosos ptimos para la via.

    Pero es en la bodega donde el visitante experimenta un en-

    cuentro con la moderna tecnologa de elaboracin y el clasicismo

    de la crianza en madera, en un edificio donde se dan la mano el

    acero inoxidable y el mejor roble, la teja y el ladrillo. La apuesta por

    el detalle y la calidad se percibe en cada rincn. As, en su interior

    La finca posee 42 hectreas de viedo propio de las varie-

    dades tempranillo, cabernet sauvignon, syrah y merlot. La familia

    Daz Bermejo lo tena claro desde el inicio del proyecto: crear un vi-

    no distinto, alejado de modas coyunturales y donde la calidad de la

    materia prima marcara todo el proceso. Y es aqu donde aparece

    Mudejar bricks and a typically Toledan garden wall, is perfectly

    integrated in the surrounding terrain, one that combines fertile

    land for agriculture with sandy earth that is ideal for vines.

    But it will be in the wine cellar where the visitor meets the

    modern technology for elaboration and classification of aging in

    wooden casks, in a building where stainless steel and the bestoak wood, tiles and brickwork team up. The bet placed on

    details and quality can be perceived from every corner. In this

    way, the original internal coffered ceiling running along the

    elaboration and ageing bay and giving the installation a stately

    feeling should be highlighted.

    The estate has its own vineyards covering 42 hectares

    with the Tempranillo, Cabernet Sauvignon, Syrah and Merlot

    varieties. The Daz Bermejo family knew from the beginning of the

    project it had to create a wine that was different, far fromfashions that come and go, in which the quality of the raw

    materials marked the whole quality process. It was at this

    point that the Telmo Rodrguez-Pablo Eguzkiza team appeared,

    the real dynamizing agents behind new Spanish wines and one of

    the most ratified voices in international markets. Their obsession

    in achieving maximum quality in viticulture and vinification found

    the perfect place to put all their professional experience into

    practice in Finca Loranque. Their best reference is the Syrah-

    Tempranillo from Finca Loranque, praised by the specialized

    critics and with qualifications over 90 points in the most

    El prestigioso restaurador Adolfo Muoz, presidente del gru-

    po de restauracin Adolfo-Toledo, fund en 1997 esta bodega. Es-

    t localizada en un cigarral, con una extensin de siete hectreas,de las que tan slo cuatro estn destinadas al viedo, que envuel-

    ven el edificio principal, donde se encuentra la pequea bodega y la

    vivienda familiar. Es el nico viedo urbano en Espaa y uno de los

    cuatro que existen en todo el mundo, ubicados en lugares tan m-

    gicos como el mismo Toledo: Malib, Viena y Paris. Dentro de la fin-

    ca hay tres parcelas separadas. En la primera predomina la varie-

    dad syrah arropada a ambos lados por la merlot; y en la segunda y

    tercera, se cultivan las variedades cencibel y cabernet sauvignon.La familia ha apostado desde el principio por conseguir un

    vino especial y, sobre todo, marcado por la gran personalidad del

    terruo, con una vinificacin meticulosa. Si las cepas son objeto del

    mayor mimo, no lo es menos la recoleccin de las uvas, que se re-

    aliza a mano. Durante la fermentacin tambin se realizan conti-

    nuos bazuqueos manuales y doble remontado diario. Cada variedad

    se fermenta, se macera y permanece en barrica por separado.

    bajo la marca Pago del Ama y da como resultado vinos con mucha

    estructura y complejidad, que han conseguido, entre otras, valo-

    raciones altas en la Wine Advocate dirigida por Robert Parker Jr.La bodega y el viedo, plantado en un olivar milenario

    desde donde se cuenta que Carlos V observaba todo su imperio,

    pueden visitarse todos los das de la semana previa reserva. Un re-

    corrido que no decepcionar y en el que se pueden observar ca-

    llejones de piedra por donde antiguamente se trasladaban los to-

    ros o el ganado vacuno de una finca a otra. Adems, las

    instalaciones de la bodega son un excelente espacio para la cele-

    bracin de eventos particulares y empresariales.

    The prestigious caterer Adolfo Muoz, president of the

    Adolfo-Toledo catering group, founded this winery in 1997. It is

    located in a cigarral (a country house surrounded with a fruit and

    vegetable garden located in Toledo), on a plot of seven hectares,

    of which only four are used for the vineyard, surrounding the

    main building where the small winery and the private dwelling canbe found. It is the only urban vineyard in Spain and one of four

    worldwide, located in places that are as magical as Toledo

    itself: Malibu, Vienna and Paris. There are three separate plots

    inside the estate. The first has a predominance of the Syrah

    variety sheltered on both sides by Merlot; with Cencibel and

    Cabernet Sauvignon varieties cultivated in the second and third

    plots of land.

    From the beginning, the family has always placed its bets

    on achieving a wine that is special and, most of all, one markedby the great personality of the land where the grapes were

    grown, through meticulous winemaking. While the vines are

    chosen carefully, so is the harvesting of grapes that are

    handpicked. Continuous manual plunging and pumpovers two

    times daily are also performed during fermentation.

    Each variety is fermented and macerated and remains in

    separate casks. Subsequently, the wine undergoes the malolactic

    fermentation in the cask, where it will remain for around a year

    in French barrels. A work with extraordinary results,commercialised under the brand Pago del Ama, and providing

    wines with a lot of structure and complexity, which have

    achieved, among others, high marks in the Wine Advocate

    directed by Robert Parker Jr.

    The wine cellar and the vineyard, planted in a thousand-

    year-old olive grove from where it is said Carlos V observed his

    entire empire, can be visited every day of the week after booking

    in advance. This visit will disappoint no one, making it possible to

    see stone alleys used years ago to move bulls or cattle from one

    estate to another. Also, the installations of the wine cellar are an

    excellent area for holding private and company events.

    torrales, se vislumbra la figura esbelta del ciervo, seor absoluto

    de los Montes de Toledo, tierras que se levantan abruptamente dela llanura manchega. Comarca forjada por pastores, colmeneros

    y cazadores, sus pueblos se alzan entre los valles, laderas y raas

    propias del bosque mediterrneo, baado por el Tajo y sus afluen-

    tes. La naturaleza envuelve por completo al caminante que ve apa-

    recer entre castaos, encinas y alcornoques, ruinas de castillos

    visigodos, monasterios y pueblecitos monteos.

    Y si esta comarca abre grandes posibilidades para los

    amantes del senderismo, para los cazadores es el autntico para-

    so, donde la riqueza cinegtica ha hecho famoso este paraje. La

    caza del venado, del jabal, del conejo, la liebre o de la perdiz roja

    se pone en prctica en su mxima expresin. Ajenas a esta lucha,

    otras especies conviven en este hbitat: linces, zorros, comadre-

    jas y hasta guilas quebrantahuesos.

    La herencia visigoda queda plasmada en la ermita de San-

    ta Mara de Melque, en San Martn de Montalbn, y la poca medie-

    Avanzando al sur, entre las provincias de Toledo y Ciudad

    Real, se encuentra el Parque Nacional de Cabaeros, uno de lostrece que existen en Espaa. Cabaeros es hoy uno de los rinco-

    nes protegidos ms valiosos de los Montes de Toledo, refugio de

    muchas especies en peligro de extincin. Destacan las grandes ra-

    paces, como el guila y el buitre; las cigeas negras; mamferos

    como el ciervo, corzo o jabal y, en general, una rica flora con unagran variedad de rboles y arbustos.

    Conscientes de la importancia de pertenecer a un entorno

    tan privilegiado, las localidades colindantes a Cabaeros, como Re-tuerta del Bullaquey Horcajo de los Montes, ofrecen todo lo que elamante de la naturaleza pueda imaginar: rutas a caballo o en bu-

    rro a travs de valles y arroyos; practicar el tiro con arco entre es-

    pectaculares vistas; pescar en embalses de aguas claras y limpias,

    y alojarse en las muchas casas rurales donde conseguir la ansia-

    conceals. This is the land where hunting of deer, boar, rabbit,

    hare or the red partridge acquires its maximum expression. Far

    removed from this battle, many other species also cohabit in the

    area: lynx, fox, weasel and even bearded vultures are all to be

    found.

    The Visigoth heritage is captured in the Santa Mara de

    Melque Chapel, found in San Martn de Montalbn, and Medievaltimes in the splendid Castle located in Malpica de Tajo, right onthe banks of the river, which serves it as a natural moat.

    If we advance somewhat further south, between the

    provinces of Toledo and Ciudad Real, we encounter the NationalPark of Cabaeros, one of the thirteen natural parks to be foundin Spain. Cabaeros is currently one of the most valuable

    protected corners of the Montes de Toledo, refuge to numerous

    species in danger of extinction. The great birds of prey such as

    the eagle and vulture are to be highlighted; apart from black

    storks, mammals such as deer, roe deer or boar and in general,

    a rich flora with a tremendous variety of trees and shrubs.

    Quite aware of the importance of belonging to such a

    privileged place, the locations bordering on Cabaeros, such as

    Retuerta del Bullaque and Horcajo de los Montes offer lovers ofnature absolutely anything they can image: routes on horseback

    or donkey crossing through valleys and across streams; archery

    immersed in spectacular panoramic views; fishing in the crystal

    clear waters of the reservoirs; and stays in many of the rural

    houses along the way, in which peace and well-being soon

    become second nature to us.

    Hace ya 23 aos que el mdico y empresario Marcial Gmez

    Sequeira adquiri, en plenos Montes de Toledo, la finca Dehesa del

    Carrizal. En 1987 plant su primer viedo, escribiendo as la prime-

    ra pgina de un gran proyecto bodeguero. Gran aficionado a la ca-

    za, en sus viajes por el mundo en busca de los mejores trofeos, tu-

    vo la oportunidad de conocer los vinos de prcticamente todas las

    zonas productoras del planeta y pudo comprobar que, muchos de

    estos caldos, tenan un factor comn: la uva cabernet sauvignon.

    Convirti un jaral de uso exclusivo para jabales y ciervos, en un es-

    pectacular viedo de 8 hectreas. Las primeras botellas en el mer-

    23 years ago, the doctor and businessman Marcial Gmez

    Sequeiro acquired the Dehesa del Carrizal estate, right in the

    mountains of Toledo. He planted his first vineyard in 1987, in this

    way writing the first page of a great wine cellar project. Being very

    interested in hunting and by means of traveling around the world

    in search of the best trophies, he had the chance to get to knowwines from all producing areas of the planet, allowing him to see

    that many of these wines shared a common factor: Cabernet

    Sauvignon grapes.

    This rockrose grove that used to be home to wild boars and

    deer has been turned into a spectacular 8-hectare vineyard. The

    first bottles to come out on the market confirmed the expected

    quality, thus paving the way for new varieties to be planted in the

    vineyard during different phases: Syrah, Merlot, Tempranillo,

    Petit Verdot and Chardonnay, resulting in a total of 29-hectares of

    vineyard. Formed in trellis-fashion with Cordn Royat and Smart-

    dyson vine training techniques it currently counts with a

    subterranean drip irrigation system.

    Next to the vineyard, on the northern slope, the terrain is

    cut to fit-in a functional three-bay building, achieving a well-

    ventilated subterranean ageing cellar without ramps or lifts. This

    modern wine cellar has a capacity for elaborating 250,000 kilos of

    grapes, and an air-conditioned ageing bay for over 1,000 casks. At

    the front and closing the production area is a splendid building made

    with Toledan bricks that is perfectly integrated in the landscape,

    with a dining room, a tasting room, a laboratory and offices. In the

    year 2006 the hard work of many years was rewarded with the

    Dehesa del Carrizal Denomination of Origin. This grant represents

    recognition of the fourth denomination of origin for quality wines

    produced in wineries, the same being ratified in 2007 by the

    Ministry of Agriculture, this to the effects of its national,

    communitarian and international protection.

    Its privileged location allows for routes using 4x4 or walks

    around the surroundings of Retuerta del Bullaque or visits to the

    National Park of Cabaeros.

    a. Formado sobre espaldera en cordn royat y smart-dyson, cuen-

    ta con una instalacin de riego por goteo subterrneo.

    Junto al viedo, en la ladera norte se corta el terreno para

    empotrar un funcional edificio en tres naves, consiguiendo unacava subterrnea de crianza sin rampas ni montacargas y bien ven-

    tilada. La bodega puede elaborar 250.000 kilos de uva, y en la nave

    de crianza climatizada hay ms de 1.000 barricas. Por delante y ce-

    cata, laboratorio y despachos. El trabajo de tantos aos se ha vis-

    to recompensado en 2006 con la Denominacin de Origen Dehesa del

    Carrizal. Esta concesin supone el reconocimiento de la cuarta de-nominacin de origen de vinos de calidad producidos en pagos vit-

    colas, habiendo sido ratificada en 2007 por el Ministerio de Agricul-

    tura, a efectos de su proteccin nacional, comunitaria e internacional.

    Su privilegiada ubicacin permite la realizacin de rutas en

    4x4 o senderismo por los alrededores de Retuerta del Bullaque o

    visitar el Parque Nacional de Cabaeros.

    En un hermoso paraje de la localidad toledana de Otero, la fa-

    milia Gonzlez, en su ya quinta generacin, ha levantado una bode-

    ga, demostrando que sigue vivo el inters de Gonzlez Byass por en-

    contrar tierras en las que desarrollar su saber hacer con los vinos

    y por estar presentes en las denominaciones de origen claves en Es-

    paa. En Finca Constancia la arquitectura est en perfecta armona

    con la naturaleza, obra del prestigioso arquitecto Gonzalo Tello. La

    bodega es una obra de arte en medio del viedo que, al norte, linda

    con las estribaciones de los Montes de Toledo y, al sur, permite el dis-

    frute de las magnficas vistas que ofrece la Sierra de Gredos. Si la

    arquitectura se integra y respeta el entorno, las instalaciones

    tambin han sido trazadas para minimizar las agresiones externas

    a la uva y al vino, incluso, las aguas residuales, una vez tratadas, se

    reutilizan para el riego por goteo de las vias. Todo est pensado pa-

    ra primar la calidad del vino: cuentan con 100 depsitos con control

    automtico de temperatura, ocho depsitos especiales para produ-

    cir vinos de alta expresin con llenado por gravedad y maceracin

    intracelular y una nave con capacidad para 2.000 barricas.

    Unas 200 hectreas de viedo rodean la bodega donde se cul-

    tivan variedades espaolas y otras internacionales como temprani-

    llo, cabernet sauvignon, syrah, cabernet franc, petit verdot y gracia-

    no, en tintas; y verdejo, sauvignon blanc y chardonay, en blancas.

    En las instalaciones se pueden realizar visitas guiadas du-

    dera, la nave de elaboracin en acero inoxidable y la nave de embo-

    tellado en cristal.

    Nestled in a gorgeous landscape in the Toledo town of

    Otero, the Gonzlez Family, already in its fifth generation, has

    created a winery to thus prove that Gonzlez Byass continues to

    more than interested in finding lands where their excellent

    workmanship with wines can be developed and in being present in

    key denominations of origin in Spain. In Finca Constancia architecture

    is in perfect harmony with nature; it has been built by the prestigious

    architect Gonzalo Tello. The winery is a work of art in the middle ofthe vineyard that, to the north, adjoins the foothills of Montes de

    Toledo and, to the south, it allows to enjoy the magnificent views

    offered by Sierra de Gredos. If the architecture is integrated and

    respectful with the environment, the facilities have also been laid-

    out to minimize to a maximum any external aggressions to the vines

    and wine, to the point of even treating the residual waters for their

    reuse in the drip irrigation system for the vines. Everything is aimed

    at the quality of the wine being paramount: the winery counts

    with 100 vats with automatic temperature control, eight special vats

    for production of high-expression wines fitted with gravity-fill

    systems and intracellular maceration, along with a bay with capacity

    for 2.000 barrels. Almost 200 hectares of vineyard surround

    Carlos Falc y Fernndez de Crdova, Marqus de Grin, es

    uno de los pioneros en la modernizacin de la viticultura y el vino en

    Espaa. Ya en 1974 introdujo en nuestro pas las variedades de uva

    cabernet sauvignon que, posteriormente, extendi a la chardonnay,

    petit verdot y syrah. Su pasin por la enologa le llev a construir en1989 una bodega en Malpica de Tajo, donde la familia es propietaria

    de la finca Valdepusa, dentro del Dominio del mismo nombre, para

    procesar el fruto de las 50 hectreas de viedo plantadas. Fue el pri-

    mer viedo de Espaa en utilizar sistemas de viticultura sostenible

    mediante el uso de espalderas en Lira y Smart-Dyson y tambin el

    pionero en aplicar el riego por goteo.

    La bodega est ubicada en un histrico edificio del siglo XVIII

    y posee unas instalaciones muy avanzadas tecnolgicamente.
