Pumpkin Ginger Nut Muffins Inspired by: Gen Latham, Founding Consultant Featuring: Pumpkin Pie Spice

Makes 12

Ingredients:1 teaspoon ‘Pumpkin Pie Spice’

1 1/2 cups self-raising flour

1 cup sugar

1 teaspoon baking soda

1 cup pumpkin, cooked and mashed

1/3 cup butter, melted

2 eggs, beaten

1/4 cup water

1 teaspoon ground ginger

1 cup slivered almonds, chopped

2 tablespoons glace or crystalised ginger, well chopped

Method:Preheat oven to 180°c. In a medium sized bowl, sift together flour, sugar and baking soda. Mix together in separate bowl, cooked pumpkin, melted butter, eggs, 1/4 cup of water, and spices. Combine with dry ingredients until just incorporated - do not over-mix. Fold in the glace or crystalised ginger and slivered almonds.

Spoon mixture into a prepared muffin tin and bake for 25-30 minutes. Check with a toothpick by inserting into the centre of a muffin. If it comes out clean, it’s done! Cool on a rack.

Spiced Nuts Inspired by: Janet Thornton, Independent Consultant Featuring: Chai Spice Sugar and Caramel Coffee Syrup

Ingredients:250g mixed nuts, unsalted

2 tablespoons ‘Chai Spice Sugar’

2 tablespoons ‘Caramel Coffee Syrup’

Method: Preheat oven to 180°c. Place nuts in a bowl and pour coffee syrup over to coat. Sprinkle sugar over nuts and shake bowl so that nuts are well coated. Pour mixture onto baking tray lined with baking paper, ensuring nuts spread out and bake for 12-15 mins. Cool nuts. Transfer to a bowl and shake to separate nuts. Cool completely and serve.

Lemon Soother Ginger Iced Tea Inspired by: Janet Thornton, Independent Consultant Featuring: Organic Lemon Soother Tea & Mojito Sugar

Hawaiian Hibiscus Bliss Iced Tea Inspired by: Renée Johnston, Independent Consultant Featuring: Hawaiian Hibiscus Bliss Tea

Ingredients:1 tablespoon ‘Organic Lemon Soother Tea’

1.25 litres Ginger Ale

1 tablespoon ‘Mojito Sugar’

1 tray ice cubes

1 lemon, sliced

Boiling water

Mint Leaves

Additional ‘Mojito Sugar’ to rim glass

Ingredients:3 tablespoons ‘Hawaiian Hibiscus Bliss Tea’

1 cup boiling water

1 lime, sliced

1 lemon, sliced

750ml Ginger Ale

2 tablespoons sugar

1 tray ice cubes

1 cup Mint Leaves

Method: Make a pot of tea and steep for 3-4 minutes. Cool in fridge. Combine tea and remaining ingredients in jug. Pour into sugar rimmed glasses.

Method: Boil water and steep tea in one cup for 4 minutes. Remove tea leaves, add sugar and stir. Pour tea into a 1L jug. Add ice cubes and top with ginger ale. Add mint leaves, lime and lemon. Stir and enjoy.

Beetroot & Cucumber Bites

Inspired by: Kylie Monaghan, Independent Consultant

Featuring: Beetroot Dip Mix

Zucchini & Haloumi Fritters Inspired by: Kylie Burnett, Founding Consultant

Featuring: Dill & Onion Dip Mix

Makes approx. 25

Makes approx. 20

Ingredients:¾ cup sour cream

¼ cup whole-egg mayonnaise

1 tablespoon ‘Beetroot Dip Mix’

1 cucumber

50g feta cheese, crumbled

Method:Combine sour cream, mayonnaise and dip

mix together to create the Beetroot Dip. Set aside to allow flavours to develop. Meanwhile,

slice the cucumber into 5ml round pieces. Place a dollop of Beetroot dip on each slice and

top with a sprinkling of crumbled feta. Serve immediately.

Ingredients:300g zucchini (courgette)

1 onion, grated

180g haloumi cheese, grated

½ cup plain flour

2 teaspoons lemon rind, grated

2 eggs

2 tablespoons ‘Dill & Onion Dip Mix’

¾ cup sour cream

¼ cup whole-egg mayonnaise

Light olive oil, to fry

Sea salt, to serve

Method:Combine sour cream, mayonnaise and 1 tablespoon of dip mix together to create the Dill & Onion Dip. Set aside to allow flavours to develop.

Coarsely grate zucchinis (courgettes) and squeeze out as much liquid as possible. Place in a bowl and add onion, haloumi cheese, flour, lemon rind, eggs and remaining 1 tablespoon of dip mix. Season with salt and black pepper and stir to combine. Form the zucchini mixture into about 25 bite-size patties. Refrigerate for 30 minutes to firm.

Heat the oil in a frying pan over medium heat and fry, in batches, for 1-2 minutes each side until golden. Drain on paper towel. Serve the fritters warm with the Dill & Onion Dip Mix, salad and a little sea salt.

Mexican Bites Featuring: Guacamole and Salsa Dip Mixes

Curry Chicken Tartlets Featuring: Bay of Bengal Curry Dip Mix

Makes approx. 30

Ingredients:1 avocado, ripe

2 tablespoons ‘Guacamole Dip Mix’

2 tablespoons ‘Salsa Dip Mix’

4 tomatoes, ripe

Corn chips or Tortilla chips

Method:Mash avocado and mix in ‘Guacamole Dip Mix’. Set aside to allow flavours to develop.

Dice tomatoes and mix in ‘Salsa Dip Mix’. Set aside to allow flavours to develop.

To assemble, lay out corn/tortilla chips. Place a heaped teaspoon of Guacamole dip on each chip. Top with half a teaspoon of Salsa and serve.

Method: Preheat oven to 180°c. Using a scone cutter or similar, cut circles

from pastry sheets. Place in greased tart cases, prick with fork several times and bake until golden brown (about 10 mins).

Remove and cool on rack.

Place leek or onion and oil in a frying pan and cook until softened. Add chopped chicken and cook until lightly

browned. Add wine and/or chicken stock and Dip Mix – cover and simmer for 10 minutes. Add

mushrooms and cream. Cover and simmer for another 10 minutes, stirring occasionally (thicken with flour if required). Spoon mixture

into pastry cases and bake for further 10 minutes. Remove tartlets and serve.

Ingredients:2 chicken thigh fillets or 1 chicken breast, finely chopped

1 tablespoon ‘Bay of Bengal Curry Dip Mix’

1 leek (white part only), finely sliced (or 1 small onion, finely chopped)

4 sheets ready rolled puff pastry or shortcrust pastry

½ cup white wine (optional)

½ cup chicken stock (use 1 cup if not using wine)

150g button mushrooms, finely chopped

1 tablespoon olive oil

½ cup sour cream

1 tablespoon of plain flour or cornflour (optional)

Mango Rendang Chicken Inspired by: Stephanie Laffin, Founding Consultant Featuring: Indonesian Rendang Seasoning Serves 4

Ingredients:4 chicken breasts

2 teaspoons ‘Indonesian Rendang Seasoning’

1 fresh mango, peeled and sliced

4 slices prosciutto

1 tablespoon extra virgin olive oil

Sauce:

200ml can coconut cream

1 tablespoon ‘Indonesian Rendang Seasoning’

Method:Preheat oven to 180°c. Make a slit along the length of each chicken breast and enlarge to form a pocket. In each pocket, place one slice of prosciutto, mango slices and a sprinkle of seasoning. Close chicken breasts.

Heat the oil in a heavy-based frying pan and add chicken breasts and fry over a high heat for 3–4 minutes, turning midway through to brown both sides. Transfer chicken breasts to tray lined with baking paper. Cover loosely with foil and bake for 15-20 minutes or until the chicken is cooked through.

To make sauce – combine ‘Indonesian Rendang Seasoning’ and coconut cream in small saucepan. Bring to boil and simmer until sauce thickens.

To serve, slice chicken thickly and serve on a bed of rice. Drizzle with sauce.

Mediterranean Pizzas Inspired by: Gen Latham, Founding Consultant Featuring: Roma Italian / Pizza / Greek Taverna Seasonings or Tuscan Style Capsicum Pesto Dip Mix

Chicken San Choy Bau Inspired by: Kylie Burnett, Founding Consultant

Featuring: Thai Satay / Greek Taverna / Asian Garden Stir-Fry / Casa Mexicana / Indonesian Rendang Seasonings or Chili Lime Chipotle Rub

Serves 4

Method:Preheat oven to 250°C. Place the pizza crusts on a large baking tray and spread each evenly with the tomato paste. Drizzle over garlic oil and sprinkle seasoning or dip mix. Top each crust with artichokes, tomatoes, red onion, olives, capers, mozzarella, and feta. Sprinkle with more seasoning or dip mix of choice. Bake for 15 minutes or until topping is golden brown, heated through and the base is crispy. Finish with pepper to taste. Serve immediately.

Method:Cut bottoms off lettuce heads, separate into individual lettuce ‘cups’

– rinse and drain well. Arrange in a bowl for serving. Fry chicken mince in pan until well done. Add finely chopped onion, carrot and capsicum and cook for a further 3 – 5 minutes. Add light soy sauce and your favourite ‘Your Inspiration at Home’ seasoning or meat rub, stir for one minute and turn off heat. Stir through lime juice and serve immediately.

To Serve: Spoon mince mixture into individual lettuce cups. Sprinkle a little more lime juice or finely grated lime zest if desired. Serviettes required!

Ingredients:225g pkt (17cm round) bought pizza crusts

2 tablespoons tomato paste

400g can artichoke hearts, drained, quartered

70g (1/3 cup) semi-dried tomatoes, halved

1/2 red onion, halved, thinly sliced

55g (1/3 cup) pitted kalamata olives, halved lengthways

2 tablespoons capers, drained

55g (1/2 cup) coarsely grated mozzarella

100g feta, crumbled

Drizzle ‘Garlic Extra Virgin Olive Oil’ (see page 15)

A decent sprinkle of ‘Your Inspiration at Home’ seasoning or dip mix of choice

Ingredients:500g minced chicken

2-pack baby cos lettuce

1 spanish onion, finely chopped

1 large carrot, finely chopped

Recipes

Truffles(as featured on p.16)

Inspired by: Lynne Edgerton, Founding Consultant

Featuring: Your favourite sweet dukkah

(Makes approx. 18 truffles)

Ingredients:

• 180g good-quality white chocolate, chopped

• 1/3 cup thickened cream

• ½ teaspoon vanilla extract

• 1 tablespoon ‘Rose White Chocolate Powder’

• 2 tablespoons ‘Rose White Chocolate with Pistachio Dukkah’

Combine chocolate and cream in a heatproof, microwave-safe bowl. Microwave, uncovered, on MEDIUM (50%) for 2 to 3 minutes, stirring every minute with a metal spoon, or until melted and smooth. Stir in vanilla extract and chocolate powder. Cover. Refrigerate for 3 to 4 hours or until firm.

Line a try with baking paper. Using 1 teaspoon of chocolate mixture at a time, roll into balls.

Roll balls in dukkah and refrigerate/freeze until firm and ready to serve.

Variation: Mix and match our chocolate powders with our dukkahs and create your own unique truffles.

Lemon Myrtle Cheesecake (as featured on p.5)

Featuring: White Chocolate with Lemon Myrtle Chocolate Powder

Ingredients:

• 250g packet sweet biscuits

• 70g butter, melted (approx.)

• ¾ cup macadamia nuts, crushed

• 2 tablespoons ‘Lemon Myrtle White Chocolate Powder’

• 250g Philadelphia cream cheese, softened/room temperature

• 400g tin condensed milk, chilled

• ½ cup lemon juice, fresh and ripe

• 300 ml thickened cream

Method:

Process biscuits until finely crushed. Add melted butter and mix well. If a bit dry and crumbly, add a little more melted butter until mixture sticks together. Press biscuit mixture into base of a greased and lined springform tin.

Whip 300ml thickened cream and set aside. In separate bowl, beat cream cheese until smooth and creamy. Add chilled condensed milk and beat until mixed well. Add lemon juice and beat. Add whipped cream and fold through. Fold in chocolate powder and nuts. Pour onto pressed biscuit base and spread evenly. Refrigerate for 3 hours. Decorate with our sweet Dukkahs, fresh fruit, grated chocolate or whipped cream.

Variation: Replace the ‘White Chocolate with Lemon Myrtle Chocolate Powder’ with our ‘White Chocolate with Rose Chocolate Powder’ and replace the macadamia nuts with 1 punnet of finely chopped strawberries.

Beef Skewers (as featured on p.17)

Featuring: Any Rub paired with Oil of choice.

Makes approx. 6

Ingredients:

• 500g beef, cubed

• 2 tablespoons of flavoured Extra Virgin Olive Oil of choice

• 1 tablespoon of meat/coffee rub

• 1 punnet of cherry tomatoes (optional)

• 1 red onion, roughly chopped (optional)

• 1 capsicum, roughly chopped (optional)

• Small wooden skewers

Method:

Combine oil and rub of choice. Brush on beef and marinate for 2 hours, covered in refrigerator. Soak skewers in shallow dish of water for 2 hours.

Thread beef on skewers, alternating onion, capsicum and cherry tomatoes if desired. Preheat a grill pan or barbecue grill on high heat until hot. Reduce heat to medium. Cook skewers, turning, for 4 minutes or until cooked as desired. Serve skewers with rice, potato or green garden salad.

Coriander Lime Prawns

Serves 4

Ingredients:

• 20 large raw prawns

• 3 teaspoons of ‘Louisiana Creole’ Dip Mix (more if you like it hot!)

• 1/3 cup lime juice

• 3 garlic cloves, crushed

• ½ cup ‘Your Inspiration at Home’ Extra Virgin Olive Oil

• 1 tomato – peeled, seeded and diced

• 2 tablespoons roughly chopped coriander

Method:

Shell and de-vein prawns, leaving tails on.

Mix together half the lime juice, olive oil and garlic, with the ‘Louisiana Creole’ Dip Mix. Add the prawns, toss to coat then cover and marinate in refrigerator for 30 minutes.

Meanwhile, mix the remaining olive oil, lime juice and garlic in a bowl with the diced tomato and coriander to make the dressing.

Drain the prawns and cook on a hot, lightly oiled barbecue grill for 1-2 minutes on each side, or until cooked through.

Spoon a little of the dressing over the prawns and serve individually.

Chocolate Powders Rubs Dukkahs Dip Mixes

Warm Artichoke Cobb Loaf

Ingredients:

• 1 round sourdough loaf

• 1 cup whole-egg mayonnaise

• 1 can artichoke hearts, drained and finely chopped

• ¾ - 1 cup grated Parmesan cheese

• 2 tablespoons of ‘Tuscan Style Capsicum Pesto’ Dip Mix

Method:

Hollow out sourdough loaf and place on a baking tray. Keep the inside portion for later. Mix remaining ingredients and pour into hollowed out sourdough shell. Bake at 180°C for 30 minutes. Meanwhile, cut the top and inside portion of the sourdough loaf into cubes and bake in oven for the final five minutes until just crisp on the outside. Arrange bread cubes around loaf and serve hot.

Tuscan Pesto Parmesan Chicken

Ingredients:

• 500g chicken tenderloins (can use chicken breast as well)

• ½ cup grated parmesan cheese (1 cup if not using cornflake crumbs)

• ½ cup cornflake crumbs

• 2 tablespoons of ‘Tuscan Style Capsicum Pesto’ Dip Mix

• 1 egg

• ¼ cup milk

Method:

Preheat oven to 200°C and line tray with baking paper. Combine the cheese, breadcrumbs and Pesto Dip Mix in a shallow bowl or plate. Dip the chicken tenderloins into egg/milk mixture, then toss in dry mixture. Place on baking tray and cook for 12-15 minutes or until chicken is cooked.

Caramelised Onion & Feta Tarts (as featured on p.14)

Featuring: Caramelised Balsamic Vinegar and Garlic Extra Virgin Olive Oil

Makes approx. 25

Ingredients:

• 3 tablespoons ‘Caramelised Balsamic Vinegar’

• 1 ½ tablespoons ‘Garlic Extra Virgin Olive Oil’

• 2 large red onions, finely chopped

• 3 sheets ready-rolled shortcrust pastry

• 70g feta cheese, crumbled

• 2 eggs, lightly beaten

• ½ cup cream

Method:

Preheat oven to 180°C. Heat oil in a frying pan and add onion and vinegar, stirring occasionally over medium-low heat for approximately 30 minutes, or until onion is soft and dark. Transfer to a bowl to cool.

Grease 24 shallow patty tins. Using a scone cutter or similar, cut circles from pastry sheets and place in greased patty tins. Spoon onion mixture evenly into patty cases and top with feta. Combine eggs and cream and pour into the pastry cases (try not to overflow). Bake for 10-15 minutes, or until golden and puffed. Transfer to wire rack to cool.

Tasty Tip: These tarts taste great hot or cold and can be prepared a day in advance. If wanting to serve hot,

reheat in oven at 150°C for 10 minutes before serving.

Lamb Meatballs (as featured on p.22)

Featuring: Greek Taverna Seasoning

Makes 24

Ingredients

• 500g lamb mince

• 1 egg

• 1 -2 tablespoons ‘Greek Taverna Seasoning’

• Splash of Extra virgin Olive Oil

Method

Pre-heat oven to 180°C. Mix all ingredients together and roll a tablespoon of mixture into a ball, pressing each ball firmly to ensure they stick together during cooking. Keep doing this until all the mixture is used.

Heat a splash of oil in a non-stick fry pan and shallow-fry meatballs to brown. Place on lined baking tray and finishing cooking in oven for 10 minutes or until cooked through.

Variations: Using the basic recipe, you can alter the flavour by combining other types of mince with many of our Seasonings. Start experimenting!
