Background
• The cashew tree is evergreen. It grows up to 12 metres high and has a spread of 25 metres
• Annual rainfall needs to be at least 889mm (35 inches) and not more than 3048mm (120 inches). Cashew trees are most frequently found in coastal areas of India, i.e. Goa
• The total Goan production of Cashew is around 23,000 metric tones(According to Goa Govt. report 2010)
• The main commercial product of the cashew tree is the nut.

Major Steps in Cashew nut Processing
• Shelling - removal of the outer shell and CNSL(Cashew Nut shell Liquid)
• Peeling - removal of the testa(The brown skin of the kernel)
• Grading - into different sizes and colours in accordance with standard grading
• Drying or humidifying - to a final moisture content of 5 percent
• Packing - into airtight bags or cans, depending upon the scale of operation
