Chios mastiha
Mastiha is a resinous exudation
produced from the trunk and
branches of the mastiha-tree
(Pistacia Lentiscus var. Chia). This
unique product is extracted from
scratches and scores induced on the
trunk and branches of the tree with
a sharp tool. Mastiha in teardrop
shapes dries, thickens and
crystallises and it has an initial taste
which is rather bitter but that soon
gives way to a distinctive and
unique flavor.

14
The mastihashop concept – Overview
mastihashop: Lifestyle shops appealing to the senses, meeting points of different
cultures, hospitable shelves for value added products not only from the birthplace of
mastiha (Chios), not only from Greece, but also for products from the wider area which is
the East Mediterranean, a region which corresponds to the historical mastiha markets.
This approach allows the development of a wide variety of products and a large pool of
ideas that leads to similar projects and business scenarios. In all these ventures, mastiha
will constitute the vehicle to represent the wider East Mediterranean region as it is
already indicated by the existing “selling line” of mastihashop: Finest Mediterranean
