    creates a succulent, flavorful entre,says Don Crace, President of CowboyCharcoal, a brand that caters to grillingpurists of the charcoal variety.For a uniquely smoky flavor sure to

    impress the crowd, try this recipe forCowboys Perfect Bourbon-MapleSmoked Turkey:

    Ingredients 1 thawed or fresh turkey 1 onion 2-3 garlic cloves 3 sprigs rosemary 3 sprigs thyme 1 bay leaf Olive oil Salt (at least 2 cups) Pepper Cowboy All Natural Lump Charcoal Hickory wood chips 1 cup bourbon 1/2 cup real maple syrup

    Directions Remove neck, giblets and excess fatfrom turkey. Make gravy from gibletsand neck, if desired. Completely rinse turkey inside and out. Place turkey in large brining bag thatwill fit in your refrigerator. Create brine with 2 gallons water (orenough to cover turkey), 2 cups salt, 1cup bourbon and 1/2 cup maple syrup. Refrigerate at least four hours. Remove turkey from brine, rinse andthoroughly pat dry. Add onion (sliced in half), garlic cloves,rosemary, thyme and bay leaf to insideof turkey. Season the inside with saltand pepper. Tie legs together with cooking stringand twist wing tips under the back orcover with foil to prevent burning.

    Brush outside of turkey with olive oiland sprinkle with salt and pepper. Soak a full package of CowboysHickory Wood Chips in a large bowl for30 minutes. Place a foil pan below the grate on oneside of grill to catch drippings. Toprevent excess smoke, fill it halfway withwater. On the other side of grill, add twopounds charcoal and light it. Drain water from wood chips. When lump charcoal is ash gray, addabout one cup of wood chips to the fire.Place grate back on grill. Let preheat forabout 10 minutes. Arrange turkey on the grate, above thepan. Place lid on grill and cook turkey forapproximately 15 to 20 minutes perpound, until internal temperaturereaches 180 degrees. Add additional wood chips andcharcoal every 30 minutes or asneeded. When done, transfer turkey to servingplatter, cover with foil and let stand 15 to20 minutes before carving.

Monday, November 24th, is theannual Spencer's Thanksgiving Dinner from11am-2pm at the Otsego United MethodistChurch, 223 E. Allegan St., Otsego. All arewelcome, and deliveries are also offered toanyone in the Otsego and Plainwell schooldistricts. Call the Otsego UMC for more detailsor to sign up for a meal.
