TheSunbeamCaféEspresso® II utilisestechnologyandengineeringfromcommercialespressomachinestoensurecafe-qualitycoffeeinaneasytousedesign.WiththeCafeLatteagrowingfavouriteamongstcoffeeloverstheinclusionoftheextracupheightclearancetothedesignallowstheespressotopourstraightintoalatteglassoryourfavouritemug.Enjoythesweetaromaandtasteoftheperfectshotofespressowithitssignaturegoldencremaeverytime.
What makes a good coffee?Sunbeamhaveconsultedwithexperiencedcoffeemakersandappreciatorsofcoffeethrougheverystageofdesign,toensurethemachinedeliversagreatshotofespressoeverytime.Therearemanyfactorsthatcontributetotheperfectespresso.Thewords‘taste’and‘aroma’areconsistentlyusedwhendescribingtheperfectcup.
Thesweetaromaandtasteoftheperfectcoffeeislargelyduetothecorrectcombinationoftemperatureandpressureduringthebrewingprocess.TheThermoblockheatingsystemensuresthewaterisatthecorrecttemperature,sothatthefullcoffeeflavourisextracted.Secondly,thecombinationofthe15BARpump,dual-wallfilterandstabilisingbaffleensuresthecorrectpressureatwhichtheliquidespressoisreleasedfromthespout.Theflowshouldconsistofbothliquidandcream.Thiscreamiscommonlyknownasthe‘crema’.Theperfectcremashouldbethickandstableandpreservethecoffeeflavour,aromaandtemperature.Formoretipsonhowtocreatetheperfectcupofcoffee,turnto‘secretstotheperfectcup’page11.Wehopeyouhavemanyenjoyable coffeeexperienceswiththeSunbeamCaféEspresso® II.

WithaSunbeampumpespressomachineandalittleexperience,youcancreate café-qualitycoffeeathome.Hereareafewhelpfulsuggestions:
• Theoriginofthebeanandroastingwillaffectthetasteoftheespresso,sotestdifferentbrandsandblendsofcoffeetofindtheoneyoulikebest.
• Thegrindofthecoffeeiscritical.Varythedegreeofgrindingtofindtherightfinenessforthecoffeebeansbeingused.
• Aregularshotofespresso,thebaseofallcafecoffees,isapproximately30mls.Theshotofespressoisaconcentrate,soyouwillneedtovarythequantityofmilkandadditionalhotwatertodeterminethestrengthandvolumeofthecoffee.Ifyouareusingalargecupormugyoumayrequireadoubleshotofespresso,ratherthanjustasingleshotdependingonyourtaste.
• Ensureyourcoffeegrindsare‘tamped’evenly.‘Tamping’referstotheamountofpressurewithwhichcoffeegrindsarepackedintothefilter.
• Ifyourespressopourstooslowly,tampthecoffeegrindmorelightly,ortryacoarsergrind.
• Ifyourespressoisthinandwatery,tampthecoffeegrindsharder,ortryafinergrind.
• Alwaysusecoldmilkandacleanstainlesssteeljugwhentexturingmilk.
• Alwaysusethefreshestbeansorgroundcoffeeavailableandstoreinanairtightcontainerinacool,dry,darkplace.
• Wholecoffeebeansstayfreshlongerthanpre-groundcoffee.
• Whengrindingyourowncoffee,nevergrindmorethanyouwilluseforimmediateuse.Onceground,thecoffeewillbegintolooseitsgoodness.
• Pre-warmcupspriortomakinganespresso,eitherbyfillingwithhotwaterorplacingonthewarmingplate.
• Onceprepared,servecoffeeimmediately.• Keepyourespressomachinecleanand
thoroughlyrinsed.Runwaterthroughthebrewingheadandflushthesteamingnozzleinfreshwateraftereachuse.

Milktexturingisthesteamingofmilktoheatitandtocreatefroth.Similartomakinganespresso,perfectingtheartofmilktexturingtakestimeandpractice.• Usefresh,coldmilkandfillastainless
steelfrothingjugtonomorethan¹/³full.• Theamountofmilkyousteamshouldbe
adequateforthecoffeesyouarepreparing.Keepinmindthatthevolumeofmilkwillincreaseor‘stretch’duringthetexturingprocess.
• Onceyouhaveactivatedthesteamandinsertedthesteamnozzleintothejug,positionthesteamwand1½cmfromthesideofthejugwiththetipofthenozzlejustbelowthesurfaceofthemilk.Thejugneedstobeataslightanglewiththesteamwandrestingonthespoutofthejug.Thiswillcreateawhirlwindmotioninthemilk.
Note:Youshouldhearahissingsound.Ifyouarecreatinglargebubbles,raisethejugsothatthenozzletipislowereddeeperintothemilk.• Asthesteamheatsthemilk,themilkwill
begintorise.Followthelevelofthemilkbyloweringthejug,alwayskeepingthetipofthesteamnozzlejustbelowthesurface.
• Oncethemilkhasstretchedtodoubleitsoriginalvolume,lowerthesteamnozzlefurtherintothemilkandcontinuetoheatthemilk.Thiswillgivethemilkafinetextureandnotamassoflargeaeratedbubbles.
• Ceasesteamingwhenthefrothingjugbecomestoohottoholdyourhandagainstit.
• Withthefrothingjuginhand,swirlandtapthejuguntilthemilkbecomesshinyandnobubblesremain,thisensuresanevenconsistency.Pourthetexturedmilkintoyourespressoassoonaspossible.
Important cleaning instructions for the steam wand/armThesteamwandneedstobecleanedeachtimeyoufrothmilk.Tocleanthesteamwand,wipewithadampclothandrinsethefrothenhancingattachmentunderwarmwater.Shouldyoursteamwandbecomeblocked,suppliedwithyourespressomachineisacleaningwire,locatedontheundersideofthelidtothewaterreservoir(28).Insertthelargerwireonthecleaningpinintothebaseofthesteamwand(29).Ifthesteamwandremainsblocked,unscrewthesteamnozzlefromthesteamarm. Cleanthesteamnozzlebyonceagainusingthecleaningwireandthenflushunderrunningwater.

fillwithcoldwater(2).Alternativelyyoucanopenthelidandremovethewaterreservoirusingbothhands(3).Thenfillwithcoldwater(4).
• Replacethewaterreservoirfirmlyintotheunit(5)andcloselid.
• Insertthepowerplugintoa230-240VACpoweroutletandturnthepower( )on. Starttheunit(6).Theredpower( )lightwillilluminateandflashtoindicateitiswarmingup.
• Placeoneofthefiltersinthegrouphandle(7).Thenpositionthegrouphandleonthemachinesbrewinghead(8).

• Selecttherequiredfilter(7) for1or2cupsofcoffeeandplaceinthegrouphandle.
• Usingthemeasuringspoonsupplied,placeoneortwomeasuresofgroundcoffeeintothefilter(15).Withtheotherendofthemeasuringspoon,usethetamptopush(pack)downthecoffeegrinds(16).
Important:Besurenottoover-fillthefilterwithtoomuchcoffee,andwipearoundtheedgeofthefiltertoremoveanycoffeegrinds(17).• Placethegrouphandleinthemachines
brewinghead.Positionthehandlesoitpointstotheleft,placethegrouphandleflatagainstthebrewinghead,thenturnthehandletowardstheright(18)asfarasitcango.
Note:Donotovertighten.• Place1or2pre-heatedcupsbelowthe
pouringspouts.•Turntheoperatingdialtotheespresso( ) setting(19).Youwillhearthemachine makingapumpingnoise,thisisnormal.• Oncethecup/sarefilledtothedesired
level,turntheoperatingdialtotheoff ( )position.
• Removethegrouphandleandthefilterbyturningthegrouphandletotheleft.
• Toremovetheusedcoffeegrindsfromthefilter,simplyturnthegrouphandleupsidedowninabinandgentlytapoutthe coffee(20).

• Aftereachuseoftheespressomachineforbestresultswhenmakingconsecutivecupsofespressowerecommendthatyouflushasmallamountofwaterthroughthemachinewiththegrouphandlealreadyremovedfromthebrewinghead.Simplyturntheoperatingdialtotheespressosettingandallowthewatertorunthroughuntilyouhaveaconsistentflowofwater.Thiswillwashoutanyoldorusedcoffeegrindsstucktotheundersideofthebrewingheadandalsohelpensurethecorrectwatertemperatureforyournextshotofespresso.
Note:Donotleavethefilterhandlelockedinpositionforextendedperiods,orwhenmachineisnotinuse.Thisshortensthelifeofthebrewheadrubberseal.
2. STEAM FUNCTIONThesteamfunctioncanbeusedfortexturing/frothingmilk. Important:Thereisariskofscaldingwhenthesteamnozzleisinuse.Hotwaterorhotsteamcancausescalding.Onlyusethesteamwandwhenitisimmersedinthemilk.• Fillthewaterreservoir(1) (2) (3) (4) (5)
withcoldwaterandstarttheunit(6).• Positionthesteamwandsothatthetipis
overthedriptray.• Turnthedialtothesteam( )position
(21).Somewaterwillcomeoutofthesteamwand.Oncesteamstartstocomeoutturnthedialtotheoff( )position(26).
• Swingthesteamnozzletothesideofthemachine(22).
• Pourcoldmilkintoastainlesssteeljugtonomorethan1/3full.
Tip:Forbestresultswerecommendusingrefrigeratedmilkandastainlesssteeljugthatiswellchilled.Besurenottorinsethejugwithwarmwaterbeforeuse.
• Holdthejugunderthesteamwandsothatthenozzleopeningiscompletelyimmersedinthemilk.Turntheoperatingdialtothe ( ) settingtoactivatethesteamandcommencetexturingthemilk(23).
Tip:Forinstructionsonhowtofroth/texturemilkrefertosection'Easystepsfortexturingmilk'.
• Anglejugsothesteamwandisrestingonthespoutofthejugandpositionthetipofthesteamwandjustbelowthesurfaceofthemilk(24).
Note:Thenozzlemustnottouchthebottomofthejugtoensurethatthesteamreleaseisnotobstructed.
• Movethejugsothatthesteamwandisinthecentre,thiswillcreateawhirlpoolmotiontothemilk.Asthesteamheatsthemilk,themilkwillbegintorise.Followthelevelofthemilkbyloweringthejug,alwayskeepingthetipofthesteamnozzlejustbelowthesurface(25).
• Whenmilkisattemperatureclosethesteambyturningthedialbacktotheoff ( )position(26).

Cleaning the steam wandYoumustcleanthesteamwandimmediatelyaftereachuse.Simplywipethestainlesssteelsteamwandcleanwithadampcloth.Also,brieflyturntheoperatingdialtosteam ( )settingtoclearanyremainingmilkoutofthesteamwand(27).Caution:Steamfromthewand/armisextremelyhotandthereisdangerofscalding.
Note:Shouldyoursteamwand/armbecomeblocked,suppliedwithyourespressomachineisacleaningwire.Thecleaningwireislocatedontheundersideofthelidtothewaterreservoir(28).Withthecleaningwireinsertitintotheholeinthebaseofthesteamwand(29).Shouldthesteamwand/armremainblocked,unscrewthesteamnozzlefromthesteamarm(30)cleanthesteamnozzlebyonceagainusingthecleaningwireandflushunderrunningwater.

Thecoffeemakingprocessinvolvesextractingoilsoutofcoffeegrindstomakeespressocoffee.Depositsoftheseoilsbuildupovertimeandaffectthetasteofthecoffeeandoperationoftheespressomachine.
Regularcleaningtoremovetheseoilsisessentialforespressomachinestokeepoperatingeffectively.Flushingwater,throughthebrewingheadandthesteamwand,istheeasiestwaytokeepyourmachinecleanaftermakingeachcoffee,andattheendofyourcoffeemakingsession.
Important:Neverwashyourespressomachineaccessoriesinthedishwasher.
Drip tray
Removethegridanddriptrayatregularintervalstoempty(32),(33).Iftheredfloatinglevelindicatorappearsthroughthegrid,emptythedriptrayimmediately.
Cleanthedriptrayanditsgridwithwaterand alittlenon-abrasivewashingupliquid,rinse anddry.
Overtimeitisnormalfortheinsideofthedriptraytobestainedbytheoilsinthecoffee.
Note:Ensurethatwhenyouarereplacingthedriptraythattheplasticliningisinposition(34).
The brewing head, filters & group handle
Thefilterandgrouphandleshouldbewashedaftereachusebyrinsingthemunderwarmwater.Washatregularintervalsinwarmsoapywaterusingamilddetergent.
Tocleanthebrewinghead,flushwaterthroughandwipetheheadandaroundtheinsiderimwithadampcloth.
Toassistinkeepingthefilterandthebrewheadclean,attheendofeachcoffeemakingsessionwerecommendyourunthemachine,withthefilterinplace,withoutcoffee–usingwateronly.

Thissealislocatedinthebrewingheadandcreatesasealagainstthefilterhandlewhenmakinganespresso.
Note:WhenyourSunbeamCaféEspresso®IIisnotbeingused,werecommendthatyoudonotleavethefilterhandleattachedtothemachineasthiswillreducethelifeoftheseal.
Overtimethisseallosesitselasticityandwillrequirereplacement–usuallyevery6-12months.Signsthatthesealisdeterioratingarewhen:thefilterhandlerotatestothefarrightandfeelsloose,orsteamescapesfromaroundthebrewingheadduringuse.

Wipeovertheunitwithadampclothandwipedry.Donotuseabrasivesormetalscourers,asthesewillscratchtheexteriorsurface.
Steam wand
Thesteamwandneedstobecleanedeach timeyoutexturemilkorheatanyotherliquid.Tocleanthesteamwand,wipewithadampclothandforthefrothattachment,simplyrinseitunderwarmwater.
Note:Aftereachusewerecommendthatasmallamountofsteamispurgedfromthesteamwand.
Onamonthlybasiswerecommendthoroughlycleaningthesteamwand. Todothissoakthewand/arminwaterwiththestainlessjugrestingonthedriptray.Ensurethatthewaterlevelinthejugisoverthewand.Runsteamthroughthewandfor30seconds,thenleavetosoakovernight. Inthemorningturnthemachineonandrunsteamthroughthewandagainfor30seconds.

Aftercontinueduse,yourespressomachinemaydevelopabuild-upofmineraldeposits.Thusyourmachinewillrequireoccasional‘descaling’.Werecommendthatyoudescaleyourmachineevery2-3months,althoughthisperiodwilldependonthehardnessofwaterandfrequencyofuseofthemachine.
Descaling solutionUseSunbeamLiquidDescaler,whichisavailableatanySunbeamServiceCentrelistedatwww.sunbeam.com.au.Alternatively,dissolve3tablespoonsofvinegarintwolitresoflukewarmwater.

5. Usingascrewdriver,unscrewtheshowerscreenfromthebrewinghead.
6. Removetheshowerscreenfromthecentreholdusingthetipofaforkorskewer.Washtheshowerscreeninhotsoapywater,rinseanddrywell.Setasideinasafeplacewiththescrewandthebluerubberseal.
7. Usingasmallbrush,scrubinandaroundtheareaofthebrewinghead,removingallcoffeegranules.
8. Wipedownthesteamwandwithasmallbrush.
