Deep-fried AsparagusBy Kirstie Haruta

Baseball fans who frequent the stadiums of their favorite teams grow to expect certain foods on the ballpark menu. The classics include hot dogs, nachos, an array of snacks and sodas, and these can all be found at Banner Island Ball-park. But among the all of the expected eats offered to Ports fans, there is one especially unique item: the ever popular deep-fried asparagus.

Asparagus has come to be associated with Stockton, as the city has been host-ing an annual festival centered around the vegetable for the past 26 years. While the festival, which passed this April, of-fers a wide variety of differently prepared asparagus, Banner Island Ballpark offers just the standard deep-fried favorite. Stockton Ports stadium chef Bert Reed explained how this must-have item is made in his kitchen.

“It’s been a part of the menu since I’ve been here,” he said. “Basically what we do is we cut the asparagus, we rinse them, of course, and then we season them with a little butter, a little mozzarella, and a couple of other seasonings. Then we get our beer, which is Heineken, we always use Heineken. And we throw it in the batter, and we mix up our batter, dip it in the batter, and we deep-fry it. Slight oil, about two minutes.”

And the fans eat it up. Reed and the kitchen staff have to keep an eye on it, because it sells very quickly. But he as-sures that it is always hot and fresh.

“It’s made to order, because it would go bad real quick. So you can’t just set it out and let it sit,” he explained. “We’ll probably do five at a time, and if I look out and there’s only one, I’ll get some going again.”

To some who have not yet tried it, the idea of deep-fried asparagus as staple on a ballpark menu may sound a little

strange. But even those who never out-grew their childhood aversion to green vegetables shouldn’t knock it until they’ve tried it. Asparagus in general is low in calories and sodium, and a good source of calcium and vitamins. Seasoning and preparation make it much easier on picky taste buds - not that many Ports fans need to be convinced.

“It’s very popular here at the ballpark. Since I’ve been here, it’s been the most popular item, by far.”

Plenty of home games means plenty of opportunities to try different foods around Banner Island Ballpark. If you need a break from the usual hotdog and fries, visit the cart located near the bat-ting cages and the How Ya Bean coffee cart and give the delicious deep-fried asparagus a try!

When you go to enjoy a Stockton Ports home game at Banner Island Ballpark, you enter a distinct game day atmo-sphere. Sunshine, the sounds of fans, friends and family, and, of course, the smells of delicious ballpark food. Have you ever wondered who it is that is behind all of your favorite dishes at the park? Meet Stockton Ports stadium chef Bert Reed, the man working behind the scenes to keep fans’ taste buds and stomachs satisfied.

Q: What made you decide to go into culinary arts?

A: I think I was probably about 12. My mom let me take over the grill, because she had to go to the store. And, I mean, I burnt the meat up, but actually, we all ate it, and from there, I fell in love with it. I tried warehousing and it was too

hot. I went to school for that for about a year, worked in warehousing for about two years, and decided I couldn’t do it because of the heat. So I decided to go back to school for culinary arts.

Q: What sort of training and experi-ence did you get before coming to the ballpark?

A: I had nine months of training from the San Francisco Culinary Arts. [I worked at] the Macaroni Grill, basically little restau-rants around here, locally.

Q: How did you come to be the sta-dium chef for the Ports?

A: Actually, I got hired on by my brother-in-law, and I was a sous chef. And when he went to another job, the position was open and they offered me the position. I knew everything here, so it kind of

worked out perfectly. I was ready for it. They asked me if I wanted it and I took it and ran with it.

Q: What are your duties?

A: My duty is to cook for the luxury suites that we have here. We do picnics out back at the Black Oak and the Jackson Rancheria. We do a basic tri-tip, ball tip, baked beans, potato salad. I cook for all stands, the [Tecate] Cantina, Home Plate. So all the food is actually prepped in my kitchen, and is sent out. So everything you’re probably tasting out here came from me.

Q: How much influence do you have on the menu? Do you bring in new ideas?

A: Yes, all the time. Especially with our Comcast menu, we try to change it every week. We bring in our own ideas, and I have a sous chef. We sit down and we go over ideas, what’s going to be right for the price, because we charge $15, so we want to please the people. So we’ll go over a menu and some ideas, we’ll watch a little Rachael Ray, and we’ll steal from her and put it on the menu [laughs].

Q: Have you had to meet any special dietary needs or requests?

Not so far. I’ve had a lot of people ask what’s in our meat, or basic questions like that. We add a lot of vegetarian meals, we’ll give them a fruit salad, and there’s cheese pizza. Those are the only ones I ran into, and that wouldn’t be a problem, but that had a different menu and plan.

Q: What has been unique about work-ing at this ballpark?

The atmosphere. I just love the spirit. The people, the employees are so great, the atmosphere is good. I like the crowd. And I like people to smell the food and say, “Mmm, that smells good.” I like to see people happy, and food usually does

that, it usually makes you happy.

Q: And has that been your favorite thing about working here?

A: Yeah, that’s basically it. I’ve been here probably five or six years, and the Ports front office is great. I know most of those guys, some of them came, some of them have left - they’re excellent to work with. Ovations always has excellent staff. I’ve been working with them outside of the ballpark for years, and it makes the job a lot easier. When you’re around people that enjoy being around you, like I said, it’s always a fun atmosphere. I even got out there and danced on the field one year. That’s another story though!

Q: What food or dish would you rec-ommend to fans visiting for the first time?

A: I would recommend people to go to the Tecate Cantina. It’s great food, most of it’s handmade, so there’s no canned food. It’s fresh. There’s chicken, we chop it up and season it, and the beef, same way. So it’s good, and it’s the best buy in the park. Also, our sausage cart. We have footlong, all-beef Miller dogs. $8, you get your choice of onions, peppers, seasoned up on there, and that’s a good deal too. And I would like to challenge anyone to eat two of those things!

Q: Is there anything else you would like Ports fans to know about you and what you do?

I would just like them to know that it’s al-ways fun here at the Ports. There’s great food, always, I know that firsthand. But I just want everybody to know that it’s a real family atmosphere and, I mean, come out and try it. I guarantee you’re going to enjoy it. And, other than that, go Ports!

Q: You played 12 years in the big leagues. How did you transition into being a coach?

A: Well, when I first retired, I didn’t go straight in to coaching. I had a job outside of baseball for five years. I got to raise my family and spend time with them. But I felt like, even with all that time away from the game, the transition was pretty easy. Towards the end of my career I was somewhat of a coach already. I would work with the younger guys and I was a mentor for them, so I felt like I had experience; it just felt natural to me.

Q: What is your favorite part about being a coach?A: My favorite part of being a coach is just getting to work with these young men; to get to see them go through the

At the beginning of the season, we introduced you to new Ports Manager, Webster Garrison. Now, we invite you to get to know more about our new pitching coach, Craig Lefferts!

Q: First, how are you enjoying Stock-ton? How is it different from being in Vancouver?

A: I love Stockton! It has been so good for me. I lived in California for a long time, I used to live in San Diego, and I moved in 1999. So it just feels really good to be back in California. It feels like home to me. It is very different from being in Van-couver. First of all, you are in a completely different country! But then the players that you work with a very different as well. As a coach you are dealing with rook-ies. Most of them are straight out of their college season and they are tired and just trying to get through the season. Here, the players are starting to learn what it is

Q: What is the best piece of advice you can give a player?A: I would just say that they need to be-lieve in themselves. Have the confidence to get it done, despite the ups and downs, setback and achievements. Just believe that you are going to reach your goals and work hard to get there.

Q: What would you be doing if you weren’t coaching?

A: That’s a good question…I don’t know what I would be doing if I wasn’t coach-ing! I have a big family so I would really enjoy being with my family. My son plays hockey, and I have coached him, and watched him play. I really enjoy watching my son play hockey. My hobbies would be…well, I’m not very good at golf, but I still play it sometimes. But I don’t know what I would be doing! You’ve stumped me!

career. You know, I already have had my career, I went through it already, but now it’s like I get to go through it again with these young guys who are just getting started. I get to watch the guys mature both as players and people. I get to see them become the kind of pitcher they are going to become.

Q: You have had an opportunity to coach many of the Ports pitchers when they were in Vancouver two seasons ago. How have the players matured from Short Season to Single-A ball?

A: Well, I think they have gotten to know who they are a little bit more and what type of pitcher they are. That’s key, be-cause you have to know what you can do well and use those strengths. So as they get more mature they realize what their strengths are, and what type of pitcher they are going to be.
