2020 RQFWS CHEESE & DAIRY PRODUCE SHOW PRESENTED BY KING STREETThe Royal Queensland Food & Wine Show (RQFWS) Cheese & Dairy Produce Show stems back to the first-ever Royal Queensland Show (Ekka) in 1876, making it one of the RNA’s oldest competitions.

The awards are built on longstanding traditions celebrating excellence in Australian dairy produce and are also reflective of current industry trends and in particular, changing consumer interest.

Positively received in 2019, exhibitors will once again receive an in-depth peer to peer report for their exhibits to provide them with direct comparisons to other products within the industry.

Renowned international cheese judge and sensory consultant Russell Smith, is once again Chief Judge of the RQFWS Cheese & Dairy Produce Show.

Mr Smith, who has more than 20 years experience in the industry, will oversee an expert judging panel made up of some of Australia’s

most respected and experienced food industry professionals.

MESSAGE FROM THE CHIEF JUDGEIt is an honour and a pleasure to again lead the judging teams for the Royal Queensland Food and Wine Show (RQFWS) Cheese & Dairy Produce Show and Ice Cream, Gelato & Sorbet Competition.

There are some new faces on our judging teams this year. You can get to know them, along with our many long serving judges, by reading their profiles in the competition schedule.

The peer to peer reports introduced last year were appreciated by exhibitors, with the RNA receiving positive feedback. It is also encouraging to see that other dairy competitions around the country are looking to introduce this style of feedback.

It has been a difficult year for both dairy farmers and processors, with a continuing severe drought accompanied by massive bush fires. The fires have impacted so much of the country including many dairying areas.

With this in mind, it is a pleasure to be part of the RQFWS competitions that showcase the quality products our dairy farmers and manufactures are producing - even under these difficult circumstances.

The quality of exhibits I see in the RQFWS competitions are always of the highest standard and I’m sure the judges will see the same again this year.

2020 JUDGES

AMISH SHARMA

Amish is actively involved in the dairy industry for almost 15 years with an academic degree in dairy and experiences in production, technical and sales capacities within Saputo, Chr Hansen and several overseas dairy manufacturers. He is currently a technical account manager at Chr Hansen Pty Ltd, a global bioscience company that widely supplies food cultures, enzymes and natural colours into the diary and food industry, and support manufacturers in developing new products and improving product quality with natural solutions. For the past 6 years, Amish has been involved in judging roles at state and national dairy competitions.

BILL TZIMAS

Supplier of cheese to restaurants, cafes and cheese lovers for over 30 years, Bill Tzimas is a former secondary school maths teacher who decided to make a ‘cheese-change’ in 1990. In 1990, Bill opened a specialty cheese shop in the iconic Queen Victoria Market. Within 5 years, he established a distribution arm called Bill’s Farm Food Services, servicing specialty cheese to Melbourne’s finest restaurants. Twenty-five years on, Bill’s Farm Food Services has expanded to include rural Victoria. Bill’s love for cheese and its complexities has led him to judging and he has been a consistent cheese judge for Dairy Australia, DIAA and RASV for the past 15 years.

CHRIS SHEEHAN

With over 20 years’ experience in the brewing industry, Chris has worked across a multitude of areas including brewing, packaging, technical, best practice and HR. Chris has worked in breweries both large and small, having spent time at Swan, Knappstein, West End, Castlemaine, Malt Shovel and now Eumundi. Whilst based at Eumundi, Chris is currently responsible for the microbrewery network within Lion across Australia and New Zealand. As a passionate brewer, Chris is involved in both Dairy and Beer judging across Australia.

EMMA DALEY

Emma has over twenty years of experience working with gourmet food in online, retail, wholesale and hospitality industries. Early on, her first job in the United Kingdom was with a very well known Italian delicatessen which was a major turning point for her curiosity and love for food. Emma still has vivid memory of tasting those authentic Italian cheese, cut fresh from the window and has loved eating, tasting and learning about cheese ever since. Emma currently works in marketing at a renown Brisbane butcher shop.

GERALDINE WALKER

Geraldine is a Product and Packaging Technologist at Nature’s Dairy Australia, a contract manufacturer of long-life liquid dairy products in Victoria. Since graduating from a Bachelor of Science (Food Science and Technology), Geraldine has worked in the Australian dairy industry for 18 years, and during this time has worked in a combination of dairy R&D and new product development roles. She is a regular participant in sensory activities within her workplace and enjoys tasting quality Australian dairy products. Geraldine has also previously judged at The Australian Grand Dairy Awards, the Dairy Industry of Australia Awards, Royal Melbourne, Royal Sydney and Royal Adelaide.

JEREMY RYLAND

Jeremy is a passionate food professional with more than 40 years’ experience in the Australian food industry. He holds a Master of Arts in Gastronomy from Le Cordon Bleu, Academie D’Art Culinaire de Paris. Jeremy has worked in research, manufacturing, hospitality and marketing and he currently owns his own consultancy business that develops new restaurants and provides auditing and review services to hospitality groups Jeremy is also a “l’expert gourmand” at Gault&Millau, the respected French restaurant review organisation. Jeremy is passionate about good food, good wine and the importance that food plays in Australian history, culture, social lives and health.

MARK LIVERMORE

Mark has a long history of involvement in the dairy industry, from working on dairy farms to managing a dairy factory manufacturing products from yoghurts and cheeses to a wide range of packaged milk products. Following many years judging across the country, Mark is the Chair of Judges at the Sydney Royal Cheese and Dairy Produce Show and Deputy Chair of Judges at the Australian Grand Dairy Awards.

SONIA COUSINS

In 2005, Sonia Cousins traded science and technology for cheese, and has since worked as a cheesemonger in both Sydney and Newcastle. In addition, she runs a cheese education consulting business called Cheese The Day, which presents cheese appreciation classes for the public, and workshops covering cheese sensory evaluation for industry professionals. She also writes cheese-related articles for various consumer and industry publications in Australia and overseas. In addition to the Royal Queensland, Sonia’s cheese judging credentials include the Sydney Royal, Australia Grand Dairy Awards, and New Zealand Champions of Cheese Awards.

WENDY DOWNES

A self-confessed curd nerd, Wendy spent years learning as much as she could about cheese before taking the plunge to open The Cheeseboard, Brisbane’s only maturation cave and licenced fromagerie. Working as affineur and cheesemonger has given Wendy the opportunity to be part of the milk to mouth journey of cheese. One of the most enjoyable aspects of the job is working with dairy farmers, cheesemakers, chefs, turophiles and anyone willing to do their bit for the local dairy industry by eating local cheese. One of Wendy’s main motivation is the belief and passion for Australian artisan cheese.

ENTRY ELIGIBILITYNUMBER OF ENTRIES

A product can only be entered once and entries should be entered into the class that reflects the product produced.

The RNA reserves the right to transfer entries, if in the opinion of the Chief Judge, the exhibit is entered in the incorrect class.

COMMERCIAL AVAILABILITY

All exhibits are to be a commercially available product. All products must bear the exhibitor’s commercial label.

AUSTRALIAN PRODUCE

All exhibits must be made from 100% Australian dairy raw material, and manufactured and produced in Australia.

HACCP FOOD SAFETY PLAN

All exhibitors must adhere to an audited HACCP Food Safety Plan.

EXHIBITOR LICENSING

All exhibitors must be accredited under their respective state’s licensing/accreditation body for the production of milk and dairy products.

CONTRACT MANUFACTURERS

All entries must be submitted under the name of the producer/manufacturer and not in the name of the retailer.

Exhibitors who have product manufactured under contract must therefore use the manufacturer’s name as the exhibitor and identify the producer on their application for entry.

HOW TO ENTERENTRY FEES

$32.00 per entry - Exhibitors must advise of their taxation status upon entry. The RNA is required to pay GST on all entry fees received.

There will be no refund of entry fees for entries withdrawn, not delivered or disqualified unless the entry is withdrawn with the approval of a Council Steward.

All exhibitors must pay the GST inclusive entry fees whether they are registered for GST purposes or not registered. Exhibitors who are registered for GST purposes may be able to claim a credit for GST paid. Exhibitors should check with their financial advisors or the Australian Taxation Office. To assist with any claim for credit, the RNA will send all exhibitors a Tax Invoice for the total entry fees received including GST.

APPLICATIONS TO ENTER

Applications to Enter can be completed online through our website: www.rqfws.com.au

Exhibitors must state on the Application to Enter for each exhibit:

n Exhibit Commercial Name;

n Fat Content (where required); and

n Milk Type (where required).

Upon submission of an Application to Enter, exhibitors will receive electronic confirmation of entry from the RNA. It is the exhibitor’s responsibility to ensure that all details recorded on the confirmation are correct.

LABELLING

After entries have closed, the RNA will send via email to each exhibitor competition labels for each exhibit, which must be adhered to each sample of the exhibit prior to delivery. For example, if you are submitting six samples of a cheese, the label must be on all six.

This label contains key information about your exhibit that will ensure that they are stored and judged correctly.

SAMPLE REQUIREMENTS

Exhibitors are required to enter multiple samples of their products for judging.

The following minimum quantities of each exhibit must be delivered within the specified times for delivery:

Cheeses:

All cheese are to be a minimum of 1kg. If packs are less than 1kg, then multiple products equivalent to 1kg must be submitted.

DELIVERY

Exhibits must be delivered between Thursday 14 May and Friday 15 May 2020 to:

Detailed delivery instructions, including a map and a label to adhere to the box will be sent to exhibitors via email closer to the time.

There will be no refund of entry fees for entries withdrawn or not delivered on time.

HOW WE USE YOUR PRODUCTS

The delivery sample requirements ensure that there is sufficient quantity for judging including where exhibits are contenders for medals and trophies.

Product not used during judging will be used to help promote and celebrate the exhibits to the industry and consumers at the Awards Presentation.

The RNA does not publicly or commercially sell any entered product.

Exhibit stock remaining after the competition and its associated events will remain the property of the RNA.

For enquiries about entries, payments, refunds and incorrect entry details, exhibitors should contact the RNA Competitions & Events Coordinator in the first instance.

RESULTSThe results catalogue will be posted on the RQFWS website (www.rqfws.com.au) on Friday 22 May 2020 following the awards announcement.

REGULATIONS AND ACCEPTANCE OF ENTRIESSubject to the Royal National Agricultural and Industrial Association of Queensland Act 1971 (QLD), and to the Rules, By-Laws and Regulations of the RNA the following Special Regulations apply to the Royal Queensland Cheese & Dairy Awards.

Entries are accepted subject to the Royal National Agricultural and Industrial Association of Queensland Act 1971, and to the Rules, By-Laws and Regulations of the RNA in addition to the Special Regulations which appear in this document. Copies of the Rules and By-Laws may be obtained from https://www.rna.org.au/about-us/by-laws-and-rules.aspx.

JUDGING

1. Judging will be performed by a panel of judges appointed by theRNA.

2. Exhibits judged against a specified set of criteria as set out in thisdocument.

3. Medals will be awarded as set out in this document.

4. Exhibits not commercially labelled and/or without nutritionalinformation may not be judged.

5. The Chief Judge has the power to disqualify or dismiss as notbeing eligible for judging, any exhibit which, in the Chief Judge’sopinion, does not comply with the regulations in every respectprovided the Chief Judge first refers the matter to a CouncilSteward for enquiry. The Chief Judge and Council Steward havepower to call in one or more persons for consultative or advisorypurposes.

6. In the event of there being no competition in a class, the judgesmay award a prize or not, as they think fit. Prizes may bewithheld in any class where exhibits are considered unworthy.

7. All judges will record a comment for each exhibit judged.

8. The Chief Judge will determine the process for determining the‘top gold’ within a non-split class.

9. The highest-ranked eligible gold medal-winning exhibits willbe retasted and ranked where trophies are awarded acrossmultiple classes. The Chief Judge, in consultation with a CouncilSteward, will have the final power to arbitrate the award of atrophy.

10. Trophies will only be awarded to exhibits that have won goldmedals during the current competition except where indicated inthe regulations.

OTHER REGULATIONS

1. The requirements as set out in the “Entry eligibility”, “How toenter”, and “Trophy awards” sections of this Entry Booklet formpart of the Special Regulations of the competition.

2. After the close of entries, no person will be permitted access tothe exhibits, except the judges, stewards and RNA employeesuntil the awards have been made.

3. Exhibits will not be permitted to leave the competition venuewithout the permission of the RNA.

4. All exhibits become the property of the RNA.

5. Exhibits must be the bona fide property of the exhibitor at thetime of entry.

6. All Gold, Silver and Bronze Medal winning entries must only usethe RQFWS medal designs.

7. No entry will be received from any person or persons disqualifiedby the RNA or any other similar association during the period ofsuch disqualification. Should any such entry be accepted, it shall,when discovered, be deemed void and the entry fee and exhibitsshall be forfeited to the RNA.

8. All exhibitors must accept the decision of the judges appointedby the RNA as to the merits of their exhibits.

9. An exhibitor who in the opinion of the RNA breaches any ofthese Regulations may be disqualified by the RNA from exhibitingat any of its future shows as the RNA in its absolute discretionmay determine.
