    What Were Your Plans for the Day When You Left the House?I was watching the evening news as the commentators tried to find reason and place blame on the unfortunate situation going on in Ferguson, Missouri. The seemingly sincere journalist was interviewing both civil rights activists and members of law enforcement, trying to find understanding in the tragedy. Each group made points that had more to do with general social policy than the specific events that brought the death of a young African American. The one exception was an African American preacher, who made a profound statement. He said, The one thing we know for sure is that the police officer didnt get up that morning with the intent of killing an unarmed teenager, and that unarmed teenager didnt start his day with the intent of putting himself in a situation of conflict with a member of law enforcement that resulted in his death.

    Every day, citizens of Memphis leave their homes to go to work in order to provide for their families while hoping to have a smooth day with those they interact with. Few people start the day with the desire for confrontation or the intent of hurting someone verbally or physically. Their plans of the day are often changed by the challenges they face and the human nature of individuals they come in contact with.

    Generation after generation, movies, books, and television shows have challenged the question of human nature as they explore the paradox of our humanity. Plato described human life in terms of the dualistic qualities. Aleksandr Solzhenitsyn wrote of the human propensity for both compassion and cruelty at once: The line dividing good and evil cuts through the heart of every human being.(1)

    A video is circulating on Facebook showing a young Albert Einstein challenging a professor who is trying to make the point that God is the architect of evil because evil exists. The young Einstein makes the point that darkness exists

    when there is no light, cold exists when there is no heat. The existence of evil is created from the lack of good.

    The Walt Disney Company recently brought C.S. Lewis childrens book from the Narnia series, Prince Caspian, to life. In this movie, the characters struggle with the paradoxes in and around them, battling the desire to be a good friend versus the desire to manipulate for their own well-being or ego. The childrens struggle is put in proper perspective as the central character Aslan, who represents God in this fictitious world, seeks to restore the children from their recent failures to each other with his response to the children, You come of the Lord Adam and the Lady Eve. And that is both honour enough to erect the head of the poorest beggar, and shame enough to bow the shoulders of the greatest emperor on earth.(2)

    Each of us has a dualistic struggle in our daily choices: the desire of being a good neighbor versus the tendency to walk away without helping. Loving our neighbors creates an environment of goodness, while walking away from those in need results in an environment of evil. Citizens of Memphis face these choices every day, and as we choose the light of goodness, it will shine through the darkest parts of our city. The pages of 4Memphis thank all those shining light into the darkness of our city!

    Its Friday morning in Seattle, and a late breakfast at Lowells in the historic Pike Place Market affords postcard-perfect view of Puget Sound. Outside the window, seaplanes take off for who-knows-where, sailboats glide across the water, and ferries chug from the port to islands that look close enough to touch. Its the perfect spot in which to begin an exploration of and pay homage to the citys three most iconic retailers.

    Starbucks may be the brand most associated with the city; the coffee house empire now boasts 21,000-plus stores across the globe. Contrary to popular belief, the coffee giants original location wasnt at 1912 Pike Place Market, it was a tiny space a blocks away at 2000 Western Avenue. Starbucks moved to the Pike Place location in 1976, into a tiny space where one could only buy whole roasted coffee beans. This second location is considered by most to be the original location, as the store on Western no longer exists, and theres always a long line of folks outside the store waiting for their turn to buy items with the companys first logo the brown logo with the mermaid in all her unedited mammalian glory. Theres a second, larger, signature Starbucks at the corner of 1st & Pike, right outside the entrance to the market, where you can pick up some of those vintage items as well and not wait in such a long line.

    Next stop, Nordstrom the retailer at 5th and Pine known for its amazing shoe

    selection and customer service. John Nordstrom moved to the Pacific Northwest in the late 1800s, joining the hunt for gold in the Alaskan wilderness, and returning to Seattle with a $13,000 stake. He used his small fortune to forge a partnership with Carl Wallin, a fellow gold rusher and shoe shop owner. Wallin & Nordstrom opened in 1901 as a small shoe store, and Nordstrom continued to sell only shoes until 1963, when it bought a local clothing retailer. That explains the reputation as a shoe go-to, and the customer service Nordstrom is known for is as easily explained. The original employee handbook was a simple 5-by-8-inch gray card with only 75 words, and there was one rule: Use best judgment in all situations. There will be no additional rules.

    C.C. Filsons Pioneer Alaska Clothing and Blanket Manufacturers opened in 1897, and was the go-to for those making the expedition to the Klondike to find their fortune in gold. More than a century later, Filson is still a go-to for American outdoorsmen, offering hand-sewn fishing, shooting, and travel cases trimmed in bridle leather, as well as clothing appropriate for the sporting life. Filsons flagship Seattle store feels like an old-fashioned dry goods store, with gorgeous wood accents and massive display shelves serviced by rolling ladders. The building, in the citys SoDo neighborhood, is also where many of the companys products are produced.

    Restaurant Iris hosted a fundraiser for the Streetdog Foundation on a recent Sunday afternoon. The poster pup for the afternoons festivities was a lovely girl by the name of Iris, and she is a beautiful example of what the Streetdog Foundation is all about. When she was found, she was frail and starving from a hard life on the streets. Today, Iris is thriving and loving her new life, thanks to the Streetdog Foundation.

Two scrumptious temptations blended into one frozen pint of delicious? Yes, thanks to the new legislation in Tennessee! Mercers Wine Ice Cream is crafted in Booneville, NY, and sold locally by David Everson. Long-time locals may know David as the purveyor of the Cockeyed Camel, and it was during that time that he first became intrigued by this intoxicating dessert. As the laws changed, he grabbed the opportunity to bring the concept to Tennessee.

    Beginning 2013, Mercers Wine Ice Cream was allowed to be sold in retailers and grocery stores. As more legislative changes came into effect, Mercers is now also available in several liquor stores around town. The alcohol content varies by flavor, and none are higher than 5 percent. The ice cream itself is a premium recipe

    boasting a rich 15 percent butterfat, and the wines add an interesting flavor.

    The most popular flavor is Cherry Merlot, a n d other temptations include a Chocolate Cabernet and a Peach White Zinfandel. Add a scoop over a warm berry cobbler or a piece of cake, but as David recommends: Its best right out of the pint! Grab a spoon and have happy hour!

  • Plum & Blackberry Gelee MacaroonErling Jensen Macaroon9 oz Almond flour13 oz Powdered sugar

    6 oz Egg whites, at room temp2 oz Granulated sugar

    Pre-heat oven at 350F. Combine almond flour and powdered sugar in a food processor and grind for 2 to 3 minutes. Sift flour mixture and set aside. Whip egg whites until foamy and gradually add granulated sugar. Once the whites are at stiff peaks, fold in flour mixture, at a time. After fully incorporated, place in a piping bag with a rounded tip. Pipe out desired sized circles on silpat non-stick baking liner. Place in oven and turn the temperature down to 250F, and bake for 15 minutes. Let completely cool before removing off of silpat. Saluted Plum2 Large plums, sliced thin3 T Brown sugar1 T Brandy Combine brandy and brown sugar together in a saut pan. Add plum slices and cook over medium heat for 2 minutes. Drizzle over macaroons.

    Ladyfingers with Balsamic Berries & Grand Marnier Whipped Cream Frank Grisantis Italian Restaurant

    1/3 cup Sliced Strawberries1/3 cup Blackberries1/4 cup Blueberries

    1 T Sugar1 T Balsamic VinegarLemon Zest

    Combine all ingredients and allow to sit for 1 hour at room temperature.

    Grand Marnier Whipped Cream1 cup Heavy Cream2 T sugar

    1 T Grand Marnier

    Combine all ingredients and whip until peaks are formed.

    Lay down the ladyfingers and top them with the balsamic berries. Place another set of lady fingers and repeat with the berries. Top with the whipped cream and garnish with fresh mint.

  • Cheesecake Brulee & BerriesJims Place Grille

    16 oz cream cheese16 oz mascarpone cheese9 oz sugar2 tsp fresh lemon juice1 tsp vanilla4 large eggs

    Bring cheeses and eggs to room temperature. Combine the cheeses with sugar until completely blended. Add the eggs, one at a time to mixture. Next, blend in lemon juice and vanilla. Add the filling to a prepared crust using a springform pan or mini cheesecake pans. Bake at 325 degrees for 20-25 minutes. Sprinkle sugar evenly over the tops of cheesecakes; slowly pass a hand-held torch over the sugar until melted and caramelized. Enjoy with blackberries and raspberries.

    Berries Marnier with Creme FraicheItta Bena

    1 pint raspberries1 pint blackberries

    2 T Grand Marnier1 T sugar

    Combine all ingredients in a mixing bowl. Cover and refrigerate at least one hour.

    Creme Fraiche1 C heavy cream2 T buttermilk

    Combine ingredients in a mixing bowl and cover. Allow to set out in a warm place 8 to 16 hours, or until thick.

    Dear Fairy Wine Mother,Sometimes my dry dinner wine does not work with my sweet tooth for dessert. Any suggestions about dessert wines?

    Dear Sweet Tooth,Since you didnt mention a particular dessert, lets consider a couple of rules of thumb. First, you should choose a wine that is slightly sweeter than your dessert. However, they should be similar enough in sweetness so that you dont end up with that awful toothpaste-and-orange juice disparity. You must also consider the delicacy or hardiness of your dessert. For example, a creamy dessert could be served with a Gewurtztraminer or Riesling but a spicy baklava might need a late harvest Zinfandel. Fruity desserts can stand up to a bit more acid and you might investigate a good quality Italian Moscato.

    Chocolate desserts can be tricky. Usually the darker the chocolate, the less sweet it is so you can tone down the sweetness of the wine. Chocolate dipped strawberries would pair just fine with champagne. A moderately dark chocolate can even be paired with Pinot Noir, some Merlots and even certain Cabernet Sauvignons. A classic chocolate and wine combination is port. Of course with my penchant for Zinfandels, you know where to find me.

    The best way to learn is to experiment!

    Dear Fairy Wine MotherHelp! I dont know much about dessert wines and I need to know if It is ok to substitute wine in lieu of dessert.

    Dear Need to KnowIn a nutshell, yes, you may offer a sweet wine or wines in place of dessert. With so many types to choose, you might offer a couple of them depending upon the number of guests at your table and upon your budget. There are slightly sweet wines (sometimes called off-dry), heavy late-harvest sweet wines, fortified wines, and sweet sparkling wines, etc. Each of these categories is made in a unique way to halt the fermentation process so that the sugar in the wine reaches a point of perfection. One note of caution, fortified wines and some late harvest wines contain quite a belt more alcohol than your average dinner wine. Small pours are best.

    In todays diet-conscious world, your guests may appreciate a simple sip in place of a heavy dessert. You can always fancy things up with a a couple of cheeses, some roasted pecans, and a bit of fruit. Blue cheese, pears and port are one of my personal favorites.

    Dear Fairy Wine Mother I am curious about wines that are not made from grapes but from other berries like cherries and strawberries. Any helpful hints?

    Dear CuriousMy best advice is to stay away from wines made of strawberries, blueberries and cherries unless the wine in question has been made by a dear friend or loved one whom you wish to flatter and there is no way to avoid trampling their feelings otherwise. My experience is that the berry flavored wines currently on the market are aimed at an inexperienced wine crowd. These products tend to be cheaply produced and are usually sickeningly sweet. Check for artificial flavors, too. With that in mind, there are a few infused wines that may still make the grade. One is an organic sangria called Eppa SupraFruta that is pretty good. Another suggestion is Chocolate Shoppe Strawberry. You wouldnt want several glasses but it is tasty in place of dessert.

    Have you considered making your own sangria? It is not difficult and you can get exactly the flavors that you like best! Give it a try and be pleasantly surprised. Cheers.

    JONESWe Got A Painted Thing Going OnStory and photos by Sandi Butler Hughes

    The charming Cooper-Young shop is aptly named Me & Mrs. Jones: Stephanie Jones is Mrs. Jones, the artisan expert, and Me represents each person who is so warmly welcomed into her clan of painted-finishes-followers. I recently spent a day with the exuberant Mrs. Jones in the studio to learn about chalk paint, milk paint, finishing touches, and this craze that is transforming outdated and unattractive pieces of furniture, cabinets, floorcloths, frames, lamps and their shades, patio furniture, and most anything else that could benefit from a little sprucing up. Stephanie, along with Margaret Apple, Catherine Wilfong and Cheryl Westlake, assisted, directed, and cheered me on as I painted and waxed my way to becoming another chalk-paint devotee.

    1. The $20 Lane side table was in good shape with the exception of a layer of thrift store grime. I removed the glass, then gave the table a generous spray of Dirtex. The foaming cleaner is great for getting into the cracks and crevices to bubble out the dirt. The color for the table I chose to use was Annie Sloans Emperor Silk Chalk Paint. Smooth or textured finish? Stephanie asked. Smooth? I guessed. I think so!, agreed Stephanie, handing me a brush. And so I began to paint

    2. Per Stephanies direction, I flipped the table over and first painted the underside. The paint dries quickly, and by the time I worked my way around the table, I began applying the next coat. I was fretting that the paint was warping the rattan as I painted it. Dont worry; it will flatten back out as the paint dries, Stephanie assured. Of course, it did. Light coats work best to cover, and she also advised me to keep the paint moving, so it doesnt gob into the creases. The chalk paint covers beautifully, and is very easy to apply.

    3. The final step is the wax. This is where the magic happens, Stephanie excitedly said as she brushed on a coat of Annie Sloans Clear Wax. To accentuate the lines, she suggested I follow with Annie Sloans Dark Wax. Using a brush with a firm, flat end, I dipped into the dark wax and began applying it to the table. The dark wax brought out a depth and character that was not there before in my dull little table. I buffed the wax and viola - magic!

    SUBWAY SIGNSMEMPHIS NON-STOPAnother inspired idea born out of necessity. When Stephanies son Will was graduating from high school, she needed presents for his friends, and thats when her creativity sprang into action. Using specially-designed stencils, she painted Memphis-themed Subway Signs. The stops include words such as Grizzlies, Tigers, Jerrys Sno Cones, Overton Park - if its a beloved Memphis thing or Southern tradition, she has it on a Subway Sign. Other Subway Signs pay homage to Southern traditions, from SEC football to pimento cheese. Workshops are held if you want to craft your own or buy one that is ready-to-go-gifting.

    4. My first chalk paint experience was simple and so much fun, with a little elbow grease applied by Me and compliments of Mrs. Jones. So many pieces from boring kitchen chairs to 1980s armoires beg for new life. With paints and a multitude of techniques to use, Me & Mrs. Jones will have a thing going on for a very long time.

    LAMP REVAMPA garage sale lamp adorns a table in one of the workrooms at Me & Mrs. Jones. It cost $6.00 but looks like a million bucks. The brass and ceramic lamp is transformed with a few simple steps. A first layer of Annie Sloan Chalk Paint in Graphite is applied as a base coat to cover the brass. Next, a second layer in Annie Sloan Louie Blue is brushed on. Painting the lamp in sections, and working quickly before the Louie Blue paint dries, the section is spritzed with water. The light spraying creates an effect that mimics weathered zinc. A coat of clear wax is brushed on and a beautiful lamp is created from someone elses discard.

    Writing Our Way HomeA Group Journey Out of HomelessnessBy The Door of Hope Writing Group, Co-Facilitated by Ellen Morris Prewitt

    This is Ellen Prewitt! Shes gonna tell us how to be a writing group! That announcement to a group of homeless men and women began Ellen Morris Prewitts journey in 2007 at the Door of Hope. Every Wednesday since that proclamation, the group has gathered together to write, but they have also grown as people who are in the process of being housed in a home of their own. With Ellens guidance, the Door of Hope Writing Group has served hundreds of writers. Some writers were there on the first day and are still involved today, while others drifted through only for a short time. In 2011, Germantown United Methodist Church clergy and staff began lending their support, serving as facilitators to the weekly meetings, providing assistance for field trips and special meals as well as hosting a day-long Book Retreat. As a result of this Retreat, fifteen of these writers are now authors of the book, Writing Our Way Home: A Group Journey Out Of Homelessness.

    The authors allow the reader a distant yet truthful glimpse into the world of homelessness. With writing styles that range from poetic to raw, each one speaks with a courageous voice wanting to be heard. Ellen is herself a writer, and in a recent blog post she described why she wants to publish. The shared words gave me hope for humanity. Thats why I want to publish my work: for how it alters, even ever so slightly, other peoples view of the world. I want to publish for the collective conversation of life, she wrote. Writing Our Way Home honors each of these contributors by validating their life stories in print, growing through conversation shared by the writers and now by their readers. Veyshon Hall, a contributor to the book, may say it best: We talk, we read, learn or say nothing at all. This is our safe place, we exhale and breathe deeply. We have peace of mind. There is no punishment for speaking or not speaking...What is this glorious place that only the homeless can find? Its the Writers Group, silly.

    Anita Norman is a senior at Arlington High School, a Bridge Builder, and the National Champion of the Poetry Out Loud Recitation Contest. She also writes poetry, and was inspired to write Mama Memphis after moving to the Bluff City and struggling to understand her new hometown. But then, she described embracing Memphis as a mom in a sense...helping me in the maturing process. The people in Memphis are all my brothers and sisters, and the legacy of a mom lies in her offspring. Memphis is a gemstone, and its all in how you look at it. Thats the only difference.

They can be small, thin, purple-colored lines (called spider veins) lying just below the surface, or they can appear as thick, bulging or knotted veins. While many people think that varicose veins are simply a cosmetic issue, there is often an underlying medical problem that causes varicose veins. This medical condition is called venous insufficiency. Varicose veins are very common in the United States, affecting approximately 15 percent of men and 25 percent of women.

    WHAT CAUSES VARICOSE VEINS?Arteries bring blood from the heart to the legs. Veins then bring the blood from the legs back to the heart. Varicose veins result from problems in the veins. When you stand, oneway valves in your veins close to prevent your blood from rushing to your feet. In some people, these valves become worn out.     sensation of heaviness and causes the veins to enlarge. The veins that branch into the surface of the skin become dilated, and appear as varicose veins.

While Memphis is covered up with exceptional mom-and-pop shops, 4Memphis would like to salute these four outstanding businesses that have served with integrity, grace, and unwavering customer service.

    Drivers Shoe Service 1621 Union Avenue

    Nestled between older shops and abandoned store fronts sits Drivers Shoe Service. What was once the adored Galtellis Shoe Service, the now Drivers is helmed by Andrew Lyles and brother-in-law Titus Driver. Andrew was Mr. Galtellis apprentice and then right-hand man for over 30 years, right up to the day that Mr. Galtelli passed away. When asked why he thinks that they are so popular for their customer service, Andrew simply replies, You just have to know how to treat people. So when Galtellis shut its doors, Titus reopened the shop in July 2013 with a renewed management plan:

    despite being small, customer service opportunities can be huge. The addition of a few fresh faces and updated waiting room is no cause of concern in regards to the operation. The machinery and techniques used in the back shop seem almost ancient: just how Andrew was taught as a young man in high school. Because Titus stuck to the traditional way of doing things, Andrew was more than excited to be the brains in the back shop once again. Andrew loves what he does because it has not changed. This is a trade. Once it gets in your blood, its going to stay there. Memphians, do not throw away those handbags, luggage, or favorite pair of Pradas in haste.     We see more red wine than Busters, quips Don Carwile, owner of Carwiles Custom Cleaning. At nearly every party around the city of Memphis, there is one woman who will dribble wine on her silk blouse or her favorite cocktail dress, where she is promptly advised by a friend to take it to Carwiles. This kind of notoriety has been earned over generations. Don is the son of William Carwile, who was the original owner of the cleaning service. Having opened its doors in 1957, this shop has been family owned and operated for over half a century. When his father passed away, Don took over the company, but maintained the old family mantra: Quality over quantity. Over the years, Carwiles has gained such a great reputation among other dry cleaners that those in the trade around the country call Don for advice when they receive a problematic garment. Everything that comes through the store is hand-cleaned by me alone. And I would rather take three times longer on something then rush through it and not do a great job. However, do not let this modesty confuse you. Those involved in Carnival Memphis know that there are day gowns and then evening gowns for the ladies. Don and his crew are responsible for cleaning the evening gowns during the day and having them ready for the next evening, all the while taking the day gowns, cleaning them, and having them ready for the next day (And those dresses can get trashed!). Carnival Memphis partiers are so serious about having Carwiles assist them in their evening wear maintenance that they will have police escorts stop traffic for them on Central Avenue in order to rush to their door.

    If you have ever craved an Ernestine and Hazels burger in the middle of the night, you can thank Chuck Hogan and his crew at Charlies Meat Market. In addition to providing all of the beef for patties to local favorites like Ernestine and Hazels and Hueys, Charlies supplies those in the know with very high quality beef, pork and poultry with a very low price point. Charlies Meat Market was started by Chucks father, Charlie, who has since retired and left his sons Chuck and Dale to run the family business. We have to compete with butchers at grocery stores by making the extra trip worth it, notes Chuck. The additional trek that takes you down Summer Avenue is more than worth it. Chuck stocks his cases with premium filet cuts wrapped with bacon (up to 13 ounces for those who are especially hungry), as well as choice cuts of ribeye, pork chops, and even huge Italian-marinated chicken breasts! Charlies also carries a nice variety of meat for stews, appetizer items, and even premier spice rubs, sauces and marinades. However, all great products aside, Chuck provides perfect service to his customers. As a perfectionist, he insists on acting as head butcher every day and then happily greeting his customers wearing his trademark fedora hat and butchers apron.     It might be difficult for an outsider to understand why someone would wait in a line that snakes around the door for a doughnut. These people do not understand that while the donuts are some of the best (and creative) in the country, owner Don DeWeese and his fun-loving antics makes the wait worthwhile. Don can be seen in the shop nearly every morning tossing doughnuts to people and carrying on playful conversation with folks from near and far. He is an avid University of Memphis fan (he even decorates some batches with blue and white sprinkles on game day,) and he donates doughnuts to Tiger athletics for player sustenance. He is also a Grizzlies supporter, producing thousands of grit n grind doughnuts during hoop season. Don says, I just enjoy seeing people smile and getting to know them. It is this attitude and the generally sunny atmosphere in Gibsons that brings in customers in droves. In the past year, Gibsons Donuts has been honored as one of the Top Doughnut Shops in the Country by Grub Street, and he is also being honored as a Top Place to Eat in West Tennessee by author Mike Glasgow. This shop with its colorful owner and mouthwatering treats is deserving of the hype AND a visit!

  • he Wings Cancer Foundation in Memphis has a busy fall planned. With the help of passionate volunteers who believe in the foundations mission to provide hope,

    counseling and services to cancer survivors around the Mid-South, Wings is hosting two fundraisers bound to create a lot of buzz.

    The first is the inaugural Wings Polo Classic on Sunday, September 14, 2014. Wings is partnering with Panera Bread to give Mid-Southerners a taste of Pretty Woman meets Kentucky Derby - Memphis Style. The event, with a suggested dress code of seersucker, sundresses and derby hats, will be held at the Memphis Polo Club in Rossville.

    Wings Polo Classic will provide funding for two of our biggest programs, Form Fitting and Lymphedema, as well as funding our pilot transportation program. Events like these enable us to provide these services free of charge to cancer patients in need, says Keri Burnette, Special Events and Public Relations Coordinator at Wings.

    Later in October, more than two-dozen riders will hit the road for the 4th Annual Wings Ride to Rosemary Beach, FL. Those participating in the 525-mile, 5-day

    journey leave Memphis October 4th. Two of the riders this year are cancer survivors and for them the journey is personal; a no limits push to keep cancer from defining them and what they can accomplish in life. Id like to serve as an example for someone going through treatment, or who is through treatment, but trying to put their lives back together. Your goal might be to walk around the block, or begin an exercise program. Find a way - dont let cancer stop you, says throat

    cancer survivor and Wings Executive Director, Chris West.Knowing that beating cancer takes more than just medicine, Wings began in 1996 to help cancer patients with supportive care services during treatment and recovery. Wings offers everything from nutrition sessions to exercise and counseling classes in three locations around the Mid-South. Cancer patients also get access to a wellness program which research shows will help them recover faster and prevent future cancer diagnoses.
