GENERAL

INTRODUCTION

This manual is for the E CL Modular Series Gas Ranges. Procedures in this

manual will apply to all models unless specified.Pictures and illustrations will be of model 60SC unlessotherwise noted.

All of the information, illustrations and specificationscontained in this manual are based on the latestproduct information available at the time of printing.

IN TALLATION O ERATION ANDCLEANING

Refer to F38201 VULCAN ENDURANCE / WOLFCHALLENGER Modular Series Gas RestaurantRanges I/O Manual for detailed installation, operationand cleaning instructions.

LU RICATION

Anderson and Forrester (or comparable) valve greasefor top burner gas valves, top burner pilot valves, andpressure tap plugs. Apply light coat to valve/plugthreads. Valve grease must be insoluble in propaneand natural gas.

TOOL

• Standard set of hand tools.

• VOM with A.C. current tester (Any quality VOMwith a sensitivity of at least 20,000 ohms per voltcan be used).

• Temperature tester (K type thermocouplepreferred).

• Manometer.

• Long reach phillips screwdriver #2 for installingor removing motor assembly through theconvection oven cavity.

• Two standard 1/4"- 20 x 1" bolts (allen headrecommended). The bolts are used to relievespring tension on the door hinge during doorremoval and installation.

• Loctite® 246™ for use on the door handlemounting screws.

• Loctite® 242™ for sealing thermostat adjustmentscrew.

• Adaptor to test thermocouple closed circuit DCvoltages (purchase locally). Adaptors varybetween manufacturers. An example of oneadaptor type is pictured below.

Shut off the gas before servicing theunit.

1. Pull crumb tray out.

2. Loosen set screw in the open top burner controlknobs and remove knobs.

3. Remove screws that secure manifold cover andremove cover.

4. Reverse procedure to install.

CONTROL RAC ET CO ER

Shut off the gas before servicing theunit.

1. Pull grease can out.

2. Pull knobs from thermostats.

3. If removing control bracket cover from oven witha 12" open top burner module and 24" griddle topmodule:

A. Pull crumb tray out of 12" section if installed.

B. Loosen set screw in the open top burnercontrol knobs and remove knobs.

4. Remove screws that secure control bracketcover and remove the bracket.

5. Reverse procedure to install.

CONTROL ANEL O EN

Disconnect theelectrical power to the machine andfollow lockout / tagout procedures.

Shut off the gas before servicing theunit.

NOTE Electrical power disconnect warning appliesto convection ovens.

NOTE Removal procedure applies to standard andconvection 30" ovens.

1. Pull knob from thermostat.

2. Remove hole plug at top of control panel.

3. Remove screw and lift off control panel.

4. On convection ovens only, note lead wirelocations and disconnect from power switch.

5. Reverse procedure to install.

Shut off the gas before servicing theunit.

1. Lift up on kick panel and rotate down 90°.

2. Remove screws securing kick panel mountingbrackets (2) to the oven and remove kick panel.

3. Reverse procedure to install.

ULL NO E

1. Turn top burners and griddle off.

2. Remove front row of top burner grates on rangeswith open top burners.

3. Remove all screws securing bull nose to range.The total number of screws depend on the widthof the range.

4. Lift bull nose off range.

5. Reverse procedure to install.

CONTROL RAC ET

Disconnect theelectrical power to the machine andfollow lockout / tagout procedures.

Shut off the gas before servicing theunit.

All gas joints disturbed duringservicing must be checked for leaks. Check with asoap and water solution (bubbles). Do not use an openflame.

1. Remove BULL NOSE.

2. Remove CONTROL BRACKET COVER.

3. If installed, remove compression nut on theflexible tubing gas line that supplies gas to themanifold on the adjacent open top burnersection.

4. Loosen the recessed screws (4) through theaccess holes on the two manifold cover brackets(L & R) that secure the control bracket to theoven. The bracket mounting holes are keyed forremoval of the control bracket.

5. Lift the control bracket up and tilt forward toremove bracket from mounting screws.

6. Partially install the grease drawer leaving enoughof the drawer extended to support the controlbracket while servicing.

7. Griddle controls are now accessible for removal.

A. If replacing control bracket, remove screwssecuring griddle controls to bracket.

B. Remove manifold cover brackets (L & R)from each end of the control bracket asnecessary (2 screws for each bracket).

8. Reverse procedure to install and check for properoperation.

TANDARD O EN ILOTA E L AND T ER OCOU LE

Shut off the gas before servicing theunit.

All gas joints disturbed duringservicing must be checked for leaks. Check with asoap and water solution (bubbles). Do not use an openflame.

1. Remove bottom oven rack(s) and rack guides.

2. Remove cavity bottom by lifting up and slidingout.

3. Remove screws securing oven pilot assembly toburner carrier.

4. Lower the KICK PANEL (24" & 30" OVENS).

5. Pull oven pilot assembly out through opening inlower oven frame.

6. If replacing thermocouple only, removethermocouple from oven pilot assembly and gassafety valve. Continue to last step.

When installing, do not bend and kink thecapillary tube or damage to the component may occur.

7. If replacing oven pilot assembly, remove pilottubing and thermocouple from oven pilotassembly.

8. Reverse procedure to install and check for properoperation.

TANDARD O EN URNER

2. Hold the tab on burner carrier with plyers tosupport it then remove compression nut fromburner elbow fitting to disconnect gas supplytubing.

4. Pull burner carrier out through opening in loweroven frame enough to access the oven pilotassembly.

5. Remove screws securring oven pilot assembly toburner carrier. Move oven pilot assembly awayfrom burner.

Do not bend and kink the capillary tube ordamage to the control may occur.

6. Pull burner carrier with burner attached out fromoven.

7. Remove screws securring burner to the burnercarrier.

8. Slide oven burner off the burner nozzle toremove.

9. Reverse procedure to install.

10. Perform BURNER AIR SHUTTERADJUSTMENT.

A. Inspect mounting flange and gasket. If okay,they may be used during installation. If notokay, remove and install replacementflange.

7. Open oven door and remove oven racks.

8. Remove screws securing capillary tube mountingclips (5) inside the oven cavity.

NOTE Capillary tube is permanently attached tothermostat-combo valve.

9. Remove all mounting clips from capillary tubeand retain for reuse.

10. Pull capillary tube through the hole in ovensidewall and remove thermostat from oven.

A. Remove insulation sleeve from capillarytube for installation on replacementthermostat capillary tube.

B. Note orientation of compression fittingelbow on valve body and remove forinstallation on replacement valve body.

Clean pipe threads and apply threadsealant that is suitable for use with propane gases.

When installing, do not bend and kink thecapillary tube or damage to the control may occur.

11. Reverse procedure to install and check for properoperation.

8. Pull capillary tube through the hole in ovensidewall and remove thermostat from oven.

A. Note orientation of compression fittings onthermostat body and remove for installationon replacement valve body.

4. Remove thermostat-combo valve from gas linetubing.

5. Remove oven racks.

6. Open oven door and remove screws securingcapillary tube mounting clips (4) at the top of ovencavity.

NOTE Capillary tube is permanently attached tothermostat-combo valve.

7. Remove all mounting clips from capillary tubeand retain for reuse.

8. Pull capillary tube through the hole in ovensidewall and remove thermostat-combo valvefrom oven.

A. Remove insulation sleeve from capillarytube for installation on replacementthermostat capillary tube.

6. Remove screws securing motor mount panel tothe oven. Pull the assembly out from the oven.

7. Remove screws (4) securing blower cover tomotor mount panel.

8. Loosen bolts (2) securing blower to motor shaftthen remove blower.

9. If replacing blower only, proceed to last step. Ifreplacing motor, continue with procedure.

10. Remove mounting nuts and spacers securingmotor mounting brackets (2) to motor mountpanel.

A. Remove motor mounting brackets frommotor for reuse.

B. Remove cover from motor junction box,disconnect wires and remove armoredcable from motor junction box.

C. Inspect the motor insulation locatedbetween the motor mounting brackets andthe motor mount panel. Replace ifdamaged.

11. Install motor mounting brackets and armoredcable onto replacement motor.

12. Reverse procedure to install and check for properoperation.

NOTE Removal of control panel is to provideadditional space on the right side of door to ease doorremoval and installation.

2. Lower KICK PANEL (24" & 30" OVENS).

3. Fully open the oven door.

4. Insert a 1/4"-20 x 1" bolt (see TOOLS) into eachdoor hinge slot at the top of the spring loadedhinge.

5. Close door leaving enough space to clear theoven gas manifold cover during removal. As thedoor approaches this position, you should noticea decrease in the spring tension on the door.

6. Remove door as follows:

A. Hold door at bottom corners then lift the doorup and out to disengage the hinges.

B. The notch on swivel hinge must releasefrom bottom edge of the door hinge stop toremove door. As needed, lift up on theswivel hinges using forefinger to aid inreleasing.

C. The spring-loaded hinge must release fromthe roller inside the slot on door hinge stopto remove door.

7. If replacing door or door spring hinge, position thedoor face down. Press down on hinge enough torelieve spring force then remove bolt from doorhinge slot.

I

1. Compress each spring-loaded hinge enough toinsert the bolt into the slot at top of hinge.

2. Hold door at bottom corners while facing the ovencavity. Place knee on the front of door to helpbalance it as necessary during installation.

A. Using index fingers, lift swivel hinges untilthey touch the spring-loaded hinges andhold in place.

B. Tilt the top of door toward the oven so thatthe swivel hinge is at a slightly downwardangle to pass between the bar and bottomedge of door hinge stop.

C. Insert hinges into the slots making sure thatthe spring-loaded hinges go above the barto catch on the roller and the swivel hingesgo underneath the bar to catch on thebottom edge of door hinge slot.

D. Lower the door and position it as necessaryto engage the swivel hinge slots with thebottom edge of both door hinge slots.

3. Fully open door to check operation. If bottomedge of door rubs the front edge of cavity bottomthen the swivel hinge is not engaged asdescribed.

A. To seat the swivel hinge, open doorapproximately 30° and pull in the samedirection on the door handle. The hingeshould drop into place.

4. Open door and check operation. If okay, removebolts and close door. If not okay, remove doorand repeat installation procedure.

5. On convection ovens, verify door switch isoperating properly.

6. Reinstall oven control panel.

7. Raise kick panel.

GA RE URE REGULATOR

Disconnect theelectrical power to the machine andfollow lockout / tagout procedures.

1. Thread regulator onto pipe hand tight with arrowpointing in direction of gas flow to the range.

2. Tighten regulator securely in horizontal positionwith the regulator adjustment upward asdescribed on regulator.

NOTE Regulator will not function properly withoutadjustment screw pointing upward.

3. Connect supply gas line to gas pressureregulator inlet.

4. Adjust regulator as outlined in REGULATORADJUSTMENT.

4. Remove screws and mounting nuts securingsolenoid to bracket.

5. Disconnect lead wires from solenoid.

6. Remove fittings from solenoid for reuse onreplacement valve.

7. Reverse procedure to install and check for properoperation.

2. Raise griddle plate from the front and supportusing 4x4 blocks.

3. Pull thermostat bulb out of the holder for thethermostat-combo valve being replaced.

NOTE Capillary tube is permanently attached tothermostat-combo valve.

4. Remove CONTROL BRACKET COVER.

5. If installed, remove compression nut on theflexible tubing gas line that supplies gas to themanifold on the adjacent open top burnersection.

6. Loosen the recessed screws (4) through theaccess holes on the two manifold cover brackets(L & R) that secure the control bracket to theoven. The bracket mounting holes are keyed forremoval of the control bracket.

7. Lift up control bracket and tilt forward to accessgriddle thermostat-combo valves.

8. Partially install the grease drawer leaving enoughof the drawer extended to support the controlbracket while servicing.

9. Remove compression nuts from thermostat-combo valve fittings for the thermostat beingreplaced.

10. Remove screws (3) securing thermostat-combovalve to the control bracket and remove thethermostat-combo valve.

A. Note orientation of compression fittings onthe thermostat-combo valve and remove forinstallation on replacement valve.

B. Remove insulation sleeve from capillarytube for installation on replacementthermostat capillary tube.

Clean pipe threads and apply threadsealant that is suitable for use with propane gases.

When installing, do not bend and kink thecapillary tubes or damage to the controls may occur.Ensure capillary tubes are routed properely throughmounting slots before lowering the griddle or damageto the controls may occur.

NOTE When installing, ensure orifice hood is alignedand centered in the burner assembly opening. Thegriddle orifice bracket must be perpendicular to themanifold.

1. Locate the pilot adjustment screw located behindthe adjustment access hole in the panel.

2. Rotate the screw clockwise to decrease andcounterclockwise to increase flame height.

3. Pilot is in adjustment when it will stay oncontinually and lights the burners withoutdelayed ignition.

URNER AIR UTTERAD U T ENT

The efficiency of the burner depends on a delicatebalance between the air supply and volume of gas.Whenever this balance is disturbed, poor operatingcharacteristics and excessive gas consumption mayoccur. An air shutter on the front of the burner controlsthe gas mixer balance. A yellow streaming flame onthe burner is an indication of insufficient primary air.

To correct this condition, loosen the shutter screw androtate the air shutter open until the flame begins to liftfrom the burner, then close the shutter slightly andtighten the shutter screw. A proper flame should beblue in color, well-defined and seated on the burnerport. A white-blue flame is a result of excessiveprimary air.

NOTE The factory default air shutter positions arehalf open natural; full open propane.

REGULATOR AD U T ENT

NOTE Regulators come preset, but should bechecked anytime one is installed. Before adjustingregulator, check incoming gas line pressure. Incomingpressure must be 6-14" W.C. for natural gas and11-14" W.C. for propane gas. If incoming pressure isnot correct, have the gas source checked andadjusted as necessary. Make sure the regulator ismounted in the horizontal position with the arrowpointing in the direction of gas flow. See unit dataplate, riveted inside the kick panel, for manifoldpressure setting information. Clean vent cap beforeadjusting.

1. Connect manometer to either of the pressuretaps provided on the range gas piping betweenthe burner control valve sets.

2. Check manometer reading. The reading shouldbe 5" W.C. for natural gas and 10" W.C. forpropane gas. Tolerance is ±0.3" W.C.

3. If manifold pressure is not correct, adjust theregulator. Remove the regulator closing nut.

4. Insert a flat edge screwdriver through the top ofthe regulator. While watching the manometer,turn the adjusting screw clockwise to increasepressure and counterclockwise to decreasepressure.

5. Install the regulator closing nut.

6. Apply thread sealant to pressure tap plug andreinstall. Thread sealant must be insoluble inpropane and natural gas.

URNER NO LE C EC

The burner nozzle is mounted between the oven gassupply tubing/mounting bracket and the u-burnerassembly. If burner operation seems poor and othersystems have been checked, access the burner forthe range section being serviced and remove theburner nozzle.

• Check for blockage or damage.

• Verify gas orifice hood is correct for the altitude.See Parts Catalog for Orifice Hood Chart.

OThe thermostat-combo valve is self-regulating and thethermostat is internally connected to the valve. When

thermostat dial is set to 350°F and the oven is belowsetpoint, the valve opens to allow gas flow and burnerlights. As the oven temperature rises, the pressurefrom the sensor bulb in the oven increases. Fluid inthe capillary tube expands with the temperatureincrease and presses against a diaphragm in thethermostat. When the oven temperature reachessetpoint, the internal valve closes to stop gas flow toburner.

When the oven temperature decreases belowsetpoint, the pressure is reduced in the capillary whichreduces the force on the diaphragm allowing the valveto open again.

AA thermocouple temperature probe (type K preferred)should be placed in center of oven to verifytemperatures throughout adjustment.

1. Turn power switch on.

2. Turn dial to 350°F. Allow oven to cycle 3complete times.

3. Take a temperature reading. If temperature ismore than 20°off dial setting, calibrate as follows.

4. Pull off thermostat knob. Do not rotate knobduring removal.

OThe thermocouple supplies a DC millivolt signal (MV)to the gas safety valve when heated by the pilot flame.The gas safety valve will shut off gas flow to the pilotand main burner in case of a pilot outage. Whenenergized by the thermocouple voltage, the gas safetyvalve is held open to permit gas flow to the pilot andprovide gas for the burner when the oven thermostatcalls for heat. The pilot flame height is controlled byan adjustable needle valve located under a smallcover screw on the gas safety valve.

CIf experiencing pilot outages, perform the following:

Visually check pilot flame for the proper contact onthermocouple and adjust as outlined under PILOTFLAME HEIGHT. If adjustment does not result in apilot flame of proper height, then gas might not beflowing properly to the pilot.

Check for:

• A plugged pilot orifice.

• Kinked or plugged pilot gas tubing.

• Low gas supply pressure.

T CNOTE Tubing connection from the thermocouple tipto gas safety valve is an electrical connection andmust be clean and dry. Do not use any sealingcompound on the threads of thermocouple nut.

Do not overtighten the thermocouple nutor the insulator could be crushed, shorting thethermocouple. Finger tighten the nut plus 1/4 turn witha wrench only.

If pilot flame is correct and there are no excessive airdrafts in the room, then problem is either thethermocouple output voltage or the gas safety valve.

Visually check the thermocouple tip (hot end) and tubelead for:

• Loose thermocouple connection (electrical) atthe safety valve.

• Corrosion or debris on the threaded connector orthermocouple tip causing a poor electricalconnection.

• Kinks or pinches that might cause a shortbetween the tube and the wire inside.

If thermocouple is loose, tighten mounting nut asdescribed above in NOTICE. If thermocoupleconnection shows signs of corrosion or debris thatcannot be cleaned; or damage as described, replaceit and check pilot operation as outlined under PILOTFLAME HEIGHT.

T TCheck the thermocouple output voltage (DC millivolts)with a VOM as outlined in the steps below.

• If thermocouple adaptor (see Tools) is available,check closed circuit voltage as outlined in the testprocedure.

• If thermocouple adaptor is not available, checkopen circuit voltage as outlined in the testprocedure.
