Mushrooms
• Mushrooms are fungus consisting of a numerous group oforganisms, the second in species number in the planet, after theinsects and constitute one from the five kingdoms. The mushrooms
lack chlorophylle and they are unable to compose organiccompounds. They are heterotrophic organisms and take theessential organic compounds from live or dead organisms.
What most of us call mushroom, is the the visible part of theorganism, the carposome ,which is found above the surface of thesubstrate. The body of fungus (thallus) is found in or on the
substrate. Thallus is consisted of branching trhreadlike tubes, themycelium hyphae, which are largely invisible to the naked eye andthey produce the carposomes.

THEIR ROLE IN THE ECOSYSTEM
• The ways in which mushrooms conserve energy, are particularlyimportant for the economy of nature. Their role in the balance of thecoal circle and inorganic salts is considered indispensable. Theirparticipation in the split of cellulose and xylin is consideredparticularly important.
ecreting the suitable ferments, the mushrooms, split thecomplicated organic compounds in simple elements. !f themushrooms and the bacteria did not exist, to decompose the leavesthat fall during autumn, forests would disappear by the piles ofleaves. "ur planet would also be in danger of becoming an
immense cemetery of animals and plants.

GROWTH CONDITIONS
• Theoretically, ideal conditions for most of the mushrooms to grow
are those that combine relatively high humidity in substrate and
atmosphere, with small deviations between maximun and minimal
temperatures. !n $reece such climatic conditions are observedmainly in fall. !deal conditions for the growth of edible mushrooms
are the rainy summers.

THE COLLECTION
• &n interesting pastime for forest lovers is the mushroom hunting, therecording, the photographing and the identification of the species.%owever the collection of the tasty edible mushrooms is the mostfascinating part of the whole process. !t is also an occasion for
movement, observation and a contact with the thousands forms oflife that exist in the forest.
The collection of mushrooms is a relaxing and reviving process ,which is also an escape from the monotonous everydayroutine. The essential e'uipment for a collector is a penknife and abasket. The basket allows mushrooms to breathe andsimultaneously protects them from pulping, contrary to the plasticbag which accelerates decay.

INSTRUCTIONS ON CUTTING THE MUSHROOMS
• irst of all we cut the mushroom in the base of the stem. The sectionof the base shows if the remainder carposome is intact or if it hasbeen infected by insects. econdly we cut the stem in slicesprogressively, until we reach to a point where there are no holes
,something that indicates that insects did no harm. !n case theinsects have harmed the entire stem and have reached the cap,we remove the centre of the cap with a knife.
inally if we see that the damage is extensive , we search for thenext mushroom. !n every case we only keep carposomes that are
found in good condition. resh and with cohesive flesh. We reectrotten, dry, dehydrated, watery, fro*en and those we find cut anduprooted.

EDIBLE MUSHROOMS
• The wild, mushrooms are considered ideal food and the value ofcertain species has exceeded by far the price of black caviar. &partfrom their exceptional flavour and their uni'ue scent, they lackchemical fertili*ers, hormones and pesticides.
Moreover, they are also considered a suitable slimming diet, because they contain fibrillous substances (cellulose andmykochitini) in important percentage +,- /), minimal fat (+,0-+,1/) and few sugars (2-2,1/). $enerally mushrooms containwater in big percentage (+-3+/ roughly), proteins (2,1- 1,1/),metal salts and trace elements (+,1- 2,1/), vitamins and ferments. Moreover many species of mushrooms have therapeutic attributes.

DEADLY MUSHROOMS !oisonous s!ecies
• The most dangerous poisoning that is caused by mushrooms is falloeidikithat offends mainly the liver. This poisoning is responsible for the biggestpercentage of deaths from mushrooms in 4urope. The symptoms ofpoisoning occur after 5-06 hours. !ntense diarrhoea, vomiting and coldsweat cause dehydration of the organism.
trong abdominal pains, the intense sense of thirst and the production ofminimal 'uantity of urine, supplement the list of symptoms, that probablylast two days. 7sually the third day they subside temporarily and comeback more intensely. !kteros, , insufficiency of liver, damage of heart, kidneys and central nervous system, leading to lethargies and finally, at thefifth day, to death.
!n case of poisoning we should take the victim as soon as possible in awell e'uipped hospital. !f other individuals ate, from the mushrooms thatcaused the poisoning they should also be taken to hospital, even if the firstsymptoms haven8t occurred yet. We should always bear in mind that theconsumption of 1+ gr. of mushroom is enough to cause death.

ATTENTION
• !t is difficult to identify a safe mushroom without proper
training, that8s why we should only gather the species ,
with the characteristics we know with absolute certainty.
