    As a leader in business myself, I found the intensely heartfelt sense ofwelcome and family that we experienced with all &Beyond staff memberstruly remarkable. I have become what I call in marketing a brand zealot andcant sell &Beyond hard enough when people ask me about my safari.

    Both Sam and AK, our guides, were some of the most enjoyable people Ive spent time with. Period. They were incredible and such an asset to yourcompany. We left them both with tears in our eyes.

    Im also very thankful for the passion youve awakened in us as far asconservation goes. We now are making changes in our own life to protectthe planet and will give frequently to preserve habitat and wildlife, whileencouraging friends to do the same, thanks to the experiences weve beenfortunate enough to enjoy.

    It couldnt have been more magical and I think about the experience everyday. I really left my heart back there. I hope someday Im lucky enough tolive in Southern Africa, even for a year or two, so it doesnt all seem like abeautiful dream.

    Having returned from my trip to Botswana, I am afraid I have to raise a complaint. I am considering suing &Beyond forlifelong compensation, as I have walked away from the trip with an incurable virus that you guys failed to mention in

    your travel notes. I think in order to keep this virus under control I will need to continuously invest nancial resources.

    I now have the Safari Bug, a very severe form of it. And as Racquel at &Beyond Sandibe Okavango Safari Lodgetold me, I am lucky not to have caught Khaki Fever, because the safari bug makes you more susceptible to it. I amdistraught as researching the internet I am incapable of nding any treatments, which ultimately means I will have to

    succumb to the virus.

    This was the most amazing trip I have made, and I have travelled a lot! It was brilliant from start to nish. Not only dideverything work like clockwork, the lodges, the people, the settings, food, everything, you name it, was simply perfect.I was also fortunate to meet amazing travellers along the way who joined my enthusiasm.

    I absolutely loved &Beyond Xaranna Okavango Delta Camp my best camping trip ever and the architecture of&Beyond Sandibe is incredible. Thank you so much for your great recommendations, I cannot wait to come back and see more.

    MAGIC INGREDIENTCUPIDS KITCHEN

    KITCHEN SAFARI

    BEETROOT & FETA TART

    Ingredients for Crust 11/ 3 cup All-purpose our1/ 3 stick Cold, unsalted butter; cut into cubes1 tsp Thyme leavesPinch Salt cup Cold water

    Ingredients for Filling 2 Large beetroot1 Large leek; sliced into 1 inch pieces1 Tbsp Olive oil1 tsp Salt

    cup Balsamic vinegar1 Tbsp Honey1 Tbsp Thyme leaves1 Tbsp Fresh basil cup Feta2 Eggs cup Cream (half the fat)Pinch Salt and pepper

    Directions

    Remove stems from the beetroots and scrub under cold

    water. In a pot, bring water to a boil and then reduce to asimmer. Place beets in covered pot and cook for 1 hour.

    Once tender, remove beets and place under cold water.With a paper towel, peel the skin off and slice thinly. Setaside.

    In a food processor, mix the our, butter, thyme andsalt until the mixture resembles breadcrumbs. Add thecold water and continue to mix until the dough comestogether. Form dough into a disc, cover tightly withplastic wrap, and place in the refrigerator for at least 30minutes.

    Grease a 9-inch tart pan with butter. On a well-ouredsurface, roll out the chilled dough approximately aninch longer than the tart pan. Using a rolling pin, rollthe dough loosely around the entire pin to transfer thedough to the tart pan. Cut off any extra dough andreturn to the fridge covered for 15 more minutes.

    Preheat oven to 180. Cut out an 8-inch circle out ofparchment paper. Place over crust and cover with pieweights (uncooked beans or rice). Bake for 10 minutes.

    Remove the parchment paper and weights and return tothe oven for 6 minutes.

    Heat the olive oil in a saucepan over medium-low heat.Add the leeks and cook until softened. Add the slicedbeets, vinegar, thyme, basil and honey. Season with saltand reduce heat to low. Cook for 10-15 minutes, untilthe sauce begins to thicken.

    Pour the beet mixture over the tart and crumble fetacheese on top.

    Whisk eggs and cream together. Pour the egg mixtureover the tart. Sprinkle with extra thyme leaves on top.Bake for 35-40 minutes. Serve with a side salad andenjoy!

    KITCHEN SAFARI

    ROMANTIC RASPBERRY SOUFFL

    Ingredients 300 g Frozen raspberries2 Tbsp Lemon juice cup (55 g) Caster (superne) sugar, plus extra for dusting1 Tbsp Cornour (corn starch)3 tsp Water5 Egg whites1/ 3 cup (75g) Caster (superne) sugar, extra

    Icing (confectioners) sugar, for dustingMelted butter, for brushing

    Directions

    Preheat oven to 180C (350F).

    Brush 4 x 1 cup-capacity (250 ml) ramekins with butter, then dust with sugar and place on a baking tray.

    Place the raspberries in a saucepan over low heat and cook for 34 minutes. Blend raspberries until smooth.

    Pass the raspberry pure through a sieve and return to the pan over low heat. Add the lemon juice and sugar and stiruntil sugar is dissolved.

    Increase heat to medium and bring to a boil. Use a whisk to combine the cornour and water, then add to theraspberry pure and whisk for 1 minute. Refrigerate until cold.

    Place the egg whites in an electric mixer and beat until soft peaks form. Add the extra caster sugar in a thin stream andbeat until glossy. Fold through the raspberry pure and spoon into ramekins.

    Bake for 1215 minutes or until risen. Dust with icing sugar and serve immediately.

    THE MIRACLE OF LIFE&Beyond Ngala Private Game ReserveBy Ranger Andrew Nicholson

    It was a cold and windy morning, soit was a slow start out on the reserve.Suddenly tracker Adam spotted agiraffe cow in the distance. She wasstanding alone, approximately 30 moff the road and facing our direction.Upon closer inspection, Adamnoticed something hanging betweenher back legs. Using my binoculars toget a better look, I realised that shewas in the midst of giving birth.

    We sat quietly and watched incomplete amazement. The calfsfront legs came out with relativeease, but it took what seemed likeages for the mother to get pastthe head and shoulders as she wasvisibly experiencing discomfort.She even began swinging her longneck down and lifting it back up, asshe continued to push as hard aspossible.

    At this point, we suspected there

    were going to be some birthingcomplications, perhaps even abreech birth. It certainly appearedso. After some time, a fewuncomfortable paces back andforth, and even rotating in a circle tocheck there were no approachingpredators, the female giraffe spreadher legs slightly and managed the all-important next step.

    Once she had passed the head andshoulders, gravity took over and thebirth took place in less than a minute.We were so fortunate that when thishappened she was actually facingthe opposite direction giving us all aperfect view through a small gap inthe trees.

    With quite a thud, the newborncalf fell to the ground, breakingthe amniotic sac and severing theumbilical cord. For some absurdreason I felt the need to startclapping, because I was so happy forher, but I soon realised that I wasntwatching an auditioned performance.

    Sadly, our overwhelming delightsoon turned into heartbreak. Itappeared as though the giraffe hadgiven birth to a stillborn calf. Thedistressed mother turned aroundand immediately began nudgingher lifeless calf. I looked back to see

    some very glassy eyes on the faces ofthe guests behind me. Many anxiousmoments passed, as we all feared theworst.

    The giraffe licked and kicked,repeating the sequence again in aneffort to wake her young and removethe placenta from around its face toprevent any breathing obstruction.Suddenly, we saw the newborn joltand slowly begin to breathe.

    There is no way I can even beginto explain this feeling in words.We were overjoyed and overcomeby the many emotions that wereexperienced in such a short space oftime. We sat for the next two and ahalf hours watching the calf attemptto stand up. Each time it would gainenergy and even a little balance, itwould fall to the ground breakingany condence. We didnt stay longenough to see the calf walk withease, but it was certainly on the righttrack as we drove away.

    It was an unbelievable morning thatAdam, the Marlow family and I willnever forget. What made our sightingeven more memorable was the factthat just the night before we hadwatched a pride of lions feeding on ayoung giraffe, as its grieving motherkept walking back towards the lions,watching in disbelief.

    Working in the bush truly allowsone to experience the circle of lifein all its many shapes and forms.Later that afternoon we got wordfrom fellow ranger Mike Andersonthat the giraffe and her calf werewalking comfortably and were seenapproximately 1.5 km from where wehad left them that morning. This wasthe happy ending that we were allhoping for.

    AN UNLIKELY STAND OFF&Beyond Exeter River LodgeBy Ranger Craig Parsons

    It was cool and cloudy as we head

    out that morning in the Sabi SandGame Reserve. I told my guests itwas the perfect weather for Africanwild dogs to be out hunting. Theyhunt with stamina by out-runningtheir prey, and with the coolertemperatures, they would more thanlikely be on the move for longerperiods.

    Knowing where the pack was theafternoon prior helped us start oursearch for these fascinating animals.Several vehicles spread out and tookdifferent roads in the area where thedogs were last seen. I was hopingthat someone would nd their tracks.

    Eventually the dogs were discoveredand we all took turns viewing them. Iallowed the other vehicles that werecloser to the sighting to view theanimals rst. On our way, we hadspotted a large herd of elephantson the same road as the dogs, sowe stopped to enjoy a viewing. Iwas anxious to get to the wild dogsbefore they moved off, so I explainedto my guests that we could return tothe herd of elephant afterwards.

    Getting through the elephants wasinteresting, but we eventually movedpast safely and found the dogs just200 m from the herd. The adultsand puppies were running aroundchasing each other. Every now and

    then the pups would approach anadult and chitter at the adults mouth,pleading for them to regurgitatesome meat from a kill they hadconsumed earlier that morning.

    The pack even chased each otherunder the vehicle and all around us; itwas a truly magical experience. Theywere completely unfazed and totallyundisturbed by our presence, whichI nd so fascinating. After playingfor a while, the adults decided thatthe cavorting was over and the packneeded to move out and nd aresting place.

    The dogs decided that heading

    back past my vehicle was the bestroute, so I gave way and let thempass. I eventually turned around,anticipating that I would try andcatch up with them. Well, it didnttake long because the pack had runstraight into the elephants. Now thiswas something to see a stand-offbetween elephants and wild dogs.Not something you see every day!

    The adult dogs were familiar withelephants, but I knew this wasgoing to be an interesting learningexperience for the pups. Some ofthe adults had already turned off intothe bush, but the pups were clearlyintrigued and ran straight towards theelephants.

    When the mighty elephants gavecharge, throwing dust all over thepuppies, they soon realised theelephants didnt want to play. Someeven trumpeted at them, expressingtheir displeasure. When you are inclose proximity to an elephant, thistrumpeting is incredibly loud anddisconcerting. Finally the pups turnedand ran, following in the adults pawprints. They seemed very confusedand scared, and certainly appeared tohave learned an important lesson.

    The elephants charged once againand the last of the puppies scatteredin all directions. We also took this cue

    and headed in the opposite directionin the hopes of meeting up with thepack again. We were in luck andsoon reunited with the dogs as theywere settling down after a morningspent hunting, playing and learninga lesson from a herd of elephants. Itwas an incredible, rare encounter the kind that keeps me going in thebush.

    This interior refresh is the secondphase of the camps three-stagerefurbishment. The rst phase wasthe recent addition of ve brand newcustomised four-seater safari vehiclesto the eet. Each vehicle features acanvas roof, sleek wooden interior

    nish, fridge, reclining seats (with theoption to adjust for leg room), handycamera mounts, useful chargingpoints and detachable sides that canbe rolled up or down depending onthe weather. Designed entirely withcomfort and convenience in mind,these bespoke vehicles also enhancethe photographic safari experience.

    The third and nal stage will be anextensive refurbishment of the guestsuites and shared guest areas, whichwill take place in late 2016 or early2017. Watch this space for the grandreveal.

    Mark and Alison recently took their two sons, Luke and Joel, on a Namibian self-drive adventure of a lifetime. Unsureof what to expect, but adamant that Namibia was high on their bucket list, there was plenty of excitement andanticipation as they set off to one of the most strikingly beautiful places on the planet.

    From dune climbing, sandboarding,quadbiking and a catamaran cruise,to scenic sundowners, stargazing andthe lifelong dream of oating in a hotair balloon over the immense dunes,each day was a new exploration with

    something that appealed to eachperson in the family.

    It was a thrill for the young boysto dig in the sand with their guideand carefully reveal curious desertcritters, their animated squeals ofdelight clearly contagious to theironlooking parents. The hard work of

    hiking up the enormous dunes wasrewarded tenfold as everyone raced

    carefree down the side of the dune,arms ailing, sand ying and laughterechoing off the cascading dunes.And peacefully hovering over thedesertscape in a hot air balloon was,unanimously, a journey theyll never

    forget.

    UNEXPECTED BEAUTY

    One would expect the drives to be long, straight, at and uninspiring, yet Namibia pleasantly surprises newcomerswith its rugged, ever-changing terrain. The kaleidoscope of surprising colours continually shifts with the moving sunand dancing shadows. Silvery gravel and yellow grasses slowly morph into mauve mountains and deep, terracottasand.

    As they drove towards the heat-warped vista that unfolded ahead of them, the de Bruyns passed steep canyons, wideopen spaces, picturesque towns and arid, almost moon-like landscapes. The drive in itself was an adventure.

    COSSETED BY LUXURY

    When they arrived at &Beyond Sossusvlei Desert Lodge,the family was welcomed with open arms and trueNamibian hospitality. It was like coming home.

    The lodges ten stone and glass desert villas aresurrounded by sheer silence, total tranquillity andromantic luxury. The refreshing pool certainly kept theboys happily entertained and the evening stargazing inthe lodges private observatory captivated the foursome.A resident astronomer was on hand to reveal theimpossibly starry sky and its fascinating constellationsand he carefully explained their signicance in a way thateveryone could understand and appreciate.

    Upon their return to everyday life, Alison reected ontheir grand desert adventure, saying, I feel like I havelived now that I have seen Namibia properly. It enrichedmy soul and to be able to experience it with Mark andthe boys will be something forever etched in our lifelongmemories and part of our being. A place where timestands still, we were able to forget the real world for awhile and truly bond as a family.

    The newest addition to the &Beyond family, Vamizi Island in Mozambiquewas specically chosen for itsrenowned ethos of conservation,which aligns directly with our corecompany ethos of Care of the Land,Care of the Wildlife, Care of thePeople and of course our fourthunofficial C, Care of the Ocean.With this new acquisition, &Beyond will now actively promote andcontribute wherever possible to theconservation of the Indian Ocean,stretching from Zanzibar in the northright down to the southern tip ofMozambique.

    Conservation has been a drivingforce on &Beyond Vamizi Islandeven before its six luxury villaswere opened, with a dedicatedconservation team present on theisland from 2005. &Beyond haspledged to build on Vamizis proudhistory of successful conservationefforts.

    The island is situated in a marinesanctuary that was established by thelocal Fisheries Council and coversmuch of the eastern side of theisland, extending 3 km (almost twomiles) out to sea. Representing ano-take shing zone, this sanctuaryis a prime example of cooperationbetween communities, governmentand tourism entities, the foundingmodel that &Beyond was establishedupon.

    Just like one of its sister properties&Beyond Mnemba Island, &Beyond Vamizi is a signicant breeding sitefor the endangered green turtleand is home to Mozambiqueslargest recorded population of thethreatened species. With one of thelongest-standing turtle monitoringprogrammes in East Africa basedon the island, Vamizis conservationmonitors patrol the beaches dailyto observe and record new turtleactivity.

    Between December and July,the turtles breeding season, themonitors carefully tag each turtlewith a unique identication number,recording data related to theirmovements and the number ofeggs laid. Once the eggs hatchafter a period of 50 to 60 days, theconservation monitors keep a closeeye on the hatchlings, ensuring theirsafety until they reach the ocean.

    Large congregations of grey reefsharks are seen regularly at the

    Neptunes Arm dive site, which issituated within easy reach of theisland at certain times of the year.The Vamizi conservation monitorsalso tags the sharks enabling much-needed research. This particularschool of sharks is one of the veryfew known aggregations along theEast African coast, where sharkpopulations are severely threatened.With all sharks in the aggregationmature females, there is speculationthat this behaviour has somethingto do with reproduction. &Beyond Vamizi has initiated a programmeto help research this phenomenonby tagging the sharks and recordingtheir movements throughout theyear.

    With the local community a long-standing partner in conservationefforts on Vamizi Island, &Beyond will continue to work closely withthe Friends of Vamizi Trust throughour own social development partnerof choice, Africa Foundation.Established in 2012, the aim of theFriends of Vamizi Trust is to raisefunds for important community andconservation projects. Similarly toAfrica Foundation, their main areasof focus are education and income-generating initiatives.

    WORKING TOGETHER FOR A BRIGHT FUTURE

    When &Beyond Benguerra Island joined our portfolio in 2014, AfricaFoundation immediately engagedwith the local Mozambicancommunities to identify the toppriority projects on the island.They met with the local eldersand other leaders to explain AfricaFoundations model, which dependson communities taking ownershipof projects and being responsible fortheir long-term management. TheBenguerra community was eager toget involved and work on a sharedplan for their future.

    THE HEART OF BENGUERRAWith approximately 1 500 inhabitantsthat call Benguerra home, thecommunity identied their most

    urgent need as the construction ofa multi-purpose centre (MPC) thatwould serve as a focal point to bringthe villagers together. &Beyond andAfrica Foundation helped bring thisproject to fruition and the BenguerraCommunity Multi-Purpose Centrewas officially handed over at the endof 2015.

    The Benguerra community now hasa place where they can gather tomake shared decisions that affectthe future of their island. The localcommunity council nally has anofficial meeting place and officespace where they can launch anumber of initiatives that will benetthe entire island. While the buildingof a clinic is being planned elsewhereon Benguerra, until it is constructed,one of the functions of the MPS willbe to serve as a centre for healtheducation.

    The much-needed MPC will alsoserve as a place of shelter forBenguerras people. The exposedposition of some of the local homesmeans that they become vulnerable

    when severe weather or bad stormsthreaten the coastline. The MPC wastherefore built in a safe and securelocation enabling it to act as a placeof shelter where villagers can takerefuge in times of bad weather.

    LOOKING AHEADAfrica Foundation continuesto engage with the Benguerracommunity on several futureinitiatives that have been identiedby the islanders. Access to freshwater is an issue on the island, withthe current wells located relativelyfar from the main village. AfricaFoundation is exploring ways torelocate these wells closer to thecommunity, thus cutting down onthe time and effort required for themto access fresh water.

    Currently, the island only has aprimary school, which means thatolder children have to travel45 minutes to the mainland in anopen boat to attend classes, often

    arriving wet and having had noprotection from the elements. One ofthe long-term goals is to establish asecondary school (or high school) onthe island. Watch this space for moreupdates as we continue to workhand in hand with the Benguerracommunity.

    What do Star Wars and safari havein common? Not a whole lot, orso we thought. You can imagineour surprise when one afternoonslight-hearted prank inspired the mostmemorable, impromptu costume-party-slash-talent-show for a groupof friends visiting &Beyond ExeterRiver Lodge.

    Looking back, the costumes didntcome about for any one particularreason. Rather, it was a sequence ofcurious events that eventually led tothis evening of comradery.

    Even before the group arrivedat the lodge, one of the guests,Emmett, casually welcomed the rest

    of the group to their Cape Townaccommodation sporting a leopardprint scarf and matching speedo. Thiswould set the tone for the rest oftheir South African adventure.

    On their third day on safari, Emmettdecided to play a prank on rangerBlaine Moolman, showing up forafternoon tea in his leopard printspeedo. Somewhat taken aback,Blaine handed him his coffee atarms length. Emmett explained thathe thought everyone would be incostume. They all had a good laughand Emmett quickly pulled out theappropriate safari gear that wasconcealed in his bag.

    This somehow planted a seed andthe next morning Emmett pitched hisidea of an impromptu evening talentshow. Much to his surprise, everyonewas keen on the outlandish proposal.When they gathered for high tea that

    afternoon, there was a palpable airof excitement, with faint whisperingsof what each performer was secretlyplanning.

    Then it happened Blainenonchalantly sauntered in wearing alion onesie. Innocently, he explained

    that he thought everyone would bein costume for their game drive. Ina ash of frenzy, the guests racedback to their rooms and re-emergedas Princess Leia clones, kitted outin bathrobes and sunglasses, withsignature Princess Leia buns cleverlyfashioned out of beach towels.

    Later that night, the most entertainingand unforgettable talent show tookplace. Tracker Colbert joined thefestivities donning a giraffe onesieand the performances includedtwo singers, an &Beyond fashionshow with three costume changes,a poetry reading about their safariexperience, a (rather tragic) jugglingact and a personalised awardsceremony with official certicatesand a gift for each competitor. Itwas a night that both the guests andlodge staff will never forget.

    Final goodbyes were exchanged with

    watery eyes and friendships wereformed that will last a lifetime. Afterall, isnt that what its all about?
