A lot of CASI members never get to see the Terlingua area in the spring time. Yet by April, particularly after a damp winter, the desert wildflowers and cacti turn the harsh terrain of the Terlingua area into a colorful range of hues. Also, migrating birds return to add their colorful charm to the thorn-covered foliage. This has to be the most gorgeous time of the year in all areas that the CASI cooks get out and try their tried-and-true or new recipes. But there is nothing like the spring weather to brush off the old winter blues and enjoy competition with your fellow CASI members. This spring also brings the news that the CASI organization also brushed off

some of the old winter blues at the Winter Board meeting and announced that our finances are sound, with a transfer in funds to bring our reserves back up to the maximum reserves and a continued growth in our self-insured property insurance program. The CASI Scholarship Program is still strong and the Board voted and is ready to announce that $28,000 has been allocated for 2016 scholarships. This will include five (5) National Scholarships and two (2) Terlingua School scholarships. Additional scholarships will be awarded at the Terlingua schools through the Area Matching Fund program. The Pendery Scholarship program will be reviewed later after the DFW Metroplex Regional donations are received. The planning for the celebration of the 50th CASI Terlingua event continues in full force. As in the past, CASI must run an event that will entertain the admission paying spectators and must run a world class championship event that showcases CASI and Chili. TICC takes a lot of behind the scenes planning from a dedicated group of board members and other volunteers to accomplish these goals. Thank each of you for your support of the CASI organization. Let’s learn from yesterday, live for today, and hope for tomorrow. Let’s also take time to join in prayer and thoughts for our fellow members that have lost loved ones or have medical challenges to overcome. The important thing is not to stop our love for Chili, Charity, and Fun.

Richard Knight

TEXAS LADIES STATE and the

CASI SCHOLARSHIP PROGRAM 2016

HAPPY NEW YEAR! It’s that time again – time to think about the Texas Ladies State CCO and your individual contributions to the CASI Scholarship Program for 2016. Texas Ladies State CCO weekend will be held on April 16, 2016. Last year we raised right at $2,000, and we were able to fund one Technical School Scholarship or a little more than ½ of an Academic Scholarship through the CASI Scholarship Program. We should really give ourselves a pat on the back as we are increasing the total dollar amount raised each year. Let’s see if our sixth year will follow the tradition we have set. We can do it! The deadline for your 2016 contributions will be April 1 this year. Please feel free to encourage your friends to participate as an open invitation is extended to anyone who may be interested in joining the group and helping to strengthen and guarantee the future success of the CASI Scholarship Program. Please call or email one of the contacts listed below if anyone has questions or wants further information. We need to add all new names to the group list as soon as possible. Thank you.

The Scholarship Committee is hard at work deciding on the newest recipients. I mailed out 82 applications to the nine members and they again have their work cut out. A lot of great kids out there! I want to thank the committee for all their hard work. I know it is not easy to narrow these applications down. I am going to be holding another raffle at TICC this year. As soon as I have everything finalized I will announce the

prizes. I hope that you will all buy the tickets to support the scholarship fund. I will also be asking for volunteers to help me sell the tickets at TICC and to sell to your pod and friends. Also we have a short time left to use the H&R Block coupons. This could be a big help for CASI. Last year an elementary school raised $22,000 with the coupons.

It was a splendid record-setting weekend!

ST. JUDE SETS NEW RECORD...AGAIN!

Top ten winners, l-r: James Burns (1st), Sherry Burns (2nd), Frances Manske (3rd), Renee Moore (4th), Janelle Poole (5th & La State #1), Kate Cavender (6th), Mack Walker (7th), Cherry Baker (8th and La State #2), David Manske (9th) and Jerry Hunt (10th and La State #3).

Showmanship winners, clockwise top left: Dream Team (1st), Superman Chili (2nd), and Bam Bam Chili (3rd).

MINDEN, LA – Wow! Once again Louisiana’s St. Jude Auction enjoyed a four-day run of great weather, culminating in the 2016 Louisiana State Cham-pionship & 25th Annual St. Jude Chili Cookoff. Eighty cooks competed for the coveted designation of 2016 State Champion, as well as for TICC automatic qualifier spots for the top three Louisiana cooks.

We had massive crowds as about 900 folks milled around outside. We sold 591 tasting cups at $5/cup steadily to crowds who’d waited in line up to half an hour before sales started, and then blew through the booth from 11-12:38pm without stopping, until we were out of cups and our cooks were out of chili! Despite many, many cooks kindly and generously responding to the pleas to bring tasting chili, many were out in short order. We raised $2,955 from that enterprise alone. We also sold 194 bowls of chili inside the Civic Center and raised another $973.

Donations from our Platinum Sponsors – Aaron’s and LR Sweets and Treats ($1,000 each) – and Gold Sponsors – East Texas Chili Pod and Minden Medical Center ($500 each), together with donations from Dr. Mac Bridges and em-ployees of Minden Medical Center, brought in $3,533. Minden Medical Center also provided $3,000 in materials, foodstuffs, supplies, bags, etc. Coupled with entry fees, our total contribution for St. Jude’s Children’s Research Hospital was $9,116 – a new record for our State Championship CCO. Our Goody Bags also held contributions from Bruce Foods, courtesy of Janice Routon, which are always appreciated!

Minden (population 13,000) currently holds the title of #1 fundraising com-munity per capita for St. Jude’s worldwide. A new record of $1,441,559 was set at this cookoff, shattering 2015’s total of $1,319,630.

It goes without saying that we are eternally grateful to the chili royalty who showed up – five former champions and two CASI Board members, as well as the table monitors who were seasoned vets and who worked repeatedly thru four rounds, our tallying crew, et al. Jerry Hunt and I are totally in their debt. Can’t say ENUF about them. We in Louisiana just do not like runnin’ a cookoff without these super-dependable and loyal CASI members in attendance!

Thanks to all of our COOKS: 34 out-of-staters, 46 Louisiana cooks, and 20 local cooks. The first-timers may have had the most fun of all, especially Haley Knotts of Minden, who with her Dream Team captured first place in Showman-ship. Our top three Louisiana finishers were Janelle Poole-1st, Cherry Baker-2nd and Jerry Hunt-3rd. See you all in Terlingua!

2015/2016 Non Board Support

Free Quarter Page Ad to CASI Pods, State, Regional and International Opens

As a CASI Pod you are required to put on a pod cookoff once a year. To help you advertise your pod cookoff we allow each pod to place one quarter-page ad in the Terlingua Trails each year, free of charge. This ad should run the month before your cookoff occurs. Should you decide that you need an ad larger than a quarter-page, we will simply bill you for the difference in price. This ad should not be confused with the article advertising your cookoff in the "Cooking with CASI" section in the Terlingua Trails. That article will start to run as soon as you request your cookoff packet and will run until your cookoff occurs.
