Thompson, who held court there in the 1960s and ‘70s. Living Room/Lobby Bar: The re-envisioned Living Room is an open, expansive space where guests and locals meet, relax and

HISTORY: Hotel Jerome's history parallels Aspen's. During the height of
Colorado's silver boom, the Hotel Jerome was born of the vision of Jerome B. Wheeler who built the Jerome in 1889 to emulate the great European hotels of the time. Built in the heart of downtown Aspen, the Hotel Jerome was designed to be a paragon of hospitality for its day.
The hotel pioneered new levels of innovation and luxury when it
opened in 1889 at the height of Aspen’s boomtown silver-mining era. For decades, the Jerome had the only bathroom in town that was open to the public. It had the only elevator in town and was one of the first buildings west of the Mississippi to have full electric lighting.
During the 1950’s, the hotel became a popular watering hole for writers, avant-garde artists and screen stars, including Gary Cooper, Lana Turner, Hedy LaMarr and John "Duke" Wayne. With the emergence of the Aspen Institute, it was not unusual to find intellectuals, artists and notable industrialists gathered around the swimming pool listening to lectures by Mortimer Adler. In the ensuing years, the hotel was the site of the founding of the Aspen Institute, the Aspen Music Festival and School, the International Design Conference and the Aspen Ski Company.
AMENITIES: Luxurious amenities include indulgent luxuries that are de
rigueur Auberge: plush bathrobes, custom-blended bath products, and gourmet snacks.
Guests appreciate Hotel Jerome’s unsurpassed services such as:
twice-daily maid service, nightly turn-down service, and complimentary local transportation via a chauffeur-driven luxury SUV.
POOL AND SPA: Hotel Jerome’s blue-tiled pool is one of the town’s very first.
Situated right off the garden terrace, the pool is located in the hotel courtyard.
The intimate new Auberge Spa was a first for the hotel following
the 2012 renovation. Three treatment rooms offer a range of massages and skincare services tailored for those who enthusiastically engage in the wide array of Aspen’s outdoor activities. Located in the hotel building’s lower level, the spa also features a movement studio for yoga.

HOTEL JEROME, AN AUBERGE RESORT
Design and Architecture One-Sheet
With 90 rooms and 15 baths, Hotel Jerome was a paragon for its day – 1889 – when it was built in the
heart of Aspen’s prospering mining community. The establishment was built to rival the grand European
hotels of the time, and it was the new standard for luxury of its day – a vision that has transcended to this
century. The exterior of the three-story hotel was constructed from red brick and sandstone from nearby
valley kilns and quarries. Its indoor plumbing, with hot and cold running water, was sheer extravagance in
a day when outhouses were the norm. Home to one of the first elevators in the West, Hotel Jerome was
also one of the first buildings west of the Mississippi to have full electric lighting.
More than 120 years later, the Hotel Jerome has remained “Aspen’s Crown Jewel” as one of America’s
historic landmarks. Much of the original finishes have been carefully preserved: the Indian rug-patterned
encaustic tilework floor, staircase treads, the grand full-relief oak-carved fireplace, balustrades, and even
the legendary Chippendale chinoiserie bar in the famed J-Bar, Aspen’s favorite watering hole.
The re-envisioned Hotel Jerome, reopening in December 2012, will balance authenticity and preservation
with luxury, ushering in the 19th Century landmark to the 21st Century. International interior designer
Todd-Avery Lenahan of TAL-Studio, based in Las Vegas, along with Aspen-based architects Rowland +
Broughton, is overseeing the project, adding public spaces such as an Auberge Spa (a first for the
property), a lobby “Living Room” and bar, a completely new restaurant, and the return of the atrium to its
original layout.
“We wanted to provide a narrative for everyone who walks through the doors of Hotel Jerome,” said
Todd-Avery Lenahan. “We’re adding paragraphs to the story. The new design is layered, collected – there
are period pieces that will bring guests back to the glory of the Aspen silver-mining days, as if they’re
walking into a great business baron’s residence – that’s how the lobby and newly unveiled Living Room
will feel. The rich details, such as the millwork and architectural detail stylistic of the period, along with
iconic furniture designed by craftsman of Hotel Jerome’s day – is truly what makes this a treasure trove in
the Aspen Mountains.”
Architect of Record for the project, Rowland + Broughton, spent 200 hours of archival research alone; the
original blueprints are being used to ensure that the structural integrity is as close to the original vision as
possible.
“One of the most exciting changes we accomplished was the “opening up” of the restaurant, which was
formerly behind the atrium, and the installation of a lobby bar – which we envision to be Aspen’s living
room. We also brought some color back to the exterior, with the historically accurate blue windows. Our
goal was to preserve the historical integrity of the building, while making the necessary structural
enhancements to give Hotel Jerome its place on today’s discerning traveler’s shortlist.”
RESTAURANT
The hotel’s fine-dining restaurant was re-conceptualized with rich furnishings that create multiple zones
of interest in the space, from intimate banquettes to high-visibility tables and window-side seating
offering mountain views. Contemporary treatments of traditional furnishings include chestnut- and cream-
colored hardwood flooring, hand-stitched leather chairs and innovative lighting creating sun-infused
warmth throughout the day and a sultry ambiance in the evening.
“We made the restaurant an environment that is figuratively a picture frame around the great culinary
experience and great service, unlike anything else in the city,” said Todd-Avery Lenahan.
GUESTROOMS
The guestrooms and suites will receive rich upgrades, from multi-stepped, 18-inch moldings, enhanced
lighting and cashmere curtains to redressing the bathrooms. Thoughtful, custom touches, like the minibar
designed as a leather campaign chest and the burnished-leather bed frames, are the standard in every
room. Custom wall coverings and bespoke furniture, such as leather writing tables, will enhance the
grandeur of the hotel’s already spacious guest rooms. Contemporary artwork commissioned for the hotel
by regional artists are placed alongside archival pieces reproduced from Aspen Historical Society
collections exclusively for the hotel.
THE AUBERGE SPA AT HOTEL JEROME
The Auberge Spa is a dramatic, stylistic departure from the rest of the hotel, with clean lines and
contemporary hardware. Located in the lower level of the hotel, the vibe is serene, fresh and not another
play on the building, design-wise. There are three treatment rooms and a movement studio for yoga.

ASPEN’S HISTORIC HOTEL JEROME REEMERGES WITH SIGNATURE
RESTAURANT AND LOBBY LIVING ROOM CONCEPT Aspen’s Legendary Social Hub Introduces Prospect Restaurant, Lobby Living Room
For more than 120 years, Hotel Jerome has defined the true character of Aspen, drawing visitors from
around the world with its exquisite accommodations, acclaimed dining and genuine hospitality. When the
hotel reopened December 2012, it regained its foothold as Aspen’s social hub with the introduction of a
signature restaurant and a new Living Room and Lobby Bar.
Aspen’s newest introduction to its renowned culinary scene is Prospect, an upscale American bistro at
Hotel Jerome, an Auberge Resort. The hotel’s re-envisioned restaurant is the centerpiece of the property’s
four-month top-to-bottom renovation, which debuted on December 14, 2012. Prospect joins Auberge
Resorts’ tradition of award-winning culinary destinations, such as Auberge du Soleil and Solbar, both in
Napa Valley.
Also new for Hotel Jerome is the lobby Living Room concept, a space designed for après ski, American
tapas and small dessert plates. Executive Chef Rob Zack brings classically inspired yet contemporary
dishes to the menus at both Prospect and the new lobby Living Room. Having begun his career at Hotel
Jerome nearly 20 years earlier, Zack brings his own experience and point of view to the table, which has
been a force in the reinterpretation of Hotel Jerome’s restaurant as well as the implementation of the Living
Room.
Prospect
A nod to the town’s rich mining history, the 65-seat Prospect offers hearty and diverse American dishes
that are meant to be shared. Zack has studied the Jerome’s menus from the 1950s and reinterpreted a few of
the dishes using contemporary techniques. Family recipes also have a place on the menu, such as his Italian
grandfather’s meatballs. Zack has a knack for meats and sausage preparation, which he learned from his
Polish grandfather, who was a butcher. Zack’s approach to cooking is simple: fresh, quality ingredients.
Much of the menu is locally sourced, with ingredients from Avalanche Cheese Company in Basalt, Colo. to
Aspen’s Emma Farms Cattle Company, as well as the local farmers’ markets. Complementing the cuisine is
a rich and varied wine program, a tribute to Auberge Resorts’ Napa Valley heritage, curated by Wine
Director Jill Zimorski.
“So many people, including me, have an emotional connection to Hotel Jerome… food has a lot to do with
that,” said Zack. “I’m returning some classic favorites back to the menu, but with updated preparations and
a more relaxed style. I want the menu to be approachable, so much that guests have a hard time choosing
what to order!”
The hotel’s restaurant boasts rich furnishings creating multiple zones of interest in the space, from intimate
banquettes to high-visibility tables and window-side seating offering mountain views. Contemporary
treatments of traditional furnishings include chestnut- and cream-colored hardwood flooring, hand-stitched
leather chairs and innovative lighting creating sun-infused warmth throughout the day and a sultry
ambiance in the evening.
Living Room
The Living Room was designed to feel exactly as it sounds - an open, expansive space for guests to relax
and settle in over small plates and drinks from a new lobby bar. The menu consists of light, shareable
snacks, and the cocktail and hot chocolate menus are concocted by the bar’s mixologist. Pastry Chef Aleece
Gallagher, who already has a strong following in the community for her exquisite cakes, designs the Living
Room’s (and Prospect’s) decadent dessert menu.
“The Living Room is a settle-in kind of room,” said interior designer Todd –Avery Lenahan, “with
masculine furniture that lends weight, size and substance. We brought in U.S. and European pieces that are
contemporary to the Jerome’s era and layered them with pieces that give a bit of modern snap.”
J-Bar
A very light touch was used on the beloved J-Bar, Aspen’s favorite watering hole, in both design and menu.
The popular bar, which was once Hunter S. Thompson’s de facto office, retains its treasured Chippendale
chinoiserie bar and familiar rough-and-tumble character. Chef Zack resurfaces J-Bar local favorites, such as
the lobster Cobb and truffle fries. The J-Bar is known for having “the best burger in town” – and Zack
plans to keep it that way.

Rob Zack
Executive Chef
In August 2012, Chef Rob Zack had a homecoming of sorts, when he was named Executive Chef of the
historic Hotel Jerome, the iconic Aspen hotel where he began his career as a line cook nearly 20 years
earlier. The popular Aspen chef has played an instrumental role in the reinterpretation of the hotel’s
restaurant. Renamed “Prospect”, it is the centerpiece of the Jerome’s four-month top-to-bottom
renovation, which was unveiled on December 14, 2012. Under Chef Zack’s direction, Prospect’s menu
reflects the extensive makeover of the 65-seat space and offers a modern take on the upscale American
bistro, positioning the hotel once again as a dining landmark in Aspen. Additionally, Zack introduced a
new menu in the new lobby Living Room, offering American shareable plates and light bites, and
oversees the iconic J-Bar, Aspen’s favorite watering hole – renowned for serving the best burger in town.
Much of Chef Zack’s culinary experience was honed in Colorado. Most recently, he served as the
Executive Chef at the Viceroy Hotel in Snowmass, where he opened and oversaw the acclaimed signature
restaurant, EightK, as well as the slope-side location, Nest. Prior to that, he ventured out on his own as
chef-partner at the popular fine dining restaurant, Crave Kitchen, in Basalt, Colo., and he also worked as
Executive Chef at Brexi Brasserie. Zack was named Chef de Cuisine at the Hotel Jerome in 2001,
following two years as Executive Chef at Pacifica with the highly acclaimed chef, George Mahaffey.
Earlier in his career, Zack was on the opening culinary team at Doral Telluride (now The Peaks) under the
tutelage of his mentor, Executive Chef Anthony Sindaco, whom he followed to South Florida to help
reopen the famed Ocean Reef Club after Hurricane Andrew. Longing to return to the Rocky Mountains,
Chef Zack moved back to Aspen in 1994, where he began his first appointment at the Hotel Jerome as
Sous Chef under Executive Chef Todd Slossberg.
As a graduate of Miami University, with a finance degree in hand, Chef Zack moved to Telluride in 1991.
He quickly moved into the kitchens of the area, following an interest he had developed as a child. He was
introduced to the art of charcuterie from his Polish grandfather, who owned a butcher shop and the value
of fresh-farmed produce from his Italian grandfather, whose meatball recipe will be on the menu at
Prospect.
“So many people, including me, have an emotional connection to Hotel Jerome… food has a lot to do
with that,” said Zack. “I’ve returned some classic favorites back to the menu, but with updated
preparations and a more relaxed style. I’ve also added a couple of family recipes. I want the menu to be
approachable, so much that guests have a hard time choosing what to order!”
