One of the intriguing tourist routes in Japan starts in Mie Prefecture, home to Ise Jingu Shrine, goes through

Aichi Prefecture with an international airport, Shirakawa-go and Hida-Takayama in Gifu Prefecture, and continues along the Tateyama Kurobe Alpine Route in Toyama Prefecture, Tojimbo in Fukui Prefecture and ends on the Noto Peninsula in Ishikawa Prefecture. The route is shaped like a rearing dragon with the Chita Peninsula in Aichi as its tail and the Noto Peninsula as its head. Travel through Gifu Prefecture following the rearing dragon with some brief detours.

Gifu / Nagara RiverThe Nagara River is famous for ukai (cormo-rant fishing) in summer and Mount Kinka is the site of Gifu Castle. A ropeway takes you to the top of Mount Kinka with a great view

from the castle at 329 meters on the summit. One of the most famous warlords in the 16th century, Oda Nobunaga, lived in Gifu Castle, which eventually became the center base for his unification of Japan. Enjoy the same view that the great commander enjoyed. Gifu Daibutsu (Great Buddha) in Shoho-ji Temple is one of Japan’s three major Great Buddha statues, along with the one in Nara (Nara Prefecture) and in Kamakura (Kanagawa Prefecture). The statue was created using a unique combination of wood, bamboo, and clay covered in Japanese paper, lacquer, and gold leaf and still beautiful to this day.

The tradition of ukai, cormorant fishing, in the Nagara River is 1,300 years old. Fishermen work together with their trained cormorants to catch fish using torches in the pitch-black dark-ness. Ride on a tour boat and enjoy watching the skills of the birds and their trainers fishing.

The Ukai Museum opened in August 2012. To the west of the boarding docks of the ukai tour-ist boat is Kawara-machi, a pleasant place for a stroll with its many old houses with traditional lattice doors.http://www.gifucvb.or.jp/

Gujo HachimanGujo Hachiman is a castle town in the moun-tains upstream of the Nagara River. Located in a small basin formed at the junction of four riv-ers, the town is famous for high-quality spring water, called Sogisui, with clear water springs everywhere around the town. The residents have been using the spring water in their daily life for laundry and you can see public washing places everywhere in the town.

At the base of Hachiman Castle are well-preserved old towns such as Yanagi-machi and Shokunin-machi. These towns, at the center of the Gujo Region since the 15th century, are cultural goldmines. There are many interest-ing spots to visit throughout the area including Gujo Hachiman Museum, Gujo Hachiman Kyuchosha Kinenkan (an old government me-morial hall), Yanaka Mizu no Komichi alley, and Igawa Komichi alley.

The Gujo Odori in summer is a traditional bon odori dance that has been around for 400 years. People come and dance for about 30 nights from the second week in July to the first week in September every year. Join the local residents and enjoy dancing! You can see dance performances any time of the year at the Gujo

Hachiman Museum. Gujo is also famous as the birthplace of the food replicas displayed in win-dows outside many restaurants, and produces the largest amount of replicas in Japan. There are hands-on tours of a replica food factory.http://www.gujokankou.com/index.php

Mountains, Snow, and Waters in Gifu

Gifu Prefecture has mountains over 3,000 meters high, including Mt. Ontake and Mt. Norikura, is blessed with abundant nature. In Goshikigahara forest at the foot of Mt. Norikura, eco-tours are available where you can learn about the ecosystem of the plants and animals with mountain streams, waterfalls, ponds, and wetlands.

Okuhida, famous for having extreme tem-perature differences, has some of the most beautiful autumn foliage in Japan. Take a ride on the Shinhotaka ropeway to enjoy the spec-tacular view. Beautiful snowy scenery can be found from November to the end of May. From January to March (dates may vary depending on the weather), there is a “snow corridor” in Sengokuenchi Nature Park near Nishi-Hotaka Station on the Shinhotaka ropeway. The walls of the corridor can be as high as three meters! Between January and May, the usual height of the snow walls is two meters.

Japanese culture different from that of Kyoto. The castle town, built by the Kanamori clan about 400 years ago, had two areas: the elevated area surrounding the castle with residences for the samurai class and the lower area for the common townsfolk. Three streets including Kamimachi and Shimomachi areas developed as a merchant town at the center of the castle town and are now called “Furui Machinami” (old town). The quaint area has a distinctive atmosphere with its canals flowing by houses with latticed bay windows, sakabayashi (a big ball made of cedar needles) hanging outside the front entrances of the sake breweries, mas-sive doors leading to old-style town houses, and traditional restaurants. From the old town area, a 10-minute walk takes you to the elevated area of Higashiyama Teramachi with many temples that were built according to the temples in

Higashiyama, Kyoto. The area is perfect for tak-ing a stroll in the quiet, relaxing atmosphere.

Takayama Jin-ya was originally one of the mansions of the Kanamori clan; however, after the Tokugawa Government brought Hida un-der its direct control, it served as an office for the local governors dispatched from Edo (now Tokyo). There is a farmer’s market every morn-ing in front of the front gate.

The modern-appearance Hida Takayama Museum of Art standing in harmony with its natural surrounding looks like a work of art it-self. It includes a display of a superb world-class glass collection. Hida beef curry at the café is also recommended.

The most popular local delicacy in Gifu is Hida beef. The marbled beef produced in the natural and cool climate in the Hida area has the perfect amount of fat with a delicate tex-

ture and is a favorite of meat lovers. Enjoy one of the simple but delicious dishes such as steak, yakiniku, and shabu-shabu. Ayu (sweetfish) from the Nagara River is another local delicacy. Hoba-miso, a staple of the breakfast menus at hotels in Hida, is Hida’s local specialty. Miso paste together with other ingredients is roasted on hoba (magnolia leaf), which is said to have antiseptic properties, creating a mouth-watering aroma. It goes really well with rice, so be careful not to eat too much!

Gifu Prefecture has more than 50 local sake breweries. With the pure water from the Hida mountain range and cool winters, Takayama is especially suitable for sake brewing and grow-ing high-quality rice. Local sake breweries start selling their new sake from mid-January. When you see a sakabayashi, a large cedar ball, hung out under the eaves of a sake brewery, it means

Nagaragawa Railway is a local line running along the Nagara River from Mino-ota Station to Hokuno Station through Seki, Minoshi, and Gujo-Hachiman stations. The Seki and Mino areas are famous for traditional crafts. The cutlery of Seki has been made by skilled craftsmen since the 12th century and is one of the world’s top brands. Popular souvenirs from this area include cooking knives, shavers, make-up scissors, and nail clippers. The Seki Sword Traditional Museum has an exhibition of Japanese sword making. Mino, with 18th century town houses with fire protection walls on the roofs, is famous for washi, Japanese handmade paper. Beautiful washi products such as letter sets, towels, and socks, make per-fect souvenirs. http://www.kankou-gifu.jp

the new sake is ready. Don't hesitate to enter and ask to sample the latest brew. The Takayama Festival is held twice a year. The Spring Takayama Festival, aka the Sanno Festival, is held on April 14 and 15, and the Autumn Festival, aka the Hachiman Festival, is held on October 9 and 10. Gorgeously-decorated floats called yatai are pulled around the area.

From Takayama on the Takayama Line, it takes about 20 minutes to get to Hida-Furukawa, another beautiful old castle town with colorful carp swimming in the channels running through the center. Hida-no-Takumi Bunka Kaikan (craft museum) was built with Hida’s local lumber by local carpenters using skills passed down through generations of Hida craftsmen of construction without using nails. Shirakawa-goShirakawa-go is one of the areas with a harsh climate and the most snow in Japan. The fa-mous thatched houses (gassho-zukuri) with steep raftered roofs that look like a pair of hands in prayer (gassho) stand in the idyllic landscape. People have been living in these thatched hous-es for many decades, even in the heavy snow that lasts for five months of the year. The houses all face the same direction to avoid the snow and wind. The snow-covered houses are lit up in winter, creating an enchanting atmosphere. The traditional rural culture is still very much alive in this area and it is a designated World Heritage Site.

Shiroyama viewpoint is the perfect place to

see a panorama of Ogimachi Gassho Village. The Wada House is the biggest gassho-zukuri house in the Ogimachi village. Although the house is currently used as a residence, the first and second floors are open for tourists. The Kanda House, with a fire burning in the irori fireplace throughout the year, has all floors open for tourists. Doburoku Festival Museum on the premises of the Shirakawa Hachiman Shrine offers local unrefined sake (doburoku) tasting. Some gassho-zukuri houses offer accommoda-tions. Enjoy dining on unpretentious dishes while sitting by the fireside.

*Most of the gassho-zukuri houses are still currently used as residences. Please maintain proper tourist manners when walking around in the area.Inquiries: Shirakawa-go Tourist Information Center http://shirakawa-go.org/kankou/

There used to be a silver mint in the Edo era (1603-1867) in the area, naming the area Ginza “(silver guild”). Ginza has long been a pio-neer of incorporating the latest trends of the Western countries and estab-lishing a new culture. While being a gathering place for literary and cul-tural figures, the town has also been at the forefront of Japanese fashion. Ginza is also the place where Japan’s first art gallery opened in 1875. Since then, many art galleries have opened in this area, numbering more than 300 art galleries as of today. Ginza is also famous for gourmet food, with well-established restaurants as well as more trendy eateries. Since it is lo-cated near Tsukiji Market, there are many sushi restaurants.

Ginza Chuo-dori Street stands out with superb grace and beauty in Ginza. The street is turned into a vehicle-free promenade on Sundays and holidays, where many people freely walk around and relax. Ginza 4-Chome intersection of Ginza Chuo-dori Street and Harumi-dori Street is the heart of Ginza, lined with high-brand shops of the world and world-class Japanese stores. Along the street from the 5-Chome to 6-Chome areas are fast-fashion brand shops, while the 6-Chome and 7-Chome areas are famous for having a variety of art galleries.

Ginza offers you quality time for dining out and shopping. The area also has hotels and theaters within

walking distance, welcoming a wide range of people. This well-main-tained area allows you to enjoy lei-surely strolling on beautiful streets. As you look around, you will notice that Ginza attracts fashion-conscious people. Ginza is a highly sophisticat-ed town for adults, but also has a dif-ferent atmosphere in its back alleys. You can enjoy Ginza by simply stroll-ing around anyway you please.

Tokyo Station GalleryThe Tokyo Station Gallery originally opened in 1988 and will be re-opened after a renovation based on the concept of “a small but authentic art museum.” The entrance to the three-story gallery is on the first floor, the second floor, the “historic floor,” exhibits art within the original brick walls of Tokyo Station, and the third “contemporary floor” is a contemporary exhibition space. Various exhibitions of modern and contemporary art, architecture, design and more are scheduled for the gallery with the expectation to be a place where people can enjoy formal art.

Opening of Central Street The commercial Central Street will be along central passage of the first floor of Tokyo Station. The concept of Central Street is “Link Japan,” dedicated to become the link between the metropolitan and local areas in Japan and abroad. The large facility com-prises 3 zones; the “Station Select Zone” selling an extensive selection of foods including boxed lunches (bento) from famous restaurants and bakeries as well as trendy goods, the “Ekiben Store” selling exclusive boxed lunches to eat on the train (ekiben) and the “Gift Zone” filled with not only souvenirs and gift items but also famous confections and sweets you can enjoy during your travels.

When speaking of Niseko, Hokkaido, it is often noted as a good place for skiing and snowboarding. Located

in one of the heaviest snow falling areas in Hokkaido, its powder snow is world famous. Niseko is also home to many hot springs. After skiing and enjoying the fresh air and panoramic views, nice hot springs await you.

Niseko Konbu Onsen, the largest hot spring resort in Niseko, is situated along a mountain stream. Lush greenery in spring and colored leaves in autumn are well worth seeing. Niseko Higashiyama Onsen is at the foot of ski areas and Niseko Ekimae Onsen is conveniently near the station. Niseko Goshiki Onsen has five kinds of water and said to be good for health. Experiencing the unique muddy water bath of Niseko Yumoto Onsen could be an interesting adventure. In ad-dition, Niseko Town and Rankoshi Town that spread along the base of Mt. Yotei are dotted with

scores of hot springs each with different waters and atmospheres, such as Annupuri, Hirafu, Kutchan, Hanazono, Konbugawa, Yakushi, and Weiss – which is why some people call Niseko a “Hot Spring Paradise.”

“Niseko Yumeguri Pass,” or a touring pass for hot springs in Niseko, is sold at 1,400 yen. With this pass, you can soak in three hot springs from among 16 bath facilities in the area (or one bath three times is also an option). If you want to fully enjoy hot springs, use the convenient and money-saving pass!

In Niseko, golfing, canoeing, rafting, and hot-air balloons are enjoyable in summer as well as snow activities in winter. Refresh your body and mind through sporting during the daytime and hot springs in the evening in the highland resort!

A geopark is a place where people can learn about how the earth was formed and works by coming into contact with “geological heritages” (geosites), which include peculiar geological features and conditions, such as volcanoes and

rocks. Geoparks allow people to think about how the earth has been affect-ing the ecosystem and human life. Geoparks promote an expe-

rienced-based tourism style where visitors walk around to learn about the history of the earth and enjoy

looking at dynamic scenery as well as tasting the locally harvested food.

Calamities and blessings of volcanic eruptionsThis geopark includes Mount Heisei Shinzan, an active volcano that erupted between 1990 and 1995. At the park visitors can learn about the reconstruction process following the disaster. Chijiwa Fault, which was formed by sinking land, is an interest-ing place to see the dynamic features of faults. Although people in this area have been largely affected by volcanic eruptions, they are blessed with abundant spring water, fertile lands, hot springs, and other natural resources created by the volcano. Visitors can learn about the unique history of people co-existing with the active volcano in this area.http://www.unzen-geopark.jp/en-top

The Japanese archipelago encompasses highly di-verse landforms with rare geological features in the world. Five locations in Japan (as of August, 2012) that have been considered to have a particularly high quality of land diversity, including Lake Toya and Mount Usu, the Itoi River, the San-in coasts, the Shimabara Peninsula, and Muroto, are designated as global geoparks by the Global Geoparks Network (an UNESCO program established in 2004). In ad-dition, there are about 20 other geoparks that have been developing various original experience-based programs. Since Japan has many active volcanoes, there are various measures against eruption disaster, while at the same people enjoy the blessings of the volcanoes, such as hot springs. Geoparks in Japan have many interesting attractions, where people can experience dynamic crustal movements, see fossils over 100 million years old, and so on. Please enjoy Japan’s geoparks with guided tours, hot springs, dis-tinct local cuisine, and varieties of local sake.

A place where the earth was thrust up by massive earthquakes, giving birth to new landsThe Muroto Peninsula, which at one time was undersea, is now a place filled with interesting geological spots, including traces of magma and new land formations raised in the Nankai mega-thrust earthquakes. The area also includes a mystical cave where Kukai, a famous Japanese Buddhist priest, became enlightened about 1,200 years ago. There are facilities, called Deep Sea World and Aqua Farm, where you can learn about, drink, and swim in deep sea water, which comes up when it hits the steep fault scarp located relatively close to the shore, allowing easier access and intake of the deep sea water in that area. Visitors can also enjoy whale watching from March to May.http://www.muroto-geo.jp/www/en/index.php

Living with volcanoes on shaking groundMount Usu is one of the most active volcanoes in Japan, erupting four times in the 20th century. The walking paths lead you to the crater that was formed by an eruption in 2000. This geopark has a variety of exhibition facilities, including a volcano science museum. A hot spring was discovered after an eruption in 1910, offering visitors a relaxing time in a hot spring gazing out at Toya Caldera. The land formed by the series of eruptions pro-duces abundant food. The locally produced ingredients served at the G8 Summit held here in 2008 were highly praised for their superior quality.http://www.toya-usu-geopark.org/?pagename=english

Student: Laetitia OgawaI was born in France and grew up there. I mar-ried a Japanese man. Because Japanese food is good for the health and my son and husband both like it very much, I want to master Japa-nese recipes.

Instructor: Kazuko KarasawaI learned cooking from my parents, who ran a Japanese restaurant, and my grandmother, who lived to be 100 years old. As a housewife, I've been cooking for 18 years. I like cooking everyday, taking care of my family’s health.

The deep-fried vegetables are beautiful and in vivid colors. With zuccini, this dish would be like Southern French cuisine. I can get a lot of vegetables eating this dish.

Cooking directions:Heat mirin in a pan to the boiling point. Add the dashi stock and the soy sauce, and bring to a boil again. Turn o the heat, and let the sauce cool. (Always bring the mirin to a boil before adding the dashi stock and the soy sauce.) After cooling, pour it into a bowl or a at-bottomed container.

Remove the seeds from the kabocha but leave the rind on and cut into 5 mm thick slices (if a large kabocha, halve the slices). Remove the stems and seeds from the yellow and red peppers by hand. Cut them in half lengthwise and then cut crosswise into 1 cm thick slices.

Cut the stems of shishito and poke one or two holes in the skin to prevent the whole peppers from exploding in the hot oil. Roughly chop the eggplants into pieces.

Pour salad oil into a pan to a depth of 5 cm, and cook the pumpkin over medium heat. Deep-fry until the rind can be easily pierced with a bamboo skewer. When it is done, remove from the oil, drain on a tray, and place in the sauce while still hot.

Deep-fry the green bell peppers over medium heat until the color becomes vivid and the thin outside membrane turns white. Deep-fry the other peppers in the same way.

Place the eggplant one layer deep in half of the deep-frying pan. Toss them in the oil using kitchen chopsticks and deep-fry until the skin becomes vivid purple and the white part turns golden. When they are cooked well (until they get shrunken by being grabbed with the chopsticks), drain and soak in the sauce.

Tips:- Deep-fry the pumpkin rst and cook slowly in a lower temperature oil to soften them. The other vegetables can be cooked in any order, but deep-fry them separately because the cooking times are slightly dierent. - Do not use wet chopsticks in hot oil to avoid being splashed with hot oil. Be careful not to use chopsticks wet from placing the fried vegetables in the sauce.

Japanese Liquid Measures: 1 cup = 200 ml = 6.76 oz / 1 tablespoon = 15 ml = 0.5 oz / 1 teaspoon = 5 ml = 0.16 oz

Rail 鐵路Japan is covered in a rail network that reaches to almost every corner of the archipelago. Most are owned and run by the Japan Railway (JR) system and the world famous “Shinkansen” bullet train is of course one of the fastest and most enjoyable forms of land transport anywhere – the distance between Tokyo and Osaka being covered in just 2hrs 30 mins on the fastest line.

主要有JR(Japan Railway Co., Ltd., 日本旅客鐵路)運行著,在這當

Japan Rail PassJapan Rail Pass allows you to use the whole JR system (including the Shinkansen) but is only sold outside Japan. 28,300 yen gets you a full 7 day ticket (adults).

For more info, check the Japan Rail Pass website:詳情請看JAPAN RAIL PASS的網站 www.japanrailpass.net

Bus 巴士 Long-distance buses in Japan are run by numerous companies including JR. Buses are generally more economic than travel-ing by plane or train but do take longer and can be affected by traffic jams at busy times of the day or night.Local buses run all over Japan as well as in the major cities and sometimes English instructions or stop announcements are used but this is not the case everywhere. We would recom-mend you ask drivers to remind you of where you must disem-bark prior to setting off.

Japanese taxis can be found at the exit to every train station in the country or alternatively hailed on the streets. The red sign visible through the windshield of the car: “空車” (kusha) means it is vacant and available for hire but when the sign reads “賃走” (chinso), it is unavailable. The back door on the left side will open and close automatically so be careful not to stand too close! (All the other doors are operated manually) Rates vary depending on the taxi company but usually start at a fixed rate of 710 yen (in Tokyo) for the first two kilometers. The rate system is shown inside the taxi and receipts can be issued. In urban areas, you can usually pay by credit card for a taxi. If credit cards are accepted, a taxi has a sticker showing this on the window.

In big cities, such as Tokyo and Osaka, the under and over ground train system is well organized and highly efficient accessing any and all parts of the cities. To avoid wasting time lining up for tickets and working out how to use the machines in different stations, it is highly recommended to purchase pre-paid cards.

Public telephones can be found almost everywhere in Japan and most can be used to make domestic and international calls. Only 10 or 100 yen coins can be used but all telephones take pre-paid telephone cards – purchase in convenience stores for 500 or 1000 yen.If you use a calling card when you make an international call, it can reduce your calling rate.
