Preheat oven to 400°F. 2. Spray baking sheet with cooking spray. 3. Slice the potatoes lengthwise into ¼-inch thick slices. Cut the slice into ¼-inch thick sticks. 4. Then place them in a large bowl, and spray them with cooking spray. Sprinkle with the herbes de Provence, California-style garlic powder, fresh ground pepper, and salt to taste. 5. Spread the potatoes out on the prepared baking sheet. 6. Bake the fries until they are golden and tender, about 35 to 45 minutes. Serve immediately.
