Mauricio LópezEXECUTIVE CHEFExecutive Chef Mauricio Lopez has been working as an Executive Chef since 1996. He garnered his talents in his home of Acapulco, Mexico and through various stints in Cuba and Spain. Since then he participated in several notable culinary events such as La Chaine de Rotisseurs Dinner and in January 2007, received international

recognition for his culinary expertise in fusion cooking upon receiving the Hilton Chef Diamond Award. In 2008, he won the Culinary Masters Competition in Miami, Florida where he prevailed over chefs from Hyatt Sarasota, Sofitel Victoria Regia and 3030 Ocean Restaurant of Marriott’s Harbor Beach Resort & Spa.

In the spring of 2016, Chef Lopez showcased his skills at a James Beard Foundation dinner and was also guest Chef on NBC New York. In July 2016, Chef Lopez served as Guest Executive Chef at Waldorf Astoria Chicago to curate a Cabo-inspired menu at the hotel’s new pop-up dining experience, The Kitchen, along with the Lobby Lounge, and Patio. Chef Lopez was also invited to cook at the Condé Nast kitchen as part of a program that features an exclusive group of Executive Chefs where he prepared authentic cuisine and educated editors about Baja ingredients and cooking styles.

Chef Lopez sits on Hilton Culinary Council and is responsible for every new hotel opening in Latin America from kitchen design to menu development, in addition to consulting for the company’s Mexican concepts abroad. Chef Lopez credits his love of learning to Hilton and has incorporated this passion into

inspiring and educating youth in the culinary world and has assembled an expert team at Hilton Los Cabos that share the same values. The culinary team, led by Chef Lopez, incorporates Mexican heritage into their menu offerings and provides a personalized experience for all guests. Together they are responsible for seven culinary concepts including: El Meson, an upscale Baja California sea to fork destination restaurant and Vela, a refined Italian fine dining venue with a Mexican twist. This gastronomic experience is reflected in the resort’s Banquet Cuisine which emulates its restaurant operations and further elevates Hilton Los Cabos Beach & Golf Resort.

Chef Lopez dedication to locally-sourced ingredients and “no shortcuts” approach to cooking spans beyond the kitchens at Hilton Los Cabos as Chef practices farm-to-table in his everyday life to give back to his local community by sourcing fresh, seasonal cuisine from around the region. Lopez also draws inspiration from his mother’s cooking – Chef references his mother as the point of reference for the seasoning, like incorporating Sazón into dishes. Coming from humble roots, Lopez discovered flavor by learning to cook from firewood which developed his taste for foods that are

simple yet flavorful. Guests at Hilton Los Cabos enjoy a multi-sensorial culinary experience where Chef Lopez incorporates sight, taste, smell, hearing and touch into his food and beverage offerings.

In his leisure time, Chef Lopez is a true foodie – he enjoys swimming and fishing, crediting his proximity to the sea in his hometown of Acapulco that influenced him to become a chef.

Before joining Hilton Los Cabos, Chef Lopez served as Executive Chef at Hilton Villahermosa & Conference Center, Hotel Avalon Grand Cancún, Hotel Avalon Reef Club Isla Mujeres, Hotel Paradisus Varadero (Meliá), Hotel Melia Cayo Guillermo, and Hilton Cancun Beach & Golf Resort.
