geoff Nordass, local man from Flamborough, has published a book detailing what may seem to some, an extraordinary life.

Joining the Royal Marines at 17, he completed two tours in Northern Ireland, was deployed to the Falklands conflict where he served in support of SBS Special Forces, served in hong Kong on border security missions and completed NATA winter warfare operations in Norway in an elite Warfare unit. After retiring from the Marines as Sergeant, his adventures continued when he trained as a body guard and was employed by Mohamad and Dodi al-Fayed, in private security, and later joined Royal Caribbean Cruises as Director of Security Operations on some of the most luxurious cruise ships in the world. Iraq would be his next conquest, where he ran private security missions as protection for foreign engineers and their equipment, as the country was being re-built after the war.

This month’s recipe comes from Pablo bouza-CausIEr of The Bay Tree in Stillington. Method:Preheat the oven to 180*. • Peel the potatoes and cut into thin slices,

salt and lightly toss then leave.• Finely chop garlic, Slice spring onions• Cut cod into roughly 10cm square

pieces. Lightly coat with seasoned flour • Take a heavy bottomed frying pan, pour

oil into the pan & heat. Cook cod until golden, turning carefully ensuring the fish does not break.

• When cooked, drain and place in the bottom of an oven proof dish

• Shallow fry the potatoes until they begin to soften and turn golden. Remove from pan and leave to drain.

• In a heavy bottomed pan, add extra virgin olive oil then cook finely chopped garlic & spring onions until softened. Add tinned tomatoes, oregano and a good slug of white wine. Season to taste.

• Layer the sauce and cooked potatoes over the cod. Finish with a healthy covering of sauce.

• Place in a pre-heated oven to cook for 30 mins

3 4 cloves of garlic3 1tbs oregano3 1 glass white wine
