Adventures in Beaverton 32

The Beaverton Resource Guide (BRG) is a free monthly community paper for the city of Beaverton, Oregon. Cedar House Media published the first edition in April of 2011 with the help of the city and the Farmers Market. That first issue was 16 pages. Today, just over one year later, the paper is 32 pages and sponsored by a huge cross section of the city from shopping malls like Washington Square and Cedar Hills Crossing to public entities such as the police and fire departments, the Visitor’s Association (WCVA), the Senior Citizen’s Advisory Committee and the park district (THPRD) to name a few.

Beaverton has so many positive attributes and many go unnoticed. The BRG is our way of giving back to the community by highlighting what makes our city a great place to live, shop and work. With a focus on small or local businesses, we’d like to encourage our neighbors to first visit nearby businesses and give them a chance before moving on.

Absolutely. With our unique design, community news and loyal readership of residents who agree with our philosophy of “Shop Local - Give Local - Stay Local“, your ad will get seen by those who are your best customer prospects. We don’t print massive quantities and mail them out to uninterested parties. Our papers are located in convenient, local, high traffic locations as well as small businesses ready to be picked up by those wanting to learn about what’s local and that means YOU!

If you'd like a copy for yourself or want to pick up a few for your business, drop by our office or go to any of these participating locations: New Seasons Market, Dairy Queen, THPRD facilities or Starbucks. By location, try:

- Farmers Market, City Park (red newsstands), library, Powell's Books, city hall; - Walgreens, 24 Hour Fitness, branch library, Big Al's, Ava Roasteria; RiteAid, Albertson's, Thriftway.

If you would like to place an ad or submit an article for consideration, please contact us by email or phone.

Volume 2–Issue 10 (October 2012) | Beaverton Resource Guide – 3

A day before undergoing brain surgery to remove a massive tu-

mor, Jamie Amos, of Beaverton, just wanted one thing: to be married.

She and her boyfriend, Jon Tafoya, met when they were 17 in New Mexico and dated for several years before Tafoya moved to Oregon to be with his family. They reunited after Amos moved to Or-egon to support Tafoya as he faced health issues.

But this summer, Amos became the one who needed support. After experiencing terrible headaches, she went to the hospi-tal and an MRI found a large brain tumor the size of a golf ball on her left lobe.

The diagnosis was a huge blow for Amos, but she told a nurse at Providence St. Vincent Medical Center she was hop-ing to get married before her surgery later that week. She told staff she wanted to have the ceremony at the hospital because they had taken such good care of her.

It wasn’t long before a whirlwind wed-

ding planning process was under way.David’s Bridal provided the dress and

nurses helped provide a veil, jewelry and the photo shoot. Amos’ 12-year-old niece baked the wedding cake in the kitchen of

the hospital and Washington County of-

license paperwork.“(There’s) so much gratitude and love

from people we don’t even know, just so

much support from human kind, it’s over-whelming and touching,” she said at the time. “It’s a real fairytale.”

About 50 guests attended the outdoor wedding after being invited by text mes-sage and Facebook.

Amos said the wedding better prepared her for her surgery, knowing she would have her husband by her side.

A day later, Providence St. Vincent staff told FOX 12 the surgery went well, and that Amos‘ progession was “amazing and unexpected.”

And just three days after the surgery, Tafoya and Amos were going home - as husband and wife.

Watch for more stories like these every night on “The 10 O’clock News” on FOX 12.

‘A real fairytale,’ Beaverton couple marries at hospital day before bride’s brain surgery

Jamie Amos and Jon Tafoya took part in a wedding ceremony the day before Amos underwent surgery to

remove a massive tumor from her brain.

For three years, Janet Allison and the Tualatin Hills Park Foundation’s

Board of Trustees have been eager to help fund Oregon’s rst baseball eld designed for special needs athletes. Their goal is now one giant step closer to reality. In July, the THPRD Board of Directors approved Somerset West Park, located at NW 185th Avenue and NW Parkview Blvd., as the site for Champions Too Field. The multi-use eld will be completed as part the upcoming bond measure renovation of Somerset West, scheduled to begin in 2013 after a master plan is submitted and approved. “The district will build infrastructure, including parking, and the foundation will raise the money to build the eld itself,” said Allison. “It will be used by baseball, soccer, football and lacrosse teams, but disabled teams will have priority to use

the eld, which is being designed to help facilitate their participation.” Champions Too Field will be built to the standards of Miracle League Association, a national nonpro t that has built more than 40 accessible elds, but none in Oregon. The diamond will include at bases, wider dugouts, synthetic turf and additional amenities to accommodate use by athletes with disabilities. Now that the location is set, the Park Foundation can begin setting its sights on raising more than $1 million needed to complete the project (which is in addition to $1.5 million in bond money the district will provide). The most ambitious fundraising plan in the Park Foundation’s history will include opportunities for naming rights on the eld and/or other park amenities to help secure a generous lead gift, Allison said. “I’m very anxious,” said Allison, chair of the Park Foundation’s Board of Trustees. “All the trustees are excited and we talk about it at every meeting. We’ve been blown away by the idea since the day that (THPRD Superintendent of Sports) Scott Brucker came to us with Miracle League information and said, ‘Have you seen this?’”

Allison still vividly recalls the day, three years ago, that she and several trustees went to Sunset Park to watch the Challenger Division of Little League District 4. Special needs children were playing ball alongside able-bodied Little League “buddies,” who assisted with the batting, running and elding.“There was a little girl with Down’s Syndrome,” Allison remembers. “After she hit the ball, she just kept running. When she got to home plate, everyone was cheering. She threw her arms up and just stood there. She was so excited.”On that day, Allison said, the Park Foundation became committed to making the Champions Too eld its top priority.“All these kids want to do is play baseball, but challenges posed by normal

elds are often insurmountable,” Allison said. “When we went to that game, we were hooked.”

THPRD and the Tualatin Hills Park Foundation will partner to build Oregon’s rst athletic eld for special needs athletes. The eld will be located at Somerset West Park, which is at NW 185th Avenue and NW Parkview Avenue.

Healthy Baked Sweet Potato Skins

Soft flour tortilla stuffed with shrimp, melted cheese, onion & tomato. Served with sour cream and guacamole.

Boneless breast sauteed in butter and red salsa with mushrooms

Shredded pork top sirloin scrambled with two eggs, tomotoes & onions.

Chunks of beef cooked in a tasty chile sauce, wrapped in a flour tortilla covered with colorado sauce & melted cheese.

Directions1. Preheat oven to 350 F. Wash the sweet pota-

toes well (with skin on) and pat them dry. Bake for about 50-60 minutes; until fork tender. Don't turn off the oven as yet.

2. Take the sweet potatoes out of the oven, cut in half and leave it to cool. Once cooled scoop the sweet potato out of the peel. Make sure to leave a thin layer inside the peel. This will help it stand on its own. I used a grapefruit spoon to scrape out the sweet potatoes.

3. Mash the sweet potato with the cream cheese.

4. Sauté the onion & garlic in olive oil. Add fresh spinach and heat for 2-3 minutes and set aside.

5. Stir in sour cream and spinach with the sweet potato-cream cheese. Add salt and pepper to taste

6. Coat potato skins with a drizzle of oil and bake to get a crispier outside; about 5 minutes.

7. Remove the skins from the oven and fill each skin with the sweet potato mixture. Top with shredded mozzarella cheese.

8. Bake again for 10-15 minutes, or until cheese is melted.

Xtend Barre Beaverton owners Sara Peelle, Emily Harrington and Whitney Mallard are proud to introduce the hottest new barre workout to the westside of Portland. Sara, Emily and Whitney met through their husbands who played football at the University of Oregon together. These NFL wives came together to bring this workout to Oregon. Sara Peelle opened her first Xtend Barre studio in San Diego in May of 2011, and is an instructor as well.

Xtend Barre is a 55 minute full body workout that fuses dance, and Pilates with sculpting exercises at the ballet barre to give you that chiseled dan-cers body. The classes are open to all fitness levels. They are for any age, gender or fitness background. We offer exercises that can be modified for beginners, prenatal clients, even clients with injuries. If you are looking for an extreme challenge we can amplify the exercises for advanced clients as well. We offer classes 7 days a week, as early as 6:15 am, and as late as 6:45 pm. Please check our website for our class schedule and pricing. Your first class at Xtend Barre Beaverton is FREE! We look forward to seeing you at the barre!
