2.2.2 Oligosacarides
Contains 2 to 10 monosaccharides joined by glycosidic bonds.
Depending on number of sugar units, they are named after di-, tri-,tetrasaccharide...
Oligosaccharides have some properties of monosacharides as well as polysaccharides like good solubility in water, crystalizable, hydrolyzable in the presence of aqueous acid and heat.
Only few oligosaccharide occur in nature. Most are produced by hydrolysis of polysaccharides

2.2.2.1 Common oligosaccharides
- Saccharose (sucrose): Abundant in nature, commercially produced from sugar cane
and sugar beets. Has important role in human nutrition, key ingredient of some
food industry (fermentation, bakery...) Composed of an alpha-D-glucopyranose and beta-D-
Fructopyranose linked head to head (reducing end to reducing end)nonreducing sugar.
Soluble in water, insoluble in organic solvents. Because of the unique carbonyl-to-carbonyl linkage, sucrose is
highly labile in acid medium, and acid hydrolysis is more rapid than with other oligosaccharides
Invertase also hydolyze saccharose like acid aqueous to form mixture of glucose and fructose, called invert sugar
Reacts with Ca(OH)2 to form insoluble compound C12H22O11.3CaO.3H2Orecover sugar from molasses

- Maltose:Maltose cấu tạo từ 2 phân tử glucose, kết hợp với nhau nhờ nhóm –OH glucozit của phân tử này với nhóm –OH rượu ở nguyên tử carbon thứ 4 của phân tử glucose kia. Vì vậy, nó thuộc loại đường khửKhi thủy phân bằng enzyme amylase hoặc kiềm, thu được 2 phân tử glucose. Maltose ít gặp ở trạng thái tự do, thường thu nhận bằng cách thuỷ phân tinh bột. Maltose còn có tên gọi là đường nha.

- Lactose: Cấu tạo từ 1 phân tử galactose và 1 phân tử glucose,
kết hợp với nhau nhờ nhóm –OH glycozit của galactose và –OH rượu ở carbon thứ 4 của glucose nên nó có tính khử.
Lactose có trong sữa người và động vật nên còn gọi là đường sữa.
- Cellobiose Hình thành từ 2 phân tử glucose ( và ) liên kết với
nhau nhờ nhóm –OH glucozit của glucose này với –OH rượu ở carbon thứ 4 của glucose kia nên nó thuộc loại đường khử.
Cellobiose bị thủy phân bởi enzyme cellulase.

2.2.3 Polysacarit được cấu tạo bởi nhiều monosacarit liên kết
với nhau nhờ các kiểu liên kết – hoặc –glycozit.
Trong thành phần của một polysacarit có thể chỉ có một loại monosacarit hoặc có thể có nhiều loại monosacarit khác nhau cấu tạo nên =>đồng thể hoặc dị thể
Cách gọi tên các polysacarit đồng thể: tên monosacarit +đuôi -an. Ví dụ glucose => glucan, mannose => mannan, ...
Theo nguồn gốc, polysacarit chia ra thành polysacarit thực vật, polysacarit động vật, polysacarit vi sinh vật.

2.2.3.1- Tinh bột Là nguồn gluxit quan trọng trong khẩu phần thức ăn
của người và động vật. Tinh bột có nguồn gốc thực vật Phản ứng đặc trưng để nhận biết tinh bột là tác dụng
với iod, cho màu xanh tím đặc trưng. Tinh bột do hai hợp phần cấu tạo nên là
amylose và amylopectin. Tỷ lệ amylose và amylopectin trong tinh bột thay đổi
tùy theo loại tinh bột, nhưng thường nằm trong khoảng 10-30% amylose và 70-90% amylopectin.

- Amylose: Tan trong nước ấm Có cấu tạo mạch chuỗi thẳng do các đơn vị
, D- glucose liên kết với nhau bằng liên kết (1,4)-glycozit.
Mạch amylose có thể cuộn xoắn. Amylose cho màu xanh với iod và có độ
nhớt thấp khi hồ hóa. Khối lượng phân tử phụ thuộc vào nguồn
gốc của loại tinh bột.

- Amylopectin: Không tan trong nước ấm Có độ nhớt cao khi hồ hóa. Cho màu tím với iod. Amylopectin có cấu tạo mạch phân nhánh, do các ñơn vị ,
D-glucose liên kết với nhau bằng liên kết (1,4)-glycozit và (1,6)-glycozit.
Mạch nhánh có độ dài thường ngắn hơn mạch chính
Tinh bột bị thủy phân tạo thành các sản phẩm trung gian gọi là dextrin,
các dextrin có trọng lượng phân tử khác nhau cho màu khác nhau với iod.
Khi thủy phân tinh bột, tùy theo tác nhân thủy phân mà sản phẩm cuối cùng có thể là glucose, mantose hay hỗn hợp glucose, mantose, dextrin.

2.2.3.2- Cellulose
Là polysacarit chủ yếu của màng tế bào thực vật.
Cellulose được cấu tạo từ các phân tử , -D glucose, các phân tử này liên kết với nhau bằng liên kết (1,4) glycozit.
Cellulose không hòa tan trong nước. Khi thủy phân cellulose bằng axit mạnh, sản
phẩm cuối cùng thu được là glucose. Nếu thủy phân trong điều kiện nhẹ nhàng sẽ nhận ñược disacarit là cellobiose.

Phân tử cellulose có dạng hình sợi, liên kết với nhau nhờ liên kết hydro và tạo thành từng nhóm, gọi là mixel.
Các dẫn xuất từ cellulose được sử dụng trong nhiều nghành công nghiệp như:- Nitrocellulose: dùng làm chất nổ, sợi nhân tạo- Axetylcellulose: dùng làm sợi nhân tạo- Carboxymetylcellulose, dietyllaminoetyl-cellulose: dùng trong sắc ký trao đổi ion- Một số dẫn xuất tan trong nước của cellulose như Natri Carboxymetyl- cellulose (NaCMC), Hydroxyetylcellulose (HEC), Metylcellulose (MC)... cũng được sử dụng nhiều trong công nghiệp.

- NaCMC là keo ưa nước, sử dụng trong sản xuất chất tẩy rửa tổng hợp, để hồ vải, sử dụng như chất ổn định nhũ tương.
- HEC sử dụng như một chất làm đặc trong sơn latex, thêm vào của ximăng Pooclant để ngăn chặn sự mất nước.
- MC sử dụng trong sản xuất gốm tạo độ kết dính, sử dụng như một loại keo bảo vệ và chất ổn định trong các sơn lót nhiều màu. MC không độc nên cũng ñược dùng nhiều trong công nghiệp dược phẩm, mỹ phẩm và thực phẩm.
Cellulose không có vai trò dinh dưỡng trong cơ thể con người. Nhưng trong khẩu phần thức ăn luôn luôn có thành phần cellulose. Cellulose ăn vào giúp cơ thể dễ tiêu hóa thức ăn, do làm nhu động ruột tốt. Ngoài ra, cellulose còn giúp ruột già đào thải những chất bã, chống lại sự táo bón.

2.2.3.3- Hemicellulose và lignin
Hemicellulose: tập hợp nhiều loại polysacarit có kích thước phân tử nhỏ. Các thành phần chủ yếu trong dịch chiết hemicellulose là xylan, pentosan, mannan, galactan.
Lignin không phải là polysacarit mà là polymer thơm đi cùng với polysacarit trong tế bào thực vật.
Lignin không bị phân huỷ bỡi axit, tan tốt trong kiềm nóng, bisulfit, ngưng tụ với phenol.
Lignin không tan trong nước, trong các dung môi hữu cơ thông thường và ngay cả trong axit sulfurit đặc.
