Sea Wynde Rum

Brand Values• The finest rums—like the finest single

malt whiskeys—are made in pot stills.• This costly and time-consuming

method produces rums with rich and complex flavors.

• Many rums today are produced by the continuous still method which has greater production capacity, but produces a less flavorful spirit.

• Traditionally, pot still rums from several different origins were married together to produces the most coveted rums.

• Rum made by marrying only pure pot still rums had all but vanished. Sea Wynde is an astonishing marriage of pure pot still rums from Jamaica and Guyana.

• This elegant recipe produces a rum of honeyed richness and subtle complexity, which distinguishes it from all other rums.

Sea Wynde Rum

Tasting Notes

“The initial whiffs detect seductive fragrances of paraffin, molasses and oak—an extra seven minutes in the sampling glass releases semisweet to flat-out sweet aromas of maple and brown sugar; this pot still rum really takes off, though once in the mouth—the palate entry emits sweet, lightly baked states of maple and almond butter—by the midpalate point, the flavor profile includes succulent tastes of cream, holiday spices, oak resin that’s approaching rancio-like proportions and top-grade honey; the aftertaste is long, luxurious, fruity and utterly delicious; an outstanding, marginally sweeter upgrade from the very good original offering; at this price if you don’t purchase at least three bottles of this instant classic, you’re a fool.”

F. Paul Pacult, The Spirit Journal

British Royal Navy Imperial Rum

• The British had a long history of serving rum aboard ship.

• The “tot” was first served to English sailors in Jamaica in 1655.

• The daily ration of BRNIR was suspended on July31, 1970—known as “Black Tot Day”.

• BRNIR was reserved for special Naval and Royal functions for the past few decades. It was last served by the crown at Prince Andrew’s wedding.

• BRNIR is truly a taste of history.

Knappogue Castle Irish Single Malt Whiskey

Brand Values• The Knappogue Castle legacy began

with a man named Mark Edwin Andrews nearly half a century ago. Hi Knappogue Castle 1951, named after the castle in Ireland that he owned, is the oldest and rarest Irish whiskey in the world.

• His son, Mark, continues his father’s legacy by selecting the finest Irish single malt, aging it to perfection and bottling it on a vintage basis.

• Knappogue 1994 was triple distilled, one batch at a time, in copper pot stills.

• It was aged in bourbon casks until the right balance of flavor and mellow appeal was achieved.

• Each year, a limited number of casks are individually selected to become Knappogue Castle Very Special Reserve.

• The casks are bottled on a vintage basis according to the year of distillation.

Page 13: Cbbrandpresentation

Knappogue Castle Irish Single Malt Whiskey

Tasting Notes• Nose: Teasingly delicate with a

mouthwatering intertwining of fresh cut grass and distant zesty, lemony hints. Slightly floral but amazingly crisp and clean. The oaky vanilla notes do nothing to lessen the clarity of the aroma. There is a vivid sharpness to the aroma that is highly unusual for a whiskey of this age.

• Taste: Soft, malty, arrival on the palate that is at first sweet and then an on-rush of lively barely notes buzz around the taste buds. The oak forms a stunning backdrop to weightier tones, through the freshness of the malt is never once displaced. That zestiness on the nose is apparent adding a slight marmaladey, bittersweet feel to the proceedings. Absolutely salivating.

Knappogue Castle Whiskey - 1951

• The legacy began with a man named Mark Edwin Andrews nearly half a century ago.

• In the 1960s, he bought the remaining casks of pure pot still whiskey distilled at the prestigious B. Daly Distillery in Tullamore, Co. Offaly.

• He named it Knappogue Castle Whiskey, after the castle in the west of Ireland that he owned.

• Knappogue Castle 1951 is the last surviving vintage that remains from his collection.

Page 16: Cbbrandpresentation

Knappogue Castle Whiskey -1951

Tasting Notes• Nose – A heady mix of over-ripe

banana, big oaky notes. Demerara sugar, soft honey, ripe greengages and pepper. On a blind nosing I might have considered this a rum. Just a few ripe barely notes pop through, but essentially when cold.

• Taste – Big, booming start. Very rich from the off: attractively oily and mouth watering, immediately showing an unmalted pedigree to the clean barley and perhaps a hint of oats. However, to the middle there is a sweet, coppery, estery texture more attuned to Jamaican pot still.

• Finish – Long, quite hard and brittle – as one would hope from a whiskey of this genre – and some of the deeper vanillins one might expect to find in an old bourbon. Chewy with liquorice and a hint of chicory. It is that estery, vaguely honeyed, oily copper pot rum, which hangs on the longest.Jim Murray, Whiskey Writer

Clontarf Irish Whiskey

Brand Values• Clontarf is an ancient village nestled

along Dublin Bay’s northern shore.• It was here in the year 1014 that High

King Brian Boru defeated a mighty Viking army-the famous Battle of Clontarf.

• Today, Clontarf is a suburb of the bustling capital of Dublin.

• The inspirational marriage of Old World ingredients and New World techniques give the Clontarf whiskeys a style and class of their own.

• As tradition dictates, only the fines grain and purest Irish spring water are used in the delicate distillation process.

• Clontarf is then mellowed through Atlantic Irish oak charcoal.

• Finally, Clontarf is gently aged in New World bourbon barrels giving a silky soft texture to this fine range of Irish whiskeys.

Very Small Batch Bourbons

Brand Values- McLain & Kyne, known for their

quintessential “very small batch” bourbons, represents the quality and integrity only found in handcrafted products.

- Utilizing indigenous grains—corn, malted barley and rye, as well as the renowned clean, crisp limestone water of Kentucky—bourbon is the true spirit of America.

- Single barrel bourbons were reintroduced in the early 1980s. Master distillers would pick the best barrels of whisky to be bottled separately and sold as a single barrel bottling.

- In making small batch bourbons, 200-300 barrels are picked to be mingled and then bottled.

- Borrowing the best from both worlds, M&K marries a mere 8-12 barrels of various ages to produce the best tasting bourbon possible, while ensuring the complexity and consistency you expect and deserve.

Pallini Liqueurs – A Zest for Life

Brand Values• Limoncello has long been Italy’s

favorite liqueur. It first became fashionable a century ago, with the zest of fresh lemons being steeped in sugar and alcohol to enjoy chilled.

• It was then that the first Virgilio Pallini perfected his family’s closely guarded recipe for a superior limoncello whose complex citrus tones shine through.

• Pallini is the world’s No. 1 super-premium limoncello brand, from a true family business that’s been creating exceptional spirits for over 130 years.

• Pallini’s unique infusion process brings out the rich essential oils in the zest of fresh Sfusato lemons to create a distinctive bouquet and a clean, refreshing lemon flavor that lingers on a palate.

Pallini Liqueurs – A Zest for Life

Tasting Notes

• “Pallini Limoncello is a class act from start to savory finish. The liqueur features a true-to-fruit hue with the opacity of homemade lemonade. It has a featherweight body and a satiny smooth texture more reminiscent of a spirit than a liqueur. The alluring bouquet is generously imbued with the aroma of zest, freshly squeezed lemons.”

Pallini Liqueurs – A Zest for Life

The Pallini family recently developed two additional cellos based on time-honored recipes.

- Pallini Peachcello is inspired from past tradition with a a modern eye for a more intense and mixable product. Luscious white peaches form Italy’s flourished orchards are picked at their peak of flavor to create an exquisite liqueur with a heady bouquet.

- Blueberry and black currant, grown in the rugged mountainous Abruzzi region of Italy, were selected to soften the flavor of the wild raspberries. The perfect blend of these berries is the secret to the bouquet and complex taste of Raspicello.

Page 26: Cbbrandpresentation

Pallini Liqueurs – A Zest for Life

Tasting Notes

“Pallini Peachcello is a tantalizing elixir, a light satiny textured liqueur brimming with appeal. Its generous bouquet showcases the tantalizing aromas of ripe white peaches. As great as the bouquet is, the liqueur’s fruit-derived palate is even more sensational. The complex array of fresh, peach flavors is laced with notes of vanilla and spice. The lightly sweetened liqueur rolls over the palate eventually fading away in a relaxed, flavorful finish. Pallini’s luxurious liqueur is the real deal, a peach experience that rivals sinking one's teeth into ripe fruit right off the tree.PALLINI PEACHCELLO IS WITHOUT PEER.”

Robert PlotkinThe Bartender’s Companion

Tasting Notes

“Pallini Raspicello is a rare delight. It has a ruby, jewel-toned appearance and a silky, lightweight body. The aroma of wild vine-ripened raspberries is glorious. The bouquet more than sets the stage for what is to follow. The Raspicello’s initial attack is somewhat demure yet remarkably smooth. As the liqueur washes over the palate, the fresh fruit flavors begin to grow in intensity, with the raspberry character attracting all of the early reviews. There are notes of other soft berries in the palate that are subtle, yet discernible for those who care to notice. The mélange of delectable flavors linger on the palate for an impressively long time.RASPICELLO IS AN EXQUISITE, SKILLFULLY BALANCED LIQUEUR.”Robert PlotkinThe Bartender’s Companion
