It is with pleasure that we invite you to join your fellow Chaîne members from around the country and around the globe at our 2019 Grand Chapitre, taking place October 2–6, 2019, in Baltimore, Maryland. Our host hotel will be the Four Seasons Baltimore Harbor Hotel, a luxury, five-star property in Baltimore’s vibrant Harbor East district.

A wide array of festivities, orchestrated by our Mid-Atlantic regional team, awaits us. Grand Chapitre attendees will have the unique opportunity to experience the fine cuisine, rich art and history, distinctive entertainment, and genuine fun that Baltimore has to offer.

The Annual National Council and Board of Directors meetings will take place on Saturday October 5th. We extend our personal invitation to all members of the Bailliage des Etats-Unis d’Amérique to attend both meetings. We will also be hosting an Educational Forum designed for Baillis and Bailliage Officers that will provide valuable operational updates and information on Friday morning, October 4th, and will be followed immediately by a Communications Committee meeting that will be of interest to Baillis as well as our Regional and Local Charge(e)s de Presse.

Our black-tie, Induction and Awards Ceremony will take place on Saturday evening and followed by a gala dinner where we will celebrate the 60th Anniversary of the 1959 formation of our Confrérie de la Chaîne des Rôtisseurs in the United States of America.

Our Grand Chapitre Brochure describes the interesting and exciting tours that will be offered during your visit to Baltimore.

The Chaîne Mid-Atlantic Province is proud to have been designated by our Board of Directors as host of your 2019 USA Grand Chapitre and to serve as your 2019 Grand Chapitre Team (host committee). Accordingly, the officers of the Mid-Atlantic Province are thrilled to invite you to your 2019 Grand Chapitre celebrating the 60th Anniversary of the 1959 formation of our Confrérie de la Chaîne des Rôtisseurs in the United States of America!

Our Diamond Jubilee Celebration will take place in Baltimore’s historic and picturesque Inner Harbor East. We look forward to welcoming each of you and sharing with you all that this unique location has to offer. The Inner Harbor area offers a great variety of interesting things to do—world class museums and historic sights, miles of walkable waterfront, fine dining, the National Aquarium, Fort McHenry National Monument and Star-Spangled Banner National Historic Trail, and of course access to all the events of your 2019 USA Grand Chapitre.

Our headquarters hotel is the Four Seasons Inner Harbor East which, in addition to our meetings and National Council Luncheon, is the location of the “Evening with Edgar Allan Poe” Welcome Reception and Célébration du 60ème anniversaire de la Confrérie de la Chaîne des Rôtisseurs des Etats Unis d’Amérique black tie induction gala. This is a stunning property with luxury amenities located directly on the Inner Harbor with both water and city views and easy access to Baltimore’s most desirable venues.

This 2019 USA Grand Chapitre boasts ten “Exclusive Dining Experiences,” carefully selected Chaîne worthy intimate dining events over two nights (Wednesday–Thursday) and eight “Daytime Adventures,” a series of Chaîne exclusive adventures, each certain to be a unique “Chaîne only” experience over three days (Thursday–Saturday). In addition, you won’t want to miss Friday’s Chesapeake Bay Feast, a classic Maryland crab themed casual dining event and Bailli recognition.

Charleston has helped introduce Baltimore as an emerging force in the world of fine wine and dining. The cuisine is rooted in French fundamentals and the Low

Wednesday, October 2 and Thursday, October 3Magdalena provides a dramatic setting in a restaurant with multiple private rooms, led by one of the top Chefs in the Mid-Atlantic Region, Chef Mark Levy. The restaurant provides a fine-dining experience in an informal and thrilling setting. It is a culinary jewel of Baltimore. The cross-cultural menu is built upon the finest local ingredients, and changes with the seasons and the inspiration of Chef Levy.

Levy, a classically-trained, award-winning chef, has traveled the world exploring cultures and cuisines from the African lowlands to French mountain villages. He tells the story of those journeys—and traditions closer to home—on the plate. High-quality, local, seasonal ingredients are at the

forefront of the menu mixing revelatory simplicity with subtle complexity. It all goes hand-in-hand with a wine cellar of great depth and variety, the finest malt whiskeys, and some of the most delicious craft beers ever brewed.

Inspired by this layout and culinary excellence, we have created two completely unique dining experiences in two different spaces. On October 2, we will offer a 7-course meal in the “Upstairs at the Ivy” private dining room featuring many unique touches like black Riedel glassware. On October 3, we will have a 5-course meal in the private wine- cellar room. Either way, the evening will be a memorable experience.

Wednesday, October 2 and Thursday, October 3To celebrate the 60th Anniversary of the 1959 formation of our Confrérie de la Chaîne des Rôtisseurs, we have combined the cuisine and glamour of 1959 with the contemporary setting of 2019. Located on the top Floor of the Four Seasons hotel, The Bygone is Harbor East’s grandest can’t miss destination. We have challenged the Chef to create a modern version of a 1959 Chaîne meal. Expect multiple tableside performances where our group will experience Beef Wellington carved tableside by the chef and a lit Baked Alaska presentation-all done in front of the best view of the city!

The Bygone transports you back to the days of old-school social clubs and 1920’s excitement, while its open rotisserie grill, signature whiskey bar and craft cocktails add a contemporary flair. You access the restaurant from the hotel lobby in a private elevator run by an old-fashioned tuxedo wearing elevator operator named Leander, who wears a top hat and Chaîne pin (of course). This will be the perfect way to celebrate 60 years of fine dining in America!

Thursday, October 3When you are a member of the Chaîne, you are part of the family. Nowhere is that more true than at Alma Cocina Latina, where Executive Chef Enrique Limardo is a long-time member of our Washington DC Baillage. We asked Chef to treat us to a fine dining experience he would prepare for his own family! To top off the family experience, all of the wine served will be from Australia's famed Mollydooker, and served to you by Luke Marquis, the son of the owner!

The Alma Cocina concept is all about culture. According to Chef Limardo, “We strive to say something important to the world through our food. We don't just feed the palate, we feed imagination & soul.” The superb menu is inspired by Venezuelan culinary roots using contemporary techniques.

Mollydooker sits on 114 acres on the magical Seaview Ridge in McLaren Vale, home to Australia’s most iconic wines. Known for their full-bodied, silky red wines, Mollydooker gets high scores for both their Shiraz and Cabernet Sauvignon. Owner Sarah Marquis’ son, Luke (for whom Mollydooker’s Blue Eyed Boy is named), will be at our dinner to tell the story of Mollydooker and serve all their best wines, including the highly acclaimed Velvet Glove.

Chaîne member Chef Enrique Limardo combined with the young and dynamic Luke Marquis, will make this a wonderful Chaîne-Family event.

Nothing says 1959 and the 60th Anniversary of the formation of our Confrérie de la Chaîne des Rôtisseurs like dining at Petit Louis, Baltimore’s most famous French restaurant. Located in Baltimore’s lovely Roland Park Neighborhood, Petit Louis Bistro is an artisanal Bistro owned by the same team as Charleston.

You will be transported to Paris by the ambiance, service and traditional cuisine that is Petit Louis. This will be the most classic-Chaîne of our fine dining events, with five beautifully executed courses paired with superb French wines. Take a step back in time and try the old-world charm and cuisine of Petit Louis Bistro.

Wednesday, October 2 Italian food and Opera, what could go better together? For those members who want a unique experience of music, food and an optional old-fashioned Speakeasy, we present to you Tagliata and A Night at the Opera!

Tagliata is one of Baltimore’s most famous restaurants. The Italian chophouse boasts an impressive menu featuring hand-cut steaks, fresh hand-rolled pastas, house-made charcuterie, and a bounty of fresh seafood. Tagliata also offers the largest wine list in Baltimore, with an array of bottles from around the world with a strong focus on the wines of Italy. The dining room features an open kitchen with an elegant Tuscan farmhouse feel allowing for a view of your fresh pasta being hand-rolled by their chefs.

We are combining all that is Tagliata with a live musical performance between each course of our 4-course dining experience! We will have two Opera singers and a piano

player serenading us with your favorite arias, and yes, they will be taking requests. We promise lovely light Italian Opera (no Wagner).

Post dinner, you have the option of walking next door to the Elk Room, an old-fashioned speakeasy with a secret entrance. Although drinks at the Elk Room are not part of the cost of this event, we will take care of reserving a table, as tables are often hard to come by. Additionally, up to eight Chaîne guests will be able to go to the private members-only Cigar room in the back of the Elk Room, to puff-away in a richly appointed smoke-filled room!

This event will transport you back to old-world Chaîne elegance when Italian Food, Opera, Speakeasies and Cigars were the height of class—all just two blocks from our hotel.

Thursday, October 3 AHOY MATEY! Well “Shiver me Timbers,” the Chaîne is setting sail for a memorable three-hour tour of the Inner Harbor. Don't be a “landlubber”! The Chaîne des Rôtisseurs is about to conquer the high seas (not to worry, the Inner Harbor is calm as glass) and explore historic sites including Fort McHenry from the point of view held by Francis Scott Key from a British warship, as he penned the poem that became our National Anthem.

Of course, this is no ordinary boat trip. The ship will first pick up the Chaîne at the Four Seasons' private pier. There will only be Chaîne guests on the boat (any non-Chaîne folks will have to “Walk the Plank”), along with the Captain and four Pirate employees who will point out the historic sites and make sure we have fun!

The pirates will supply costumes and some pirate "booty"—a custom Chaîne pirate bandanna—so we can all look the part! A catered lunch will be served, including some Baltimore favorites, as well as a selection of beer and wine, including two beer selections specially crafted just for the Grand Chapitre by Chaîne member-owned brewer, Levante Brewing. Members of the Mid-Atlantic Region are donating the wine from their personal cellars, so expect to be impressed!

So please join us, Rain or Shine (if it rains the Pirates hand out ponchos—how civilized Pirates have become in 2019), for a fun day on the famed Inner Harbor as we sightsee, eat, drink, and become gourmand Pirates for the day!

Friday, October 4 and Saturday, October 5If you love fine food and wine, you often share a love of fine art and the better things in life. All art lovers will want to make the time to visit the world-famous Baltimore Museum of Art (BMA). And if you are a lover of French Impressionism, we have a special treat for you.

Attendees will enjoy a docent guided tour of the BMA, including the famous Cone Sisters Collection, which is one of the world’s largest collection of French Impressionism. The collection includes works by Henri Matisse (over 500,

the largest collection in the world) along with works by Cezanne, Gauguin, Van Gogh, and Picasso, collected over 50 years by Claribel and Etta Cone and generously donated to the city of Baltimore. We will spend one hour with the docent and followed by one hour on our own, to tour this magnificent museum.

A luncheon will then be served at the museum's award winning restaurant, Gertrude’s, which specializes in Farm-to-Table cooking.

Friday, October 4 Every year Baltimore celebrates “favorite son” Edgar Allan Poe on the anniversary of his death. Locals refer to their peculiar celebration as “Death Weekend.” What luck! Poe died on October 7, 1849, and our Grand Chapitre is falling on the 170th Anniversary of his death (any excuse to party). All of Baltimore will be celebrating, and we will be able to join in on the fun and festivities!

This special bus tour includes four stops that explore the tragic mystery of Poe’s death, including Poe’s house, Washington University Hospital and Poe’s gravesite. Your final stop is an interactive art installation at the historic Carroll Mansion, where you will participate in a reenactment of Poe’s funeral. Pay your respects at a special candlelight vigil for the master of horror and mystery.

Friday, October 4 and Saturday, October 5Attending a Grand Chapitre is all about Experiences. You can experience fine dining, the sights of the host city and, this year, the art of sushi-making and sake tasting!

Azumi Restaurant, named Baltimore's best Japanese restaurant by Baltimore Magazine, is located right in our hotel, the Four Seasons. Our friends at Azumi will be teaching, tasting and toasting the Chaîne des Rôtisseurs!

Attendees will be shown how to make sushi in this hands-on class under the guidance of professional sushi chefs in our own private Tatami room. After, attendees will dine on their creations, accompanied by a selection of sake with each course, eating as we go!

It’s time to go “Back to School” Chaîne-style, eating and drinking as we learn the fine art of sushi and sake!

Friday, October 4 and Saturday, October 5Napoleon once famously stated that “An Army Marches On Its Stomach.” The Chaîne des Rôtisseurs is an army that does the same! Members will have an opportunity to take an “only in Baltimore” Food & History tour of the historic Fell’s Point Neighborhood.

Well respected local touring company, Charm City Food Tours, will conduct a custom guided tour of Baltimore’s Fell’s Point neighborhood where they will point out sights of historical significance while we stop to eat at restaurants of tasty significance. Located a

short 15-minute walk from the hotel, we will meet in Fell’s Point and “march on our stomachs” like Napoleon, conquering sights and food along the way. Our food stops will focus on local cuisine that in some cases is completely unique to Baltimore. This is not elevated Chaîne cuisine, it is authentic and popular Baltimore eats!

And let’s not forget the history, Fell’s Point was established in 1763 and boasts over 161 buildings on the National Registry, including Baltimore’s oldest house. Start working up an appetite now, as we march on Fell’s Point!

The Grand Chapitre officially starts with a welcome reception, hosted with a Baltimore twist. Yes, there will be fine wine and Hors d'oeuvres at our host hotel, the Four Seasons, in their Harbor view room, where we will be joined by a special guest Edgar Allan Poe, on the week of his 170th Anniversary of his death.

Nationally famous Edgar Allan Poe impersonator, David Keltz, will join us for the reception and will perform two of Poe's most noted works: A Cask of Amontillado and

The Raven. In addition, attendees will have photo opportunities with Mr. Poe and two live ravens, courtesy of the Baltimore Zoo, during the reception.

Get reacquainted with your Chaîne friends from around the country and meet new ones, all overlooking the Inner Harbor with Edgar Allan Poe.

You cannot come all the way to Baltimore without enjoying their world-famous Chesapeake Bay crabs! The Chaîne will partake in the tradition, but will take it up a notch with special extras, like a custom Chaîne pin just for people attending this dinner, a Chaîne-monogrammed apron, and a swag bag to hold your gifts.

Our Friday evening dining event, with Bailli recognition, will be held in Baltimore’s famous crab and seafood waterfront restaurant, Bo Brooks. Diners will also enjoy wine, and two beer selections not only specifically crafted for the Chaîne, but with unique production label Chaîne can art as well. Levante Brewing Company, located in West Chester,

Pennsylvania, has developed a huge cult following and enjoys a reputation for innovation and creativity. What does a Chaîne style Crab/Seafood feast include? Oysters, Clams, Shrimp, Hot Hors d ’Oeuvres, Lobster Mac & Cheese, Fried Chicken, Kicked Up Cole Slaw, Seasonal Fruit Cobbler and, of course, ALL THE CRAB YOU CAN EAT!

If you are coming to Baltimore, you must enjoy this special Chesapeake Crab Experience! Dress for this event is casual, since we will be wearing our aprons and using our mallets to open up the delicious Maryland Crab!

The 2019 Grand Chapitre will conclude the week with a gala black-tie dinner celebrating the 60th Anniversary of the 1959 formation of our Confrérie de la Chaîne des Rôtisseurs in the United States of America. The Four Seasons hotel will be our host location for the Saturday Gala. Harold S. Small, Bailli Délégué des Etats-Unis, will preside over the Induction ceremony, assisted by Bailli Provincial de Mid-Atlantic John C. Fannin III.

The event will feature live music and dancing and a few special surprises in honor of our 60th Anniversary. This includes serving a wine from vintage 1959 and a Sauternes in magnum from 1985. This event should prove to be the highlight of the weekend!

The Four Seasons Hotel, our host hotel, is quite simply the finest in the city. The hotel is a modern, urban retreat, positioned at the edge of Baltimore’s Harbor East, offering a host of luxurious amenities ranging from a five-star Spa to a rooftop pool, setting the scene for fabulous vacations, romantic getaways and business stays. Miles of walkable waterfront, top restaurants and city landmarks are all within easy reach. All of our Exclusive Dining Events and Excursions are either a walk or short cab ride from the hotel.

On both Wednesday and Thursday night, one of our Exclusive Dining Events will be a dinner at Bygone, on the top of our hotel, offering the finest view of the city. On both Friday and Saturday one of our Excursions is a Sushi making class (with paired Sake) at Azumi, located in the hotel. In addition, all Friday meetings and all of the Saturday events will be located within the hotel. Best of all, we have secured one of the lowest standard room rates for a Grand Chapitre in years!
