    Participants of the Art & Craft of Sugarwork Training Workshop

  • ECA senior chef member, Ahmed Abdel Salam Younis, conducted a successful 2-day training workshop on The Art & Craft of Sugarwork on 12-13 September, organized by the Egyptian Chefs Association and kindly hosted by the Ramses Hilton Cairo. Due to the high demand, the workshop also

    took place for the Red Sea Chefs on 30-31 October, kindly hosted by the Hilton Hurghada Resort. Both workshops were sponsored by ECAs Diamond sponsor Dreem SAE.

    Chef Ahmed Abdel Salam Younes has won several medals at national and international culinary competitions, and attended intensive sugar craft training workshops in France and Canada, where he learned from the masters.

    All the participants were eager to learn all about the ins and outs of working with sugar, from tools and equipment, to

    temperature control and the techniques in pulling and blowing sugar. Especially the hands-on-practice to create your own sugar showpiece proved to be a valuable experience for all.

    The Egyptian Chefs Association would like to thank the management teams of Ramses Hilton Cairo Hotel and Hilton Hurghada Resort for their great support in hosting the training workshops; the Association wishes to thank Chef Ahmed Abdel Salam for generously sharing his knowledge with his chef colleagues, and also wishes to thank Dreem SAE for their sponsorship.

    The Egyptian Chefs Association (ECA) is growing and under the leadership of Chef Essam Sayed, Executive Chef of the Hurghada Marriott Beach Resort, the Association has now opened what is considered the first ECA chapter outside Cairo, the Red Sea Chefs Chapter. The ECA

    office in Hurghada aims to better serve the Associations members in the Red Sea region by conducting more training workshops and chefs competitions in the area.

    The Red Sea Chefs Chapter office, which opened last September, has recently employed two dynamic persons to serve the Red Sea members: Dina Kamel Fahmy and Neveen Gamil Rachid. The office is stocked with a wide selection of outstanding culinary books and bilingual (Arabic/English) student manuals for professional chefs to advance their education.

    Essam Sayed Mohamed, Executive Chef Hurghada Marriott Beach Resort, is the chairman of the Red Sea Chefs Chapter. Chef Essam is assisted by Nageh Ahmed Rekaby, Executive Chef Continental Resort Hurghada as Assistant Chairman, and four other dedicated chefs who volunteer to help the development and growth of the Red Sea Chefs Chapter: Waheed Moustafa Ali Moustafa, Executive Chef Festival Riviera Resort; Hesham Khalil Ibrahim Ahmed, Executive Pastry Sheraton Soma Bay Resort; Sobhy Mohamed Abdel Azim, Executive Sous Chef Iberotel Makadi Beach; and Moustafa Mohamed Eweida, Executive Sous Chef Hilton Hurghada Resort.

    The opening of the office was celebrated on Sunday, 25 September, with a lavish Cocktail Reception at The Island of the Hurghada Marriott Beach Resort under the starry sky. In attendance were Ahmed El Nahas, Chairman of the ECA; Chef Markus J. Iten, President of the ECA; and Mirjam van IJssel, Executive Director of the ECA; along with Chef Essam Sayed, Chairman of the Red Sea Chefs Chapter; and the host Essam El Garf, General Manager of the Hurghada Marriot Beach Resort. With a bevy of hospitality luminaries from El Gouna to Marsa Alam, many members and friends came out to get acquainted and network among their pals.

    February 12The Sapore tasting Experience will be held from 25 to 28

    February at Rimini in Italy. Following the success of the previous edition which welcomed 79,233 trade visitors, Sapore continues its expansion under the banner of innovation to showcase and promote the business of companies trading in the food and beverage world. The sectors European scene, shows spending on eating out for a total of 468 billion euros, a figure that has increased by 21 billion over the last ten years. In Italy, the growth of the demand for food and beverage is to be attributed almost entirely to the eating out market.
