2 small onions, quartered (optional)

6-7 tbsps spring onion whites

3-4 tbsps spring onion greens

1 tbsp chopped garlic

1 tbsp chopped ginger

2 tsp soya sauce

Crispy Corn

Ingredients:

Sweet corn cobs - 2

Corn flour - 2 tblsp

Rice flour - 1 tblsp

Chilly powder - 1 tsp

Salt - for taste

Oil - for frying

Tomato - 1

Onion - 1

Coriander leaves

Lemon juice - 2 tsp

Chaat masala - 1 tsp

2 tsps vinegar

1 tbsp corn flour + 5 tbsps water

1/2 tbsp brown sugar

1 large green capsicum, cut into thin slices

1 1/2 tbsps tomato sauce

1 tsp green chilli paste

salt to taste

2 tbsps oil

For marinade: (marinate baby corn with below ingredients for 10 mts)

large pinch black pepper pwd

1/4 tsp ginger-garlic paste

salt to taste

1 tbsp corn flour + few tbsps water (the marinade should just coat the baby corn)

Crispy Corn

Ingredients:

Sweet corn cobs - 2

Corn flour - 2 tblsp

Rice flour - 1 tblsp

Chilly powder - 1 tsp

Salt - for taste

Oil - for frying

Tomato - 1

Onion - 1

Coriander leaves

Lemon juice - 2 tsp

Chaat masala - 1 tsp

1 Heat 2 tbsps oil in a flat pan, place the thinly coated baby corn pieces next to one another and shallow fry till brown. Flip over and let it brown the other side. Remove and keep aside.2 Heat a heavy bottomed vessel, pour the left over shallow fried oil (if necessary add 1-2 tsps more oil), add the chopped ginger and garlic and saute on high flame for about 30 secs. Add the chopped spring onion whites and quartered onions and saute for 2-3 mts. Add sliced capsicum and stir fry on high flame for 3 mts. Add green chilli paste, tomato paste, soy sauce, vinegar, sugar and combine. Add the sauteed baby corn and toss for a mt on high flame. Add 1/4 cup water and adjust salt if necessary.3 Add the cornflour water and combine on high flame, tossing the contents, for 3 mts. You will find that it becomes thick due to cornflour.4 Add the chopped spring onion greens and combine. Garnish with more spring onion greens. Serve hot as a starter/appetizer.

Cold and wet weather is pleasant and a welcome change from the sultry summer we’ve had this year. Comforting, like an occasional deep fried indulgence. But unabated rain is anything but enjoyable. I prepared a spicy Indo-Chinese appetizer, Chilli Baby Corn, which served as a perfect antidote, adding a cheerful note to the day. Makes for a warm, well spiced appetizer.

Maize,corn,mokkajonna,bhutta,….who doesnt love corn?I have such wonderful memories of amma roasting corn cobs and rubbing them with chilli pwd,salt and lemon

juice especially during the monsoons.Eating piping hot corn on the cob is my kind of comfort food.Just love eating corn in all forms, be it corn bhel,corn chaat or flavoured ‘corn in a cup’ or just plain steamed corn kernels.I regularly prepare a healthy sprouts corn salad with fresh corn and sprouts which is healthy and a wholesome meal in itself.Corn is high-fibre food and is a good source of Vit B1, Vit B5,Vit C, Folate,phosphorous and manganese.

Crispy corn is a not-too-spicy snack that is prepared with corn kernels,egg,cornflour,ginger-garlic paste and pepper.This is something which can be made in a jiffy without much fuss and preparation..of course if the fresh corn kernels are cut off the cob already..:).That’s the only part which is time-consuming..peeling off the husk layers and removing the corn from the cobs.If you have some frozen corn it sure makes life easy..:)

1½ cup scorn kernels1 egg beaten slightlyenough cornflour to coat the corn kernels or seeds1/2 tbsp maida (all-purpose flour)1 tsp ginger-garlic pastesaltoil for deep-fryingpinch of pepper pwd/chilli pwd (optional)chopped coriander leaves for garnishMix together the corn kernels, egg, cornflour, maida, garlic-ginger paste and salt such that the steamed corn is well coated with this mixture.Heat oil in a vessel and deep fry the corn over high heat until golden brown.Drain on absorbent paper.Sprinkle pepper pwd/chilli pwd and garnish with chopped coriander leaves.

Note:You can try this variation.Fry some chopped spring onions with a little tomato sauce in 1 tsp of oil and combine with deep fried corn and garnish with coriander leaves.Believe me,it’s a great tasting snack.

1. Toss the corn with besan,corn flour,red chilli powder,salt.deep fry in moderate hot oil.remove on a tissue paper.

2. again put 2tsp oil in a pan.add the onion.fry til tranclucent.add green chillies,fried corn,salt,sugar,ajinomoto,tomato.toss and remove.add lemon juice and sprinkle coiander.
