• 2 tsp (10 mL) Orange zest

• 1 tsp (5 mL) Club House Ground Ginger

• 1/4 cup (50 mL) White balsamic vinegar

• 2 tbsp (30 mL) Club House La Grille Spicy Pepper Medley Seasoning

• 1 tsp (5 mL) McCormick® Gourmet Thyme Leaves

• 1/2 cup (125 mL) Canola oil

S A N D W I C H :• 2 lbs (1 kg) Chicken tenders

• 8 6-inch (15 cm) French sandwich buns, sliced lengthwise

• 8 Romaine lettuce leaves

• 16 slices Tomato

• 3 tbsp (45 mL) Sliced green onions

S A U C E :• 2 tsp (10 mL) Grainy mustard

• 1 cup (250 mL) Prepared guacamole

• 2 tsp (10 mL) Fresh orange juice

• 1 tsp (5 mL) Orange zest

• 2 tbsp (30 mL) Club House La Grille Spicy Pepper Medley Seasoning

• 1/2 tsp (2 mL) Club House Crushed Red Pepper

DIRECTIONSSTEP 01For the chicken, whisk together all marinade ingredients in a bowl until well blended. Reserve 1/4 cup (50 mL) marinade for brushing on chicken during grilling. Place chicken in a large resealable plastic bag or glass dish. Add remaining marinade; turn to coat well. Refrigerate 30 minutes or longer for extra flavour.

STEP 02Meanwhile, for the avocado mustard sauce, combine mustard, guacamole, orange juice, orange zest, pepper medley and red pepper. Mix until well blended. Cover. Refrigerate until ready to serve.

STEP 03Remove chicken from marinade. Discard any remaining marinade.

STEP 04Grill chicken over medium-high heat for 4 to 5 minutes, or until chicken is cooked through, brushing with reserved marinade during the last few minutes of cooking. Spread French bread with avocado mustard sauce. Top with lettuce, tomato and chicken. Sprinkle with green onions.

Dear The Wine Ladies,With the summer now in full swing, and my

husbands one month holiday upon us he will

soon be resuming his duties as the “Barbecue

King” of the block. I’d like to stock up on some

wine, and am wondering what kinds of wine

might be good choices to go with barbecue fare,

particularly for his love of meat adorned with

his homemade spicy, slightly sweet and smoky

barbecue sauce! Grilled salmon too is a regular.

Dear Barb,Our advice would be to go for bold, youngish and fruity for meats adorned with your husbands barbecue sauce to start. Opting for wines with a little oomph, bolder in flavour, bright fruit and juicy, and with a bit of spice will allow them to stand up to both the sauce and the charred notes and smoky flavours that come from the grill. Zinfandels, for example make for a great pairing with their bold, fruity notes partnering especially well with barbecue sauce-adorned recipes, as do Syrahs, Shiraz from Australia and wines from the Rhone Valley. For other general meats on the grill, a few of our favourites these days representing suburb value are the Malbecs from Argentina, and Carmenere from Chile. Both full bodied, with rich flavours and texture and with sweet softer tannins they tend to satisfy many a palate and pair perfectly with a wide range of barbecue fare. For the occasions when simply prepared meat might be on the grill, like a juicy steak you could always go with the old traditional Cabernet Sauvignon, a classic pairing.

To your other summer staple we are big fans of a good Pinot Noir to pair with salmon, salmon burgers or even beef burgers. As for whites, the blue sky is the limit, fresh, crisp Sauvignon Blancs are amazing with grilled veggies, herb seasoned poultry or fish, zesty and with their hint of grassy and herbaceous notes, delicious! We love an off-dry Riesling or Austria’s number one white grape Gruener Veltliner for spicy recipes, and last but not least when in doubt, “think pink”! Rosés, are all the rage these days, no longer the very sweet styles of yesteryear, a dry rose is the ultimate all around barbecue

wine. Dry, crisp, refreshing with notes of strawberries, raspberries, hints of citrus, even watermelon… rosés are able to play a dual role, with enough body to take on full flavours of foods off the grill substituting for lighter reds, and/or not too overpowering to pair with lighter fare in place of a full bodied white.

One additional word if we may, don’t be afraid to chill your reds down just a tad, we often serve them too warm, and with the summer heat, just a little chill will go a long way in getting the most enjoyment of the bottle.

CANADA DAY FESTIVAL AT CHARLES DALEY PARK

Charles Daley Park was a beehive of activity on July 1st in honour of the country’s 146th birthday. There was face painting and inflatable bouncers, entertainment, a science show and of course, birthday cake.

The festivities ran from 1:00 pm - 10:00 pm, with the opening ceremonies beginning at 3:00 pm, followed by the serving of birthday cake, prepared by Beamsville Bakery & Patisserie.

Entertainment kicked off at 1:00 pm with the British Invasion Band. Beamsville Music Studio students performed at 3:30 pm, Ashtar Avatar - Magician mystified guests with illusions on the stage at 4:30 pm, The Believers took to the stage at 5:45 pm followed by Jeff Brown at 6:45 pm. Jonesy finished off the entertainment portion of the event at 7:45 pm.

The evening was capped off with a spectacular firework display.

4TH ANNUAL PHELPS HOMES BUILDING LITERACY FAIR

The Phelps Homes Building Literacy Fair is designed to raise awareness about the Library’s summer literacy programs and was held on June 10th. Over 300 people attended.

POULTRYFEST NIAGARA

On June 25th, PoultryFest hosted a free event for the whole family to enjoy. A number of activities were hosted for kids such as Touch A Truck, duck races, and remote controlled boats, inflatables, chicks and chickens. Throughout the day there were a variety of performances, musical entertainment, classic cars and truck show, marketplace, competitions, food, and of course... CHICKENS were all part of this fun-filled day!

MUTT SHOWGrimsby's annual Mutt Show took place June 29th at Coronation Park.

This fun event saw canines compete in a number of fun categories including best trick, best costume, best hair, best look-a-like, most unique, craziest tail and most ear-resistable. Prizes were be awarded to the first, second and third place winner in each category.

YEAR-END MESSAGE FROM PRINCIPAL SHARON BURNSAt this year’s commencement I had the opportunity to thank the many people involved in helping our students cross the stage and I would like to further my gratitude on these pages here.

I truly believe it takes a village to raise a child and that high school is part of this village. So too is the community at large. Much thanks to all community members who have taken our students in as part of co-operative education. This genuine work experience is so valuable as it allows our students an opportunity to try out some of their post-high school interests. As well, thank you to all the Mums and Dads and Aunts and Uncles, etc., and their businesses who allow Grade 9 students to visit during the Take Our Kids to Work Day in the fall. Also, many community members donate scholarship monies for graduating students on behalf of a workplace or as a memorial - a special thank you to you for keeping memories alive while supporting the high costs of post-secondary education. In fact, South Lincoln graduates earned over $35,000 in scholarships this year. This is an outstanding figure. Finally, thanks to our trustee Diane Chase and Mayor Doug Joyner for supporting our school initiatives and our students in many ways such as our recent ramp-building to make Smithville businesses accessible to all.

We celebrated several hard-working students at commencement and I will tell you about three of them here:

The Ontario Principals Council provides an award to each school, every year, to enable Principal’s to recognize outstanding student leadership. This year’s recipient participated in the school play, Epic Europe, and was a JuMP mentor who is always ready with a smile. A positive outlook and a leadership mindset are two other traits this person exhibits. She played field hockey for us this year and was both a math tutor and a peer tutor, even while working at Gino’s Pizza. Whenever I asked this person for help or advice, she was quick to move on it. This year’s OPC Principal’s Leadership award winner is Student Council President, Danielle Langendoen.

The Vice Principal’s Award, contrary to popular belief does not go to the student who spent the better part of their high school career in the office. This award is presented to a student who has distinguished his or herself though dedication, hard work and commitment to their own success. Our award winner has been active on Student Council, was a JuMP mentor, was a four year member of the Bear’s football team and has been active in a number of other sports and intramurals while at SLHS. Outside of school he is active in the martial arts as both a participant and an instructor. I had the privilege of getting to know this year’s recipient through our interactions on the football field, and in conversation while charting a course for his post-secondary aspirations. While it wasn’t going to be an easy path, this student rose to the occasion, worked hard, achieved his goals and will be attending York University in the Criminology program this fall. Congratulations Connor Crabbe.

The South Lincoln High School’s Principal’s Choice Award is presented to a graduate who demonstrates leadership and a spectacular work ethic during four years of high school. This recipient is super compassionate yet also super competitive. Being diligent in all things academic, this person has managed to earn not one, not two, but 3 marks of 100% since Grade 10. This student has worked on the school play (I’m sensing that getting involved in sports and plays is a very good thing) and has worked on yearbook and as a score-keeper and has also played basketball for 3 years. She is driven by an internal motivation to succeed rather than an external motivation for material gain. Jessica Radko is this year’s well-deserved recipient of the South Principal’s Choice Award.

Our graduates will still need our support as they navigate the worlds of college / university / apprenticeships / the workplace or world travel. They will need the village standing behind them, yet allowing them to step forward and grow. Grads, you might be done with high school, but know that we are here for you.

Thanks to all of our students, staff, and the school community for an amazing year. The achievements of our students over the course of the year serve as an amazing reward to all of us - their success is the focus of our school. Academically, socially, and in countless co-curricular activities, our BDSS students have demonstrated true Buccaneer pride for all to see.

A final congratulations to our Vice Principal, Mrs. Janice Sargeant who leaves BDSS for the principalship at Eastdale Secondary in Welland. Mrs. Sargeant quickly became an integral part of the BDSS team, and worked tirelessly to support students and staff alike. Welcome to our new Vice Principal, Mrs. Robin Lakeit, joining us from A.N. Myer Secondary in Niagara Falls.

CONGRATULATIONS CLASS OF 2016On Tuesday, June 28th the entire Blessed Trinity community bid farewell to the largest graduating class to date since its inception at Brock University. With 2,000 people in attendance, 250 graduates received their Ontario Secondary School diplomas. It was an exciting night for all our graduates and their families as we got to celebrate this significant milestone with prayer, song and reflection. Congratulations to Joseph DeFilippis; class Valedictorian who paid tribute to the entire graduating class. Congratulations to the graduates who received awards and more importantly, we graciously thank and acknowledge all those individuals who continue to support graduation scholarships through their financial generosity.

SCIENCE NEWSCongratulations to Grade 10 student Myles Mueller who won the bronze medal at the Canada Wide Science Fair in Montreal on May 15th. Mueller developed a tool coating for cutting machines that would prolong their lifespan. His project produced a coating that prolonged the life of the cutting tools twenty times for steel machining and two times for titanium. The developed coating also was shown to keep costs down by reducing the number of tools employers have to maintain, reduce how often they need to be changed, and cut down on material loss.

Congratulations to all Grade 10 students who wrote the British Columbia Depart-ment of Physics and Astronomy’s Michael Smith Challenge. All contestants scored very well, especially Zoe Bertrand, who had the high-est placed score in the school.

The University of Waterloo Avogadro Exam is a chemistry exam that is written by grade 11 students. Congratulations to Keagan Kieffer who had the highest score in the school, and also scored within the 81st percentile in all of Canada.

The Sir Isaac Newton Exam (SIN) is a national high school physics exam that is run by the University of Waterloo. Every year approximately 5,000 students across Canada write the exam. Congratulations to Liam Schmidt who score in the 87 percentile and Chris Zhao who scored in the 85 percentile. In May, Blessed Trinity hosted our second annual feeder school science Olympics, where teams from all feeder schools attended a morning filled with various science and engineering challenges. For the second year in a row, Our Lady of Fatima took home 1st place and the science Olympic trophy.

In June, Grade 11 student Emily Schram attended the McMaster Girls in Engineering Workshop. There she developed her own lip balm in the chemistry engineering lab and also created mini-circuits and completed coding challenges. She had the opportunity to hear from a variety of guest speakers regarding Women in Engineering and was inspired by the fascinating work that was being completed by female scientists from all across Canada.

GRIMSBY S E C O N DA R Y S C H O O L

GSS has more winners to celebrate this spring! On a sunny Saturday in June, the District School Board of Niagara held its Super Mileage Challenge. As the sun shone and the student-engineered cars rolled into the race pits, Grimsby’s “little car that could” did. A sleek little engineered Super Mileage car that was allowed only 250ml of fuel wound its way through the course. As the 8 cars completed the laps, they gradually began dropping out as they ran out of fuel. But not Grimsby, it kept maneuvering the course to outpace its closest challenger by 2 laps as Jack Miller drove the car to victory. The checkered flag was Grimsby’s. In addition, the team was also awarded the title of best-engineered car. Congratulations to Mr. Favotto and his manufacturing class.

Ethan McAlpine, a member of the Grimsby Secondary School Rowing Team, won the Triple Crown this year and has been selected to join the Junior National Rowing Team, representing Canada, as they compete in Rotterdam, Netherlands this August. To win the Triple Crown in rowing, Ethan won Gold Medals at the Stotesbury, the U.S. Nationals and the Schoolboy Regattas in senior men singles this spring. We wish Ethan all the best as he competes internationally this August.

Andrea Wasyleczko, our Student Council President this year has summarized the school year as a busy one for the student body from September to June. “It felt like just yesterday the grade 9’s and their families were being welcomed to GSS at the grade 9 BBQ, however now it is time to start preparing for the final exams of the 2015-2016 school year.

Throughout the school year many students have been very committed to their academics, athletics, clubs, and contests. Their commitment has most definitely paid off as academic results have been excellent, athletes

have done exceptionally well with many trips to Zone finals, SOSSA and OFSAA, clubs have worked tirelessly to surpass their goals set at the beginning of the year, and many students have received awards in contests such as the arts, writing, math, science and technology.

Camp Eagle has proven itself yet again to be an exceptional program. The overall goal of Camp Eagle is to make our grade 9 students’ first GSS experience fun and memorable. Many long term relationships between campers, senior students and GSS staff were made, and the individual growth within every grade 9 student was phenomenal.

This year’s “Eagle Mentorship” pilot program was a huge success. A large group of grade 11 and 12 students worked throughout the year to plan fun yet informational mentorship sessions for the grade 9’s promoting involvement in the school, preparation for exams, the importance of inclusiveness and self confidence, making positive choices and most importantly paying it forward and setting good examples for next year’s grade 9’s.

Student Council has put forth their best effort to make the days at GSS more enjoyable by giving back to the student body and the community with many new ideas. They organized monthly Spirit Days and Holiday Spirit Weeks, four dances, including a Winter Formal and Prom, free hot chocolate and tea days and a free pancake breakfast for the entire student body. They arranged for Food Trucks to come to the school and organized a year-end carnival. In the morning, the grade 9’s welcomed grade 8’s to GSS for fun and games followed by activities open to the entire student body in the afternoon.

Also from Student Council, Lucas Penny and Andrea Wasyleczko attended monthly meetings at the DSBN Board Office to help plan the “Step Past the Stigma” Walk, organized by the Student Trustee Senate. The purpose of the walk was to raise awareness and funds for Mental Health support for students.

The Music Department set off on another successful cruise this year. They practiced hard before-hand and performed many great shows on the ship. Unforgettable memories were made and the special bonds between the music students grew stronger. Both Sears Drama and the Improv team have had an exceptional year. With many long practices, performances, charity shows and competitions, these two groups have displayed an outstanding level of talent.

From the viewpoint of a student I observed a great sense of inclusiveness and school spirit this year. It was wonderful seeing caring and compassionate students walk through the halls and support one another every day.” We wish Andrea well as she continues her studies in Nursing at McMaster University.

As another school year comes to a close, plans are in high gear for September as we prepare to welcome our students and staff for another year of learning together and achieving success in the classroom and beyond.
