WELCOME NOTE
3CONNECT BUSINESS June 2015
Lee Strand is delighted to sponsor the Connect Kerry Lee
Strand Women in Business Awards 2015. The awards are
a wonderful opportunity to celebrate and recognise the
outstanding contribution Kerry women have made and
continue to make to the business economy in Kerry and
beyond.
We are all well aware that working in business can be
challenging, but with hard work, vision and dedication it can
also be very rewarding. Lee Strand is delighted to announce
that we will reach a historic milestone in 2020, when we will
celebrate 100 years of business success. What has kept
Lee Strand at the forefront of the market has been based
on four cornerstones in our business strategy. First and
foremost, providing high quality products for our customers.
Second, achieving national and international awards in
environmental excellence. Third, continuous innovation in
production and new product development. Finally, having a
strong commitment to keeping it local and supporting the
local community.
Lee Strand is owned by farmer shareholders, farmers who
are all living in our local community, with children and family
in our local schools, societies and sporting clubs.
We have a strong commitment to give much valued
support through various sponsorships in local schools,
festivals, charities, events, sport clubs and awards such as
the Connect Kerry Lee Strand Women in Business Awards
2015. It is important that we all, as a business community
also make an effort to keep it local. Support each other’s
businesses and assist in the future growth of the local
economy and employment in Kerry.
Lee Strand would like to congratulate everyone nominated
this year for a Connect Kerry Lee Strand Women in Business
Award. We would also like to wish continued success to
Kerry women working in industry, managing a business and
entrepreneurs in the years’ ahead. Finally, Lee Strand would
like to acknowledge Margaret Brick, Connect Publications for

5CONNECT BUSINESS June 2015
MEET THE MANAGER of the Irish Academy of Hospitality & Tourism at the ITT
Mary Rose Stafford is the Manager of the Irish Academy of Hospitality & Tourism at the ITT whilst also the Head of Department of the Hotel, Culinary Arts and Tourism Department at the Institute, Mary Rose also currently serves of the board of Fáilte Ireland, to which she was appointed in 2013 by Minister Varadkar. She has fifteen years national and international hotel management experience, working with establishments in New York, London, Dublin and Kerry. She also has a comparable number of years experience in third level education. Mary Rose is the author of two books and numerous academic papers, and is passionate about the tourism industry in Ireland - and more importantly, the people who work in it.
How important is the tourism industry in Kerry?Tourism is not just something that happens in hotels and at visitor sites - in Kerry it is an industry that is actually everyone’s business. One in four jobs in the county are directly supported by tourism and countless more are linked indirectly. In fact, tourism is the one industry we can count on to provide and maintain the local jobs that support local families and businesses. We’re all involved in a way - every family has someone who’s either directly or indirectly linked to tourism in Kerry. And we all need to do our part in looking after our most valuable asset - the natural environment - and looking after the visitors who come to enjoy it. The tourism industry is even more important to Kerry because of the jobs it can generate in more rural locations that may not otherwise attract any significant economic activity
like the larger urban centres can. The Wild Atlantic Way initiative especially brings new opportunities for Kerry’s tourism industry.
What is the ITT’s role in tourism? The ITT plays a central role in supporting the tourism industry, providing specific
training and education to ensure a high standard of skills and talent are available to the sector. Most tourism businesses in the county have graduates from the ITT. We train hundreds of students each year - and in a county so dependent on tourism, we can never have enough graduates. Fáilte Ireland and the Higher Education Authority fund our programmes but we also work very closely with industry in finding new funding opportunities through Skillsnet and Springboard. We were the only college in Ireland in the last three years to receive Springboard funding to train chefs for the industry. I believe we were successful in this because of our external engagement with the industry and that we listened to their needs and requirements . The key is to stay relevant and ensure our graduates have the talents and competencies that industry
requires. All of our programmes at the IT Tralee have a work based learning element so our students are well prepared for the workforce.
What is great about these courses is that successful students are guaranteed employment in the sector - in fact, the demand is so high that many of them get job offers before they even finish their courses. The ITT delivers a wider range of training from one year courses at Higher Certificate to Degree, Honours Degree to Masters and PhD. Depending on their course of study, students can enter the college through the CAO but also direct entry through industry nominations. We specialise in the delivery of culinary arts, adventure tourism, travel & tourism, hospitality studies and management and tour guiding.
What does the Irish Academy of Hospitality and Tourism (IAHT) do? The Irish Academy of Hospitality and Tourism was set up in 2012 to deliver continuous professional development for the tourism and hospitality sector and to deliver applied research to support the industry. The IAHT is guided by an advisory board of senior executives from the Irish Hotels Federation, Irish Hospitality Institute, Restaurant Association of Ireland, Vintners Federation of Ireland, Fáilte Ireland, Kerry County Council as well as leading academics from University of Strathclyde in Scotland and University of Waikato in New Zealand. We are training the next generation of hotel managers all over Ireland, from Sligo to Dublin to Wexford - and of course, Kerry, as part of our suite of continuous professional development programmes. We created the Trainee Hotel Manager Development Programme in collaboration with the Irish Hotels Federation, Fáilte Ireland and the Irish Hospitality Institute. We are the only facility in Ireland providing this BA in Hotel Management programme and we have students travelling from all over Ireland to
6 CONNECT BUSINESS June 2015
the Institute to complete their studies. The students are nominated by their hotel to take part, and they attend college for intensive blocks of study. Along with on-site study at the ITT students complete online modules and work-based learning to complete their degree in hotel management over three years. They also have the opportunity to complete a fourth year if they wish to pursue an honours degree. The IAHT also supports and drives the research capacity of the ITT in the tourism sector and we work on a number of research and development projects with both the private and public sector at a local, national and international level.
What does your job involve?I manage the IAHT and the Hotel, Culinary Arts and Tourism Department. I have a great team of professionals around me, who bring and share an amazing combination of industry experience, passion and academic expertise with our students and industry partners. It is a wonderful job that gives me the opportunity to work closely with the tourism industry and communities to constantly develop our tourism experience at a regional and also at a national level. The most important aspect of my job is to ensure the delivery of a high standard of education and to make sure that we are aligned to industry needs to ensure they have the
workforce to deliver excellent service to our visitors. Some other key projects I am involved in include;-participating in the steering committee for the Expert Group on Future Skills Needs for the Hospitality Sector. This will deliver a report to inform future skills requirements to 2020 to ensure Ireland continues to provide excellent standards of service for our industry; -working closely with Kerry County Council on developing a tourism strategy for the county and support a number of initiatives in collaboration with them; - developing and launching the ‘Tourism Insight’ online module for second level transition year students in collaboration with the Irish Hospitality Institute and Fáilte Ireland;- working with the Valentia Island community and the Department of Heritage on an international project around the Transatlantic Cable story.
So how does Maryrose chill when away from all this?I am lucky enough to live on Banna Beach, so come rain, hail or sunshine I get out there as often as I can to enjoy the wind, the waves, the sunsets, the calm and the storms……and I have to admit I am an avid soccer fan, so I am looking forward to next season’s Premiership, Champions League and Euro 2016.

I think that the word ‘business’ has changed a lot for teenagers over the past few years. It is no longer a subject to dread, but it is a hope for the future. Years ago, when we were asked what we wanted to do with our lives, there were limited options. Most of them were quite basic, and even though those options are still on the table, people don’t tend to desire them as much anymore. The prospect of setting up your own business is no longer scary, it is exciting.
It is no longer something just for the rare few, but people now feel like anyone can do it. It doesn’t matter what field that you are in, people feel like they can achieve.
I think that this is the most amazing change in the world of business. Especially for the teenagers that have grown up in the middle of the recession. It is not the reaction that you would expect, but it probably the most inspiring. I am happy to be apart of a generation that hopes for a future in business. Whether that be in starting up your own business or not, I think that it is an achievement. We have all agreed that school is nothing like High School Musical, and instead of being sad about not getting to conduct perfectly choreographed routines in our hallways, we are thinking about our futures. And I think that is a perfectly good place to start.

EU PROJECT PROMOTING FOOD INNOVATIONTRADEIT stands for: Traditional Foods, Entrepreneurship, Innovation and Technology Transfer
Between 2014 and 2016, the TRADEIT team will organise events across Europe to support traditional food producing enterprises, especially those in the dairy, meat and bakery sectors. The project aims to kick start innovation and knowledge sharing in an accessible and practical way. Traditional foods represent a growing segment of the EU food market. Consumers are increasingly aware of the food chain, the value food provenance and the benefits of purchasing locally. This expanding market brings its own particular set of challenges. The predominantly small- to micro-scale food companies in the artisan and craft sectors are typically under-resourced which limits opportunities for involvement in innovation and knowledge sharing. These activities are one of the keys to capitalising on the current market opportunities. TRADEIT led Dr. Helena McMahon at the Institute of Technology Tralee was set-up to help small and medium-sized traditional food enterprises to effectively engage in innovation for growth, competitiveness and a sustainable future.
Whats on offer from TradeitIn total, over 70 training events and workshops are on offer for SME food producers in Europe. These events address pricing strategies, labelling, marketing, food safety, product development, plant design, business models and supply chain. The events bring together small and medium-sized enterprises, experts and technology providers. During brokerage events, which are foucsed on thematic areas (e.g. Dairy, Meat, Bakery, Sustainability and Packaging) enterprises can network, explore emerging trends, acquire new technologies and develop partnerships. Companies from across Europe have participated in these events, with several companies are already exploring new partnerships as a result of engaging with TRADEIT. The Irish Brokerage Event is focused on the area of food safety and quality and will take place at IT Tralee on September 30th. The
TRADEIT Marketplace hosts the business profiles of SMEs and Technology providers from across Europe which are seeking and offering partnerships, tehcnology and business opportutinties. Is there a wide network? The TRADEIT network is a European wide network, with a reach of ~200,000 stakeholders including food researchers, policy organisations, consumers, technology providers, entrepreneurial and food producers networks and individual SMEs. The network is evolving and dynamic, network members can both benefit from the TRADEIT support and event offering and provide input to the project. For example, 320 traditional food enterprises in Europe recently prioritised current business and technology related needs and the barriers to growth. This information was used to inform the design of current project events, including those that are run from the Irish Hub based at Institute of Technology Tralee.
Entrepreneurial mind-set for researchersIn addition to the events directed at small and medium-sized enterprises, the project has key pillar of activity dedicated to supporting food researchers. An intensive entrepreneurial academy will take place in Italy in 2015 to provide researchers with an entrepreneurial mind-set and skills to collaborate with industry. Food researchers will learn how to commercialise research outputs, because they develop the technologies of tomorrow. This Summer Academy has been developed by the Centre for Enterprise Development and Entrepreneurship (CEED), managed by Breda o Dwyer at IT Tralee, the TRADEIT European lead on developing a model of
best practice for entrepreneurial Food Research Centers.
Want to get involved in the TRADEIT network? For free subscription, go to www.tradeitnetwork.eu and receive the specific information that is relevant to your business. In addition, you can contact one of the nine local hubs in Europe. Local hub advisors are available to discuss your business, your needs and to explore how TRADEIT can develop and deliver support, tailored to the needs of your business. They can also provide more information about upcoming workshops or other events that you can join. The Irish Hub is located at IT Tralee and the TRADEIT team is available to support you. TRADEIT is developing a priority listing of the research and innovation needs of small and medium-sized enterprises, which upon completion will be presented to the European Commission in the form of a research and innovation agenda. The objective is to influence future funding programs for the benefit of the traditional food sector. Innovation, business and technology requirements of small companies are very different from those of larger food producers. If you have an idea or topic for future research that can help your business or the sector we are really keen to hear from you - please [email protected] but not least, the TRADEIT team developed the present magazine ‘Taste of Science’. Taste of Science communicates emerging trends and technologies that are relevant and accessible for small and medium-sized enterprises in the food sector. As well as being hugely rewarding and satisfying being a woman in business also brings its challenges as many are juggling multiple roles and responsibilities. The Seven Dimensions of Wellness* model provides a useful tool to help you assess your life, to remind you of the strengths and resources you possess as well as areas you could develop further. If you notice that you are focusing the majority of your energy in a specific area such as your occupation then you will soon discover that your work life balance is out of kilter. Use the following wellness categories to audit your work-life balance. 1. Intellectual Wellness – Are you opening your mind to new ideas and experiences? Engage your mind; learn about new concepts, improve skills and seek challenges; read a new book, have new experiences, keep up-to-date on current affairs. Apply new learnings to your life.

3. Social Wellness – Do you connect with and relate to other people? Establish and maintain positive relationships with family, friends and co-workers. Sit down and eat together, be friendly, love and be loved, join a club, do something fun together.
4. Environmental Wellness – Do you recognise the value of nature and the environment? Take responsibility in the quality of your home, work, community and the planet. We require clean air, water, food, shelter, and satisfactory work conditions. Stop, look around and appreciate the wonders of nature.
5. Occupational Wellness - Do you get personal fulfilment from your chosen career? Use your skills, talents and abilities to gain purpose from work. Maintain balance, make a positive impact in work and engage in continuous professional development.
6. Spiritual Wellness - Do you reflect on the meaning and purpose of your life? Ensure that your values and beliefs are congruent with your actions. Balance your needs with that of others for inner peace and harmony.

EXPOSE DESIGN
Then - be professional, write like a journalist and think like a reader. I have been working as a professional PR practitioner for over 25 years and, despite the changing media landscape, the question I get asked the most is . . . ‘How can I get into the papers”?
Normally I am asked this, after the individual or company has made several unsuccessful attempts to secure coverage for their brand / company / themselves!.
So if you want to secure positive PR / publicity, you need to do the following ...
1. BE PROFESSIONALPublic Relations - (PR) is reputation management. One of the ways you can build the reputation of your brand, is by securing positive publicity. As everything you do represents your brand, you must approach this professionally.
The first step is to research the media and their audiences. Identify which media communicates with your target customers / publics and then devise your PR strategy.
The next step is to learn how to write the perfect news release. (More about this below)
Then visualize it . . . It always helps to illustrate a story - and sometimes a clever photograph can bump up the news value of an otherwise dull story. As the cliche goes . . . a good photograph is worth a thousand words. But, also note that badly taken photographs just say you don’t know what you are doing or, worse, don’t care how you visually communicate your brand. So my best advice is to switch off your i-phone (or the ‘expensive’ camera you bought in Duty Free) and hire a professional press photographer. Remember also
that photographs are no longer limited to print media, as now on line news sites, blogs, social media as well as most radio stations, TV channels require quality imagery.
2. WRITE LIKE A JOURNALISTLearn how to write a good news release. The key word here is ‘news’. It is essential that you put your news in easy to understand language, in the opening sentence of the release. Who, what, where, why, when and how. All in the first two lines. Then give contact details on your brand/event. Other information, such as quotations from company personnel, background information, should be supplied if relevant, but it is best to be succinct, relevant and ideally under 500 words.
Although we all do . . . it’s best practice not to use un-necessary adjectives (fabulous, amazing, sensational etc) and it is essential you are accurate, truthful and can spell! Lastly give contact details in case the journalist needs more information/clarification or an interview.
3. THINK LIKE A READERNewspapers do not exist to print news releases or give free publicity ! They are reader focussed - so you need to be also. Ask yourself what would the reader be interested in? Obviously readers of different publications / sites have different interests, so you need to create angles and tailor your news accordingly if you wish to secure coverage.
