Preserving fruits and vegetables in an airtight enclosure, oxygen levels in the atmosphere are reduced by increasing levels of CO2. The long-term preservation of vegetables and fruits is to counteract the maturation and aging, preserving the taste and quality. In fact, what is done is delay ripening. This is achieved by adjusting the gas conditions in the cold room, thereby reducing the respiration of fruits and vegetables. Controlled Atmosphere (CA) storage is a technique that reduces the levels of oxygen and increased levels of CO2. Controlled AtmosphereVegetables and fruits breathe; take oxygen (O2) and expel carbondioxide (CO2). Preserving fruits and vegetables in an airtightenclosure, oxygen levels in the atmosphere are reduced byincreasing levels of CO2. The long-term preservation of vegetablesand fruits is to counteract the maturation and aging, preserving thetaste and quality. In fact, what is done is delay ripening. This isachieved by adjusting the gas conditions in the cold room, therebyreducing the respiration of fruits and vegetables. ControlledAtmosphere (CA) storage is a technique that reduces the levels ofoxygen and increased levels of CO2. Under conditions of controlledatmosphere, quality and freshness of fruits and vegetables withoutusing chemicals remain. A large number of products can bemaintained under conditions of AC at 2 and 4 months time.

What do you need for conservation in AC?

CO2 treatment plant The plant CO2 serves to regulate the

levels of CO2 in the cold room. The storage room air is

passed through the purifier, returning purified air CO2. Read

more about our CO2 purification

Purifying O2 O2 With a treatment plant (also called oxygen

generator or separator) fruit quickly recovers AC condition

after filling the storage enclosure, or when a door is opened.

Ethylene Catalysts

For the types of fruits such as kiwi, are sensitive to ethylene in

CA conditions, a catalyst for ethylene is required. The catalyst

for ethylene Van Amerongen removes ethylene from cold

storage based on catalytic combustion; thus, the ethylene is

reduced to the desired levels. [Read more about our catalysts

ethylene] • Controllers Controllers measure and record levels

of O2 and CO2, these gases sent to the treatment plant. And

with one controller can regulate the cooling (on and off,

control defrost control, the engine room), as well as

measuring the ethylene and ethylene control catalyst. Read

The fruit preserved in chambers AC / ULO loses moisture.

This moisture loss decreases as the levels of RH (relative

humidity) over 90%. The cooling causes air to absorb water,

which reduces the shelf life and quality. Using a

humidification system is kept under control relative humidity.

Cold rooms sealed

airtight A cold room is composed of insulating panels with

tight finish. To build an airtight chamber, a special fungicide

and plush close putty is used. A cold room with AC is closed

by a watertight door with a too-tight window, door mounted in

the hallway, or ceiling of the chamber. This allows to sample

the product and see the fruit. Finally, the cold room with AC

is fitted with a two accessories needed for conservation in AC:

- A flexible regulatory (also called 'lung'), which reflects the

differences in the cooling chamber pressure preventing the

penetration of oxygen into the chamber .

- the depression and overpressure valves allow the flexible

regulatory withstand large pressure differences, matching

these differences to avoid damage to the cooling chamber.

International standards for cold leaks AC / ULOHave been established international standards for cold rooms withAC / ULO, for which a value has been determined maximum leakage(expressed in m2 per 100m2 of surface leakage). We can tell youabout these rules. Without them, it would be possible to createstorage conditions in AC. The manufacturer tests the tightness ofcold storage before use. If in doubt, Van Amerongen can help byperforming additional testing. Important points to keep in mind toensure the tightness of the door and the floor!
